TANDOORI CHICKEN
2007-11-28 14:17:00
TANDOORI CHICKEN Ingredients: 6 pieces Thawed chicken, skinned 2 tsp Ground Coriander 2 tsp Masala (Tandoori paste is available) Red pepper powder Dash Garlic powder Salt to taste 1 tsp Ground jeera Soy sauce (or yogurt needed only if tandoori masala is used) Method If you are using the ready made tandoori paste then life is a lot easier. Replace all occurences of masala and soy sauce (or yogurt) with the tandoori paste. Take the chicken and make deep cuts in it (so that the Masalas seeps in quickly). If you are using soy sauce as the base, put some on the chicken pieces and let it seep in the cuts. Rub in the Masalas as a mixture or one at a time. The idea is to let the Masalas seep in the cuts with the soy sauce. You can leave it for little while to seep in. If you are using yogurt, you’ll get a more authentic taste since the original TC is after all marinated in it. In this case, mix the Masalas in the yogurt first and then rub the stuff into the chicken cuts as before. The...

Easy Steps To Stir Fry
2007-11-28 14:13:00
Stir fry method of cooking is very healthy. It uses less oil and leaves the food crisp and not overly cooked, and thus not stripping out all the nutrients and vitamins from raw food especially vegetables. Stir frying only takes a matter of minutes if you follow these few easy steps. 1.Well equipped Firstly, a wok is a must, not pan, a big round wok. A round-based one works well using gas burner while a flat based one works well on electric stoves. A good wok is heavy usually made of cast iron or carbonated steel, easily available is departmental store and Asian hardware shops. Teflon based just doesn’t give you the same rich flavor. When first purchased, the iron wok must be seasoned, heat the wok until smoke start rises from the wok, and then pour in a table spoon of peanut oil. Wipe the oil around the wok surface and throw away excessive oil. This way, all dirt will be removed from the wok surface. Secondly, a ladle is a must. Organic milk cuts eczema in children
2007-11-16 14:23:00
A newly published scientific study shows the incidence of eczema in infants fed on organic dairy products, and whose mothers also consumed organic dairy products, is 36 per cent lower than in children who consume conventional dairy products. While there is a significant body of evidence showing organic food contains higher levels of beneficial nutrients than non-organic foods, this is the first example of a definite health impact (i.e. isolated from other potential beneficial factors) of organic food consumption being published in a peer reviewed journal. While the study confirms it is organic dairy consumption that protects against the development of eczema, the scientists could only hypothesise as to the mechanism which delivered this protection. Their hypothesis follows the established facts of increased levels of the beneficial conjugated linoleic acid isomers found in milk from organically managed cows. A separate recent study confirms that higher levels of conjugated linoleic ...

SA Wine industry stages major recovery
2007-11-16 14:23:00
The South Australian wine industry has begun a major recovery with export sales booming, following several years of overproduction. Wine exports from Adelaide have rocketed to $573 million in the first quarter of this year, more than 40 per cent up on the same period last year. The industry described the rapid increase as a clear indication bottled shipments are growing strongly, prices are starting to rise and less discounted wine is being sold. The strong turnaround has raised the prospect of further price rises on the domestic and export markets next year. Australian Wine and Brandy Corporation Information and Analysis manager Lawrie Stanford said that showed the potential of the industry when not burdened by oversupply. “It shows the potential to develop bottled wine sales and that the market is prepared to pay fair prices,” he said. “It’s not just a change in the mix but prices are improving and we are growing our premium, super premium and specialty sec...

WA’s grape expectation
2007-11-16 14:18:00
While most of the country was battered by drought, frost, hail and other extremes of weather that reduced yields by about 30 per cent, WA had one of its best red wine vintages—and a pretty handy white wine vintage. Red grapes were particularly hammered in the east — with 2007 yields down almost 40 per cent and quality no better than average, leaving local winemakers in a strong position to take advantage of a shortfall. The situation will be even worse for eastern states vignerons next year. With vines struggling to recover, drought is expected to keep yields low in 2008, especially in the worst affected regions, along the Murray and Murrumbidgee rivers. Five-star performers in STM’s top 100 wines for 2007 include local wineries Ferngrove, Sandalford and Stella Bella, each with four wines, and Leeuwin Estate and Tasmania’s Bay of Fires (with Kalgoorlie-born Fran Austin as winemaker) with three wines. With good winter rains in WA, all the signs are that the state&...

Everyone we spoke to had a great time and they all thought the catering was magnificent. I especially appreciated your helpfulness in meeting our requirements for the “country tents” and for hunting up both the bread dumplings and the table decorations. I know that Glen Eira were also pleased with the professional way you operated in their kitchens. I’d be pleased to recommend Catering on the Move to anyone and I wish you the best for the future. The Coffee Grinder
2007-11-11 01:54:00
Coffee lovers will tell you that the best coffee comes from beans grounded immediately before the coffee is brewed. Old Time coffee drinkers know this by heart. That’s why no kitchen is complete without a coffee grinder. Waking up in the morning and grinding up a fresh batch of coffee beans and throwing it into the coffee maker and then anticipating that first sip of fresh hot coffee! Now that is the good life! What Makes a Great Coffee Grinder? When it comes to coffee grinders, there to basic types. One is called burr grinders and the other is called blade grinders. The difference between these two is basically how the beans are processed. Blade coffee grinders use a spinning blade to grind up the coffee beans. Burr grinders use burrs to grind up coffee beans. Burrs resemble plates with gears on them. One of the burrs is stationary, while the other one spins and grinds up the coffee beans. When trying to make a great cup of coffee, one has to keep a couple things in mind. The tas...

Red And White Wine - The Differences
2007-11-11 01:53:00
Most people have tried various red wines and white wines and they still have no idea what differentiates both. If you have no clue, then this article will give you the factors to look for; apart from the color which is obvious. Red and white wines can either be dry or sweet or anywhere in between. The red wine is more robust, more complex than white wines. White wines are generally lighter without the complexity of reds. Though the grapes used do matter, but the main difference is in the fermentation process. Red wines are mostly made from red and black grapes, and white wines from green grapes. Sometimes red, black and black grapes are combined. During the fermentation process for white wine, the stems, seeds and grape skin are gently removed from the grape juice after it has been squeezed from the pressing machine. On the other hand, during fermentation process for red wines the grape stems, seeds and grape skins are left in the squeezed juice. By leaving the stems, seeds and grape ...

An Overview Of Latin America Empanadas
2007-11-11 01:52:00
The term empanada simply means breaded-as in breaded chicken or vegetables. However, in South America , the word has grown to refer to a stuffed, semi-circular pastry. Although the empanada has different incarnations in various countries, it always consists of a stuffing-be it a cheese, vegetable or meat-wrapped in dough, and then baked or fried. Fruit filling can be used to create dessert empanadas. In Argentina, the country that is perhaps most associated with the empanada, empanadas are served frequently as appetizers, and consist primarily of ground beef, sometimes spiced with cumin. In Bolivia, in addition to beef or chicken, empanadas often contain potatoes, peas, carrots, and either a quail’s egg, olive or raisins. Bolivians also eat fried cheese empanadas, which are brushed with sugar icing. In Chile, because beef is more expensive, some of the beef filling is replaced with minced onion. Chileans eat empanadas particularly on September 18, during their national celebrat...

Using a smoker is easier than lighting a barbeque and it produces tastier meat. A smoker is a piece of equipment that cooks food over heat created by burning wood, rather than burning coals. Once you have the know-how to use a smoker you will be able to make terrific food with unbelievable flavor. The secret to knowing how to use a smoker is all in the wood.
