Anyone who knows us knows that T. is a huge lover of anything pork or made with pork fat...so how did I get him to eat Split Pea soup without a ham hock in it???? I made it and served it to him on Valentine's Day along with a loaf of fresh homemade bread, that's how! Is there anyway on a day that men are so filled with guilt could he have possibly said "no way will I eat that!" Anyway he ate it an really liked it so did the girls!!! I have to say that it was probably one of the best pea soups that I have ever had and it is all courtesy of Heidi at 101 Cookbooks.Now, I know that her recipe says "vegetarian" pea soup but she has some really great recipes on there that you can tailor to a non vegetarian life style. I eat meat but I am very consciously aware about what I will consume. Crazy looking huh? Romanesco - cauliflowerFresh Produce from the Farmer's Market Okay now I have said it before and I will say it again and again...I am a city girl, was born a city girl and will always be a city girl, but...I have one problem. I really like good food! I have found that they best way to get some really good food is to grow it myself or find some really good sources for it.Doesn't sound very city girl like huh? I have learned though that there is nothing in the world like a nice ripe tomato plucked from your garden, still warm from the sun and just waiting for some sea salt and a knife. I have found a really good source for organic produce at the Worden Farm Farmer's Market. I have also been able to locate a great source for goat milk...I am still hunting the fresh eggs but the cage free ones from the store are satisfying for now! Happy Valentine 's DayEver have this happen? You pick your kids up form school and one of them tell you that you need to make something for them for their in school party and - oh yeah it's tomorrow? And another - oh yeah - I would really like you to make that cake you make! Immediately the other one chimes in - oh me too!!! So what I thought was going to be a nice quiet Wednesday night on the home front is not! I did what any Mom out there would do...I made cake X 2!It was really simple actually. I have been loving the taste of the super easy orange cake that I made last week and the week before that so it was a no brainer as to what I was going to do. My youngest daughter has a sensitivity to red dye so I also knew that she needed to have something that wasn't full of it...no red velvet cake for her!!!This cake is so versatile. Can you tell that I liked them? These cookies were so good and I have been trying to really stay away from the sweets and all but those pretty much did me in! I got the recipe from Jill at Simple Daily Recipes which is one of my favorite food blogs. It has straight forward easy to follow recipes. Dinner! Grilled radicchio, sauted shitake mushrooms, sauteed dandelion greens and swiss chardIt seems like so long ago that I went to the Farmer's Market and came back with bags (earth friendly reusable - of course) of fresh veggies and boat shrimp. But it has really been less than a week. I went through the refrigerator yesterday and got out all of the food that remaining from last Wednesday's trip and knew that was about to be dinner! T. was away for the whole weekend but he called me Sunday morning and said he wasn't feeling very well and was going to head home earlier then expected. This was a great surprise for the girls because they didn't expect to see him until Monday morning. But all I really heard was sick...so I leapt (not really) into action and started making chicken soup! The girls and I had roasted a chicken for Friday night and I had saved the bones to make some stock. Good thing too now that T. and my youngest one are both sick now!!!I knew that the chicken soup would be good for them but I also wanted to make a nice dessert for them too. I had bought some of the most incredible Florida oranges called Cara Cara's ( they have pink flesh, similar to a blood orange but not a dark and their juice is only slightly pink). Shrimp Tacos with homemade Pico de Gallo!

Shrimp Taco with pico de gallo and avocadoThis was a really easy meal that I threw together Thursday night after Karate. I had steamed the shrimp up the night before to help save time and made the pico de gallo during the afternoon. This helped so much in feeding everyone at a decent hour! To make the shrimp all I did was steam them in some water with a little beer mixed in. Them set them in the fridge to cool until the next night. For the pico de gallo I really didn't have a recipe. I cut up a white onion, probably about 10 campari tomatoes (they were the ones that were going to go to waste 1st) seeded (just cut them in halve and squeeze the seeds out), 1 jalapeņo pepper finely chopped, 1/2 of a bunch of fresh cilantro (roughly chopped), salt, pepper, juice of 1 lime and garlic powder. My 1st Gallon of Raw Goat Milk!Yes, I know it is not intended for sale for human consumption! So sad really!As you read this please don't get the wrong idea. I like goats really I do but in the limited amount of contact that I have had with them (petting zoos, and fairs etc) they have always really seemed to be pretty dirty and dumb animals. Okay, let me explain. You go to a petting zoo and they always have poop on them somewhere, maybe from another goat climbing on them or from rolling around the ground...anyway I hate for my kids to even touch them and always make sure I have the hand sanitizer and wipes ready for the minute they are done (not a germaphobe either but animal poop is gross) because that is what the kids are there to do!Today I went and picked up my first ever gallon of goat milk from a local goat farmer. Last week after I went to the Worden Farm's Farmer's Market I made some fresh basil pesto with the basil and garlic that I had bought when I was there. Click here for post and recipe. So I thought I would show you what I did with the pesto.I cooked the peeled and deveined shrimp in some butter and garlic just until they were no longer opaque. Cooked the pasta according to the box (use whatever type of pasta you have available). Toss the past a shrimp together with as much pesto as you like. You will have to judge it based on your taste. cilantro, shitake mushrooms, beets, red swiss chard, onions, carrots, spinach, strawberries and dandelion greensI am so loving Wednesday's right now. I seem to find myself looking forward to this all week long. I go to Punta Gorda to visit the Worden Farm's farmer's market that they set up at Fisherman's Village every Wednesday. Today I got a whole new lot of fresh vegetables that are grown on their certified organic farm. I was also able to get some fresh boat shrimp from a fisherman that just caught them last night!Cute little carrots!Shitake MushroomsFresh picked strawberriesToday I was able to get red swiss chard, dandelion greens, cilantro, onions, carrots, spinach, beets, shitake mushrooms, and eggplant. I went to the local U-Pick and got some fresh picked strawberries and tomatoes as well. I can't wait to use all of this! CarambolaI guess I have mentioned before how much I love participating in all of the challenges that I keep coming across. I find that they make me get out of my comfort zone and really learn a new trick or two. When I saw this one though I thought "mmm that should be so nice and easy...and the kids love quick bread". Yesterday was one of those days when I am so grateful to be living in Florida. We didn't really so too much but the weather has just been perfect. Nice and cool during the night and warm during the day. We went to Boca Grande. Spent some time on the beach and then went for lunch. All the while I was making soup at home!When I was shopping last week I found some Turkey soup bones at the meat market. They were on sale so I grabbed them up and figured I would make a nice soup out of them. Okay, now I have spent all day long on a field trip to an art museum with a bunch of 7 and 8 year olds. 10 hours???!!! Can you just imagine how I feel at this moment? Actually pretty good. A couple of glasses of wine later and some good food it all seems much better than it did!Yesterday afternoon was kind of cool though. I had gone to the organic Farmer's Market on Wednesday and had bought some organic basil and I sooo did not want it to go bad on me. Basil is pretty delicate. I decided that I would make some pesto from it to help extend it's life a little. I had a bunch of other pots in the fire during the day so I waited until after I had picked up the girls and instead of doing the regular homework we did some life lessons! Yes I've been at it again! I found the best Farmer's Market ever. All the food is certified Organic (Worden Farms) and the market is held every Wednesday! It doesn't get much better than this...well yes I guess it does. The guy on the shrimp boat right around the corner who was selling last nights catch right from his boat even beat that! I brought my bounty home. Cooked up the beets for dinner and left the shrimp for T. to cook and behead! Now just to let you know, my family loves fresh shrimp. That shrimp was sauteed in fresh garlic and butter until just cooked. Put on the plates and eaten up so quick that I didn't stand a chance at getting a picture! But it sure looked good!I cooked up the beets using the oven roasted beet recipe that I used the other day and they were delicious again! I found this recipe a couple of days ago on a fellow Floridian's blog (Jenn from The Left-Over Queen). Due to all of the wonderful fresh produce we have access to here in the winter both of us are cooking similar things. I have loved several of her recipes before this one (remember the oven roasted beets last week?). This one was incredible though. Maybe the thing that I liked best about was that I cooked it in the afternoon. Placed the pot and all in the fridge and when T. got home from work he was able to just turn the stove on and heat up dinner for us. I am looking for chickens...actually not really chickens I want their eggs! We have been trying to eat seasonally and locally but boy is it hard sometimes. I have been looking for farm fresh chicken eggs. shouldn't be too hard right? Wrong. I drove 3 hours today on the hunt for chickens eggs and still came up empty. The only place that I can find around here won't return my calls or emails so I have to keep hunting. When my wonderful sister was here over Christmas we were reminiscing over the amazing Lemon Meringue Pies that Mom used to make. Turns out my memory was really fuzzy because those pies came out of a box! I can't remember the name of the company and maybe it was just a Canadian thing but regardless I was really craving one now! So to my great surprise and excitement I found out that January 's Daring Baker Challenge was...did you guess it? Lemon Meringue Pie!!!!This month's challenge was hosted by Jen, Canadian Baker, and I truly can't thank her enough! This pie was amazing in every single way. Roasted Chicken One day last week I thought it would be a great idea to roast a chicken. The weather was nice and cool and the kids always eat a roasted chicken real well. I was at the grocery store and bought a chicken. It was a 3 pounder but, get this, it cost me around $8???!!! Yes, it was organic, free range, no antibiotics or hormones, but still that is a lot for a small chicken. I figured though that I would be sure to make 2 meals out of it so could therefore justify the expense!So have you ever made something and it turned out so delicious but you knew that because of all of the crazy components involved in the meal you would NEVER be able to recreate it? One of the things that I have loved so much about blogging about food is that I am learning that there are soooo many things that I don't know. I love the challenges because they encourage me to go beyond my comfort zone again and again! One of my favorites is the Royal Foodie Joust hosted by Jenn, which I love participating in. The winner from the previous month gets to choose the 3 ingredients that need to be used for the next month. To me there is nothing better than a nice huge fresh salad for dinner. I have always been like that. I love my veggies raw but have never really liked them cooked. Beans, corn, carrots, peas, cabbage, broccoli, cabbage and yes even potatoes taste so much better to me raw than cooked! So I guess it just makes sense that I love a nice big salad with nothing but fresh veggies!Last night was ice skating lessons which always make for too late of a night and the girls are always so tired by the time they get ready for bed. I knew dinner wasn't going to be anything really fancy. We had decided on steak and salad. We are still trying to work our way through the box of produce that we got over the weekend. The girls won't eat salad so we steamed up some broccoli for them. The salad was great. Oven Roasted Beets

I was so excited to get my big box of produce yesterday and couldn't wait to get cooking! Unfortunately with as busy as we are I had to wait until this afternoon. Tonight was a karate night so I made the beets this afternoon and figured I would just heat them later. A couple of days ago I was looking at another blog The Left-Over Queen and Jenn had made a roasted beet salad. I so wanted to try it! But due to a cold snap last week the tops of the beets were a little messed up so I decided just to skip that part and just roast them following her directions. I ended up serving them at room temperature as a side to the pot roast that we were having. I can honestly tell you that these were the best beets that I have ever had! I don't know if it was the roasting in olive oil or the freshness of the beets but they were delicious. What a great find huh? I guess after reading so many blogs with people trying to get their hands on the freshest and the best produce available and trying to eat seasonally and all I see them coming up with are root vegetables I decided to go on my own hunt! Not that there is anything bad about root vegetables and if you live up north you really don't have too many other options. But I don't live up north. I live in South Florida and this is our growing season. Check out this big box of produce that I got at a local U-Pick farm!!! I was so excited. I got Fancy Italian eggplant, zucchini, sweet onions, fresh picked garlic, strawberries, star fruit, beets (small though), broccoli, tomatoes and jalapeņo peppers! Now I just have to come up with some great recipes using what I have. I guess a trend is starting to appear. We have been grilling a lot. There is a reason behind this. We all got a little fluffy (read fat) after the holidays and I find that the easiest way to get the extra weight back off is to eat lean, healthy meals. My method of cooking is not real lean so this is when we rely on the grill to help us out. Lucky for us we live in Florida so we can grill all year long and even if you live up north you can but it is definitely more challenging!The kids have been getting a little tired of the regular old marinades and I happened to have an orange left from the muffins that I made yesterday (which she didn't like anyway!!!) so I knew it was going to be citrus based. If you remember a couple of months ago I was trying to simplify my crazy morning routine by making muffins. I must have made about 15 dozen muffins (most of them sitting in frozen limbo in my refrigerator) in this time period and the girls still wouldn't eat them so I said I was giving up. Well here is something about me...I don't give up too easily! Last night was a karate night so I had to think fast on a meal. I decided that T. would be home early enough to grill some pork chops so all I really had to do was come up with a marinade. This one turned out real well and would be good with a pork loin or chicken.Marinade1/2 cup soy sauce (use low sodium soy sauce if you like)1 T Worcestershire sauce6 cloves garlic2 tsp lemon juice1/2 tsp ground black pepper1 teaspoon vegetable oil4 pork chopsAllow to marinate for 30 minutes or more. The thicker the meat the longer the marinade time will be. We grilled the chops but they can be baked or broiled as well.We served it with a healthy bowl of steamed broccoli and salad.
