Lamingtons
2007-02-15 23:42:02
Lamingtons are Australia's national cakes. They are sponge cakes cut into squares and dipped in chocolate icing then covered with dessicated coconut. I actually never encountered these little cakes until I moved here in Australia. So far, the best lamingtons I've ever had were made by a mother who used to bake them for my sister's ballet fund raising. They were the soft fluffy sponge cake covered in mouth watering chocolate sauce rolled on dessicated coconut. It was kinda messy but had that fresh homemade taste. If I buy lamingtons in the shops they tend to not be that nice or they have jam in between, which I don't really like. This recipe is something I came across online and I have yet to try it. It's supposedly a fluffy sponge so one of these days, I might give it a whirl - maybe for my son's school fund raiser!Pictured below are chocolate and pink lamingtons and a cream-filled lamington.
