September Daring Bakers: The Cinnamon Roll

This was my first challenge as a member of the Daring Baker s group and I was excited to tackle it! To be completely honest, I was overwhelmingly relieved that my first challenge appeared to be something I could handle without a lot of complicated steps that might intimidate me.We were provided with the recipes for both cinnamon rolls and sticky buns and had the option to make either one or both. I stuck with the classic cinnamon rolls because I didn't have a doubt that they would definitely go.I didn't run into any problems and in fact the dough was perfectly soft and silky - maybe the best dough I have ever worked with! I wouldn't change a thing from this recipe - it developed a perfect crust and was warm and crumbly inside. There are a million different versions of chili and most people have their tried and true favorite. Nick and I typically don't like very spicy dishes, so this chili recipe that my mom passed along to me from another family member fits the bill for us. It's warm, hearty and not too spicy (not spicy at all if you leave out the chili powder!). The addition of rice and omition of beans certainly make this nontraditional! I have been eating a lot of oatmeal with apples and raisins for breakfast in the mornings and as a result, I've been craving oatmeal raisin cookies. This is my second week of making a batch of soup early on in the week so I have it for lunches throughout the week. This week I decided to browse through some of my cookbooks to look for ideas and I came across the Pasta e Fagioli recipe in Giada De Laurentiis' "Family Dinners" cookbook. Pasta e fagioli is a soup I have had many times, but have never made myself. This was incredibly easy and was ready in less than an hour. My first inclination when thinking about the type of dessert to make for our classic Italian dinner was a cheesecake. I couldn't decide between a plain cheesecake with a fruit topping, a filling of some sort, etc. My friend Amber was nice enough to remind me of a recipe she showed me a couple of weeks ago that I was enamored with - Choco lat e Rum Cheesecake .This was my second time making a cheesecake (the first was an Oreo Cheesecake) and I found it once again to be rather simple. This cheesecake required a few extra steps but none that were complicated or advanced in any way.This recipe called for superfine sugar, which I could not find at my grocery store. After researching for a bit I found that you can easily make your own by merely processing regular granulated sugar in the food processor or blender until it is fine and powdery, which is what I did.I was proud in that I only managed one small crack in the top of the cheesecake! When it's speckled full of sausage, red peppers, onions and mushrooms, that's how!Giada DeLaurentiis' recipe for Dirty Risotto was my first attempt at making risotto a little over a year ago. Needless to say, I fell in love.Risotto is not a quick dish and it is one that requires a good deal of patience, attention and a little bit of arm muscle! In order to prepare the dish perfectly, a small amount of chicken broth is added to the rice mixture and stirred constantly until it is almost completely absorbed. Repeat. Repeat. He felt bad that they were stuck in a hotel and eating out every night and thought that they might enjoy a home cooked meal. For the better part of my baking life (at least 10 years now) I have been haunted by the chocolate chip cookie. It's the most simple of all baking recipes, yet I have struggled to find the perfect recipe and successfully make a cookie that didn't turn into a rock within 5 minutes of coming out of the oven.The classic Nestle recipe? Labor Day weekend. Ahh the glorious three-day transition into my favorite season of the year: Fall. And what does fall mean? Soup of course! No matter that it's still 80 degrees out; my mind has officially switched into fall mode. Since I began working from home I have been hard pressed to find some decent options for lunch, and as a result I end up snacking through most of our pantry. I saw these scones on Annie's blog a while back and I saved them because I thought they looked bright and fresh. These were a cinch to throw together and took less than 10 minute to get into the oven. I must be honest though - Nick and I both agreed that the scones I typically make that either have heavy cream or buttermilk in them are MUCH better. I have had these on my "to make" list for quite some time, but had never gotten the opportunity to try them. My friend Amber introduced me to this seasoning technique for crackers and pretzels and it's so easy that I don't think I'll eat a plain bag of pretzels ever again! My measurements were to scale for the size bag of pretzels I used - adjust as necessary.Ranch Pretzels(Source: Amber's Delectable Delights)9-oz. bag pretzels1/4 cup vegetable oil1-oz. packet Hidden Valley Ranch Dips1/2 teaspoon garlic powder1. Preheat oven to 250 degrees.2. Place the pretzels in a gallon-size ziploc bag. Add the oil, seal the bag and toss to coat. Add the dry ingredients to the bag, seal and toss again until all of the pretzels are coated.3. Spread the pretzels out on a large baking sheet and bake for 15-20 minutes or until the oil has absorbed into the pretzels. Cool and store in an airtight container.

Tonight's meal was extremely easy to throw together - Nick called it "Rachael Ray's Amazing 20-Minute Meal" haha. Nick was reading his latest issue of Men's Health when he came across this recipe and asked me to make it one night. It seemed like an easy enough recipe with ingredients we always have on hand, so when we were trying to decide what to have tonight I figured this would easy to whip up. Tonight I grilled chicken breasts that had been stuffed with smoked gouda and bacon. When Nick came home I told him I had tried something different and he said, "You said it's cheese and bacon - it has to be good!" Such a wise man :)To stuff the chicken I cut a slit almost as long as the breast and almost as deep. I then stuffed an equal amount of smoked gouda and bacon as far in as I could. These Moroccan -inspired stuffed peppers were an idea born from a recipe that fellow Nestie Cara had posted on her blog a week or two ago. I modified the recipe to suit our tastes (added a meat - chicken - and altered some of the remaining ingredients based on our preferences). The meal turned out to be very good, however there was something that seemed to be lacking. Unlike conventional stuffed pepper recipes that I have made before, this one did not include a sauce or binding component. That is one thing that I would add to this dish to make it a little heartier and juicier (any ideas??). Until today I had never made brownies from scratch; I always used the box mix and as a result, I always felt a twinge of guilt. Making homemade brownies has been on my kitchen to-do list for a long time and when I saw the Brownie babe event I had the perfect excuse to finally whip up a batch!Samoas® Girl Scout cookies are a favorite in our house and I couldn't remember ever seeing these cookies morphed into a brownie. Hold the florentine.I grew up eating pasta carbonara, as both my mom and grandma make it often, but I had never attempted the dish myself. I saw this recipe in a recent Cooking Light issue and saved it for a night when I just wanted to throw something together. This was one of those nights.The only reason that the spinach is missing is because we only have half a bag left in the fridge and I know Nick will want a salad with it for lunch tomorrow. The spinach would be a great addition to this dish, but it was fabulous without it as well! The texture was perfectly creamy and the combination of onion and black pepper gave it a nice bite.
