Grilled Salmon with Herbs

If you recall, I mentioned in my earlier post that my hubby wants fish for dinner. This is his latest favourite fish dish.However, accordingly to the seller for dill which is used in this dish, not many people like it as the smell is rather strong. It is rather strong but that's exactly why it's used. I don't eat cooked salmon (I only like it as sashimi) because of the smell when it's cooked but when it's cooked with dill, when I can smell is the aroma of dill. Yeah, I'm not so put off by cooked salmon now.Another plus point for this dish - very easy and fast to cook. Nice for those who are come back home late but still want some hot home cooked dinner. Just blanch or steam some veggies to go with this and dinner is done.I'm using oven to cook this but if you do not have one, you can try steaming it. Homemade Garlic Spread

My son and me love to each garlic bread! The more spread it has the better it is. Yeah, we both love to eat garlic. :P So, don't talk to us after dinner. XDI used to buy McCormick's Garlic spread with bacon bits but I was not able to find it since more than a year ago. Since then, I started making my more garlic spread.It's really very easy. The hardest could be getting the garlic into paste-like. If you using the knife, it's going to take you awhile for the garlic to be paste-like but it will work. It just takes longer. I do it with the help of a little tool, the grater. You can of course use normal the big one if you already have one at home. Mine is a tiny one which is smaller than my palm.Oh, you can use this method to grate ginger to get the ginger juice. At least this is how I did it.For my garlic spread, I mixed 4 glove of grated garlic to 1 tablespoon of softened butter. Huh? What 15 minutes cupcake? Weird name, right? Well, I don't how to call this. :P It actually a normal cupcake except this is recipe only takes 15 minutes to prepare and 15 minutes to bake. Hence, I gave it this name. ;) Had this idea to try this out after seeing a similar recipe on cake in a magazine.It's not only fast to make but very easy too. And you will be surprised with the results too. At least, my husband and I was surprised. My husband and kids like this dish but I will only cook this if I have the mood and the time. It's not difficult to make this but it's time consuming. I ended up having to think what else to do with the rest of the salt.If you don't mind the time spend, try this. Many many years ago when I was still working, my friend brought me to Alexandra Market and ordered this Flour Vermicelli. It's unlike what we usually take which requires the use of chopsticks. The vermicelli is all crushed and all you need is a spoon and the soup is in thick form.In Chinese, it's called ???. It's kind of like what Shihlin has but I had this many year before Shihlin came to Singapore and I have not been to Taiwan either. I really love chicken cooked with herbs dishes. They just taste and smell so nice not to mentioned good for general health.This is one of the herbal dish I cook rather often. I used to steam it before I have an oven. This time I did it a little different. I roast it! I used the way I did the Roast Chicken with Garlic to make this. It's still taste the same except now we have crispy skin. Okay, it's a bit burned here. :PThis chicken meat is soft, moist and filled with the sweetness of herbs! If I were to do the the conventional way which is steaming, I won't get this result just in 1 to 1 1/2 hours. I'm confused! Is muffin like cupcake? Is cupcake like cake? Are you?I just found muffins are less sweet compared to cupcakes (go have a look at the sugar the two recipes require) Muffin s are also heavier where as cupcakes which are actually cakes baked in cups are much lighter and fluffier.Oh, those you see with icing and sweet and cute decorative stuff on are usually cupcakes not muffins.Hmm ... I usually cook something simple on Saturdays. No rice, soup and a few side dishes. Just one dish to settle dinner because I do major cleaning on Saturday.I don't want to spend time washing and cleaning the pots, pans and dishes. This dish always reminds me of Buffalo Wings. They are not the same though, as this one I cooked is not as hot. It's more tangy. The only thing that made it hot is the black pepper. If you can handle hot stuff, add some Tabasco to the sauce. I can never take that. My daughter doesn't likes fruits but surprisingly she will take soup with fruits in it. My son on the other hand, hates it. I just can't please everyone, can I?This is one of the fruit soups that my daughter like, which my son hates. It's nice and nourishing. Weather is super hot lately, especially during noon time. I feel like sitting in a bubble bath filled bath tub after I fetch the kids home from school, except I don't have a bath tub. So the first time I do when I reach home is head straight to my fridge to grab something cold to drink.Yesterday, I left a can of lychee in the fridge so I could fix something cool and refreshing today. Blanched Prawns with Sweet Mustard

You know, prawns with mayonnaise is always a very popular dish. Everyone doesn't seem to get bored with that dish. But I get bored cooking that dish too often. :PSo, for a change and something much much more simpler, I did this. It's like the cold dish we get at Chinese wedding dinner but then those were served with mayonnaise (again). Mine, I served it with sweet mustard.It's super simple. You just need to blanch your prawns then submerged them in previously boiled cooled water. Next, you remove all the shells and sliced them in halves. Arrange them on a plate, spread sweet mustard sparingly over it or you can serve the sauce separately and it's all done. Simple?For the sweet mustard sauce, I add an additional 1/2 tablespoon of honey to 1 1/2 tablespoon of sweet mustard to make it milder. The other day, I did BBQ Ribs for dinner and I made potatoes to go with it. The ribs were flavourful and it goes really well with these potatoes.Seriously, I could eat the potatoes alone. I haven't make kid's meal for a long time. It's a good sigh because this means my son has no eating problem. Then why did I make one today? Well, it because I was very pleased that he finished a whole plate of Chicken Rice this afternoon on his own and he didn't take very long to do it too. I have been waiting for this day to come. *smiles* So, I thought I will spend some time to make his dinner interesting like before, just for today.What I had in mind was those swiss roll with cream and fruits inside. Okay, this is a kid's side dish. Yay, It doesn't look like a kiddy food. But they find it interesting that their food is served in a spoon instead of the usual. And since I sort of stack the food in layers and there isn't space for them to push the food they don't want aside, they just have to try to eat it. I told them, it's only two small pieces (of mushroom). This is yet other recipe I found that is easy to follow. The results for this is rather pretty and it taste like a cross between cookie and tart. You know, a bit 'cakey'. We love prawns and I must say this is one of the easiest and fastest prawn dish to make. The only important thing you need to have is fresh prawns.Oh! I have been wanting to try making ice-cream on my own for quite some time, especially after reading this! But Vi's method requires half and half (of milk and cream) and kosher salt which I could only get at certain supermarket at town. How do you fry your egg? My husband like his sunny-side up. I like mine with the yolk covered by the white, like pouched eggs. My kids obviously like them in shapes! I realised I didn't post this. This was done quite some time back. To be exact, during Chinese New Year period as an experiment and it turn out very well.It all started with the left-over pineapple tart's crust dough and a bag of Mars Minis we bought during Christmas. I got this idea from the pineapple cocoon.But I got to warn you first if you are going to try this. It keeps exploding like a volcano with sticky caramel chocolate. It was better on my second batch. The trick is, make the crust thin and bake on low heat. So the puff balls will be baked before they explode. At most you get are crack lines.The is definitely for those with sweet tooth, like me! This is my husband's favourite fish dish. Phew! At least it's not expensive cod. This is just the opposite. It's cheap! It only cost me a dollar to get one Selar. But it doesn't taste cheap though. *laughs*As it's a hassle to prepare the spices, I usually do more and keep it in the fridge for a few more days. It goes quite well with squid too.If you can't get banana leaf, you can use aluminum foil, not that it taste nice lah. At least you could cover it (like a tent) to bake. So the fish won't get too dried up, exposed to direct baking and to let the fish gets the flavours. I think I have the weirdest kids. I totally didn't expect them to like this soup but they love it! They ended up having rice with this soup only, totally ignoring the rest of the dishes. My son had an extra 1/2 a bowl of rice and even finished the cabbage in it. Not to mentioned, they finished it rather fast too.This is one of my comfort soup. My mother cooked this a lot when I was young. If you remembered, I mentioned before my mother doesn't really know how to cook. She made this soup using stock cubes and added (minced) meatball in it. So there's soup, veg and meat. No headaches. One dish settled the dinner. Simple *laughs*Here, I used home-made chicken broth instead. It's really simple to make. I did a batch of egg tarts as tea-break snacks for my husband's colleagues. I saved some of the pastry for the crust for my little experiment. And it turn out quite well too. My list of upcoming recipes are getting too long and I'm losing my notes (just realised the kids are colouring my food pictures on my notes :P) So, sorry if I seem less 'chatty' or perhaps you are glad I am. *laughs*Anyway, this is one of the kid's favourites and mine too.
