Mini UttappaIngredients: cup Urad Dal1 to 1 cup RiceSalt to taste1 Onion, sliced thinly and lengthwise1 Tomato, finely chopped1 tsp Green chili pasteCilantro finely chopped-cup oil Method:1) Soak rice and Urad Dal together in water for 7-8 hours. After 7-8 hours, drain water. Put Urad dal and rice into grinder. Add little water and grind to smooth paste. Add 1 tsp salt while grinding. This mixture should be of medium consistency.2) Place ground mixture to warm place at least for 10-12 hours for fermentation. Cover the mixture container with lid. If climate is cold, it could slow down fermentation process. In that case, preheat oven for 2-3 minutes and switch off the oven. Put mixture container with lid in the oven. This will keep mixture warm and it will help to ferment mixture. After 10-12 hours, when mixture is fermented, add little salt if needed.3) Once mixture is ready, take sliced onion into bowl and rub little salt to it.4) Heat nonstick tawa, grease with tsp oil, pour ...

Masoor UsalIngredients: cup Masoor (whole brown lentils)1 medium onion cup fresh grated CoconutFor tempering: 2 tsp Oil, tsp Mustard Seeds, tsp Asafoetida Powder, tsp Turmeric Powder, 1 tsp Red chili Powder2-3 Curry leaves1-2 Kokum1 tsp SugarSalt to taste2 tbsp chopped cilantro for garnishingMethod:1) Soak cup Masoor overnight in water. Drain and put them into clean cotton cloth. Hold all the edges of cloth and tie tightly. Keep it in warm place, atleast for 10-12 hours.2) After Masoor gets sprouted, finely chop onion. Heat 2 tsp oil in a wok, add Mustard seeds, Asafoetida Powder, Turmeric Powder, Red chili Powder, 2-3 Curry leaves and grated coconut. Then add chopped onion. Add sugar and water in the pan to make sugar syrup. The syrup should be at the ?soft-ball? stage (Goliband Pak). That means that when you drop a bit of it into cold water to cool it down, it will form a soft ball. Upavasachi KhandviVery Delicious Indian Fasting Food Item.Ingredients: cup Vari Tandul (Samo) cup Grated Jaggery1 cup Water2 Tsp Pure Ghee1 Tsp Cardamom Powder cup Fresh Grated CoconutMethod:1) Wash vari tandul with water. Drain.2) Take a heavy bottom pan. Heat 2 tsp ghee in it. Add washed Vari Tandul and stir till color turns to light pink (?) or for 2-3 minutes.3) In other pan, heat 1 cup water. Add hot water in roasted Vari Tandul. Give a nice stir and cover it with lid. Sometimes, Vari tandul absorb all the water and becomes dry. We want moist mixture. If it becomes dry, you need to add little hot water. On low heat, make it lukewarm. Then add Buttermilk to it.2) Finely chop green chili. Crush green chili coarsely with salt. Put sprouted Kulith in a steel container inside the pressure cooker. Add water in that container (For 1 cup Kulith, use 2 cups of water). Pumpkin PurisIngredients:2 cups small cubes of pumpkin (peeled)1 cup grated JaggeryWhole wheat Flour1 tbsp OilOil for deep frying Method:1) In a pressure cooker, put 1 ltr water. Put pumpkin cubes in steel container inside pressure cooker without adding water. Place a steel plate on that container to prevent water dripping inside the container. And pumpkin will cook on steam. Pressure cook pumpkin up to 2-3 whistles.2) Let the cooker cool down for 10-15 minutes. Mash pumpkin cubes while they are hot, add jaggery and mash. You will get thick and fine mixture.3) Then add enough wheat flour and knead well and make nice dough. Add 1-2 tbsp oil and knead well. Consistency for dough should be medium. Methichya Dethachi BhajiIngredients:1 cup finely chopped Fenugreek Stems1 medium onion cup Chana Dal2 tbsp Rice Flour2 tbsp Wheat Flour1 to 2 tbsp Green Chili Paste1 tsp Cumin seedsSalt to tasteoil for deep fryingMethod:1) Soak chana dal in water for 4-5 hours. After 4-5 hours drain all the water and grind to fine paste without adding water.2) Chop onion finely. In a mixing bowl, put chopped Fenugreek stems, chopped onion, chana dal paste, green chilies paste, rice Flour, wheat Flour, cumin seeds and salt to taste. Mix these ingredients together. This mixture should be thick and little sticky.3) In a deep fryer, heat enough oil for deep-frying. Drop the mixture in the form of small sized balls. Keep water level 2 inch above Sabudana and Vari Tandul.2) After 4-5 hours, grind sabudana and Vari Tandul by adding little water. Add chilies, cumin seeds, grated coconut, peanuts powder and salt to taste. Consistency of the batter should be medium thick.3) Grease Non-stick tawa with 1 tsp Ghee. Turn the heat on medium. Kobichi Pachadi (Indian Cabbage salad)Ingredients:2 cups grated Cabbage2-3 tbsp Roasted Peanuts coarse Powder2 tsp Oil tsp Cumin Seeds tsp Asafoetida tsp Turmeric Powder2 Green chilies tsp Lemon Juice1 tsp SugarSalt to taste cup finely chopped CilantroMethod:1) In a mixing bowl, add grated cabbage.2) In a small saucepan, heat 2 tsp oil. Add tsp Cumin Seeds, tsp Asafoetida, tsp Turmeric Powder, 2 Green chilies (chopped). Pour this Tadka to grated cabbage.3) Then add 2-3 tbsp Roasted Peanuts coarse Powder, tsp Lemon Juice, 1 tsp Sugar, Salt to taste, cup finely chopped Cilantro. Mix very well.This pachadi tastes great with chapatti. Vatali DalIngredients: cup Chana DalFor Tempering: 4 tbsp Oil, tsp Mustrad Seeds, tsp Cumin Seeds, tsp Asafoetida Powder, 1 Tsp Turmeric Powder, 4-5 Curry leaves3-4 Green Chilies tsp Sugar cup fresh Grated Coconut1 tbsp Lemon JuiceChopped cilantroSalt to tasteMethod:1) Soak Chana dal in water for 3-4 hours. After 3-4 hours, drain all the water and grind coarsely without adding water.2) In a wok, heat 3-4 tbsp oil. Temper with, tsp Mustard Seeds, tsp Cumin Seeds, tsp Asafoetida Powder, 1 Tsp Turmeric Powder, 4-5 Curry leaves, chopped Chilies. Stir for few seconds.3) Then add coarsely ground chana dal. On medium heat, saut chana dal. Add salt and sugar as per taste. Keep the heat on medium low4) sprinkle 2 tbsp water all over chana dal, saut and cover pan with lid. Sanjyachya polyaIngredients:For stuffing2/3 cup fine Semolina3-4 tsp Ghee1 cup grated Jaggery1 cup Water2/3 cup Milk1 tsp Cardamom PowderFor Cover2/3 cup Maida (Plain Flour) cup Whole wheat flour4 tsp OilMethod:1) On medium heat, roast 2/3 cup Semolina till golden brown. While roasting semolina, boil 1 cup water on other stove top. Once semolina is done, pour boiled water into semolina and stir. Cover with lid and let it cook for couple of minutes or till the water gets absorbed in semolina.2) Then add grated jaggery. Stir well as it starts melting. Boil 2/3 cup milk in other saucepan and add it to semolina. Add cardamom powder and stir nicely. Cover the pan with lid. It will take few minutes to absorb all the milk in semolina.
