2007-02-09 23:35:02 I've tasted different versions of chocolate cake and a lot out there isn't quite chocolatey enough or they're too dry or taste very commercialised as if they're from a packet. This particular chocolate cake recipe is moist, dark and just absolutely gorgeous! I found it at the back of a cocoa box years ago and it's still the best. INGREDIENTS:1 cup water1 1/4 cups castor sugar125g butter1/2 cup good quality cocoa1/4 tsp bicarb soda1 1/4 cups self raising flour2 eggs - lightly beatenCOMBINE water, sugar, butter, cocoa and bicarb soda in saucepanSTIR over heat, without boiling, until sugar dissolvesBRING to boil, reduce heat and simmer uncovered for 2 minutesTRANSFER to a bowlCOOL to room temperature (roughtly 30 mins)ADD flour and eggs and beat until just combined.POUR into a greased panBAKE in moderate oven for 40 minutes - test with a skewer if cooked.
