:: STARTING THE SUMMER IN SWEDEN
2008-06-03 08:54:00 Yes it's me! I'm back blogging after a unplanned little break- which tends to be the norm for most bloggers from time to time. Sofie and I spent the long weekend in Gothenberg, Sweden where we stayed at her lovely mom, Ebba's house. It was a such an enjoyable little break and with a solid 29 degrees from Monday to Friday, it was definitely the kick start to my summer.To my friends and family, I'm not exactly known as the most outdoors type person, and Sofie was even shocked when I changed a tyre over the weekend, but lately I think I'm developing a bit of a love affair with nature. After to moving to the apartment last year, which is situated right beside a main road, I have a constant and real urge to just be out in the silence of a park, to walk on a beach, or even to go for a quick walk around the cliffs. Normally it doesn't exactly go to plan, but this one really worked out and it's now a classic here in the mood food kitchen. I have a terrible habit when I eat in a restaurant that when I find my favorite dish, I tend to stick to it and order the dish over and over again! I know variety is the spice of life and all that but when it tastes so good I'd feel like I was missing out if I didn't order it.This is an adaptation of a classic dish on the menu at the Wagamama chain of eateries, I think the original recipe includes shrimp, chicken and squid but this is more of a vegetarian version. So all day I've been dreaming up a simple tasty lunch- I wanted to have something quick that I could make the minute I got in the door. I baked a big hunk of foccacia last week and froze half of it- which came in extremely handy for today! Make this dish when you need a quick blast of tastiness! Fried Mushroom and Garlic on Toast About 8 Button Mushrooms2 Cloves of Garlic1 teaspoon of ButterFinely shopped fresh ParsleyA good pinch of Sea Salt and Freshly ground PepperA few slices of bread toasted.This doesn't exactly need a complex written recipe, it takes under 15 mins to make. Slice the mushrooms and chop the garlic roughly. I think they were just compensating for all the plants they made me water as a child- see post. :)The steaks were marinated in a really tasty Argentinian marinade called Chimichurri which was bought at the local Farmers Market in Howth from, Saucy's who actually do a whole range of yummy sauces but unfortunately don't have a website just yet.It's kind of in the same vein as pesto, texture wise, and is quite simple to make, in a large bowl combine- 1 Cup of chopped fresh parsley, 1 teaspoon of dried oregano, 4 garlic cloves chopped, one medium onion finely chopped, 125 ml of Olive Oil, 60 ml of red wine vinegar, and a pinch of Cayenne pepper, and Sea Salt. Mix it all together adding more oil if the mixture is too thick. 2008-04-14 08:05:00 This, I'll be honest with you, is a bit of an experimental recipe! I like fishcakes but it just feels a bit wasteful, to spend money on a nice bit fish, and mash it up, with potatoes. I know that it's a bit weird, but it got me thinking that even though its not exactly the height of culinary excellence, I could substitute the fresh fish with some cheap and cheerful canned fish like tuna. As a recipe this works fine, the cakes form well and cook evenly, the only thing is that if you use canned tuna like I did, you have the flavor of canned tuna, which can be a bit over powering in something like this. When I make it again, I'm going to use tuna packaged with oil in a jar which might be a little less in your face. The recipe I'm posting is fairly basic, but really you can add whatever herbs or root veg you have in your kitchen, and experiment with the flavors. The cooking process breaks down the ingredients and the finished product contains minerals like calcium, magnesium and phosphorus, in a form which the body can easily absorb.Now I know that making stock is not the most exciting of recipe's to talk about, but once you do have the rich golden finished product, it can be transformed so easily. Boil a portion of the stock, add some minced garlic, ginger and chili, some fish sauce and rice wine vinegar and drop in some cooked noodles. First of all since moving in together with my lovely girlfriend there has been a few things I've noticed- number one, the girl can't get enough of candles, there everywhere even in the bathroom! Number two, is that she likes plants- a lot! I have had a thing about plants ever since I was a kid, it mainly stems from the fact that our house was filled with them, and it was always the job of me and my brother to water them. A job which we hated, mainly because we had no interest in having them and felt that if our parents wanted them, they should water themselves . 2008-04-02 14:04:00 Is it me or has it been a little quiet around here recently? I think I've only just gotten back into the swing of cooking again after my little break. Sofie and I finally made the journey up to IKEA in Belfast over the weekend to get all those essential apartment items after nearly a year. We have been threatening to make the trip, since it opened in December, but it just kept getting put off- but we did it in style and spent a whopping eight hours in the store as if to make up for it! I know that's a bit mad but we did like 4 sweeps of the place and missed out on very little. I love the kitchen stuff in IKEA, and my favourite thing we got on our shopping trip was this cool little kitchen trolley thing which doubles up as both a storage unit and a work top! The recipe itself is fairly straight forward, but the combination of flavours between the peppery rocket, and the saltiness of the prosciutto makes for an interesting dish. It's a good protein packed plate to get you going in the morning, the rocket can be substituted with fresh spinach leaves, to give you an even more vitamins and minerals.Rocket, Prosciutto And Egg's Over Easy(Serves, a very hungry, one!)3 Slices of Prosciutto2 EggsA good handful of Rocket1 Tablespoon of Vegetable OilI think the method may be fairly straight forward but just in case; In a large frying pan fry the two eggs for two minutes, in the same pan drop in the Prosciutto, which takes very little time to cook , and turn the eggs over for a further minute. 2008-03-04 11:20:00 We have a visitor staying with us at the moment, and he eats a lot, no wait, A HELL OF A LOT! After a big dinner of chicken and rice, the other night, he ate two big bowls of Special K, a Banana, and a bag of popcorn. I wouldn't mind, and apologies for being crude, but what worries me is that the amount of toilet paper were going through does not reflect the amount of food being eaten. As you can imagine I am a little worried about his well being, so I decided that healthy longlasting breakfast, full of fibre would do the trick and perhaps keep him running a little more regular.I do hope, I haven't put you off the recipe completely, because it's a darn good one, a healthy twist on classic American pancakes. 2008-02-29 11:36:00 I picked this recipe up while staying with my lovely Auntie Annie during our recent trip to Florida, and it's a real discovery! The combination of Basil and sweetcorn works together to create a pretty a really interesting taste and a perfect side dish to grilled meat or chicken. The recipe itself is fairly straight forward but this one is definitely worth trying.Basil and SweetcornA Good Handful of Fresh Basil4 Corn on the Cob (Fresh if available)1 Tablespoon of ButterA Good sprinkle of Salt and PepperIn a large bowl, slice the the corn off the cob- if your using fresh, don't bother straining any of the excess juice that comes out, it all adds to the flavour. Chop the Basil roughly and put to the side. Place a sauce pan over a medium heat and add the butter until melted. Add the corn, toss, and then add the basil. There is one saving grace in Ashbourne, Co. 2008-02-27 11:52:00 Hello Hello!After a long 3 months, this year's Eurovision dream came to an end on Saturday night, when I was beaten by the nation's favourite Turkey at Eurosong 2008! I have to admit I was a little gutted on the night but it was an amazing experience and I wish them all the best in Serbia!There is a sense of relief and freedom that comes with any sort of ending, and my mind is now able to think beyond whats steps I'm doing, or what I have to do next. I think my girlfriend is very glad to have me back too! It seems to me almost impossible to avoid some sort of illness during these cold months, and generally doctors tend to treat illnesses that have gotten out of hand with strong medicines. I first sampled them homemade at a Swedish friend's house, and was intrigued by the very foreign shape, yet familiar Christmas flavors. When I moved to Sweden last year, I quickly found out they were standard fair for everyday life and were similar to what the croissant does for the french and what the scone does for the English. All in all they were pretty bog standard! However, I was given a Swedish cookbook recently which had the recipe so I had to try recreating them, it's not really your standard fairy cake mixture, but the effort was worth it, even if just to put a smile on my homesick girlfriend!Generally if you stick to the recipe you can't really go wrong, the only variation I made to the recipe was rolling the dough a bit more thinly to get more rolls, but that is entirely up to yourself!If you don't have pearl sugar, which I didn't the first time I made them, you can substitute it with a sprinkling out... 2007-09-18 07:40:00 Well I'm back in the land of the living after a very spontaneous visit to the US, I booked the flights last Monday and found myself in LA the following day! It was my first time to visit LA and I had been promised it was the land of healthy eating, I later discovered this was pretty much as far from the truth as you could get. Perhaps it is the land of healthy eating in comparison to the rest of America , and that would be the only way I could believe this statement to be true!I did finally make my first visit to the wholefoods market, which was an amazing experience and could have kept a foodie like myself entertained for hours! It's just so huge, and has so much produce, I wondered why this sort of supermarket hadn't been opened in Ireland, but I'm not sure we could actually get through the amount of fresh food that is available in the wholefoods markets.
