In the Dehydrator

Hello everyone. As many of you know I have ended my juice feast. My first solids? Prunes. No worries, I am not going to provide you with a recipe for prunes. Although, I was tempted to make some sort of pudding this morning with my dried plums but alas, I ate them straight.I also put something in the dehydrator. Want to know what it is? Okay, you don't have to pull my leg, I'm easy. I'll spill the beans."Breaded" Zucchini Sticks. You know what? For the first time in 3 months, I tasted my creation. How rawsome is that! And you know what? It tasted very good.They are in the dehydrator now, so they aren't "officially" done and ready for approval (or to share a recipe)I will let you know the "breading" was pumpkin seeds, nutritional yeast, Italian seasoning and sea salt. There was also a marinade of Nama Shoyu, olive oil and sea salt. I'm soaking sun-dried tomatoes now to create a nice balsamic vinegar ketchup.Now that my feast is behind me, I have some surprises in store. Stay tuned.

I am a huge Thai food fan. I thought it would be fun to create a salad, for the Denver Living and Raw Food Cafe rawluck, using the fillings for a Thai summer roll. The dressing uses the ingredients from a summer roll dipping sauce.Thai food is known for its use of fresh herbs and taste balancing spicy, sweet, sour, salty and bitter. I love playing with the flavors. It also got me thinking. What is the difference between spring and summer rolls? It's all in the translation. Gỏi Cuốn is a Vietnamese word where some believe it is translated as spring or summer roll. It's up to you. Here are the ingredients I used to create my recipes for The Daily Raw Cafe Recipe Challenge 1. Red Grapes2. Cashews3. Almonds4. Garlic5. Red Pepper6. Lemon 7. TomatoesFocaccia with GrapesYield: 12 slices2 cups flax seeds, ground into flour1 cup almonds, ground into flour¼ cup olive oil, plus more for drizzling2 teaspoons agave nectar1 garlic clove, minced1 tablespoon chopped onions2 tablespoons Italian seasonings2 teaspoon sea salt 1/2 cup red grapes, sliced1 Combine flax and almond flours in a large bowl. Add olive oil, agave nectar, garlic, onion, rosemary and sea salt. Mix well.2 Fold in grapes.3 Spread Focaccia dough on two Teflex-sheets, making them about 1/4-inch thick. Drizzle with olive oil. Place in dehydrator at 140 degrees for 4-6 hours or until Focaccia is dry on the top.4 Flip over and remove Teflex sheets. With a pizza cutter, score the Focaccia into six large rectangles. I promise I had the best intentions. I had a beautiful menu planned for you for this Thursday. Each day this week I would focus on a different course for you to seduce your sweetie into a meal he or she would always remember.The foreplay of the evening would have been the Sweet and Spicy Neptune Salad Cocktail, followed by a bit of cool Cucumber soup or maybe a Shaved Fennel salad with cranberries. Moving on to main event it was a Mushroom Ragu and Chickpea Polenta with Asparagus Rolls. The climax was Cheesecakes Shots with Blueberry sauce. I like to cuddle after. Do you like to cuddle? Because of the snowy weather outside here in Colorado, I am forced to play on my tile floor with my kitchen garden. Kitchen gardening and sprouting are great, don't get me wrong. I enjoy it. Below are some lentils I eventually sprouted. They were super easy. Soak in water overnight, drain in the morning. Rinse and drain until you get tails. For more details visit here. But, alas, kitchen gardening doesn't replace getting down and dirty in the soil. The feel of the earth between my fingers, smiling as my son plays with the worms, the anticipation of what's to come. Have I mentioned how wonderful and supportive the raw community is in Denver. I attended a rawluck on Saturday and I was at another last night. And I tell you what, Denver is building something special. I haven't had such a stimulating, exciting evening in quite a while. What does this exotic raw food dish and a beautiful raw cookbook author have in common? They're both named Sarma. Rawsome!At first glance, this dish was given the traditional name of dolma, but upon further investigation I uncovered a different meaning.The noun dolma derives from the Turkish verb dolmak for "stuffed things" and in this case stuffed vegetables, which could be any vegetable (pepper, eggplant, etc.) hollowed out and "stuffed" with goodies. My husband, Mr. Epperson, is back in the kitchen while I'm juice feasting. Which is a good thing, he's a talented chef in his own right. This is recipe is his creation. Sweet and Spicy PecansPecans are a good source of protein and unsaturated fats. 2 cups pecans, soaked1 tablespoon maple syrup*1/4 teaspoon cayenne pepper1/8 teaspoon sea salt1 In a bowl, combine maple syrup, cayenne and sea salt. 2 Add pecans. Mix until well coated.3 Spread pecans on Teflex sheets. Dehydrate at 100 degrees for 18-24 hours or until pecans are very crispy.*Not a raw ingredient.

Tuna Salad Pate served with Herb Essene bread Tuna fish sandwiches were a staple in my childhood. This recipe is actually my mom's minus the tuna and other elements (I believe she used white onion, eggs and Miracle Whip and of course no dulse flakes). No disrespect to mom's, but I like my raw version better, sorry mommy.Tuna Salad Pate 2 cup sunflower seeds, soaked for two hours1 tablespoon dulse flakesjuice of one half lemon2 tablespoons dill pickle juice½ cup diced celery¼ cup diced red onion½ dill pickle, finely diced½ teaspoon sea salt1 In a food processor, combine sunflower seeds, dulse flakes, lemon and pickle juice. Process until seeds are a pate consistency. Transfer to a large bowl.2 Fold in celery, red onion and diced pickle. Sprinkle in the sea salt.Serves 2-4

Please enjoy.Essene Stuffing 3 cups diced Herb Essene Bread ¼ cup chopped onions1 cup chopped celery1 tablespoon poultry seasoning1 teaspoon sea salt1 In a large bowl, combine diced bread, onion, celery, poultry seasonings and sea salt.2 Place mixture on Teflex sheet. What do you blog about when your stepson has come to live with you and you won't be talking about your Vegetable Bowl with Quinoa? Your children drinking coconut water out of coconuts of course.This is a handy gadget called a Pipe Knife or Coconut Pipe Knife. You push the sharp edge into the coconut and pull out and Voila! you have a straw-size hole.My friend Scott of Raw Denver got it at an Asian Market in Denver. I tried searching the internet for places to buy it with no luck. If any one out there has any information about it let me know.

I love platter dining. I'm not sure if it's an official term, maybe now it will be. I guess the closest thing to it would be tapas. Platter dining is a bit different.Spreading your ingredients out and deciding which ones to eat in whatever combination you choose. And you have to eat with your hands. I think raw food tastes better eating with your fingers.Guacamole Platter4 avocados, peeled and diced2 tomatoes, finely chopped1/2 red onion, finely chopped1 jalapeño, finely chopped1/4 teaspoon sea saltjuice of one lime1 In a bowl, mash the avocados with a potato masher.2 Add the tomatoes, red onion and jalapenos to the bowl. Chocolate and Orange Panna Cotta 2 cups cashews, soaked until soft¼ cup fresh-squeezed orange juice1 teaspoon ground flax seeds½ cup chocolate glaze (recipe below)¼ teaspoon orange zest1 Blend cashews and flax seeds, gradually add orange juice one tablespoon at a time until cashews are smooth and well blended.2 Add chocolate glaze and orange zest until smooth.3 Pour mixture into two chilled 4-inch springform pans. Let set in freezer for 2 hours.4 Carefully remove molds from panna cottas. Leave it on the saucer plates and put in the refrigerator overnight.
