Linguine with tomatoes, basil and roasted garlic!I know, I know...I just posted this last week but for me a recipe is sometimes like getting a simple song stuck in my head. I crave it and the flavors and this is one recipe that I absolutely love the way that that the flavors and the aromas all come together in a perfect summery blast! I know where most of you are summer is still a ways off and please don't try this with crappy tomatoes. It is truly disappointing then...exercise patience. It is so worth it!Another reason though that I wanted to try this recipe is that I have been getting some great fresh garlic from my local U-Pick. It is not dry and papery on the outside but soft. Almost like an onion. Malta garlic, basil, tomatoes, green beans, shitake mushrooms, bell peppers, jalapenos, zucchini, summer squash, patty pan squash, long and skinny eggplant, cilantro, spinach, onions, red scallions, lettuce, and finally swiss chard!Pretty, Pretty, Nasturtiums for our salad!A couple of weeks ago we decided that we were going to plant a small garden to help me get over the upcoming ending of the Wednesday Worden Farm Farmer's Market at Fisherman's Village. I decided that if I could at least get the herbs to grow through the summer I would be so very happy.We ended up doing 3 small containers. 2 with herbs and 1 with tomatoes. But while we were getting all of this at Home Depot (they actually had heirloom plants available) I saw something really cool! They had a Praying Mantis eggs casing that they were selling for less than $5!!! Raspberry Marinade for Lamb Chops

Last night we wanted something different but staying true to my food philosphy if it was to be meat it had to be from a sustainable, all natural, no antibiotic or growth hormone, small farmed meat. We choose lamb chops. Most lamb is farmed in Australia or New Zealand, and while this doesn't fit into the local profile I am still an omnivore and need meat. Lamb is an all natural meat. The New Zealand lamb that we ate last night follows all of the other restrictions that I have. The animals are raised in pasture. Eating only the grass that is grown. They practice sustainable farming and healthy slaughter. Yep, once again it was Sunday, the one day a week that I don't have to come up with something new or amazing just good, hearty fresh tasting soup!I had some chicken bones from a chicken that I had roasted earlier in the week, some carrots, onions, garlic and celery (remember that really nice looking celery from over a week ago? I froze it to use in soup!). I threw this all into a pot and let it simmer for the day. We strained it and I made some Passatelli, which are really a combination between pasta and dumplings. They are usually served just in a broth but I needed something to help make this soup a meal! We finished the soup with red swiss chard and then added the Passatelli and let this all cook down. This soup was great. Yesterday was quite a busy day and very tightly scheduled! We had skating in the morning which is the norm but then I had a baby shower, St. Patrick's Day Party and dinner out with one of my best girlfriends and her husband! Believe it or not everything went nice and smooth which is usually the case when I leave us plenty of time to get to things!We got home for the party and the baby sitter arrived on schedule so off we went. Now, my girlfriend and I have been trying for over a year now to set up a date for the 4 of us to go out. This is normal. One or the other of us are usually committed to something else on the weekend. But she had told me about a very small restaurant in Fort Myers that we "just had to try". As many times as she said this we just could not get it to work but the real kicker was that she would never tell me the name of the place and only that it was on US41 in Fort Myers???!!! Strawberry Walnut Bread Alright you guys all know by now that I am on a huge, life altering journey into the world of seasonal, local and freshly grown produce. So it would just be natural for me to compete in a challenge based around using goods that were available on a seasonal basis! Except I have almost run out of time. This is another challenge that I am getting in just under the wire!!!This event is hosted by Ben from What's Cooking? The requirements are that you have to cook something that is in season in the area of the world that you are from. Well, as luck would have it, on Wednesday I was at our local U-Pick and they happened to be running a special on strawberries. For each quart that I bought I got a pint free! Curried Shrimp, Biryani, and Spinach with Fresh Cheese and Yogurt!I had a ton of errands to run yesterday so I spent most of the morning doing that. When I got home I started to panic because I couldn't for the life of me remember what I had planned to make for dinner. I am not the most organized person around so I can't do an actual food plan but I usually have a pretty good idea of what I was going to make. Yesterday though I was baffled and it made me so mad because I had already planned it all out. Pasta with Fresh Tomato es, Basil and Roasted GarlicThis is one of my most favorite dishes ever and I have no idea why I haven't posted it before now??? It is fast, fresh tasting and simple!Garlic ready to be covered for roastingPasta With Fresh Tomato and Basil1 head of garlic and 2 Tbsp olive oil3 ripe plum tomatoes (I just use whatever is tasting good right them)1/3 C fresh basil (chopped)1 Tbsp capers1 Tbsp Extra Virgin Olive Oil1 Tbsp Balsamic VinegarSalt and pepper to taste1 box of long thin pasta (angel hair, linguine, spaghetti)Preheat oven to 375 degrees.Peel of most of the paper from around the garlic head. Slice off the pointy top of the garlic. This should expose all of the cloves a bit. Place in an oven proof pan (I use a pie plate). Top with 2 Tbsp of olive oil and coarse salt. Cover with aluminum foil and bake in the oven for about 45 minutes. Allow to cool then remove the cloves and mash with a fork.Dice the tomatoes (if the have a ton of seeds squeeze them out)...

Strawberries, Asian spinach, tomatoes, radicchio, lettuce, radishes, summer squash, zucchini, patty pan, red chard, onions, green beens, basil, garlic, and zucchini blossoms!It is Wednesday and true to my routine I went to the Worden Farm Farmer's Market . I look forward to this all week. I am able to go and get a whole pile of vegetables that are organic, in season, and grown locally for a very reasonable price. All of the food that you see about has cost me $39. This is food that will feed my family for a whole week! Yes I supplement it with other things like shrimp and chicken but the majority of our food is bought at the market. Pretty sweet deal huh?Every week I buy one thing that I have never used before. This week it is the zucchini blossoms. They look so beautiful but I have never tasted them before so this should be fun! Do you ever get the feeling that your life is just going way too fast? I really need it to slow down so I am going to spend the day searching for the slow down button (yeah in all of my spare time!). I have my oldest daughter home with me today. She seems to be really tired and says she is not feeling well. I really don't want a repeat of the last time she said that and I sent her to school anyway! I'm sure they don't want that either!!! So she is going to have to tag along with me all day!I have to drop my youngest one off at the new school that she started yesterday (we don't mess around here-things happen fast!), run to the dr's office and pick up the form that I dropped off yesterday to allow her new school to inject her with an Epipen is she starts to swell all up from an ant bite (I guess I should have considered this earlier???), drop that and her Benadryl (for the same thing) off at her school and then I have to go to my girlfriends house and help get her packed up...

Nice, fresh, earthy tasting soup using quinoaSo I guess you can tell that we had soup again. Trust me though not 2 pots of soup I ever make turn out the same. I use the soup to help clean out all the produce from last week and make room for the new stuff on Wednesday! This week I had no bones once again so I used some organic, free range chicken stock that I bought at Costco and added to it some onion tops that I had leftover and saved, a turnip, some carrots (yellow and orange), garlic and an inion. I put the soup on about 10 and then we headed out for the day. On our way home I thought we would stop at Ada's (like a Whole Foods) and pick up some chicken for the soup. So we bought some chicken and some other stuff but I was really excited because in the bulk room they had organic quinoa. I bought a couple of cups of it.When we walked in the soup was smelling good. Last night was a great night. The weather was warm but windy and T. being the great guy he is wanted to take us all out for dinner. We went to Hemingway's Island Grill at the Coconut Point Mall. It was very good. Had a nice plate of shrimp marinated in a sweet rum sauce served with black beans and rice and a fruit salsa. They had a nice wine list with lots of wine by the glass which is always nice for us because rarely do we drink the same wine when out. This time though T. ordered a different wine and then had another glass but ordered the same as me! It was shortly after we left though that it hit. Poor T. was sick. He raced back to the restaurant and spent plenty of time in side while me and the girls danced to the music playing outside. T. had gone out for lunch and I guess he got the bad side of a Cuban sandwich wrap. He sure was not feeling well. Beef and Barley Soup with MushroomsIt has been a very busy couple of days in the Chiappini household. I have decided to move my youngest daughter from private school to public school (a thousand different reason that I will not bore you with). With this comes a whole slew of problems especially doing it in the middle of the school year and without telling her that it was going to be happening! We had to tell her on Wednesday night that her last day would be Friday and that she was starting at a new school on Monday! Nothing though could have prepared me for her reaction to the news. It took her about 2 seconds to process this information and then instantly started with the arm pumping and loud screaming "Yes, Yes, Yes...now I will get to make new friends and boyfriends!!!" Yesterday we had company come. T.'s Aunt and Uncle were visiting Florida for their vacation and were able to squeeze in a day to come and visit with us. This was so nice because as the girls have gotten older and our lives busier we have not spent our vacations visiting the families like we should. Just about every Sunday morning I put a put of water on the stove and throw in all of the onion tops from the week, garlic remains, an onion, a carrot and anything that will make a nice rich stock. If I have roasted a chicken during the week the bones go into the stock to make chicken stock. This week though all I had was vegetable. So I threw all of my stuff in the pot and let it simmer away. I had found a recipe last week that I wanted to try. It was from Heidi's 101 Cook books. Now I am an omnivore (I was corrected by my very sweet oldest daughter last week that I am not a carnivore???? yeah she's only 7 cute huh?) but I love vegetarian recipes. I find that I can usually alter it to include what I want to have it. Most of Heidi's recipes are like that. You may remember the split pea soup of hers that I made of couple of weeks ago? Everyone here was sick over the weekend. T. started it on Friday. Youngest daughter Saturday morning and oldest daughter Saturday night and me Sunday morning! Thankfully it doesn't seem to be lasting very long. But I need sleep...lots of sleep. I am going to post and go to sleep!Arugula Pesto Pizza Favorite store bought pizza dough or crust or Homemade Bread Machine Pizza DoughArugula Pesto or Basil Pesto (store bought will be fine)olive oilshredded mozzarella cheesefresh thin sliced tomato (laid on paper towel to help drain and dry a bit)Heat oven to 400 degrees. Shape pizza dough. Mix olive oil with pesto to thin it out a bit. Spread lightly onto pizza dough (you are using this in place of sauce). Add Mozzarella on top and tomato slices. All the ingredients needed!Who would have thought that when you Google Arugula Pesto you will come up with 51,800 items that relate to it. All I wanted to know is are the properties of it similar to basil???!!! I think maybe I have mention before that I don't really pay very well attention to things and if there are too many directions in a recipe there is no way that I am going to get through it!!! Just me I guess. I am sure it all stems from the concentration issues but I hate to do things that are too complicated. Cooking should be simple if you have wonderful, fresh ingredients to work with and I did! While reading a couple of recipes for Arugula Pesto what I found is that it is definately more bitter than Basil Pesto so I needed to counteract that with something. I did it...I really thought that there was no way that I was going to get this done but I did! The Royal Foodie Joust is an event that is held each month. It is hosted by the amazing Jenn - the Left Over Queen. Each month the winner from the previous month gets to choose the three ingredients that we are suppose to create a recipe using. Last month's winner was Heather - Gild the Voodoolily and she chose Pork, Citrus and Pink Peppercorns. When I saw those ingredients my first thought was that would make a really crappy brownie!!! See, I love brownies and anytime I can I make them I do. But this time I was going to have to be a bit more creative than that!I also had a real problem this month finding pork that I would eat. What is this? At the Farmer's Market they told be it was cauliflower and I would hate to use it in something that I wanted cauliflower in when it was broccoli????Looks like broccoli to me????When I went to Worden Farm Farmer Market yesterday I bought a ton of stuff but every week I try to buy one thing that I have never cooked with before and will have to challenge myself and family (by eating it). Turnips, onions, savoy spinach, purple cauliflower, red swiss chard, leeks, arugula, baby asian spinach, potatoes, shitake mushrooms, and from the U-Pick I got carombola fruit, tomatoes, strawberries and Italian fresh garlic!!!I had a great time at Worden's Farm Farmer's Market . I went with a friend and that always makes it so much more enjoyable!!! It sure does seem like a ton of food but it all gets eaten by next Wednesday so I can start all over a again!I am going to finally get my entry to the Royal Foodie Joust today. It is freezing here! Yesterday I swear to you that it was 85 and we were all in shorts and tee's. Last night I left the house all open. The french doors in my bedroom leading to the pool deck were open and then came the wind. It is 52 outside right now and the winds is at about 25-30 mph. That was blowing into my bedroom ALL NIGHT LONG!!!! It was so windy the covers kept blowing up over my head...I know, why didn't I close the doors? My Slice of Eggplant Parm!After a couple of very long days of chaos it is so nice to have things back to normal (at least what seems normal to me anyway). Last night for dinner T. decided to cook and he made us his super special Eggplant Parmesan! He only made a half of this recipe because I had only bought one eggplant.My new Euro Cuisine Yogurt Maker!I mentioned yesterday that I had just gotten a Euro Cuisine Yogurt Maker. I have made 4 batches of it already and was about to throw it into the pool because everything was just turning out not firm enough!!! The first one was my fault. I decided I was going to cheat and not cook the milk...the next time I cooked the milk and the third time I cooked the milk and let it incubate longer!!! Sometimes s*** just happens. Yesterday we had pretty much decided that we were just going to spend the day hanging around the house. We had a bunch of things that had been sorely neglected in the past few weeks - yard work, getting stuff picked up and just general everyday home things that are so easy to overlook and ignore! I got a bunch of cooking and baking done - bread for the girls lunches for the week, soup stock was on the stove bubbly away just waiting until dinner, one really failed batch of goat milk yogurt in my new yogurt maker and another one started, Banana-Chocolate Chip Squares (King Arthur Flour-Whole Grain Baking cookbook). Then it all started to go a little crazy. The girls were outside playing and they had the Golden Retriever outside running around with them. Now these girls play really rough with this dog and we have warned them over and over that somebody was going to get hurt one of these days. Yesterday was the day! Hamburgesa Mexicana with avocado, pico de gallo, pan fried potatoes and tortilla chips!Yesterday was one of those marathon days of shopping...Car shopping that it. I hate car shopping. It is such a guy thing. My lease is coming up in April and I mentioned that I might be interested in a car. Big mistake and imagine trying to do this with 2 children with you!!!Any way for dinner all I ended up doing was roasting a chicken (so I could make soup today) and serving it with wilted spinach and shitake mushrooms. Pretty easy and sensible dinner! Friday's dinner was much more fun.I made what Ben at What's Cooking? calls a Hamburgesa Mexicana, and boy were they ever good! Sauteed Summer Squash and Zucchini Today is one of those days that I truly love being me and love the life that I have. I have cleaners come in and clean my house on Friday's so they are always really good days for me anyway (neck injury from a car accident prevents me from doing it awwwwww, who am I kidding, my husband is just super awesome and has someone come in and do it for me!!!).So this morning I took the girls to school and went and returned something to the grocery store and was heading home when suddenly my car turned the wrong way and I ended up at Barnes & Noble????!!! Not a bad turn huh? Got myself a Starbuck's (yep I know, but I really, really, really like a non-fat green tea latte light on the sweet) and took my latte and went to peruse the cookbook section. I found a book that made me so happy that I would have paid any amount for it...lucky it didn't cost that much!!! Yesterday she was doing well enough to go but I thought she needed a good day to recover and I have also really wanted her to see the Farmer's Market but with it being in the middle of the week they are always in school! So yesterday she finally got to see it. She made friends with a Great Blue Heron that waits beside the shrimp boat, where I get my fresh boat shrimp, waiting for the guy to peel them one and share!!! Goat Milk Chocolate Pudding - or regular milk will do!

My oldest is still home sick today but at least she is well enough for me to drag her to the Farmer's Market today!I promised you the Goat Milk Chocolate Pudding - so here it is. I took the recipe from SmittenKitchen and I am so glad that I did!The only thing that I did differently was using whole goat milk in it! T. thinks of pudding as medicine (his comfort food) so he really loved it! This recipe was soooo easy to make so I tried to make a vanilla pudding yesterday for my little sickie and it didn't turn out so good and was way more work! I think because it is near the end of my produce week and I have found that this is a great way to get rid of all of the leftover things that I have so I can be nice and cleaned out for Wednesday when I go to the Farmer's Market again! Potatoes with onion, garlic, salt, pepper, olive oil, and oreganoAnyone who has been following me on blogging adventure know that I LOVE fresh farmer's market food. This meal was all about that.I had bought some potatoes on Wednesday when I was there and was really curious to find out how different an organic potatoes taste was compared to a regular potato. Our favorite way to eat potatoes is to oven roast them with garlic, onions, olive oil, salt, pepper and oregano (or any of your favorite herbs). They turned out so great tasting we were all very impressed.I had also purchased some Romanesco which is described as a cauliflower. I don't know that it really did taste like that. We ate it raw sort as an appetizer. I had my oldest daughter help break it from the stem. In that way it was like broccoli or cauliflower but the taste was very different.
