Choc-a-riffic!
2007-01-27 06:04:01 Is this enough chocolate for ya? So, I may have missed the deadline for Sugar High Friday: The Chocolate Sessions, but that doesn’t mean I can’t post about this cake now, does it? Despite my numerous claims that I’m not a chocaholic (I’m not - promise!), I find myself drawn to cooking with it again and again. I prefer cooking with dark chocolate so even if the end result is something far too rich for my tastebuds, there is something to be said for the allure of creating a chocolate concoction - the glossy sheen as it melts, the warming scent that permeates the kitchen as it cooks, and finally, the intense flavour and sugar rush experienced as you devour a bite of your chocolatey friend. Mmmmmmm… This is by far one of the most intensely chocolatey things that I have ever made, bar none. You might be thinking “Awww, but they’re so cute - teensy tiny cakes with frosting that you can devour in a few bites - what’s not to love?” Long time readers of my blog will know that I used to have an almost unreasonable fear of these petite mounds of cuteness. I did eventually manage to turn out a pretty decent chocolate chai cupcake (with assistance from this book), but after that one success I put them to the back of my mind and forgot all about them - both the making and consuming. Every step you take (every move you make, hah!) you feel yourself becoming more and more frazzled as you miss ingredients, mix up the order of the instructions, and yet in the face of disaster you soldier on, wondering what the end result will be like. This is a story a bit like that. In the midst of all my candy-making, I thought it would be a marvelous idea to try and make some chewy caramels! So, I hunted down what I thought was a very simple recipe with very few ingredients, and I set to work. A few tips when working with sugar: 1. Don’t have a food-obsessed dog weaving in and out of your legs when working, this not only acts as a distraction, but a walking hazard that you could easily trip over. 2. Ever looked through a cookbook and marvelled at some gloriously delicious looking dish, and toyed with the idea of creating it, only to then laugh and put it away as something you could never recreate? To be honest with you, I’m easily phased from cooking certain things. After reading extensively about the difficulty of preparing artichokes, I cannot even bear to look at them at the greengrocers, and the thought of cooking eggplants (aubergines) makes me pale with fear. 2007-01-03 17:49:02 Without a doubt, this is the best pizza base I’ve ever tasted or made! Thin, crisp, chewy, perfectly aerated - we have a winner! To be honest, I was quite happy with the original pizza dough recipe that I’d been using - it was relatively easy, quick, resulted in a tasty end product which was quite enjoyed by those who’d tried it. However, it just didn’t measure up to the better pizza bases that I’d enjoyed at various pizzerias and restaurants, so the hunt was on to find something that would compare - nay, to blow my little toesies out of the water! What constitutes my ideal base and crust, you ask? Well, I’m a fan of thinner bases with some degree of crunch and chewiness. It can’t be too oily, and needs to be firm enough that it can be held by the outer edge and it won’t fall into my lap - and it needs to have a little softness otherwise it can be akin to chewing cardboard. When I saw this post on Habeas Brulee last month for Sugar High Friday, I made a note that I’d prepare something elaborate, try my hand at spun sugar, toffee “glass windows” and all manner of other ideas that I had. It’s that time of month, you’re grumpy and tired and just happened to get out of the wrong side of the bed that morning, and the day just isn’t going your way. And then you bite into a morsel of chocolate, close your eyes and enjoy that little rush of endorphins that run through your system giving you a little buzz. Being a lover of both sugar and nuts, how could this combination not appeal to my sensibilities? No knead to worry, this bread is a piece of cake
2006-12-11 17:31:01 This bread is a work in contrasts - the thin crust is crunchy, whilst the inside is dense, chewy and moist. This weekend was an absolute scorcher, with temperatures sitting around 40 degrees C on both Saturday and Sunday. Whilst I was able to fulfill my cooking desires with my boiled sugar treats, I was still aching to bake something, but didn’t want to turn the oven on in the middle of such scorching weather. What to do, what to do? Whilst pondering this question, I remembered reading about this no-knead bread recipe which had taken the blog world by storm last month - the super long proofing time required for the dough meant that I could feel like I was making bread but wouldn’t have to turn the oven on till the cool change struck at night, and the hot weather during the day was perfect for dough proofing! Leaning Tower of Marshmallows
2006-12-09 17:28:02 After seeing this post on Helen’s blog, I was absolutely enamoured with the idea of making actual sweets at home - not the baked kind. However, the recipe required the use of a sugar thermometer, and alas I had none… till now. My new favourite kitchen toy $20 later, I left the CakeDeco store in Flinders Arcade on Thursday afternoon with a brand new sugar thermometer and a desire to delve into the world of home-made marshmallows (or Chamallows, as Helen calls them), yet the opportunity didn’t arise till Saturday morning, when I bunkered down with grim determination to make something with this new toy of mine. My mallows are a lot less neat than Helen’s, but the flavour and texture of these home-made goodies makes up for any amount of wonkiness! Today, my world is on fire?
2006-12-09 11:27:01 I woke up this morning to grey skies and the smell of ash in the air, which confused me - the forecast for today is for almost 40 degrees C (about 104 degrees F) and every day this week when it’s gotten to around 8am I’ve had to wear my sunnies to avoid being blinded by the sun. Something wasn’t right. I stepped outside, and saw this ominous reminder, in case the blanket of smoke and the smell of burning wasn’t enough. This photo of the sun is untouched - all I have done is resize it. This is not a sunset, but a sun tinted by smoky skies at 8am in the morning. Today , 20% of Victoria is on fire. Please think about that for a second. Think of all the life that is at stake - all the birds, the animals, the insects, the people and their entire townships. How to poach an egg
2006-12-05 23:24:02 I am an egg lover. That’s right - I love these little bundles of protein that are flavourful yet versatile enough to be used for so many different dishes! My favourite way to have them is poached, but till this weekend I didn’t know how to poach them myself, and had to stick to soft-boiled eggs when having them at home. After having that shocking poached eggs on toast at a local cafe awhile ago, I wondered just how difficult it actually was to poach an egg. I mean, it’s just boiling an egg without the shell, right? How hard could that be! A lot more difficult than I originally thought, but still fairly easy! Now, a properly poached egg should be soft - the whites just set and the yolk still runny, with no flavour permeating through than the egg itself. 2006-12-05 23:24:02 I haven’t posted much in the way of food recently because I frankly haven’t been home before 9pm on most nights, and my wonderful mother has on most occassions put out some leftovers from the family dinner for my famished self. Why so late? Well, I’ve developed a bit of an addiction to going to the gym recently, visiting it between 3-6 times a week, one of those being a weekly pilates session. Unfortunately, the only time I have to go is after work, so by the time I’ve worked out and gotten my sorry ass back home it’s anywhere from 9-10pm. The pilates is doing wonders, I feel my core muscles strengthening already and I’m starting to feel muscles develop under the flab, and although I can’t complain about how much more flexible I’m feeling, some of the poses we have to pull and hold in class are…unflattering to say the least. Snicker-dee-doo-dah, snicker-dee-day!
2006-11-29 11:18:02 There is something about certain words and the mouthfeel that they give which will make me develop either a like or dislike of them, almost in spite of what the words themselves mean. For example, I find I can’t feel much for the word ‘fluctuate‘ - saying it makes my mouth feel awkward, almost as if it were full of marbles (I will never forget that look on Audrey Hepburn’s face when she finds herself in this predicament in ‘My Fair Lady’!), but a word as mundane as ‘sequential‘ can feel round and voluptuous as it rolls off my tongue, not akin to the sensation of a small piece of chocolate melting in your mouth. ?Snickerdoodle? is a bit of a strange one. It?s a bit long, and yet bounces off the palate easily and quite vibrantly. It sounds and feels a bit childish, and yet there?s something oddly comforting in its pronunciation. Lunch for lazy days

2006-11-26 23:12:02 Maki ng Nigella’s ‘Jam Doughnut Muffins ’ is something kids will love - as will you! Nigella claims that these ‘Jam Doughnut Muffins’ are something easy enough that her kids could help out with in the kitchen, and that’s definetely true as the batter took me all of about 5 minutes to put together. However, she also claims that the danger with these little morsels is that they taste so good, you may be tempted not to share, and she definetely does not lie here. Now, I’m not a huge doughnut fan, as the whole deep-fried aspect tends to leave me feeling a bit sick, as well as making my stomach feel like lead, but there is something in their light, airy texture and slight chewiness that I miss, and these muffins come about as close to replicating that aspect as any other cake I’ve made/tasted. Take a hot shower to freshen up and relax those muscles, then set about making yourself a vitamin-rich lunch. 3. Go to a beauty parlour/day spa with a mate and get some pampering treatments to make you relax. A facial or a pedicure is a good choice, waxing not so much. My mother had been pestering me to try making Okonomiyaki for a few days, and I thought that today, with it’s 39 degree C heat would be the perfect day to stand over a hot stove and fry up one after another of these Japanese pancakes. Though having tried them before, I’d never actually tried making them so after a bit of googling I settled on a ‘basic’ recipe for the batter and decided to try it with whatever other ingredients I had on hand - after all, it is meant to be “cook what you like, the way you like”. 2006-11-16 23:00:06 Or in this case, sharks. Now, before I go any further, I have to admit that I’m not crazy about yum cha, though the rest of my family absolutely adore it. I quite enjoy the fact that you order small plates of a wide variety of dishes, and that dining can be quite a social event that forces people to take their time as they eat and digest their way through the different servings. However, I don’t enjoy the fact that I don’t know if the dishes are freshly cooked (I highly doubt it from the experiences I’ve had), and that many of them appear to be literally swimming in oil. 2006-11-13 22:54:02 18 years ago, a screaming baby entered the world, much to the adoration of his parents and the dismay of his two older sisters. As he grew, he continued to provide much laughter and tears with his hijinks - which include, but are not limited to, throwing the iron off the second storey balcony after watching a Rex Hunt’s Fishing episode on tv at the age of 4, laying a turd right between the entrance between my room and my kid sister’s room and laughing as he watched us argue over who would clean it up (we resorted to getting a ruler and measuring whose room it was closest too!), chasing us around the house with various objects whilst trying to beat us up, and tearfully waving goodbye to me from the livingroom window every morning that I went to school. For someone who cherishes time with their family as much as I do, this is something that makes me quite sad. Not that I have anything against them, as I’ve had some pretty decent meals in those dodgy looking little dives, but sometimes you want somewhere where you can sit back and relax, where it’s not too noisy to have a casual chat with a friend whilst you enjoy your meal. At times like that, Coco Lounge is definetely my choice for an eating venue. Owned by the same person as Mocha Joes, the standard of food and overall dining experience leaves Mochas eating it’s dust.
