Lunch at Salonika Gyros, Pittsburgh, PA
2009-05-01 01:00:00 I came across some pictures of delicious chicken on my laptop the other day. It brought back memories from one of my past trips to Pittsburgh . Salonika Gyros is a fast food Greek restaurant that looks like a typical pizza shop, but also has a bar in the back. It is located at 133 6th St, in the downtown Pittsburgh area.When I recently googled this restaurant, I came across this. So according to the Pittsburgh City Paper, they were voted the 3rd Best Greek Restaurant in Pittsburgh by their readers. I thought that was cool, until I noticed that P.F. Chang's was voted as the 3rd Best Chinese Restaurant. I chucked for a bit. 2009-04-13 16:47:00 I was hanging out at my buddy's place for a few days and we wanted to arrange a fun experiment in his kitchen. We thought about maybe buying a whole chicken and roasting it in the oven. Neither of us have ever cooked an entire chicken before. Since we had no experience at all, we did a quick google search on cooking a whole chicken. We came across articles and recipes on beer butt chicken also known as beer in the butt chicken.So the basic idea behind it, is to stick a half full can of beer up the chicken's cavity and cook the chicken either by grilling, smoking, or simply baking it in the oven. The beer acts as a source of moisture to help keep the chicken from drying up when cooking, making the meat juicy.I am guessing that the type of beer will probably have an effect on the chicken. Spinach and Mushroom Polenta Quiche

Instead of using a pastry crust for the quiche, I decided to use cooked polenta as the top and bottom layers. The original recipe did not use any butter for their pastry crust. 2009-03-23 20:41:00 I was recently introduced to polenta. I don?t believe I?ve tried it before and wasn?t really sure what it was. Wikipedia tells me that polenta is boiled cornmeal. I made a trip to the supermarket and purchased a small bag of Bob?s Red Mill Corn Grits Polenta. Since I was new to this, I decided to go with the simple recipe written on the package.Ingredients:6 cups water 1 tsp salt 2 cups Corn Grits-Polenta 3 tbsp butter Directions:In a large pan, bring water and salt to a boil.Gradually stir in polenta. Reduce heat and simmer gentlyStir frequently until mixture is very thickAdd in butter and stir well.Pour polenta into bowl and let set for 10 minutes. Invert onto a flat plate. 2009-02-25 19:27:00 I came across a bunch of apples sitting on the kitchen table. They have been sitting there for a while and I was afraid they might go rotten. I decided to experiment with making vegan apple crisps.Ingredients:2/3 cup rolled oats1/3 cup all purpose flour1/3 cup dark brown sugar1/3 cup pecans6 tbsp apple sauce4 medium apples1/2 cup apple juice1 tbsp arrowroot1 tsp cinnamon1/2 tsp ground nutmeg1/4 tsp all spice1/8 tsp clovesDirections:Preheat oven to 375 degrees.In a bowl, mix the oats, flour, sugar, pecans, and applesauce. 2009-02-07 20:33:00 Sometimes, I like putting together large batches of homemade wontons and dumplings. Portion them into small bags and throw them in the freezer. It?s great for those busy days. Simply defrost, boil or stream them, and serve with your dipping sauce of choice. I like to eat it with spicy dumpling sauces, citrus soy sauce, or simply light soy sauce. They are also great in soup. I would throw a couple of pieces in my bowl of noodles to fancy it up.The dumpling filling can pretty much be anything you like. I used a meat mixture consisted of grounded pork and shrimp, seasoned slightly with pepper. Usually I pick up the wonton/dumpling wrappers from the Asian grocery stores. There are quite a lot of varieties to choose from. There are egg ones, wheat ones, round ones, squared ones, regional ones, etc. For these dumplings, I bought some Nasoya wonton wrappers from the local supermarket. Since I received pretty good reviews about the cookies, I decided to post the recipes.What I did was, I put together a basic cookie dough recipe and then customize the cookies by adding other ingredients and spices. I tried to minimize the amount of sugar since a great number of cookie recipes are pretty sugary. I also used butter substitute instead of butter, to minimize the amount of fat and cholesterol. In preparation for New Years, I set myself a budget and made a trip to Warehouse Wine and Spirits, located at 735 Broadway in Manhattan, NYC. It is probably my favorite liquor store in the city, with its massive selections, helpful staff, and great prices.I bought a bottle of champagne and a bottle of red wine. I don?t remember the names. The staff at the store recommended the $15 half-size bottle of French champagne. On my way out, I grabbed a random bottle of Rioja red wine. It was less than $10 and had a pretty looking label. The champagne was amazing! I was happy to invest in a smaller bottle of some nice champagne rather than a larger bottle of less as wonderful champagne. Coconut Mung bean Mochi (Rice cake)
2009-01-05 14:00:00 The idea to make glutinous rice cakes came to me when I was at an Asian Bakery. They had tiny trays of different types of Mochi cakes, filled with red bean or some sweet stuff and covered with coconut flakes (like Japanese Daifuku). I decided to pick up some Mochiko flour at the supermarket and experiment with it at the kitchen. Mochiko flour, also known as Sweet Rice Flour, is made from short-grain glutinous rice. It has high starch content and contains no gluten. It acts great as a flour substitute for people who have gluten allergies. Mochiko flour is used commonly in Asia to make variations of rice noodles and other baked goods and desserts. They add way too much brown sugar and sometimes even add an extra layer of melted brown sugar on top. One refers to waffles served along with fried chicken. The other refers to a plate of pulled stewed chicken on top of a waffle, covered with gravy. This is of Pennsylvania Dutch influence. Tofu Pumpkin Pie

I have been looking forward to baking this for some time and was very excited this past weekend when I finally made time for it. I am a big fan of pies and cakes. Also, I am always intrigued by vegan food and the many things you can do with tofu. I have made tofu cheesecakes in the past (Blueberry tofu cheesecake and Blackberry vegan tofu cheesecake) and those turned out totally delightful. The ingredient tofu is a great substitute for milk and eggs. I imagined tofu pumpkin pie would just be as amazing!I ended up making one 9 inch pumpkin pie and 6 mini ones. I used Keebler ReadyCrust graham cracker piecrust. I scaled up the ingredients a little. I only found 29 oz size cans of pumpkin puree and decided use it all up.The tofu pumpkin pies came out amazing! The spices made the pie very flavorful. Thai Sticky Sweet Rice Dessert
2008-11-23 04:18:00 Here is a recipe for an awesome Thai dessert!Ingredients:1.5 cup glutinous rice (also known as sticky rice or sweet rice)1 14oz can of coconut milk5 tbsp light brown sugar1 tsp salt(plus side of sliced mangos!!)Directions:Soak the rice in cold water for a few hours. (Alternatively, pour boiling water on the rice and let it soak for 15 minutes or so.) Drain the rice.Cook the rice. (Pick your method: steamer, rice cooker, or stove pot.) I chose the pot method. I cooked the rice with about 2 cups of water for about 15-20 minutes. When the rice starts to pump up and most of the water is gone, I turned off the heat and covered the rice for another 10 minutes. In a small saucepan, heat the coconut milk, sugar, and salt. Stir constantly and let it simmer. When it starts to boil, remove from heat.Pour the coconut milk over the rice. I did not think too much of it at first and casually walked by, until I read the words ?pumpkin ice cream?!It was pretty awesome. The pumpkin flavor was not too overwhelming but it was noticeable enough. It was very delicious. The ice cream was very creamy. They have a treat selection of ice cream flavors ranging from the normal flavors, like rocky road to many other interesting less traditional flavors, like lychee and honeydew. Taro flavored ice cream would also be a great choice. I love to eat sweet potatoes. Sweet potato fries are delicious. Mashed sweet potatoes with a pinch of cinnamon are awesome (unless they add too much brown sugar and make it way too sweet and difficult to eat). I had this recipe for a tofu pumpkin pie that I was originally planning to make last week, but I didn't have the time to get to it. For now, I will post the recipe. Ingredients:12 inch pie crust1 lb firm tofu16 oz pumpkin puree1 cup maple syrup1 tbsp molasses (or substitute with 12 tbsp of brown sugar)½ tsp salt1 tsp vanilla extract1 tsp ground cinnamon¼ tsp ground nutmeg¼ tsp ground all spiceDirections:Preheat the oven to 350 degrees.Blend all the ingredients in a food processor until smooth. I noticed that their menu has grown and is now filled with many pictures of pretty looking, decorative dishes. They upgraded their beverage menus to include various fancy teas (blooming teas too), fresh juices, milkshakes, and smoothies. They also offer mock cocktails featuring exotic tropical fruits. Most Asian restaurants provide you with a cup of tea or glass of water as the default beverage when you are seated at your table. Beef Stew Recipe
2008-09-23 19:33:00 Ingredients:2.7 lbs beef chuck (cubes)salt and pepperolive oil2 tbsp butter (melted)2 pearl onions (chopped into eighths)4 tbsp minced garlic2 tbsp tomato paste0.5 lb mushrooms, thinly sliced3 tbsp flour1/4 tsp thyme, oregano, and basil1/8 tsp allspice2 tsp red wine vinegar, to taste3 cups beef brothYour choice of vegetables (I used about 4 cups of broccoli, carrots, beans, peas, and baby corn. Potatoes and chopped celery would be a good additions as well.)Directions:Season the beef with salt and pepper.Heat some olive oil in a pan and saute the beef, a couple of minutes on each side. 2008-09-22 23:00:00 Making beef stew in a slow cooker is a long journey. I managed to take a few snapshots last night after filling up the pot with the many ingredients. I think I went a little overboard with the ingredients and the pot was filled to the top. I also threw in some fresh parsley to add some flavor and awesome aroma.I let the beef stew slow cook overnight, for about 8 hours. When I woke up this morning, I hurried to the kitchen to check up on it. As I opened the lid, the smell of delightful beef stew burst from the pot. I was pretty amazed. I gave it a stir as I watched in excitement. I grab a soup spoon and gave it a taste. It was my first time making a beef stew, but this was not bad at all. In fact, it was very flavorful. The Wonders of Street Fairs

Therefore, whenever I come across one unexpectedly, I get uber joyful and I find myself skipping towards the crowded and rowdy road. I came across one near Lincoln Square, in New York City, a while back. I only walked around for about 10 minutes, but it was a blast. I picked up some bootleg designer shades for ten bucks (score!).Street fairs have wonderful food. You can basically find anything from the super greasy to the super sugary. My favorites include... gyros, funnel cake, fried dough, shish kabobs, fresh squeeze lemonade, italian ice, etc. The list goes on. But, one of my ultimate favorites are sweet crepes. There's a very detailed recipe for making Pho and also some background information on Pho. Andrea Nguyen, founder of the website, also has a wonderful Vietnamese cookbook available Into the Vietnamese Kitchen. I actually own this book. It is amazing!The following recipe for Pho was adapted from the website. The only difference is that I used Beef Pho broth mix and seasoning packets. 2008-05-24 23:31:00 I came across a local farmers market during my last few hours in Washington DC. Actually, I had already checked out of the hotel and was dragging my suitcase around. But, once I saw this sign, I had to walk towards the arrow and check out this farmers market.I'm a big fan of farmers markets. You always find super fresh vegetables and totally delectable fruits of all sorts. You can't find anything as fresh as these in a supermarket. There's often an amazing selection of homemade jams and honeys and that sort.Oh yeah, most importantly, support local agriculture! (One of the vendors were from Pennsylvania, but they are only about 2 hours away. This Chinatown is so different from the New York City one. This Chinatown is so clean and modernized. Unlike the New York City Chinatown, there's no smell of fish and there's no unidentifiable liquids leaking on the floors. There's no loud street vendors or people trying to sell you fake purses or bootleg DVDs. To my surprise, I found a Regals movie theater there and also a Washington Sports Club. There were tons of big name restaurants like Legals Seafood, Fuddruckers, and much more. There was even a Hooters!!!One of the tourist attractions here is this Friendship Arch, which is this traditional Chinese brick gate archway that hovers over the road.Well, it was about lunch time and I wanted to go try out some local Chinese food joint.
