Prawn Pancake ????

We love going to ??? and their prawn pancake is one of the dishes we will order. Here I am doing a replicate of the dish but a much meaty version of it. You be surprised how easy it is to do. Do find time to try making it yourself. Ingredients: 1 sheet Dried Bean Curd Skin, cleaned with a damp cloth to reduced saltiness 500g Small Prawns 1/2 tablespoon Chopped Coriander (optional) 1/2 tablespoon Corn Flour A pinch of salt Corn flour for dusting Oil for pan frying How to do it: Shell and devien prawns. The shells can be retain to make stock. Retain 8 prawns and minced the rest with a pinch of salt and corn flour into paste. Set aside. Blanch the rest of the prawns to almost cooked. Plunge in cool water to stop cooking. Chop blanched prawns in 3 pieces each. Mix chopped prawns with prawn paste. Layer a piece of cleaned bean curd skin, size abt 20cm x 40cm, flat. Dark Soy Sauce Chicken ???

This is one of my childhood dish that I often eat at my aunt's place.  Sadly, it doesn't come close to the taste that I can recall but still acceptable. Plus point for this dish is it's fast and easy to cook. I'm using mid joint wings for this dish. You can use drumsticks chopped into smaller pieces, which is what my aunt used to do. Ingredients: 6 Mid Joint Wings or 2 Drumstick chopped into 3 pcs each 1 Large Onion, chopped into chunks 1 Red Chilli, de-seed and sliced into pieces Oil for frying Marinade: 1/2 teaspoon Salt 1/2 teaspoon Sesame Seed Oil 1 1/2 tablespoon Corn Flour Seasonings: 1/2 tablespoon Oyster Sauce 2 tablespoon Light Soy Sauce 1 tablespoon Dark Soy Sauce (I use Tiger Premium Dark Soy Sauce) 1 tablespoon Sugar 200ml Water How to do it: Marinate chicken pieces with marinade for half an hour. Baked Cod Teriyaki ??????

Here's another easy and simple. Before I have an oven I use to make this dish using the regular pan. The ingredients are the same. Only difference is the cooking method. The latter method requires more steps and monitoring. The flavour is more intense too. Now with an oven, I prefer the easier and the less hassle way to do it. If you want an even easier way, use instant teriyaki sauce which can be easily found in supermarkets. I prefer to make my own marinade as it allows me to control the flavours. Whichever way you like, this is one easy dish you have to try. Ingredients: 1 piece of Cod or Salmon Marinade: 1 tablespoon Brown Sugar or regular fine sugar 1 tablespoon Mirin 1 tablespoon Wine 2 tablespoon Soy Sauce How to do it: Mix the marinade. Place cod in a ziploc bag and pour in the marinade. Squeeze the air out and seal the bag. Leave cod to marinate in the fridge for at least 1/2 an hour. Baked Mussels in Tomato Sauce with Cheese ????????????

I was trying to clear whatever I have in the fridge and in my store before we move house to make thing easier. This was a combination of (frozen) mussels, a can of tomato base pasta sauce and mozzarella cheese which was exactly what I had and wanted to clear. It's an easy dish. Almost an instant dish. You could have it with pasta but I had it with bread, a la chilli crab. :P Ingredients: 10 Frozen Mussels 2/3 - 1 can Campbell's Prego Tomato Base Pasta Sauce 1 handful Shredded Mozzarella Cheese Salt and Ground Black Pepper to taste Sprinkle of Dried Parsley (optional) How to do it: Steam mussels for 2 minutes. Drain and set in an oven proof dish. Pour Pasta sauce over. Season with salt and ground black pepper. Give it a toss. Top with Mozzarella Cheese. I'm back, finally! If you are wondering what's with the long absence, we have been busy looking for a new place! Renovation was hell for us as we did not engage an ID or a main contractor. We did all the planning, designing, sourcing, etc, on our own. Hence, we have different contractors for different jobs and we had to oversee and co-ordinate the whole renovation works ourselves. Thank God it's all over now and we have settled in our new home, for just a month. Hopefully, blogging will be more regular from now, that is, after I find time figuring out all the new changes in Blogger.  Looks like Blogger has undergone a lot of changes too while I was gone. Anyway, all the photos of my posts from 2006 to 2007 have gone missing and I'm not getting any help from Blogger on how to get them back. I guess I have no choice but to upload them again. Glutinous Stuffed Squid ???

I had this years ago and have never come across it again. I totally miss it, hence I'm trying my luck to replicate it. This is my second attempt on this dish. It's definitely much better my first attempt. ;) If you would like try it out, here's how I did it. I soaked about 4 to 5 tablespoon of glutinous rice, which is enough for 2 squids, in water BUT seasoned with a tablespoon of 1/2 tablespoon of light soy sauce, 1/4 tablespoon each of sugar and mirin. I soaked the rice for 3 hours. Meanwhile, remove the innards of the squids. When the rice is done soaking, stuff the rice in the squid till 3/4 full. Use a toothpick or skewer to seal the opening. However, be careful not to tear the squid because it will be harder to secure it again and not having it 'explode' while cooking. Place the stuffed squids in a pot with enough water covering it. Add in 2 tablespoon of light soy sauce, 1 tablespoon Mirin, and a 1 tablespoon of sugar. Bring it to a gentle boil then reduce to a simmer...

It had been an extremely busy month for me. My son fractured his arm end last month and needed help on almost everything. Then my daughter fell sick. All happened while my husband was on his business trip. We sold our place and was busy hunting for a new place this month too. We almost gave up and wanted to rent a place instead. Thank goodness everything went well in the end; well almost everything. Now we are busy packing, while planning the interior design of our new place on our own. I had a sudden craving for baked rice and since I had all the ingredients needed, I decided to make it for my dinner. I don't usually have left over rice but I had a bowl of it as my husband decided to have instant noodle instead of home cooked dinner the night before. Grrrr .... Anyway, I didn't turn off my rice cooker hence my bowl of rice was still rather 'fresh'. I don't really like over night rice as it's a bit on the dry side and not as fluffy. You can use freshly cooked rice or over night rice, which ever you prefer. I happened to chance upon this really cute recipe and I thought I'll try it with my daughter since Easter is just around the corner. Honestly, I find it harder than it looks and a lot messier. My daughter gave up doing it half way doing it and left me to finish it. I only did 5 eggs and use the rest to do something easier and less messy. :P I didn't have plastic egg that is required for this so I use Kinder Surprise Egg instead. It works fine too. Take note that the mixture will hardens when it's cooled, so you got to work fast! If you want to do this over the weekend, here's the recipe, which I've copied over for easy reference. Cream Crackers Meatballs ?????

Not too long ago, I shared how I used Rice Krispies to coat meatballs instead of the usual breadcrumbs.  Using the same ingredients, I used a pack of cream crackers instead, which came with a goodie bag I received. I used to eat cream crackers with milo when I was young but the kids now, with a wide range of crackers, won't even take a second look at the plain old cream crackers. However, the humble cream cracker can have other uses too. I crashed a few pieces of the crackers in a zic-loc bag using a rolling pin and rolled the meatballs on it before deep frying them till they turned golden brown. The meatballs coated with crushed cream crackers were not as crispy as the ones with rice krispies but I love the smell of the cream crackers meatballs and it's much cheaper too. ;)http://feeds.feedburner.com/wokkingmum

This soup is especially good for those wants to try radish but dislike the smell and the slight bitter taste (like my husband :P). Adding a cob of corn help sweeten the soup and the smell of radish will not be as strong at the same time. Ingredients: 1 Corn , cut into sections 2 Carrot, cut into chunks 1 Radish, cut into chunks 8 Red Dates a handful of Wolfberries 300g Pork Ribs 1.8 litre Wter Salt to taste How to do it: Blanched pork ribs. Add all ingredients except wolfberries in pot. Bring it to a boil and reduce to a simmer. Continue to simmer for 2 hours. Add wolfberries during last 1/2 hour of cooking. Add salt to taste. Pork Fillet with Salted Egg Yolk ??????

One of our all time favourites which I will cooked when we are not so bothered by the cholesterol level contributed by the salted egg yolks. In fact, sometimes, I'll use 3 yolks instead of 2, like in this case. Hence, I leave the egg yolks in bigger pieces so we are able to nibble on it. However, 2 egg yolks are sufficient. You'll notice that I'm using pork loin, which is really tender, instead of the usual prawns for this dish. It's as good! Ingredients: 250g Pork Loin 2-3 Salted Egg Yolk 1 stem Curry Leaves, discard stem 1 Red Chilli, cut 1 tablespoon Butter 2 tablespoon Evaporated Milk 1/3 teaspoon Salt 1/2 teaspoon Sugar Marinade: 1/2 tablespoon Oyster Sauce 1/2 tablespoon Light Soy Sauce 1/2 teaspoon Sugar 1/2 teaspoon Sesame Seed Oil 4 tablespoon Corn Flour 1 Egg a dash of pepper How to do it: Cut meat into bite size. Curried Cauliflower ?????

This is a variation of my roasted cauliflower. I used the same ingredients but added 1/5 teaspoon of curry powder for the spiciness and the lovely colour. I left out the Parmesan cheese here. Just toss the cauliflower with curry powder, olive oil and salt before you roast it in the oven. The rest of the instructions are basically the same as roasted cauliflower. It's one of the days that I do not wish to cook but have to. Hence, all cooking is done using the oven, less work, less washing and cleaning. This is  a super easy to 'cook' dish and I simply love the aroma of baked cauliflower. Ingredients: 220g Cauliflower , cut into florets 1/2 tablespoon Olive Oil 1/4 teaspoon Salt or to taste Sprinkle of Parmesan Cheese (optional) How to do it: Toss florets in oil and salt. Place in an oven proof dish and cover with foil. Bake at 220C for 15 minutes. Remove foil and give the florets a toss. Sprinkle some Parmesan cheese and return to bake uncovered for another 5 to 7 minutes till you get the little brown bits on the top. Serve. PS. This is the results of a chat with a friend over how we can replace the usual pork ribs with ham. :P I love the coriander stem for the crunch and fragrance but sometimes I have so much of the leaves left that I didn't know what to do with it. So that's definitely going it to the soup.:P  My friend suggested adding onions to make it sweet. It's a trial and error soup that turned out alright for me and the best part of it is, it only takes 20 minutes to prepare and cook! You'll enjoy this if you like coriander. Ingredients: (1 serving) 1/3 tablespoon Butter 1 small Onion, diced 2 clove Garlic, chopped 4-5 slices or 100g Ham, chopped 1 big handful of Coriander Leaves, chopped 250ml Chicken Broth How to do it: Melt butter in pot. Radish and Ribs Stew ?????

I really love radish though there isn't anyone at home sharing the same sentiments. The only thing they will take with radish in it is probably soup. I just need a bowl of rice, maybe two to goes with this stew. I love how the radish in the stew here absorbed all the flavours. It's soft and flavourful and the bone from the ribs just slip off from the meat. And don't forget the sauce! Drizzle it over piping hot rice! Yum! I learned this really simple dish from a friend. I like how she uses fried garlic to steam the fish. You can smell the aroma of the fried garlic when you open the lid of your steamer. Ingredients: A piece of Cod 2 - 3 tbsp chopped Garlic a pinch of Salt and a dash of Pepper Seasonings: 1/2 tsp Salt 1/2 tsp Sugar 1/2 tsp Chicken Powder or Salt to taste How to do it: Wash and pat dry cod. Deep fry 1/2 portion of the garlic till lightly brown.  Drain and set aside. Stir fry the remaining garlic till fragrant.  Add in seasoning and fried garlic and mix well. Arrange fish on dish.  Top with seasoned garlic. Steam for 8 minutes or till cod is completely cooked.  Drizzle some sesame seed oil if desired. Some of you might know that I make dinner twice a day. The first dinner is for the kids and me and the second dinner is for my husband. He has long working hours and usually reached home after eight, sometimes after nine! I didn't like the idea of serving cold food or reheated food (personally I wouldn't like having it either), I rather cook again. However, it's usually something really fast and easy to cook dishes, like what you see here. The salmon is paired with blanched broccoli here. I prepared the lime butter ahead and I blanched the broccoli the same time I grilled the salmon. It only took me less than 10 minutes to get the dish done. 10 minutes for a hot dinner. How's that? One of the soup I make quite often. The soup is rather sweet and my kids who don't drink barley water like this too. Ingredients: 2 Chicken Breast Meat 1 medium Chinese Old Melon 100g Chinese Barley, washed 6 Dried Dates 1.5 litre Water Salt to taste How to do it: Blanch chicken breast meat to remove the scum. I'm back! I have been really busy with my kids since school started. Everyday is a mad day for me. It didn't help that I have this persistent cough for almost 3 months that just won't go away. I hope I'll have more time to recuperate and hopefully squeeze in some time to blog. (I still have lots of recipes pending to post!)  For diners who send me your questions, I'll try to reply them as soon as I can. Sorry for the long wait. Now, back to what I'm going to share. What you see here is just simple meat balls except I used something else for the coating. It made the meat balls extra crispy. It's Rice Krispies! Yes, those you have as breakfast cereals. Paprika Arrowhead Chips ?????

Chinese New Year is just slightly over a month from now and it's the time of the year that you can find Arrowhead (??) or Ngaku. As usual, I couldn't resist buying them when I saw them in the market especially when they were a lot bigger than it was last year. I made some Arrowhead Chips but this time, I seasoned the chips with Paprika and some Ground Black Pepper for a twist. I'm going to experiment making the chips in other flavours. Not too long ago, I went to the supermarket to get Hoisin Sauce but grab the Plum Sauce instead. I only realised my mistake when I got home. Hence, I used it as a dipping sauce when I buy roasted duck. At the rate I'm using it, I know it will end up in the bin when it expired, Not wanting to waste it, I experiment it with one of my rib dish and it went really well. Ingredients: 500g Pork Ribs Salt to taste Marinade: 1 tablespoon Light Soy Sauce 1 tablespoon Chinese Cooking Wine 1 tablespoon Corn Flour 1/2 teaspoon Garlic Power or 1 teaspoon grated garlic Sauce to mix well: 2 tablespoon Plum Sauce 1 tablespoon Tomato Sauce 2 tablespoon Sugar 1/2 tablespoon Water 1/2 teaspoon Worcestershire Sauce How to do it: Marinate pork ribs with marinade for 30 minutes. Cordyceps Militaris Chicken Soup

I had Cordyceps Sinensis ???? regularly when I was pregnant with my first child. And of course I want to do the same when I'm pregnant with my second child. However the price for Cordyceps Sinensis ???? has rose to a extorted price. Then I was introduced to Cordyceps Militaris ???. It has similar medicinal value to Cordyceps Sinensis ???? though not of comparable strength but the price of Cordyceps Militaris ??? is also only a small fraction of the Cordyceps Sinensis too. Logically, it is more effective to take  Cordyceps Militaris ??? regularly then to take Cordyceps Sinensis ???? once a while. We have since been having Cordyceps Militaris ??? for the pass 6 years. Baked Mussels in Garlic Butter

 My husband knows I love mussels so when he saw this pack of mussels when we were (supermarket) shopping, he picked it up for me. The first thing he commented was, "You mean mussels are so cheap?!" Yes, the pack of mussels cost only .... $1! It's small though but I prefer this than the larger one. I used the Garlic Butter Spread I had in the fridge to make this. If you don't have any, you can substitute it with 4 gloves of grated garlic and 1 1/2 teaspoon of garlic powder to 1 1/2 tablespoon of softened butter. Ingredients: 200g Mussels, washed & cleaned 3 clove Garlic, chopped 1 1/2 tbsp Garlic Butter Spread 1 teaspoon Dried Mixed Herbs 1 teaspoon Dried Parsley A pinch of Salt A dash of Ground Black Pepper How to do it: Mix all ingredients except Mussels, salt and ground black pepper together. Bacon Wrapped Wings

I did early this month but was busy to blog about it. I had bought the wings to make another dish but my husband called to informed that he won't be able to return home for dinner. Hence, I decided to make these instead and we can have it anytime. This is my son's favourite wings recipe because of the bacon. :P I'm using low sodium streaky bacon here (which is what I have in the fridge). If you are using normal streaky bacon, do not include salt in your marinade. Ingredients: 8 Mid Joint Wings Juice of 8 Kalamansi 1 1/2 sprig Rosemary, leaves only and chopped finely 1 pinch salt 4 slices low sodium Streaky Bacon, cut into 2 How to do it: Marinate the wings with Kalamansi juice, salt and chopped Rosemary for 1 hours. Leave some chopped Rosemary for later use. Wrapped 1/2 piece of bacon around the wing. Secure with skewer; soaked in water before hand. Sprinkle the remaining chopped Rosemary on the bacon. I had been really busy this whole month and when I have some free time, I would rather play FB games than blog. Hence the lack of post. :P I bought some really cute soup bowls and other crockery from the market today and they were quite a steal too. I bought this cute 'Pinocchio' bowl you see here for $3.50. That set the mood for cooking; with whatever I have in the fridge. :P So asparagus and potato soup it is. The colours reminds me that Christmas is coming! :) Enjoy! Ingredients: 250g Thai Asparagus, diced 1 large potato, diced 1 small onion, diced 1.2 litre Chicken Both 100ml Whipping Cream Salt and Pepper to taste How to do it: Cook asparagus, potato and onion in the chicken broth till tender but not soft. Either blend the vegetable soup in batches or drain the vegetable and blend. Return the vegetable puree to the broth. Whisk to mix well. Bring to a simmer and stir in the whipping cream. Lemon Wings

This is the 6th and last of my round 2 on experiments for wings. I tweaked my recipe for Tangy Wings , to add a little sweetness to this version.  It is similar to the Thai Tangy Wings, except without the spiciness and the sweetness of honey. The sweetness here is from the sugar and there's a light aroma of the lemon. This is one of my favourites and there's no stopping at one for me. Last week, my sister posted some sort of a riddle for her friend on Facebook and the answer to that riddle was my father's Chilled Cockles! That made me missed my parents' cooking.  My parents don't cook that much. Most of which, according to them were the results of "just anyhow cook", and that became a difficulty to replica their recipes. Try as I might, I seldom come close to the original. Not even my father's simple Chilled Cockles. :( One of the dishes my mother did that I loved so much was Assam Sotong (squid). She used small baby sotong, which is hard to come by now, and it was with lots of onion and sauce (to go with the rice). Yum! I'm adapting my mother's recipe for Assam Sotong to make Assam Prawn instead. Not exactly the same as mother's Assam Sotong but I'm sure she will be glad it was her Assam Sotong that gave results to this dish. This is the second flavour of round 2 of my wings experiments, which happened to be my favourite of the three. Inspired by the sweet Thai Chili sauce, which is one of the few chili sauce I can handle, this goes very well with the tangy lime juice I have added to the wings. This is great if you want a Asian flavoured wings but not the usual sweet based one for bbq. Ingredients: 12 Mid-joint Wings 50ml Lime Juice 2 tablespoon Thai Chili Sauce with Garlic 2 tablespoon Light Soy Sauce 1 teaspoon grated Fresh Ginger 1/2 tablespoon Chopped Garlic 2 teaspoon Honey How to do it: Combine all ingredients together. I had this for one of my late dinner. After cooking for the kids and again for my husband, I didn't really have appetite to eat, especially looking at the amount of washing I have to do. Needless to say, I became hunger a few hours later. :P Ingredients for Avocado Salad : 1/2 Avocado, sliced 5 Cherry Tomato, halve Juice of 1/2 lime Same chopped Spring Onion 1 teaspoon Japanese Mayonnaise a dash of pepper How to do it: Mix and toss all ingredients just before serving. Ingredients for Omelette: 2 Eggs, lightly beaten 1/2 teaspoon Cornflour a dash of pepper (optional) 1/2 small Red Pepper 1-2 slices Cheese Oil for frying How to do it: Blister the red pepper by cooking the skin side over fire till all charred.
