How Did I Ever Live Without the Corn Stripper?

I admit, I have an aversion to corn on the cob. Ever since middle school when I got braces and couldn't eat it, I started absolutely hating it. And now, though the braces are long gone, I cannot stand eating corn off the cob. I just won't. But the thing is, corn is sooo delicious. My great dislike for corn on the cob has nothing to do with my not loving it. But I refuse to eat corn on the cob. You're probably wondering, but wait! How can you turn down the sweet, starchy taste of summer? I can't, really. So, if my family happens to be eating corn fresh from the garden, my dad cuts the corn off the cob for me. Yes, I'm 25 years old and my dad still cuts the corn of the cob for me (I don't even have to ask!). However, I don't live with my dad and am often offered corn on the cob when he's not around. I have a huge obsession with cooking risotto. I could probably be happy making a different kind of risotto for dinner every night for the rest of my life (I swear I wouldn't get sick of it). I feel like people have these false pretenses that risotto is really hard to make. False! Sure, it takes a little paying attention to and some time, but it's really not difficult at all. I promise! And people will probably be impressed with you because, for some reason, it's known for being hard to cook.Risotto is especially fun because there are so many ways you can make it. SO many. One of my favorite recipes involves peas and zucchini. Another one involves lots of butternut squash. But sometimes you want something a little more meal-like. AKA you need some meat! Since I cook a lot casually, I like making dishes that can be eaten as a full meal. This might sound a bit extreme, but basically I could not survive without Trader Joe's. If you've never been or don't have one near you, I feel very bad for you (I might even be shedding a few tears for you). By the grace of the heavens above (or just good apartment hunting skills), I have a Trader Joe's a mere 3-minute walk from my apartment. This may not have been one of the main reasons I chose to live where I do, but it could have something to do with why I've lived here for 3 years. Though I don't visit it quite as often, there is also a Whole Foods a 10-minute walk from my apartment. Yes, I live on a very valuable piece of real estate. Jealous? I think about why I love Trader Joe's quite often (more than I should probably be admitting) and now 2 Guys Uncorked have put my passion and obsession into their own words. Some people are just brilliant. I'm convinced San Franciscan artist Wendy Gold is one of them. My mouth literally fell open and then I smiled when I saw these scales on the art de toilette website (click the tab that says scales). It really made me happy because it just makes total sense... in a hilariously ironic way. Eggplant Parm That I Didn't Have to Cook

I went to my parents' house for a couple days this weekend and pretty much did nothing. Well, that's not true; I actually got a lot of work done and about 8 loads of laundry. I also did some relaxing and ate a lot. When I go to my parents, I don't cook at all, because they are both amazing cooks and they spoil me like crazy. And not only do I sit around and eat gourmet food, I get tons of leftovers to bring back to my apartment with me. Life is good.Tonight they made Lighter Eggplant Parmesan and Tomato Sauce from the January/February 2004 issue of Cook 's Illustrated and Meatballs from the January/February 1998 issue of Cook's Illustrated (yes, they are long-time subscribers!). Instead of being thin and soggy like eggplant parm so often is, this was thick, dryer (in a good way), and just pretty much the best eggplant parmesan I've ever had. One of my favorite companies is French Paper. I love them for their... well yes, paper. I love them even more for their Pop Ink gifts and other products. They have the funkiest, most unique, cleanest graphics and well chosen color pallet you've seen on dinnerware sets! Drool. You can buy the plates individually (to mix and match) or you can buy a full set of them. Who wouldn't want to eat off of these? The only problem is, whenever I go, I feel so extremely overwhelmed by all of the restaurant choices, it can take hours to decide where to eat. When I finally decide on a place, I walk in to discover a 2 hour wait. And I'm sometimes hesitant to try somewhere I've never heard of because, gasp, what if the food's not as good as I know it is somewhere else? This means I usually end up going to the same old standbys (Bella Vista and Limoncello) and have a great difficulty trying anything new. So, I was pretty excited when my sister and her friend came to visit and had already decided we would be having dinner at Giacomo's. I'd never been, but had heard good things so I was down for it. Because it's Valentine's Day, I feel the need to touch briefly on my love of all things pink. Including kitchen accessories. Some people think if kitchenware is colored, it must be cheap and not very professional. But, in fact, some of the highest-end brands of cookware make their products in pink. You just need to make sure you choose your brands carefully. Cuisinart? Yes. Le Creuset? Yes. Kitchen Aid? Yes. My theory is, I highly enjoy cooking...and I highly enjoy pink; so why not combine two loves and make cooking even more enjoyable? Of course you don't need a valentine in order to celebrate Valentine's Day in a big way. Maybe you'd rather just celebrate with a bunch of friends anyway. Right? And maybe you don't feel like making a glorious 4-course meal. Who needs that? We kinda think you should just have a pizza-making night instead. Pizza? Alcohol? Friends? With Valentine's Day quickly approaching, we created a romantic, heavenly menu for our readers to cook for their Valentines. Mistral is one restaurant in Boston I've been dying to go to, but have never had the opportunity (read: it's expensive). Theres's about a 99.99% chance that I just had the most fun I've had in a while. My co-worker Paul organized a nightout for himself and a bunch of us ladies at work to design SPRING purses and bags at 1154 Lill Studio on Newbury Street (I think the more you think about Spring during the winter... the faster Spring arrives). Everyone brought wine, cheese, crackers, snacks, dips... yum. We sipped wine, designed handbags/picked out fabrics, goofed off, chatted, and bonded. So much fun. There are a bunch of different styles of bags to chose from (from messenger bags, to wallets, to makeup or jewlerey bags-which is what I wound up ordering). Beef stew reminds me of being a kid. I guess that's because my parents always made a really amazing one. It's also just the thing to warm you up on a cold winter night when soup sounds sooo good, but just not filling enough. And for those of you who love red meat but are trying to eat healthy, you can always buy a super lean cut of beef.You can put pretty much ANYTHING you want into your stew, but I loosely followed this recipe from Dave Lieberman. In my stew, I put beef (duh, obvi), carrots, green beans, mushrooms, and potatoes. I think it would be really good with leeks and turnips too. However, you should probably take note that the stew takes a while to cook. So if you start making it at 8:00 p.m. on a Monday, it probably won't be done until around 11:00 p.m. (oops). Taco Dip That Will Make You Popular

I've learned that sometimes the easiest things can be the biggest hits. I've been making this simple taco dip ever since high school when my mom got sick of making it for my get-togethers and started having me do it myself. It's not one of those crazy 7-layer dips or anything, but it is absolutely delicious and makes the crowd go crazy. It's simply cream cheese, salsa, cheese, lettuce, and olives thrown together. It really doesn't get much easier than that. And I seriously have never made anything that people are so wild over. I have a guaranteed invite to any party if I say I'll bring a taco dip. I like to snack. A lot. Seriously. This can mean big trouble for me because, for the time being, I work from home. So, what/who is to stop me from strolling into the kitchen every time I start getting a little bit bored staring at my computer screen? For some reason I really like bringing my lunch to work. It could be that I work in the Back Bay and so close to some of Boston's best restaurants and it saves me tons of money by not eating out, or it could be that the food I bring distracts me from... actually doing work... and wakes me up if I start to space out. hehe. From pretty much the day I moved to Boston, I knew I was going to be a fan of Ma Soba in Beacon Hill. It was a warm September evening and the floor to ceiling windows in the restaurant were all wide open as I walked by for the first time. Looking into the restaurant, I could see how amazing the sushi looked. As we passed by, two girls started yelling for us to help them; a homeless man was hanging through the windows harassing them as they tried to enjoy their sushi dinner. Welcome to Boston.Two and a half years later, and Ma Soba is still my go-to for meeting up with friends and chowing down on sushi. Pizza Dinner with Deanna!

Deanna came over for dinner tonight! :) After quite some time discussing what we were going to make and then changing our minds, we finally decided to make pizza and sip some wine! Such a great idea and a great way to catch up after not seeing each other for a while. I just returned home from spending a fabulous weekend in Chicago. The company was amazing (my sister, her boyfriend, and some of the best blogger friends), and the food delicious. From cupcakes galore (there is a seriously ridiculous blog posting coming soon about this...possibly more than one) to sushi at Bob San and wine and cheese at Vintage Wine Bar, I was quite satisfied with my culinary experience. Friday night, me, my sister, her boyfriend, and his brother had dinner at my sister's before catching the evening performance of Wicked (SO good, go see it ASAP!). My sister's dinner menu consisted of pork with a delicious BBQ rub, whole grain rice (from Near East, best rice ever), spinach with garlic, and acorn squash. The squash? There are about ten thousand reasons why I love Target . (And about ten million reasons why I hate it... one being because I go in specifically to buy toothpaste and leave with a carriage full of household goods I never knew I "needed"... and obviously forget to buy the toothpaste...) Lighter Chicken Potpie

One of my favorite foods in the world is chicken potpie. When I was a kid, I used to love when my parents went out for the night and put a Mrs. Budd's chicken potpie in the oven for me and my sister (I was a classy kid, OK?). My tastes have since grown up from Mrs. Budd's, but I still crave chix potpie, especially when it's cold and miserable outside. Martha has a recipe for a lighter version of CPP, that honest to God, tastes as good as any "non-healthy" version.The recipe says to use bone-in, skin-on chicken breast halves, but I usually just buy regular chicken breasts or tenderloins and cook them in a frying pan. Then I cook the carrots and onions, mix in some flour and milk and add the defrosted peas. I also make 2 smaller pies since I don't have a dish big enough for one.The phyllo dough crust is delish, but kind of difficult to work with. I don't make cookies often enough (probably because I'm obsessed with making cupcakes), but I decided to make some for when my friend comes over for dinner tonight. Um, have you ever stopped to think about how many different types of cookies there are? After much searching, I found a recipe that involved chocolate and marshmallows. Yes, please.Surprise cookies come from a Martha Stewart Kids recipe. But what differentiates a kid's cookie from an adult's cookie, I ask you? A simple marshmallow? So lately I've been really into having breakfast for dinner. I'm guessing this is because I get ready for work in about one minute flat in the morning and never have time to eat a real breakfast at home... other than on the weekend. I saw this recipe for Whole Grain Pancakes with Wild Blueberry-Maple Syrup in February's Bon Appetit. I drooled. And obviously had to make it:The recipe actually called for frozen wild blueberries (for the maple syrup) but it was about .2 degrees out and the idea of going outside made me want to cry... so all I had in the freezer were frozen wild mixed berries from Trader Joe's... which if I must say, tasted perfectly lovely!Ummm and yeah... of course I had to have bacon and eggs (with green onions and Gruyere cheese) too. The good thing about Chels and I working on this site together is that we have completely different tastes. We both appreciate each other's styles (at least I think she appreciates my pink, girly EVERYTHING...maybe not), we just enjoy completely different color combinations. I got a new Nautica comforter last weekend and am excited by how the pink brightens up my room. Of course, I would much rather my room look like this: But when you're a poor 20-something renting an expensive apartment in Boston, you don't have the luxury of painting the walls (and floor) of your bedroom. Not to mention, affording the $40 throw pillows they expect you to buy.I also got all new pillows because I heard somewhere that you're supposed to replace them every few years.
