Wow, breakfast and dinners are equal in your favourite meals!  Whilst breakfast being the most important meal of the day, I’m sure most of us would like some variety with this.  There’s quite a few recipe ideas on here for these, especially with making porridge or oatmeal. Devilled potatoes is quite a delicacy over in India and Sri Lanka.  Over in Sri Lanka this is made with maldive fish, but I’ve simply taken these out and swapped a few ingredients to make a vegetarian and vegan version of this simple yet spicy, and, not forgetting tasty dish! The potatoes are a great accompaniement to your main curry or on it’s own in a wrap. The traditional recipe usually has real coconut but it’s a little hard to find around my area, plus this healthy version here, uses a little coconut essence to reduce the calories involved but doesn’t impact on the coconut flavour. My photo here shows how I overcooked my potatoes, I’d recommend cooking until just soft and setting aside in cool water to stop the cooking process. The South Melbourne market is a great place to find fresh vegetables, Asian groceries and lovely delicatesan foods. If I’m looking for a particular ingredient, it’s not hard to find over there. Don’t get me wrong, we have some other great markets here also including, Footscray, Victoria and Prahran markets. I’ve been to all and I believe these are just as good for fresh fruit and vegies! South Melbourne is just the closest for me at the moment! Moving back to the recipe, I found the Gorgonzola in one of the better delis. In fact, it was the only one I found that had their cheese in their own walk-in fridge there. This to me, means the cheese is better looked after and went about purchasing enough for two to three people! Gorgonzola would have to be one of the most stinkiest and strongest biting cheese around. It’s my dad’s birthday this week, his big 6-0 in fact and we have a barbecue set for him and the family for next weekend. I’m thinking it could be a good time to come up with some tasty vegetarian and vegan barbecue treats to serve, so be prepared for those coming up! As for this week, I’ve got one special vegan dish and a couple of cheese varieties for those vegetarians. The vegan dish ties into noticing how many vegans are coming on to this site! Thanks guys! The cheese dishes, could easily be subsituted for other ingredients. For example, the paneer (indian cheese) could be subsituted with tofu, which would be just as good! Can it get any better than cheese fondue? This recipe is based on the famous dish from Switzerland which I absoutely love after having it near the Jungfrau Mountains on one of my travelling adventures. This certainly reminds me of this adventure and is great alternative to the normal fondue. Vegans can minus the cheese here and make it with Nutritional Yeast Flakes and ground cashew sauce. It would turn out very similar in taste and would be just as delicious! Serves: Two Ingredients: 1 tsp garlic mince 1 tsp corn flour 50 grams mozzarrella finely chopped 4 mushrooms, sliced thin pinch oregano pinch rosemary 100 grams spiral pasta boiled and cooled cracked pepper 1/2 handful grated vegetarian edam cheese 1/2 handful grated reggiano 1/4 cup moscato or another white wine 1 tsp butter 1/2 turkish roll roughly chopped Instructions: Preheat the oven to 180 degrees celsius.
