Mornings have been bone-chilling frigid. The mountain peaks are snow capped and almost mystical against the deep-sea sky. The mesa behind us is still white on the shadow side. Coyote tracks zigzag through the junipers. Yesterday, I watched a jackrabbit sprint across the western slope below our casita, his desert brown camouflage useless against the snow. Life in New Mexico has been quite the adventure this past week, Dear Reader, with record-breaking snowfall measured in feet rather than the usual sparse and crystalline inch. Alex and [girlfriend] Jess arrived safely at Albuquerque International Sunport in the thick of it [one of the last flights in before flights were grounded left and right]. Driving south on icy highways through blizzard-like visibility to fetch them, we nearly ended up in a ditch south of Santa Fe - one of those out-of-body-holy-shit moments as we skidded and fishtailed in apparent slow motion, high-beams behind us bearing down alarmingly fast. How the truck missed us, I still don?t know. With driving conditions impossible that first night we ended up staying over in Albuquerque, unprepared for an overnight [no toothbrush, change of clothes, or gluten-free snacks in sight]. I also added plain yogurt, lime juice and honey to make it moist, and spices to liven up the flavor. It turned out well. Breadman now makes a [very space agey Jetsons-looking] high tech bread machine with - you guessed it - a gluten-free cycle! One year ago I was living on Cape Cod, blogging about my fourth gluten-free anniversary and contemplating a bowl of peppermint ice cream for breakfast. I was just getting the hang of this whole blogging thing, wondering if anyone would even be interested in the gluten-free recipes I wanted to share. This morning I sit typing in my New Mexico casita, sipping chamomile tea, thousands of miles away from a year ago. Snowflakes fall on the junipers outside my window. Steve and I invited our friends Joey and Will, and Joey's parents, for a Christmas Eve brunch. Joey's parents drove all the way from Mississippi to visit, Dear Reader. They are very sweet. Getting through the holidays gluten-free can be tough. But then, the holidays were always a challenge for me because I was mostly vegetarian for decades, some years, strictly so. Only recently [since my celiac diagnosis] have I added chicken and fish to my weekly menu. So, Kind Reader, my holiday foods tended [always] to be a tad different from the mainstream. I learned to tweak traditional recipes and reinvent old favorites. And I began to enjoy thinking "outside the box". And never once did I make a turkey out of tofu.
