In the past, when I do not know how to cook, my husband and I would to eat at ??? (a more economical alternative to dining at restaurants). One dish we like to order is ???? Stir fried Deer Meat with Spring Onion and Ginger but seriously, do you think they really serve Deer Meat? I think it's more like beef to me. We like how they do it. My family prefers Chinese food to any other food and it's never easy trying to get to try other food. And because of this, I'm not very good with dishes other than home-cooked Chinese food.My poor husband is always forced to try my non Chinese dishes. I usually do them in small portion in case he is not used to the taste. Then I would have to finish them all by myself.Happened to this dish. Haha ... he only took the prawns without the salsa because he didn't like bell peppers. I love it. So in the end, I diced the prawns and added them to the Salsa . It's easier for me as the Salsa was more than the prawns now. Chinese would probably be familiar with fish maw. It's an internal organ of a large fish. I usually buy the ready prepared fish maw which is deep fried and buffy.My understanding is that fish maw if very nourishing and beneficial to general healthy. My parents said it's a very good source of collagen, so it good for our skin and joints. It's quite tasteless so I usually braised it to add flavours. I love to make soup with it too. However, this time, I'm using it with vegetables. You know kids love cocktail sausages. I don't remember eating so much of it when I was a kid. My kids just can't seems to have enough of them. I sometimes served this as a tea-time snack for my kids. And when I'm preparing it, I munched on them too. Haha ... Not much left in the end. I know this is a food blog but I have to share this because the weather nowadays is terrible and I thought our skin needs feeding of 'natural food' too.Few years ago, there was this grand opening of a beauty parlour at my place and they were having this one time trial promotion at a very cheap rate. Quite some time back while having breakfast with a friend, she shared with me a recipe she learned with a cookbook, which could pass as a Dim Sum.To me it was a really good way to use up left-overs without looking like I had served scrapes for dinner and I had learned a new trick as well - how to remove the saltiness in bean curd skin.Ingredients:Broccoli floretsCarrots, cut into sticks Babycorn sliced into halves Shitake Mushrooms, sliced thickly Ham, sliced to size (as the base) Bead Curd Skin, cut to size 6cm x 18cm Oil for frying Seasoning to be mix together: 4 tablespoon Water 2 teaspoon Cornflour 1 teaspoon Chinese Cooking Wine Salt and Sugar to taste.How to do it:Blanch all vegetables except mushroom. I'm a Teochew, which is a ethnic dialect group. The Teochews like to eat plain porridge with a few side dishes. When my brother and I were younger, my father always make us eat porridge. It always came with salted eggs, Bean Sprout, Tau Kwa or Tau Bok and Fermented Bean Curd. I can eat two bowls of porridge with just the Fermented Bean Curd. In this dish, I have used the two main ingredients, pork and fish paste, in this dish before and the kids like both dishes. Yeah, kids always like fried food. It's crispy on the outside, juicy on the inside and with a surprise too. The King of Fruits, Durian , is in season now! The latest craze in Singapore is a durian called 'Cat Mountain King' literally translated from it's Chinese name, ???. This species of durian is creamy, buttery, sweet with a little hint of bitter taste. It's so silky, the meat just slip of the seed! It's definitely worth every cent I paid for (It's the priciest of all durian!). One very bad after effect of eating this durian, other than your breathe smell like durian, is you won't want to eat any other types of durian! Durians, you either love it or hate it. I think it's the pungent smell that people can't handle. Once you get pass the smell ... ahh ... there's no stopping. I did these with the slices of Snakehead (fish) I had in the fridge I wanted to clear. Not fantastic but okay enough to get my son to eat it. These got to be eaten while it's hot otherwise the seaweed will turn soft and soggy. I did this as part of a dish for my kids. You know how I always try to mask veggie to try to get them eating it. Well, this dish has always worked. They know they are eating the veggie but without the taste of it and best of all, the veggie is never over cooked this way.If you don't like the hassle of doing it the Japanese way, you can always do it the normal scramble eggs way. Oh, the Japanese do this using a rectangle pan. If you don't own one, you can still do it with a regular round frying pan to achieve that rectangle shape. Ingredients: 2 Eggs, beaten 1 tablespoon Chopped Spinach or any other vegetables 3 Crabsticks, chopped1/2 teaspoon Light Soy SauceA few drops of oil How to do it: Heat the frying pan. Oil the pan with a few drops of oil. Use kitchen paper towel if you added to much. Mix all ingredients together. Pour 1/3 of the mixture to the pan and spread it well to have it cover the pan. My MIL used to be a very good cook. I wished she would teach me her Sweet and Sour Pork ???. It's to die for! It's the best that I have eaten so far. Oh, I did ask her many times over the year how she did it.She always says, "Just cook like this lor." When I refused to accept "just cook like this" and probed further, she would say, "Well, you just fry the pork and put the sauce lah." Oh, oooooookay. Looks like I'm not going to get anything out from her. It has been so many years already. LOLI don't think I could ever achieve my Sweet and Sour Pork ??? anything close to hers. Black Pepper Squid

I couldn't get over the Black Pepper Crayfish I cooked yesterday and I just eat it again. Sooo, I just had to cook it again today but with squid, which was suppose to be for another dish.Squid taste nice with black pepper. I had cooked Grilled Squid with Black Pepper some time back. Grilled squid is tough with overcooked. The one is just nice - chewy but tender.For this dish, I cut down the black pepper to 2 tablespoons and chilli was not added too. Oh, I also reduced the water to just 2 tablespoons as this doesn't need too much cooking to get the flavours in it. You can do the same if you are using Prawns.In case you are wondering how I cut the squid, I sliced across the squid leaving about a centimeter from the edge. It looked like the squid had lots of rings attached. After which, I half it. When you fried it, it will curl and look like a flower, pretty.Okay, enough. I love seafood. I used to cook Chilli Crab a lot but I have stop cooking crabs a long time now. Black Pepper Crab is one of my favourites too. Do you know there's a technique in making hard boiled eggs? If you don't really care how it looks like, you can just dump the eggs in the pot and let it boil. Most of the time when you cook your hard boiled eggs this way, you will noticed that there is a grey ring around the yolk. That is if you did notice it lah.But, if you want your hard boiled eggs to look nice, the yolk golden with no 'stain', I do have a way to do it...Place eggs in a pot with cold water covering the eggs at least 3 cm above.Bring the water to boil.Once the water boils, reduced heat to let the water simmer for 2 minutes.Remove from heat, cover the pot and let the eggs sit for another 10 minutes (longer for larger eggs)Remove the eggs gently and set them in a cold water (ice cold preferred).Once the eggs are not longer warm, you can remove them and start peeling.Note:Do not let the eggs boil in water for too long as it will crack and the whites will leak out. This is a healthy veggie dish. Not actually my kids' favourite kind of dish but my son will still support by eating a piece of broccoli or two and he will finish all the carrots.I like all the veggies here whether or not there are fans at home. I'll finish the whole dish if no one wants it. It's nice, what!Ingredients:1 handful of Broccoli florets1 handful of Cauliflower florets1 handful of Shimeiji Mushrooms A few slices of Carrot1 teaspoon Minced Garlic5 tablespoon Broth1 tablespoon OilSalt to tasteCornflour Mixture (thickener)How to do it:Blanch broccoli and cauliflower florets for 8 minutes with a teaspoon of salt and 1/2 tablespoon oil.Drain and set aside.Heat wok with 1/2 tablespoon oil.Stir fried garlic till fragrant.Add in shimeiji mushroom and stir fried for 5 minutes.Add in the broth, broccoli and cauliflower.Add salt to taste.When broth begin to simmer, gradually add cornflour mixture to thicken.Dish and serve.
