Hot And Sour Chinese Chili Sauce

It has been a while since I made my own real Chinese chili sauce. My recent kitchen activities has been focused mostly on Indian food. But now that Nupur asked for a 麻婆豆腐 ma po dou fu recipe in her Saturday´s article, (did you get the one I sent you, btw?), I somehow got a sudden urge to dust off my cooking Chinese skills. So just a couple of minutes ago, I made a jar of goes-well-with-whatever:HOT AND SOUR CHINESE CHILI SAUCE:(酸辣酱) Suan La Jiangspice ladder: ***prep time: 10 minutesmakes: 100 ml5 tbsp lime juice2 tbsp brown sugar2 tbsp chili flakes4 cloves garlic1 tsp saltIn a bowl, mix in lime juice with sugar. In a small pan, bring it to boil. I microwaved it for 1 minute instead, because it saves time and there was not that much of sauce anyway. Let cool down partially. Baked Zucchini Kofta

The reason why I don't make koftas that often is that I try to avoid meat and oil as much as possible. So deep-frying is totally out of question. BUT!!!A while ago (oh, we should go there again, soon, ...yum), me and Tom went to my most favorite Indian (actually the owner is Begali) restaurant here in Malmö (called Masala House) and we ordered their unique Kopta Karai (Does it mean 'Kofta Curry' ?). It was a brilliant dish of well flavored chickpea kuftas simmered in tomato-based spicy sauce. Tom went nuts and couldn't stop talking about how amazing it was. So, what wouldn't I do for him?I have tried several recipes I found on Internet (check out my favorite FFV´s Baked Spinach Koftas) or around the house, added this and that, and that instead of this... and.... After last week´s success with my home-baked plum cocoa strudel, Tom (with his mouth still full) repetitively encouraged me to keep on baking :) I know how much he loves poppy seeds, and since I didn't want to roll another one of his favorite poppy seed strudels, I decided to go inventive.A month ago, as one of my B-day presents, my sister gave me a 'Poppy Seed Cookbook' - a little pocket-sized cookbook that she wrote and decorated on her own .Oh, Gabi, do you have any idea how much I love you? ... big hugs.(The title is untranslatable. Play on words... It pretty much says 'Poppy'.. in a funny way. Poppy = MAK in Slovak)Why poppy seeds, you ask? Well, you cannot go more traditional in Slovakian sweet cuisine. The poppy seeds have been my little friends ever since I could eat :) They are crunchy, nutritous and cheap.
