Cheesy Chicken Pasta Primavera (Gluten Free)
2008-03-26 13:25:00 I came up with this easy chicken primavera several weeks ago. I love the concept of this simple meal made with fresh or leftover chicken (I usually make it with leftovers). It is very easy to prepare on my stovetop in my large, enameled, cast iron dutch oven. (A recent birthday present from my sweetie!) I've made this easy, yummy dish several times since, and I'm looking forward to it again this week!One of the best things about being gluten free is that I learned how to make a roux. Basically, a roux can be the base of a creamy sauce, soup, gravy, etc... A roux is so easy and so helpful in cooking. I like knowing that I no longer have to depend on a can of Campbell's soup to make a meal. The ingredient of the week is almonds! I chose almonds because I always think of almonds at Easter! As a child I often received Jordan Almonds in my Easter basket! Chocolate covered almonds are a favorite as well!In my kitchen I like adding raw sliced almonds to vegetables like green beans when cooking! The almonds give the vegetables a very unique flavor and a wonderful crunch! I'll be making green beans with almonds this week! Rich Chocolate Cream Cheese Brownies (Gluten Free)
2008-03-20 20:43:00 I know you love brownies. Everybody loves brownies.Okay, maybe not everybody. Not my weird sister, who does NOT like chocolate, and therefore does not like brownies. I still don't know where she came from. I really think she was an alien baby. Don't tell her though... it might hurt her feelings... of course, she's also the skinniest person in my family... maybe that weird "no chocolate" thing has something to do with it! Oh well... Artisan Maple Oat Bread (Gluten Free)
2008-03-18 15:16:00 This may be my favorite gluten free bread recipe yet! It is simple and easy to mix (with your stand mixer) and creates a beautiful, evenly risen loaf. The presentation is lovely and the bread is moist, soft, tender, and sweet. Michael said this was as good as the sweet King's Hawaiian bread we used to eat on occasion before I went gluten free.Maple syrup is one of my favorite sweeteners. It is expensive so I don't use it often for baking. The best type of maple syrup to buy is grade "B" because it is less processed than grade "A." It is also thicker with a more rich, decadent flavor.I've been working on this loaf for several weeks and I am very proud of the final product. I will be making this loaf often. It's actually a very quick yeast bread to make. It bakes in about 40 minutes and only takes about an hour of rise time in a closed, slightly warmed oven.The next time my mom-in-law comes over for dinner, I will have this loaf baking in the oven! Tuscan Potato, Kale, and Sausage Soup

The main reason I loved the restaurant was for those big squooshy, salty, garlicky breadsticks they had......oh and yeah, the pasta was pretty good too! But I loved those breadsticks! (And actually just between you and me, I think I've come up with an incredible gluten free breadstick recipe that is very similar, but that's another post for another day!)Another thing I loved about Olive Garden was their soup. Occasionally several co-workers and I would go for the breadsticks, soup, and salad lunch at the restaurant. My favorite soup served was "Zuppa Toscana." I loved the zesty creamy soup with the big chunks of Italian sausage, potatoes, fresh kale, and spices. It was such a robust soup with amazing flavor and color!Several years ago I tried my hand at making it at home. It took a few tries, but I think I came up with a good imitation! 2008-03-10 03:26:00 Our red plum trees are in full bloom this week!It's nearly here. The big one. It's a milestone birthday for yours truly! Yes. I will be the dreaded 3-0.The funny thing is I'm actually not dreading it at all. I'm 30 years old and I've earned every gray that is quietly sneaking into my auburn-brown hair (okay...maybe I didn't "earn" all of them!), I have a solid faith and I know who I really am, I am married to the most wonderful man on this earth, we have a home of our own, 4 cats who love us, an incredible family, devoted and loving friends, we are happy and blessed and I am glad to be here! I think "30" is not an end, but a new beginning!That being said, this week will not have a standard menu. We'll be off work near the end of the week to celebrate my birthday and to have some rare time together at home. Gluten Free Vanilla Sandies -- A Delicious Mistake!
2008-03-07 20:31:00 If you are looking for a healthy gluten free cookie, please avert your eyes! These wonderful cookies do not have one healthy redeeming factor about them... but they are simply delicious! I am a sucker for sweet, soft, "melt in your mouth" baked goods.I came about these cookies quite by accident. They were supposed to be "big, fat, soft, white, sugar cookies." The only reason I do not think they fit into that category is because they are not "cakey" cookies, as I recall those big soft sugar cookies to be. To get that affect you would probably need to add another egg. Instead, what did result was a soft, yet "sandy" textured cookie that simply melts in your mouth. I felt like I could walk down my close-knit street of neighbors and find her swaying graciously on a front porch swing. Gluten Free Oatmeal Apple Snack Cookies
2008-02-29 02:57:00 I am very blessed to live in a "real" neighborhood where I actually know and interact with my neighbors. We email and call each other often. We also hang out together on occasion! One such occasion happened last week when we had a rare occurrence of a moon eclipse.James, Donna, and their son came to hang out with us in our back yard to watch this spectacular event. While it was rather cloudy for most of the show, we did get a few amazing glimpses of the extraordinary celestial experience!Afterwards we went to the kitchen for some warm oatmeal snack cookies and homemade hot chocolate (my favorite frugal recipe!). But she had made it once before and she really wanted to make it again. But the daffodils are blooming in eastern NC, which means... it is spring.We planted white daylilly bulbs and transplanted daffodils into our yard this weekend. The air was crisp and reminiscent of fall, but the bright pastel colors of the new lime green grass and the butter yellow daffodil blooms told a different story. Michael is the green thumb in our family. He told our pastor this weekend that I was an excellent cook and could make anything I put my mind too, but give me a plant and it would be dead in a week. I'll forgive him since he complimented my cooking!Michael wants our yard full of blossoms this spring. This is the first yard that has ever been "his" and he is really enjoying learning how to landscape. He was outside all day on Saturday and most of Sunday. When I was growing up, occasionally during summer break, my parents would take my sister and I to lunch at Red Lobster... I LIVED for those cheddary garlic biscuits that they served. 2008-02-18 14:44:00 We had a wonderful Valentine's Day last week and we actually celebrated all weekend long!! Michael took me out to dinner on Friday night. He took me to Carrabba's. He did his homework and called the restaurant beforehand. He made sure the staff knew that I was gluten free and he wanted them to be prepared when we came in.I cannot tell you how wonderful the staff at Carrabba's was. The waiter was knowledgeable about every gluten free menu item and he took the time to prepare most of my meal himself to reassure that it was indeed gluten free. The waiter even took the time toast up my gluten free bread (that I had brought in), so I could dip it in the oil and seasonings! The grilled salmon that I ordered was the best that I have EVER had. Michael's Best Rustic Chicken Pot Pie (Gluten Free)
2008-02-13 17:24:00 It is a special man who will make a gluten free dinner for his wife, who isn't feeling good, even though he doesn't like to cook.Michael sweetly offered to make dinner one night last week when I had a migraine. I helped him to make the roux for the gluten free cream soup, but for the rest of the recipe, I cannot take any credit. He made everything. He even made that awesome crescent roll recipe for the top and bottom crust of this wonderfully delicious chicken pot pie!This is a great recipe to make when you know you will have leftover chicken in the week. We roasted a chicken earlier in the week, and then used the rest of the chicken meat for this excellent pie.This is ultimate comfort food and gluten free goodness at it's best! A Successful Gluten Free Master Baking Mix -and- Mini Donut Hole Muffins
2008-02-09 17:00:00 Last month, I received an email from a wonderful reader named Peggy. She had tried my "all-purpose" baking mix I first posted last month and said that it tasted bitter to her. She had tried it in several recipes and while they were good, they had an aftertaste that she and her family didn't like.Thankfully Peggy was kind enough to email me and let me know about what happened when she made the mixture. I am always appreciative of readers who let me know how my recipes turn out. I have no way of knowing if it actually works for others unless I receive feedback!Peggy was also patient enough to try the recipe again after we adjusted certain ingredients. Gluten Free Red Velvet Valentine Hearts
2008-02-07 02:40:00 I'm back with some cutie patootie Valentine 's Day Red Velvet mini cupcakes.These little babies are actually smaller than your average mini-cupcake, so you can eat 2 or 3 without feeling an ounce of guilt!! These gluten free cupcake bites are also quite low in sugar and are very tasty! And they are just so darn cute to boot!I didn't eat red velvet cake growing up. We just didn't have it. I don't know why because it is so tasty and delicious. How to make my Dad's Caesar Salad

I think a perfect meal in his eyes would be a grilled rare steak with a baked potato and LOTS of garlicky homemade caesar salad.It was a tradition in our house that at least every other week Dad grilled steaks for dinner, mom baked the potatoes, and usually Dad made the caesar salad. I know I'm probably the 546th gluten free blogger who has now made them (and of course tweaked them slightly to my liking) but they are STILL worth blogging about!You've probably seen:Kate's version, so elegantly crispy and buttery both as crescents and croissants...Cassandra's version, some truly beautiful rolls using montina flour and creating some awesome looking cinnamon buns...Steve's version using blackberry jam and cream cheese rolled up inside (oh I've GOT to try that Steve!), and of course...The listing with the celiac delphi forums. Have I missed anyone else??These gluten free crescent rolls are soft and chewy. Buttery and yummy! Not exactly food for a fat-free diet, but awesome for a special occasion!! This is the only time this month that I broke the "sugar-free" rules. I'm trying to figure out why this is happening and I apologize for bombarding your readers and your email! I'm hoping to get this problem resolved ASAP! Thank you so much for your support and readership!! On to today's post...My Aunt Linda is one amazing lady. She's a caring nurse. She's an incredible mom to three wonderful (now grown) kids. She's a talented decorator. And to top it all off, she's a great cook! I always get excited when we are planning to visit my Aunt Linda and Uncle Mike because I know I'm going to learn something special in her kitchen.On our last visit, Linda shared with me her new love for smoked paprika. After opening her container and getting a whiff, I could see why she was so amazed! The aroma of this sweet but smoky pepper was incredible! I can't wait to try some! It's a vivid reminder of how often, especially in the American culture, we satisfy ourselves with sugary foods. I think it's an undiagnosed disease in this country. We medicate ourselves with sugar. I know I do. If I've had a bad day... If I don't feel good... Even if I'm just tired... or if I'm vegging out in front of the tv... I often crave something sweet.I've tried to wean myself off sugar this month by drinking fruit juice diluted with water or using a little honey on toasted gluten-free bread. And even occasionally indulging in a "sugar free" treat like some ice-creams, even though I really don't promote using artificial sweeteners.
