After five years of living strictly gluten-free, I can honestly tell you, Dear Fabulous Reader, there are very few things I still miss from my pre-celiac diagnosis. New Mexican Hot Fudge Sundae Who can resist the combination of coffee and chocolate? This is a simple hot fudge sauce to drizzle over ice cream, flourless cake, or gluten-free brownies - you name it. It's lip-smacking good.1/2 cup cream [light or heavy]2 tablespoons honey5 ounces dark chocolate, in pieces1/4 cup Kahlua [coffee liqueur]1/2 teaspoon ground cinnamon1/2 teaspoon vanilla extractIn a saucepan, heat the cream until it begins to simmer. Remove from heat and add the honey, and pieces of dark chocolate; stir until melted. Stir in the Kahlua, cinnamon and vanilla. Taste test!Serve the sundae in festive Mexican margarita glasses. I'm tempted to title this Cake in the Desert at Twilight. With the days getting shorter and shorter there is less and less daylight filtering into the casita. I am racing with the light. I grab lime-styled margarita fueled guacamole from the grinning grip of beloved guests, and tipping bowls of steaming chili are snatched from my husband as I scurry outside to the breezy portal. Go for it.Sour Cream Blue berry Muffin s - Gluten Free and Wheat FreeI used my trusty Pamela's Ultimate Baking Mix for the basic flour mix in this recipe. But you can use any flour mix you prefer. Just make sure it's got some leavening in it, and a touch of xanthan or guar gum. When food bloggers were challenged by a recent article to write with more verve and snap than a boring cheese sandwich, I knew I had to head to the kitchen. We had a low-key, quiet day here in the high desert. No traveling. No guests. No family. One son is back east, in his last year as a Senior RA at college [he is on duty for the holiday weekend] and the other son is working and living in Los Angeles. Both cooked yesterday. I confess. My all-time favorite cookies in those innocent pre-gluten-free days were not some gourmet bakery confection, but those big, chunky Pepper idge Farm chocolate chip cookies you could get in any grocery store. And the winner is... Steve and I decided to do a taste test. Our goal? Finding the best tasting gluten-free brownie from a mix. Our criteria? A brownie so abundant in chocolatey goodness it would fool a gluten eater. Steve is the brownie baker in the family, so he was in on this project from the start. While mixes are fine in a pinch, there's no question a brownie made from scratch is a deeper, more deliciously decadent experience. Especially if you use melted Belgian dark chocolate.
