With the weather continually being “cloudy chilly windy damp” for months we had a surprise bonus this past weekend. Early in the morning there was glorious sunshine and the temperature by mid morning had already climbed to the 70’s. Every cuisine in India has its own version of making this Stuffed Eggplant delicacy. In fact even with in the same cuisine there are so many variations that it is hard to categorize this as belonging to a specific region. It majorly depends on the ingredients that go into the masala for stuffing.  Making this is not an easy process either; it is time consuming, involves lots of steps and requires a person to have good amount of patience to put this together. Don’t we all have one of those days? Days on which there is nothing new to say, the words don’t seem to flow, the thoughts don’t catch up and there is no connection between the two. You don’t feel like writing about the recipe. I found out about this India n Food Blog Aggregator site from Nupur’s blog.  When I browsed through that site I was amazed to see such beautiful layout, very well formatted and so beautifully integrated with the colors of the Indian National flag. The contents, presentation, and the colors blend together so well and information flows seamlessly. Thank you Sailaja for putting this together and giving exposure and traffic to bloggers like me. Life at work and home is so hectic that some days I don’t even know if I am coming or going. On the work front, it is like the people who were asleep last December are suddenly waking up to the dawn of the New Year.  To make up for all the lost time they want to get things done as if there is no tomorrow, pile on work and slap unrealistic deadlines on lesser mortals like us. As a result my work gets extended to later in the night and I miss spending time on my blog.  OK, enough said but that is a reality and nature of the business. So this last Friday it was just me and the little one at home for dinner. Dear Husband had a dinner-meeting with his work colleagues and he was off for the night. I did not want to slave and spend a lot of time in the kitchen and neither did I want to snack on something unhealthy. Blame it on cold wintery nights and I was also craving for something hot and “chatpata”. I peeked at my fridge and found some shredded cheese and some remnants of spinach leaves. So I instantly had this idea of making Quesadilla using chapathis as I had no tortillas to go the authentic way. Don’t we all have few of those recipes in our repertoire? Simple yet flavorful, easy yet delicious, cool ingredients yet adds warmth to our hearts and most important of all takes us back through our memory lane and reminds us of our old comforting times. Life gets so hectic and consuming sometimes that there is no time to think of anything beyond ourselves. So it is refreshing to take a break once in a while from the monotony and look at things from a fresh perspective.  Thankfully I had this opportunity in the form of beach side vacation during the last week of December.   I spent most of the time at the beach riveting away from the narrow foci of my life and pondering over things much higher than myself.  Whenever I sit by the beach, looking at the water, listening to the sound of the waves I experience similar emotions but varying thoughts each time.  With serenity and tranquility set in I got caught up with the systematic and rhythmic way in which the waves were treading and re-treading back from the shore. With buildings, retail stores, restaurants, homes, palm trees sprawled on either side of the road the drive pretty much seemed the usual. The weather seemed perfect not too hot or too cold and the visitors scrambled along trying to make the most of this beautiful day.  As we drove along the road for 5 more miles the dearth of the stores, homes, and people reduced while we saw big mounds of white sand with patches of dead moss and grass strewn all over.   It was still nothing out of the ordinary until we parked the car on one of the beach access roads. It was whirlwind of activities, planning, packing, last minute cooking etc ever since Dear Husband planned a beach side vacation for the family 2 weeks ago. Everything fit right in, the hotel reservations, travel arrangements, time off from work, the temperature.  The vacation was just what the doctor had ordered to get away from the usual grind and seemed like a glorious way to end the year 2007.  Both me and my husband love munching on stuff, chatting, listening to music, enjoying views during long drives and so I always make it a point to carry lots of goodies and keep it within hands reach in the car. I was going through the food pictures I had taken a while ago and realized that I had not yet blogged the recipe for this Instant Appe. It was intended to be a part of the trilogy series, the others be Chana Daal Appe and Dahi Vada Appe.For this Appe I was thinking of a way of making a healthier version of the famous “Rave vade” of Karnataka. The batter is made of Sooji, onion, green chilies and it is deep fried. Of course, this version is no where close to the original, but nevertheless a healthier version to snack on.  Also as a note of caution these cannot be let out for a long time as they do not maintain their crispness for a long time.   Ingredients 1/2 cup fine Sooji (rava) 1 small onion ½ cup idli rava ½ cup rice flour 2 Tbsps yougurt/cream 3-5 green chillies 1 Tbsp jeera (cumin) ¼ tsp baking soda Coriander leaves Salt, oil Curry leaves   Method:  Chop the onions and coriander leaves finely. So few days ago while cooking this refreshing dish, I was watching over my toddler play with some of his toys few feet away from where I was standing. Sometime later he started chewing on one of his toy and I like any other dutiful mother asked him to stop. The naughty toddler that he is continued to chew on it ignoring my willful pleas, so I scornfully said “S, you are a Bad Boy, stop chewing it”. Now I was expecting that he would listen to me and stop chewing, but instead he said “Amma Bad Boy”. That totally caught me off-guard as I was hearing it for the first time and I ended up laughing loudly and giving the toddler a big hug. Food Blogging in general makes you think about food, recipes ideas, writing and presentation in ways not thought of before.  Food Blogging Event in particular makes you put on your thinking cap and takes thought process to a whole new level especially when a new food ingredient is involved.   I was stumped when it was announced that the key ingredient for the AFAM event this time was DATES. Dates adorn our pantry as a garnishing ingredient for our cereal or oatmeal and occasionally to be eaten as is. Other than that I have very limited or in fact, almost no experience using it in our everyday or special cooking.  I really loved the idea and wanted to come up with something for the event.  I had the idea of making a Date Burfi by adapting this lovely recipe here.  When I thought of this idea I was expecting to find the taste of dates blend with that of milk, to create a unique taste with a sticky texture. Here’s raising toast to the much awaited and anticipated time of the week, the weekend. Ah! The sweet joy, relaxation and freedom associated with the weekend after a major grind parallels none. I usually enjoy the drive back home from work sans the traffic of course. That is the time when I am done with the major grind of the day; away from the noise, tension, pressure, people etc. That is the time when I am by myself in the closed environment, surrounded my soft music feeling cozy with just the right temperature, not too warm or too cold.  After falling into the everyday rhythm of driving and seeing the familiar surroundings, my thoughts about work fade away, the rough edges of the pressure, tension soothed by the music, my left brain function is put to rest and the right brain activity catches on. Cauliflower next only to Cabbage has been a favorite vegetable of mine. I enjoy them in any cooked form; however I love them best when they are transformed into this dry Sabzi with a mix of potatoes. I feel that it is very comforting, appetizing and also pleasing to the taste palettes. Another reason to love this cauliflower recipe is because it is so easy to make especially during the hectic weekdays. The cooking work is divided between microwave and the cook top and the dish gets done in no time at all. He has at least 17 different varieties of tea, green tea, rice tea, jasmine tea, rose tea, mango tea etc 8 books on tea, 2 videos, countless print outs on the benefits of tea, tea maker, innumerable tea cups, glasses, 5 tea strainers, tea bags all this and more! But did I mention NO black tea? He returns back from his business trip to Toronto one late Thursday evening and after a while goes to empty his suitcase. You hear sounds of paper shuffling, stuff taken out, re-arranging etc. You get curious and take a peek; you see two paper bags and a gif t bag. Your hopes and expectations are raised, you feel glowing warmth only to be quashed in an instant when you see 5 more tea varieties pop out of the bags. Growing up, Deepavali was always the most exciting festival for us from the get go. What with the holidays, new clothes, sweets, snacks, savories, lights, friends, family and most of all crackers, there seemed to be non-stop excitement all day around. My Mom would prepare all the usual sweets, snacks like Besan Ladoo, Churmundo (wheat ladoo), sweet tudki, chivda etc etc and along with these would also prepare this unique snack called “Rose Cookie s ”. They were shaped like wheels, crunchy, salty, yummy and gone with in minutes they were made. This story has the fixings of the same old plot with the same old twist, except that this involves rich, deep, vibrant colors in the background. So, during the weekend when we went to do the usual grocery, I was smitten by a pack of mini peppers sitting coyly in the corner. I stood there looking at the tiny vegetable, gazing at their even, vibrant colors admiring them as though they were flowers.The bigger ones have usually caught my eye, but not the smaller ones and I have wondered ever since how I happened to missed them before.  Anyway the first thing that came to my mind after bringing them home was to make “Stuffed Pepeprs”.
