Did you Know? Oct. 17th is National Pasta Day, October 25th is World Pasta Day and October is National Pasta Month.This raw recipe for alfredo sauce is very creamy and full-bodied. The longer it sits, the richer the flavors become. Try it with one of the pastas below.Zucchini Noodles with Alfredo Sauce2 cups cashews, soaked1½ cups water1 garlic clove, mincedjuice of one lemon2 tablespoons olive oil1 teaspoon sea salt½ teaspoon white pepperred pepper flakes (optional)Process cashews, garlic, lemon juice, one cup of water, olive oil, sea salt and pepper in a blender. Stream in remaining half cup of water until you achieve a creamy sauce.Serve with zucchini noodles on a bed of spinach. NOT RAWI'm sure you have heard of Lunch ables. But did you know there is Lunchable Jr.? My husband dared bring one home for our 10-month old. So I did what any self-respecting raw food mom/blogger would do, I fed it to Cody the dog (Sorry, Cody) and created my own raw food lunchable.RAWMango Salsa1 diced mango1/2 cup diced pineapple1/4 cup diced red pepper1 small bunch cilantro, choppedjuice of one half limesalt, to tastepepper, to tasteToss mango, pineapple, red pepper, cilantro, lime juice and jalapeno in a large bowl. Season with salt and pepper.For an adult version add 1 minced garlic clove, 1 tablespoon finely chopped onion and 1 seeded and minced jalapeno pepper.

I love holidays, especially food ones.Cream of Mush room Soup4 cups sliced mushrooms5 cups water2 cups soaked cashews1 tablespoon olive oil1/4 cup chopped yellow onions1/4 cup chopped parsley juice of one lemon2 teaspoon sea salt, divided1/2 teaspoon black pepper1 Marinate two cups of mushrooms with olive oil, lemon juice and one teaspoon salt for at least an hour.2 In a blender, process cashews and one cup of water until you achieve a thick cream. Remove from blender jar and place in a large bowl. Reserve a few tablespoons of cashew cream for garnish.3 Add remaining two cups of mushrooms, onions, parsley, olive oil and remainder of water to the blender, puree until creamy.4 Combine mushroom mixture and marinated mushrooms with cashew cream. Stir well. Season with one teaspoon salt and pepper. The flavor of the basil pesto adds zip to the mildness of the butternut squash and the creamy white sauce ties the dish together.1 butternut squash1 teaspoon sea saltblack pepper, to taste1 cup Pesto (recipe below)1 cup White Sauce (recipe below)1 Cut the "neck" from the bottom of butternut squash. Reserve the bottom portion for another recipe. Cut the neck in half2 With a vegetable peeler, peel the neck.3 Use a knife or mandolin to slice butternut squash in paper thin rounds (1/8-inch or less). Make a least 20 slices.4 Place squash in a bowl of sea salt water and let set for an hour to soften. I would like to thank Anne at Raw Yogi Journal II for today's post. If it weren't for her, I wouldn't have thought of raw cupcakes. We've never corresponded or been formally introduced (Hi Anne, I'm Teri) but I enjoy reading her blog. The first time I read it, she had a post on cupcakes. She set a project for herself to find a way to make raw cupcakes that looked as pretty as the ones she had posted but didn't use nuts (which I understand why). Even though I have a lot of recipes utilizing nuts, I don't eat them much on a day-to-day basis. In my recipes I try to use the bare minimum of nuts without sacrificing the dish. I enjoy using nuts, they give you so many options of creating raw food. As I was preparing the cupcakes, I was humored by the fact that I used walnuts to make a meatloaf and now I'm making cupcakes. Galette is a French term signifying a flat round cake that can be either sweet or savory. The term also applies to tarts. I like this dish for a couple of reasons. One, it's easy to make and with the exception of the freezer and frig time, it doesn't take any time to prepare.The second reason is each component taste great separately but, when you place them together and it has that "WOW" factor.6 McIntosh apples3 teaspoons ground cinnamon, dividedjuice of one lemon, divided1/4 cup honey (or agave nectar)1/2 teaspoon sea salt, dividedWALNUT CRUST1 cup walnuts, unsoaked6 dates, unsoaked1/4 teaspoon sea salt1 Peel and core 3 apples. A biscotti is a dry, crunchy Italian cookie used for dipping into coffee or red wine, but in my case a cup of tea. 2 cups almonds1 cup oat groats, soaked, divided1/2 cup dried cranberries, soaked1/4 cup agave nectar1 teaspoon cinnamon1/4 teaspoon sea salt1 In food processor, pulse almonds into a flour. Remove from processor.2 Add half of oat groats to food processor and process until smooth. Place mixture in a bowl.3 Combine oat groat mixture with almond flour, seasoning, agave nectar and cranberries.4 Spread mixture on Teflex sheet. Dehydrate at 110 degrees overnight or 6-8 hours. Flip over and score into bars about 4 hours into the dehydrating time.

Sushi Rolls with Spicy Pecan Dipping Sauce

The sushi and dipping sauce are my husband's creations. He brought home the pecan butter and his imagination went from there. We make and eat sushi once every few months. It's one of my favorite foods. It's a big deal when we make sushi because the work involved (food prep, rolling, sauce-making, etc.). We use a variation of the "Raw Food Real World" recipe with the jicama rice. Yummy! We save sushi night for when the kids are at a sitter and we can open a bottle of wine and crank up the music. Oddly enough, this wasn't one of THOSE nights.Note to self: Hungry husband generally doesn't like to have his sushi kidnapped to take a photograph for blog. The folks at Serious Eats has declared October 18TH "National Meatloaf Appreciation Day" and to celebrate they have invited all to submit their favorite meatloaf recipe. I love a challenge. So, I created this delicious nut-based meatloaf with spinach and tangy sun-dried tomato ketchup to show, you can have comfort food and still eat raw.I'm really proud of this dish because it helped me conquer a fear of mine. I can be a bit of a perfectionist when it comes to just about everything I do. Often I try to reach for the stars, falling short alot, but I keep reaching. I'm not perfect. *A slider is a miniature hamburger.Flax Bread 2 cup brown flax seeds, soaked for 2 hours 2 cup golden flax seeds, ground into flour 1/4 cup olive oil 1 tomato, chopped 1 tablespoon oregano 1 tablespoon sea salt In a food processor, combine brown flax, olive and tomato. Remove from food processor and place in a large bowl. Fold in golden flax flour and seasonings. Spread mixture on two Teflex sheets making a 8 x 8-inch square on each. Dehydrate at 115 degrees for 24-36 hours. Flip bread over after 8 hours. With a pizza cutter, score the bread into a tic-tac-toe pattern. You should have 9 slices per Teflex sheet (18 slices).
