Chocolate Coffee Tartelettes
2008-02-12 07:01:00
Ah! Chocolate ! Finally! And coffee! The perfect pair in my opinion. Especially when combined in a buttery and crumbly chocolate shortbread crust. It will also be no surprise to you that this tart is inspired by the Grand Master himself, Herme. Yes, him again! And yes, I will give him some rest for a while as I am now devouring the books my mom brought me but I could not keep these little jewels to myself and wanted to share them with you all before moving on to other desserts and pastries (maybe some Valentine's Day macarons?). I only kept the concept and the coffee whipped cream from his original recipe. I did not care for the plain short crust or the white chocolate ganache filling. This is chocolate time baby!!!Mom laughed out loud when I said I wanted to make "one more Herme" before sending him on vacation and asked "what is it with you and him?" I replied that I wanted "to break the code". What is it that puts this man apart from the rest? Incredibly good timing or sheer talen...

Herme's Miniatures
2008-02-09 20:53:00
I am going to keep this weekend post short and calorie free....A first on this blog and I hope you won't hurt too much while in sugar withdrawal. Thankfully for your (and mine) sweet tooth, there will be plenty of chocolate and butter to be blogged about next week!Call me obsessed with the man, or just a fervent admirer of his talent and creations (although I will tell you about my newest pastry God next week), but I have been wanting these miniatures the day I saw them on Carol's Paris Breakfast blog. Not only did she photograph them but she also painted them with exquisite accuracy. She included various sources to order them and I clicked away that very minute. I was "that" close to getting the Visa out when my little angel of reason perched itself on my shoulder and whispered "You don't have money for futilities right now Tartelette...put the card back!" I could hear the little pastry demon on the other shoulder whisper "But you want them...go ahead...." I closed the computer ...

Dulce De Leche Macarons
2008-02-07 20:22:00
...Or how I got my macarons mojo back thanks to Gerard Mulot. For those who don't know Gerard Mulot, let's just say that he is one of the other Masters of French pastries and I fell in love with his pastries and macarons when I was knee high. Once a month we would take the train into Paris to visit my dad's godmother. A tough and quirky maid living in a very old building with a giant (or so it seemed to me at the time) marbled staircase. The woman had never married, never had children and an afternoon in her appartment full of plastic covered furniture and untouchable curtains seemed more like torture than a fun times in the City. Except for the patisseries she served us around four o'clock....they were Mulot's patisseries: canneliers, macarons, pains au chocolat, lemon tarts, coconut chocolate cakes, etc...I would quickly forget the covered the plastic covered chair I was sitting on and dive into the pink colored box full of goodies. So why would I need to get my macaron mojo b...

Blueberry Heart Cheesecakes For My Valentine
2008-02-05 20:46:00
Since I just asked you to vote for me in the Death By Chocolate contest so that you would be sending me and B. on the mini honeymoon we never had, I thought it would be fitting to share a tad more mushy sentiments with you all. If you are not a softie today....skip to the previous post...or the one before....February seems to be a love fest around here!!! Anyways...You all know him as B. and sometimes "The Cookie Monster" but I usually call him "my better half" and I would be the first one to tell you how fitting the phrase is. When I am wild and crazy or childish as only a woman can be, he is the mature one keeping me grounded and putting things in perpective. When I am the nervous one or the mature one, he becomes the childish one and relieves tension by cracking up a joke or coming up with something fun to do. He never said a word to me along the lines of "grow up" "stop playing" or "relax"...all he has to do is to hold me. He has got my heart beating inside his. Here is one of t...

Death By Chocolate Contest: Nutella Creams and Chocolate Macarons
2008-02-05 04:43:00
I feel a little bit strange coming here and telling you that I, too, have entered the Death by Chocolate Contest held by the great folks from Culinate. I feel even stranger asking people to vote for me or give me their approval but posting about chocolate is an offer I can't refuse! With time being a precious commodity while my mother is visiting I am really thankful that the rules allow bloggers to post past entries.I was excited to enter just for the theme....and then they told us the prizes on hand if we won: one food blogger and one reader will be sent on a trip for two to Napa Valley and will attend the Copia Center?s annual Death by Chocolate Festival on Feburary 23, 2008. Talk about generosity! The winner among readers will be chosen at random from all entries. Readers will vote for their favorite blog posts, and the winning food blogger will be selected by a panel of judges from the top 10 reader favorites. The entries I have seen so far are absolutely mouth watering. Will I...

Time To Make The Doughnuts Event
2008-02-02 04:09:00
I am busy playing in the kitchen with my mother but I wanted to remind everybody out there that Peabody and I are hosting a doughnut fest on February 15th and invite you all to send us your entries by February 12th if you wish to participate. The ones we have received so far are fabulous, lip-smacking good looking! You will find all the info needed here: Time To Make The Doughnuts. No long post from me tonight, no strange looking creation or mad scientist tip...just a recipe for beignets and a little plea (continue to read below the beignets) that my mom brought with her for Mardis Gras and that I have not made in years. You can make the round, shape them or fill them if you so desire. Excuse me while I go eat some more chocolate and give her a hug (she always smells like vanilla!).Beignets:1 teaspoon active dry yeast3/4 cup water,lukewarm1 egg2 1/2 cups all-purpose flour1/2 teaspoon salt1 Tb orange blossom flower waterSprinkle the yeast over the water. Adapting Herme's Sensation Satine
2008-01-30 21:45:00
My mother is a very playful woman, always up for a joke a prank or a trick, not a bad student in her younger days but definetely the one I would describe to a salesperson when I'd be lost in a department store as the "short woman laughing". So when she arrived from France on Monday for a mini vacation without my father, I wanted to accomodate her playful nature. I put one of these "verrines" (can be translated as dessert in a glass) in front of her that evening and waited for her reaction. I was not waiting for a "wow" but for a giggle and this is exactly what I got! She looked at it, picked it up, turned it around and then said like a kid who just found a Rubix cube "Come on! Tell me, tell me...!" Well, mom it's really not complicated and I owe it all to Pierre Herme, the mad pastry scientist/creator we all worship! I had originally worked on it for a tasting for an event that never happened so I had three of them left for us.You probably know by now that every Sunday I tutor Ver...
Lemon Meringue Pie
2008-01-28 06:10:00
Or in my case Lemon Meringue Tartelettes...yep, can't escape that nickname but to my defense Jen from The Canadian Baker and hostess for this month Daring Bakers' challenge had given us the option to make several tartelettes instead of one large pie. Be prepared to bathe in deliciously tart lemon curd and come out all sticky of meringue as 450 Daring Bakers got all sticky gooey once more just for you....and to overcome their fears, baking issues or just to have some fun!Although this was not my first lemon meringue pie, it was fun to use someone else's recipe for crust and curd and compare them with the ones I constantly use. No big challenge but I was so tired the day I made it that I really did not pay close attention and followed the recipe blindly. Hint to those DB who have to use violent threats to themselves to follow a recipe to a "t"...do it when you can barely stand on your feet from exhaustion, physical or mental. Mine was mental so I went ahead and dove in.The crust tu...
A Little Weekend Drawing
2008-01-27 02:26:00
I was going to post a completely different thing this weekend, a dessert inspired by sugar daddy Pierre Herme However, reading the comments from the canneles post on friday I realized that a lot of you had either never had such marvelous little morsels or had tried them a long time ago and were nostalgic about them....So, I came up with a little drawing idea: I am offering two packages of a dozen each of fresh baked canneles to two gourmands out there. All you have to do is leave a comment to this post and I will draw your name completely at random and ship them to you during the week. To ensure freshness I can only ship within the US and Canada.Drawing end Monday at 4pm, and the winners will be announced Tuesday or Wednesday. (My mom is coming in town and I might be drowning under chocolate and candy in the meantime)

Canneles - A favorite And Addicting Snack
2008-01-25 06:23:00
A lot has been said about Canneles [kah-nuh-leh] : they taste like a fudgy bite of crepe, they are moist on the inside and crispy on the outside, they have a faint hint of rum, etc... I need to add that they are hands down good and truly addictive! I am on batch number 3 and the neighbors only got to try a dozen...Yes, my name is Tartelette and I am a canneles addict.Actually, I am blaming Veronica for this week's thigh expansion! You see, every Sunday I tutor her in French for an hour and we usually start our lesson with a rundown of the recipes we tried the past week and we end it with a exchange of the recipes we plan on trying. This past Sunday we prolonged the hour by talking baking resources online, utensils and molds. It reminded me of the silicone canneles molds my parents brought me last September that had not been used yet. Tragedy!!! So you all can guess what I did right after we said goodbye...and again the next night!I blogged about Canneles last year when I could not ...

Honey Panna Cotta and Raspberry Terrine
2008-01-22 17:21:00
Right around mid December, I had that feeling something somewhere was not right but I could not really put my finger on it. Something was missing every time I'd turn on the computer but I could say what. The filling lasted a few days more when suddenly it hit me, "WTSIM..." was missing! Peeps, that's bad when your body has become so trained to certain cycles that it knows when something is out of place. And that's even worse when it is in your "other" life, your blogging life that is. Unless they ask us to make stew or barbecue I am always there to go play with Johanna, Jeanne and Andrew. January's theme is "Terrine" and as I was reading Johanna's directions I almost sighed in disappointment when she said that sweet terrines were welcome. Oh good! Now what?!!I thought about steamed puddings in terrine molds and about nice layered fruit gelatin layers. The former seemed a little heavier than I wanted to bring to our weekly gathering with the neighbors and the latter was going to...

Toffee Butterscotch & Tapioca Pudding
2008-01-19 20:38:00
Every month I get a little surprise in the mail, Cuisine at Home magazine, courtesy of my dearest Lisa who got me a subscription for my birthday last year. I am usually very bad with food magazines, letting them pile up on the bed stand until they become one with the floor...not good. This one is a no fuss-no muss kind of magazine and their dessert recipes are always so mouth watering...it is difficult to resist!!I was wondering why the postman was taking a break by our mailbox and I went to check on things, he was reading my magazine and looked up at me with a big smile on his face. "You have got to make this" he said, pointing at the Toffee-Butterscotch Pudding in the latest edition. I had to agree that it looked mouth watering, and it had two of my favorites Heath Toffee Bar and tapioca. I am addicted to the toffee bar and crumble it up on top of everything lately such as cakes, cookies and my afternoon yogurt. Over the past year I have become quite fond of tapioca puddings, crea...
Swedish Walnut Tea Ring
2008-01-17 03:29:00
Hard to believe that in spite of the amount of bread I bake every week, from simple baguettes to brioche or my now well known love affair with cinnamon rolls, I have not participated in one single Bread Baking Day event, created by Zorra. Something had to change! When Eva announced this month's theme, I knew I could not pass on it: shaped bread. I love messing with decoratively shaped breads such as Sunflower rolls, Dulce de Leche Rolls, Apricot Couronne and others. There is one that I love to make on an almost weekly basis: the Tea Ring . Over the past years, I have tried so many different recipes that I have come up with a basic dough that is light and soft yet sturdy enough to accommodate many different spices, nuts and fillings. This one has my beloved cardamom in the dough, as well as cinnamon and walnuts inside. The crumb is perfectly tight to hold it own dunked in coffee and yet soft enough to melt in your mouth. I make it using either instant dry yeast or rapid rise yeast an...

Time To Make The Doughnuts!
2008-01-15 08:11:00
What? A doughnut event? I am smiling thinking that while you were sleeping and dreaming away, Peabody and I were rubbing our hands together and scheming about an all doughnut fry fest. Oh yeah! Bring it on!! We love anything with butter, flour, eggs and sugar but more so when deep fried and maybe drenched in caramel or toffee sauce! We know you have been craving some doughnut goodness and looking at all the countries around us, we can tell that there are lots of local specialties involving fried dough. We also realize that some of you are paying attention to their waistline this time of year, so we are ok with baked doughnuts, don?t make it a habit though, that will break our hearts! You don?t have to own a deep fryer to participate either, any form of pan frying can do (don?t go justify to your better half your latest appliance purchase and blaming it on us!!).Our only ?requirement? is that your entry be a sweet one (plain, fruit filled or other), and one you make especially for th...

Chocolate Peanut Butter Banana Cake and Caramel Corkscrews
2008-01-12 23:23:00
I call this cake "revisited" although it is not entirely exact, but I could not think of a better way to say it. I made this cake for the first time last year, posted this pretty picture and promised to write down the recipe on this blog and never did. I have received many requests for it over the past few weeks months so I finally got my act together and wrote it down. Sorry for those who emailed about it six months ago...I keep being distracted by more pastries and desserts every day! The cake is adapted from Marcel Desnaulniers, sinfully rich and absolutely decadent.I have also received many requests to post the how-to's of making the caramel corkscrews I used for the Espresso Chocolate Trios and the Chocolate Crepe Cake . I hope the explanations and drawing at the end of this post will unleash the caramel playing gene in you. Just take your time, be patient and the good thing is that even if you mess up, you can still it it!Chocolate Peanut Butter Banana Cake, adapted from Marce...
Apple and Cider Beignets
2008-01-10 03:55:00
I know...I am evil to make apple and cider beignets, to take their pictures and put them here while some of you have made food related New Year's resolutions. I guess now you know that I don't make any...! No, seriously, I do make "adjustments", not resolutions. Just the word puts too much pressure so I make a list of bad habits that I need to correct. Back to the beignets though. If you think about it, I am not really evil if you are tempted by these. Don't they say "an apple a day keeps the doctor away"? And that if you fry things at a high enough temperature, you don't get as much oil in the food? So you see....no evil.Alright, I might be trying to justify the fact that I enjoyed one too many of them tonight but sometimes life is too short to worry about two or three Apple And Cider Beignets. I am not pushing you to throw caution away to the wind but let's face it between two of these and two store bought ones, I know which one I am going for. First, they are made with fresh...

...more specifically Eclairs with Dark Chocolate -Espresso Mousse, Espresso-Dark Chocolate Pots de Creme and Frozen Mascarpone-Espresso Parfait on Deep Dark Chocolate Cake. Although this was work related, this is how I spend my Saturday. I am not getting fancy on you all of a sudden but it was either this post or more puddings, creams and mousses. Yes, I seem to veer away from cakes lately as there are not one that strikes me, although I did find a couple to try today.Friday afternoon I got a call from K., one of the chefs I used to work with at the restaurant asking me if I'd make the desserts for a fancy dinner of wine representatives next weekend because he did not have time and the Executive Chef in his usual fashion was throwing fits about everything regarding this event. I agreed and he finished our conversation by saying "ok, well you bake tomorrow and I'll be at your house on Sunday, I trust you"....Why oh why, tell me that...he was going to jinx me! I had the list of wines...

Pear White Chocolate Bavarian Charlotte
2008-01-05 05:51:00
This Charlotte would be great for Spring or Summer but it just happened that I made it for our New Year's Day dinner with my parents-in-law. Really, I could not be a luckier girl having Bill and Ruth as my in-laws. I will always remember the first time we broke bread and sat together over dinner. I had known B. a little over a week and already I was taken in by his family as if I had always belonged. They were offering a place at their table but also a place in their hearts, completely trusting their son that this young woman of 19 years his junior and potential wife number 2 was the one who would stick around. Oh, we had our moments Ruth and I, but mostly due to misunderstandings, differences in traditions and cultures, but nothing that could not get solved around a batch of cookies and a big hug. My father in law is the looser one of the couple, a free spirit, a joker, and a talented drummer. Both in their eighties, they never miss a bit, are always on the go and exercise religio...

Happy New Year! I hope you all had a wonderful holiday filled with family, friends, good times and laughter. We did, kind of mellow some days, kind of crazy some others...waiting for that cold weather to come our way so we could cozy up in front of the fireplace. Well, after temperatures in the 60s and the 70s, we finally have some cold weather. Of course it occurs on January 2nd, Mother Nature scoffing at us now that Santa is long gone and New Year's Eve is simply but a page turned. But you know what? It does not really matter anymore as I did not need the fireplace to make me feel cosy this Christmas season. Nope. I had the warmth of looking at cards every morning upon waking up, looking at my really weird looking Norfolk pine tree. Some were too kind to tell me it looked good....I did not care for it, but it was a gift and it got "prettified" as one of neighbors kids said.Anyways, I was also blessed one Christmas Eve morning when I received a box full of cookies and gifts for th...

A Year In Posts
2007-12-31 06:19:00
I always admire people who send out Christmas or New Year ?s newsletters and tell you all the wonderful, funny or tragic details of the year past. I keep feeling nothing major happened in my life but I start thinking about things and quickly realize that I am far from the truth. Starting at home, there is never a dull moment, whether it be due to our different cultures and customs or whether it be because of our age difference, B. and I surely know how to keep ourselves entertained?!Then there is this blog. It has given me so much in the past year that I wanted to remember the good and sad moments, the friendships and mind blowing events I have experienced. I did this post a little selfishly to have a reference of this past year but I also wanted to highlights for you guys the moments of 2007 that make this blog what it is today and I could not do it without your readership.January 2007: After a wonderful 3 weeks back home in France it was hard to get myself back in the groove. Just a note for my dear neighbor and friend C.: this is just a fancy name for a type of chocolate pudding, which I am sure you can attempt since you know how to froth now.You must be wondering why I am talking to her on this site since I just have to step on the patio and give her a shout out...Well, she's got family visiting and I don't want to intrude, but I feel it necessary to give you a quick low down of the last couple of days because what I feared would be a so-so Christmas turned out to be one to fill my heart with happiness. We stayed here in the US this holiday season instead of visiting my family, on the outskirts of Paris, like we did last year. I thought I was doing pretty good not being too nostalgic, wishing for familiar laughters, places and chilly weather. All was good until the weekend before Christmas rolled around. We had decided to avoid stores and malls at all costs and make gift boxes filled with cookies, bar, truffles, cakes, etc...I had started earlier in t...

Buches De Noel ? Looks Like Christmas Is Finally Here!
2007-12-22 06:20:00
Buches de Noel also known as Yule Logs were the challenge given by Lisa and Ivonne, founders and co-host this month of the Daring Bakers. I think they just had the perverted idea to see us buttered, creamed and rolled in light genoise, Swiss buttercream, decorated in meringue and flavorful Marzipan. You should not that when I talk in those terms it can only be because they gave us an awesome challenge! Did I mentioned I buttercreamed my hair? Hmm, yeah?what I thought was the first gray hair was just a streak of buttercream from picking up the phone, lifting my glasses up and frosting my hair with a fork full of buttercream. See, they even raise my blood pressure?those two I tell you!!Buche de Noel is ancient tradition in my family, and I think for most European families as well. Wasn?t too long after I figured out how to make genoise that yes, it could be filld, and yes it could be rolled and ?oh my!? before you know it I was making it for our Christmas dinner. Over the years, there...

Sugar Cookies For A Good Cause
2007-12-20 21:39:00
I often talk about my neighbor C. and her twin boys and how they are a loving, loud and buoyant pair. What I failed to mention so far is that about once a week, I "borrow" her boys for the afternoon. This expression started over a year ago when I kept the kids occupied one afternoon by teaching them how to make cookie dough while she was cleaning the house top to bottom and had no way of keeping them busy without supervision. They play a lot on their own but believe me we are still amazed at how they made it to seven so far without a broken leg or worse injury: fire, water, engine, anything that rolls, chops, cuts, explodes will find a way into their hands.Having said this you might think I was crazy for volunteering to have them over. Well, when things start getting heated and borderline out of hand, I give them"the look". My grandfather Rene had "the look", piercing and serious enough to make you melt in your socks and I am glad I inherited that particular feature. One glance and ...

Coconut Creme Brulee And Coconut Sorbet
2007-12-19 00:48:00
I am sure your holiday baking is full of cookies and cakes and after spending a lot of time in the kitchen, the last thing you think about is more desserts. Well, what if I were to bring you these two-bite coconut creme brulees and coconut sorbet? Do I see a sparkle in your eyes again? Granted you have to like coconut to begin with but knowing you can keep the cremes plain or flavored to your taste is always a good thing.Since the weather had been so nice and it felt more like a cool summer day than early December, I brought these along to our weekly get together with the neighbors. We were trying to get in full Christmas mode decorating C's trees (the party was at her house), drinking egg nogg while the kids were making sandmen instead of snowmen outside. Yet, no one was in the mood for fruitcake, pumpkin roll or chocolate cake. I had just finished a batch of macarons for gift giving and was facing an evil amount of egg yolks, so creme brulees were the obvious choice. My dear B. ha...

Swedish Cinnamon Rolls
2007-12-16 04:48:00
You might be thinking that Tartelette has gone off the deep end, obsessed with cinnamon rolls. Well, obsessed might be a bit big, "me likey some cinnamon rolls" although not grammatically correct would be more appropriate to label my affection for fluffy dough rolls filled with spices. First there were these, then these yummy knockoffs and now these inspired from Anne from Anne's Food.During our September Daring Baker challenge, she mentioned Swedish cinnamon buns and I instantly remembered the ones my mom used to make during the winter. She had been given the recipe by a Swedish friend of hers, except that Glenna called them "Bole" or something like that. I did not know any other version while growing and fell in love with them the minute my mom pulled them out of the oven. The scent of cardamom wafting through the house was powerful and magical. Cardamom and cinnamon together in the dough is one of the differences with the American type cinnamon rolls, the other one being that ea...

Are you ready for Christmas? I am not, but my kitchen is! My oven has been rehearsing its favorite carols and humming a happy Christmas Cookie song. You don't know the Christmas Cookie song? Goes something like this:"99 Christmas Cookies in the jar, 99 Christmas Cookies in the jar. Take one down and pass it around, 98 Christmas Cookies in the jar.98 Christmas Cookies in the jar, 98 Christmas Cookies in the jar. Take one down and pass it around, 97 Christmas Cookies in the jar......No Christmas Cookies in the jar.Crank the oven on and bake some more, 99 Christmas Cookies in the jar." And now you know how I get through an entire weekend of baking for us, the neighbors, the family, the friends, clients and patrons. Cookies, macarons, truffles, you name it. My fridge and freezer look like some kind of nut case replaced all food groups by just one, sugar. It leans towards that trend the other months of the year, but really I had a chuckle earlier when I reached for the veggies I needed ...

White Chocolate Pudding - Sugar High Friday!
2007-12-11 01:31:00
I already wish it were Friday ... any Friday for that matter. The week is always better that day don't you think? Well, I am anticipating a very sweet one by virtually sending these to Zorra who is hosted Sugar High Friday for December, dedicated to puddings : "baked, steamed and boiled puddings or the creamy ones".I have to admit, I did not jump up and down when I read the theme since I will take tarts, cookies, cakes over puddings any day of the week. Although, come to think of it, I like panna cottas and creme brulees, which are also forms of puddings. Ah! Who am I kidding?! I had the chance to stir some sugar, eggs and cream together, and that is enough to make me happy!B. on other hand, as a good Southern boy, loves his custards and puddings, so he started bugging me early on last week: "Have you decided which one you will make?" - hugh...no. "What about my mom's banana pudding?" - hugh...no again."What about steamed pudding like the ones I used to eat in England?" - hugh ...sti...

Paying It Forward: You Might Be The Lucky One
2007-12-08 16:07:00
There is a game going around the blogosphere these days called "Pay It Forward ". It looks like it started as craft exchange and slowly made its way into food blogs. Last month Graeme from Blood Sugar found himself the lucky recipient of a goodie package from Fanny and decided to pay it forward by having a little drawing of his own, and my name got picked...Yeahhh!!! On a side note, if you have never visited his blog, run to it people: amazing photography, delicious recipes and a wicked sense of humor!I received my package last Thursday and dare I say we already made a good dent in it! While exchanging emails with Graeme, I heavily hinted that I had a thing for Flake candy bars crossing my fingers that he would include one in the box. Lucky me, he put two: one praline and one dipped. There 's one missing in the picture, I know, talk to my stomach about that one! He also included a jar of onion confit that was delicious with roasted pork tenderloin last night. There was also a little...
Sufganiyot - Jelly Donuts - Beignets Confiture
2007-12-05 18:39:00
Ah...Christmas...!! If I close my eyes real well and stand in front of the open freezer I can even almost pretend it is cold enough for Christmas. I don't think I'll ever get used to spending Christmas in a tee-shirt. Sorry if you are drowning under many inches of snow right now, but I envy you...Really, I do. It's not cold enough for soup, eggnog and stuffing and the small tree we put on the porch looks slightly out of place.Proof to this madness: I had to stay home and have a mini baking marathon on saturday and around 5pm, I could not take it anymore and had to crank the AC on again...with the oven and the stove on!! Oh yes, the electricity company loves me!! Last night we decided to pretend it was December and used the fireplace...for a total of an hour because it got so hot. Crazy...Even crazier, when I decided to help some friends celebrate their tradition and stood in front of burning oil and fried sufganiyot for an hour. When I dropped by C' house with a plate full of th...
