Vegetable Lasagna
2007-09-20 14:59:00 Serves 88 oz ricotta cheese1 onion sliced1 tbsp chopped fresh thyme1/2 tbsp dried basil1/2 tbsp dried oregano2 tsp minced garlic4 cups prepared pasta sauce1 lb lasagna1 lb mozzarella cheeseFreshly ground black pepper2 small zucchini, diced2 small summer squash, diced3/4 cup roasted red and green peppers, sliced1/4 cup grated Parmesan Heat oven to 375°F. Mix ricotta cheese, thyme, basil, oregano, and garlic in a bowl; season with salt and pepper. Spread 1 cup pasta sauce on the bottom of an 8" x 11" baking dish. Add one layer of lasagna and mozzarella cheese, season with black pepper. Add a layer of zucchini, onions, squash, and peppers. Dollop spoonfuls of ricotta cheese mixture over vegetables and spread to cover. Repeat layers, finishing with pasta, mozzarella cheese, and sauce. Add onion and garlic and sauté for about 3 minutes. Remove vegetables with a slotted spoon. Add the chicken wings and cook about 5 minutes on each side, until lightly browned. Add the onion, garlic, carrot, parsnip and spices to the pan. Pour Guinness over chicken and vegetables and bring to a boil over high heat. Reduce heat to low and simmer 30 minutes. Uncover and cook for 10 minutes until sauce reduces by half. Discard carrot and parsnip (or eat them if you want to). Place chicken wings on a baking sheet and brush with remaining sauce. A trail of e-mails obtained by investigators shows that the agency's lawyers rejected a proposal for systematic testing of the levels of potentially cancer-causing formaldehyde gas in the trailers, out of concern that the agency would be legally liable for any hazards or health problems. Top with 1/2 quart orange sherbet in each pan. Layer vanilla ice cream on top, about 1/4 quart per pan. Place 1/2 quart of orange sherbet on each pan, again. Top with rest of crumbs.
