Crispy Daim & Chocolate Mousse

Daim is a Swedish chocolate bar which I like very much. It is a thin bar, covered with a thin layer of milk chocolate. Crunchy, because inside the milk chocolate layer, there is hardened caramel. The caramel is not enjoyed by everyone because it has a tendency to get stuck between the teeth. However, Daim works very well in desserts.I believe Daim can be purchased in other countries too, for instance Denmark, Finland, France, Germany, Norway and United Kingdom. If there is an IKEA store near you, there might also be a Swedish food market, where you are able to purchase the Daim bars. Perhaps they sell the Marabou milk chocolate brand too. This dish is an ideal dish when you have to come up with something quickly and easy made. It is also one of my favorite everyday meals because it can be prepared ahead. INGREDIENTS:Serves 6* 8 hg (800 g) fillet of pork* butter* salt and pepper* 3 dl cream or crème fraiche* 3/4 tbsp Chinese soy* 2 - 3 tbsp chili sauce (ketchup-like)* 2 cloves of garlic* 3/4 tsp French mustard* 3 tsp tarragon* ½ tsp black pepper* chopped parsley* ½ tbsp rosé pepper, or why not some red hot chili pepper flakes (optional).METHOD:1. Cut the fillet into slices, 1½ - 2 centimeters (150 - 200 mm).2. Brown the fillet slices in butter in a skillet.3. Salt and pepper to taste.4. Put the slices into an ovenproof dish.5. Oh no! Not another pesto recipe, you say. Well, perhaps not, or.....A Swedish Blogger friend of mine has a green house. Some weeks ago she asked for an-easy-to-make pesto recipe containing no odd ingredients. She had grown monstrous basil plants, and didn´t know what to do with all the leaves those basil plants produced. Her basil plants have got very large, medium green leaves. The taste is more sweet and mild than the Genovese Basil. Here´s the picture 4 Large leaf basil.I know, there are many pesto recipes on the internet. Placed in Piazza Campo de' Fiori, Rome, is an old restaurant called La Carb onara. This name has nothing to do with the classic Italian dish Spaghetti alla carbonara.At the beginning of last century there was a coal shop in the neighbourhood. One day the owner of this shop decided to open an inn close to the shop. He called it Il Carbonaro.Later on the inn was moved to Campo de' Fiori square, and the name was changed to La Carbonara. Eating out in Rome can be very expensive. Touristy restaurants with English menus tend to be more expensive than restaurants a block or two away from touristy areas. If you go to a trattoria or a pizzeria on side streets, you don´t have to eat a full meal, and you don´t have to pay for a full meal. Certain places sell food by weight. They have a counter with different types of pizzas (and other dishes). You choose a piece or two, they will weigh it, and you pay for the weight.A large pizza cut into slices can be shared by two or three adults. So, for us pizza was great for lunch. Simply thin bread garnished with small amounts of flavorful tomatoes and cheese. Most Swedish pizzerias serve monstrous pizzas. Midsummer Eve always falls on the third Friday in June. It is a survival of Teutonic pagan festivals celebrating the summer solstice. Also known as St. John´s Eve. Today, on 6th of June, it´s holiday. It is the Swedish National Day. This day became the Swedish national day in 1983. Previously known as Swedish flag day. It marks the coronation of Gustav Vasa in 1523. This old king defeated the Danes and established Lutheranism in Sweden. This day also marks the adoption of one of our constitutions from 1809.The Swedish Riksdag (parliament) only designated this day a public holiday in 2005. Many immigrants associate the day with receiving Swedish citizenship. They celebrate living in a free and independent country.There are celebrations in Stockholm, 600 kilometers away. I was going to bake this cake in April. We had invited guests for dinner. I needed ripe passion fruits at once. The perfect coffee cake, I thought. However, the passion fruits were hard as stones and looked more or less like purple plums. How long would it take for them to ripen? A week or a month? Swedish meatballs are one of the best-known Swedish cooking specialties. However, there are so many recipes. Almost all meatball recipes call for some type of extender such as mashed potatoes, rolled oats or breadcrumbs. Less expensive items than meat. My mother ground very well trimmed meat (ab. 300-400 g) in a hand turned meat grinder. She even used to make her own breadcrumbs. She took 4 crisprolls and crushed them with a bottle between two layers of paper. Then the crumbs were soaked in 1 coffeecup of milk for a while to make a crumb paste. Perhpaps they will need some help measuring up the ingredients.INGREDIENTS:* 100 g margarine* 1 dl (100 ml) sugar* 2 tablespoons cacao powder* 1 tablespoon vanilla sugar* 4 tablespoons golden syrup* 1 ½ dl (150 ml) coconut flakes* 3 dl (300 ml) corn flakes* (or Kellogs Special K. Whitsuntide. Weddings. Examinations. Christenings. Mother ´s Day.Mother´s Day is always celebrated the last Sunday of May in Sweden. Our memorial day in honor of mothers originated in USA. Earlier a similar British tradition was called "Mothering Day" or "Mothering Sunday"; a celebration on the fourth Sunday in Lent for all those working young boys and girls away from home. They were allowed this one day's holiday to return to their homes, visit their mothers and spend the day with them. They also brought a gift, a so called "Mothering Cake ".Anyway, now there are a lot of celebrations in Sweden.It is cake time.Actually this cake is meant to be a homemade wedding cake. I might as well say it at once. I do not bake bread very often - only at special occasions. Why? Beacause my family likes the Swedish crispbread most of all.Wasa is the world's largest producer of crispbread. Every year the company sells around 60,000 tons of crispbread in 40 countries. Swedish people eat more crispbread than any other people in the world, almost 4 kilograms per capita.
