Rich History of Chocolate
2007-11-12 19:40:00
Originally chocolate was a bitter beverage, created by the ancient people of Mesocamerica. They used it in their religious and social lives. This was back in 250-900 AD, known as the Classic Period. The Mayan people used to harvest the bean from the rainforest that grew around their city. They called the cocoa tree "Cacahuaquchtl" and the chocolate "xocoatl", translated it means "bitter water". They used to ferment and roast the beans. From this they create a paste. By adding water, chilli peppers, cornmeal and other substances, they created a spicy chocolate drink. The Aztecs then adopted the cocao when they started to dominate Mesoamerica. They used the beans as a type of currency. Soon chocolate became an integrated part of the Aztecs lives as well. The drink became reserved for mostly royalty and the likes for the Mayan people, while the Aztecs kept it for their rulers, priests, honoured merchants and decorated soldiers. The Aztecs believed that power and wisdom came from eating th...

Cooking With Wine Is Easy
2007-11-10 02:45:00
I cook with wine a lot. You can take an easy cooking dish and use a little wine and it makes all the difference in the world. Cookin g with wine does not have to be difficult or expensive. I have to say I always have wine in my house. Not just for enjoying a glass of wine, but for the purpose of cooking. Cooking with wine not only adds flavor to your dish it can also act as a tenderizer for your less expensive cuts of meats. Now I have said it before, I only cook with wines that I will also drink. Please do not cook with cooking wine that they sell at the grocers. It is not the same. For all I care it is darn right terrible. If you think about it, why wouldn't you cook with wine that you normally drink? If you like the wine on its own there is a good chance you are going to like it in whatever dish you are preparing. Then of course there is the benefit since you are cooking with wine, you must toast yourself and enjoy a glass while you are cooking with.I am going to go back to what I...

Travel Friendly Snacks and Nutrition For Kids
2007-11-08 16:19:00
Being fully-prepared for a long or even short trip can be a daunting task. You have to remember toothpaste, shampoo, socks, contact lens solution, and who knows what else. To top that off, if your journey is a long one either by car, train or plane (with layovers), you'll probably be hungry. The best way to make sure that you (and your companions) are both comfortable and well-fed is to take along some travel-friendly snacks - it'll make your trip much more pleasurable.Travel -friendly snacks can encompass a lot of categories depending on your mode of transportation. For example, if you are traveling by plane, a good snack would be one that can fit into a small carry-on and travel safely through the security checkpoints. Some of these snacks might include bags of assorted nuts, potato chips, cookies, granola bars and sandwich crackers. If you have a small insulated bag, you can also bring a sandwich with you. Just be cautious when it comes to liquids. Depending on when you read thi...

5 Tips to Save Time When Cooking at Home
2007-11-07 17:52:00
People often say the reason they eat out so often is because cooking at home is tedious work. Not only do you have to prepare and cook the meal, you also have to do the cleaning up afterwards. It all takes time, and isn't it worth just a little extra to pay for that takeout or restaurant meal, rather than eating in? Well, here are 5 tips to get over those hurdles and make eating at home easier.1. Plan ahead. I can't stress this enough. The best way to save both time and money is to know what you are cooking ahead of time. There are advantages to doing this. You know what your meals are, and you can do a shopping list. That way you only buy what you need at the supermarket, instead of grabbing items off the shelf that then hibernate in the cupboards until it comes time to clean them out. Planning ahead also means you can pre-prepare meals when you need to.2. Wash up as you go along. One of the big gripes about cooking and eating at home are the dishes. For some reason they become a...

Rigatoni A La Japon - Something Different That Everyone Will Love
2007-11-06 17:23:00
Although I would like to, I can not take credit for this recipe. I learned how to make this dish when I worked for the wonderful Bravo Cucina in Santa Monica, California. The first time I had tasted it, I was blown away. It was like nothing I had ever tasted before. At Bravo, the dish was called "Rigatoni della Farma", but I have since tweaked the recipe and therefore I have renamed it.Needless to say, Rigatoni a al Japon was the number one dish served at Bravo Cucina. Patrons would return again and again to get their fill. I must be honest, I too ate more than my fair share of this dish --I would simply crave it from time to time. The best thing about Rigatoni a la Japon is that it is very simple to make. Anyone can do it and it only takes about 15 minutes to prepare. So, having said all that, here is the recipe. I must warn you, I cook by feel. If you are looking for a recipe with exact measurements, you won't find it here. I'll tell you to give a pinch of this or a splash of tha...

How Do You Do Fondue?
2007-11-05 17:46:00
As many of you know, Fond ue was very popular in the US back in the '70s and then it just kind of died out. Well have no fear because it is back. Every major city has at least a couple of Fondue restaurants, but why go out for it when it is so easy to do in your own home. The big thing to do this season was the sweet Fondue--Chocolate!!! When you think of Chocolate you need to think about all the delicious goodies that you like to put with this melted, ooie goodness. Some that I experienced were brownies, cakes (any type will do), bananas, marshmallows, and strawberries of course. Some others that you can try are graham crackers and pretzels (which both elevate the need for fondue forks), and other types of your favorite fruits, just let your creativity take you there.Don't just melt the chocolate and expect it to be perfect. Do add hot milk or cream to your chocolate to make it smooth (1 part chocolate to, at least, 1/2 part milk or cream). Don't put the Chocolate on direct heat o...
10 Reasons to Cook at Home
2007-11-04 18:21:00
Here are 10 great reasons to eat in rather than eating out. Cook ing at home is good for more than just the budget.1. You control the portions, and therefore are not tempted to eat more than you really need to. Think about how much you'll save on, not only food, but your waistline as well, by controlling how much you eat. Do you really need the huge platters of food that the restaurants give you?2. Left overs make great lunches for work and school, saving time and money. All you need to do is cook a little extra and pack it away in lunch boxes as you serve up the meal. It's already done with no extra effort involved.3. The ritual of cooking a meal can bring a family together, and if the children help with cooking it can give them skills for life. Why leave it to schools to do all the teaching, and they'll appreciate the food even more if they help cook it.4. You don't have to travel beyond your own front door to enjoy eating great food.5. It teaches children the value of planning...

Easy Chicken Recipe in Just 7 Steps
2007-11-03 13:50:00
So here goes, this has been my closely guarded easy chicken recipe. I developed this method when I was in high school. Back then I was always on the go and was always involved in some kind of sport. My body craved the carbs, fat and protein, but sometimes my parents just did not cook up the most healthy foods. I LOVE chicken. Let me say that again, I LOVE chicken. So I had to come up with a low fat, easy way to cook up chicken. One where there was not much of a chance that I would burn the chicken, seal in the moisture and would have a juicy tasty meal.I got the idea one day after watching my mom steam some vegetables. So later that night I left for my part time job. I worked at a grocery store at the time and while I was walking up and down the aisles, it dawned on me - my easy chicken recipe.Right before I left that night I grabbed a couple of things that would soon be my easy chicken recipe that I could share with others as well as my family. What I bought at the store was:1 tray...

5 Tips For Choosing A Chardonnay
2007-11-02 16:05:00
Selecting a chardonnay is a fundamental challenge for any white wine drinker. We all know chardonnay, the undisputed champion of white wines. However, many of us would like to know a little bit more about the qualities and characteristics of chardonnay that would help us select this wonderful creation. This article will focus on 5 elements of chardonnay that will help in the selection and enjoyment process. The most fundamental characteristic of chardonnay is that it should be served COLD! Char donnay served at room temperature, while palatable, is far too bold. The intense flavors at room temperature tend to overwhelm us and any food we might be consuming. As it decreases in temperature, the flavors are toned down, and the flavors are more easily differentiated. So, the colder the chardonnay, the better. It is important to determine the flavors you prefer in your chardonnay. Younger wines tend to be less complex than older varieties. It seems to take time for all the complexities of t...

The Wide World of the Humble Peanut
2007-11-01 16:46:00
The United States harvests billions of pounds [more than a billion kilograms] of peanuts annually, producing almost 10 percent of the world total. Argentina, Brazil, Malawi, Nigeria, Senegal, South Africa, and Sudan are also major peanut-growing countries. How did the peanut become so popular? Is it ever wise to avoid eating peanuts?A Long HistoryThe peanut is thought to have originated in South America. One of the earliest known artifacts showing man's appreciation of peanuts is a pre-Columbian vase discovered in Peru. The vase is shaped like a peanut and is also decorated with peanut-shaped designs. Spanish explorers, who first encountered peanuts in South America, found them to be an excellent source of nutrition for their voyages. They then brought some back to Europe. The Europeans put the peanut to additional uses, even as a substitute for coffee beans.Later the Portuguese introduced peanuts to Africa. There peanuts were quickly recognized as a valuable food source that would...

Who Makes the Best Pizza in the World?
2007-10-31 16:27:00
Pizza is a universal food. Most of us grew up with it. All of us have an opinion about it.If you are from New York, it's New York pizza. If you are from Chicago, it's Chicago Deep Dish. The West Coast fans have their own traditional Italian pizza as well as New Wave.Of course if you are from New Haven, Connecticut, you spend hours debating who makes the best apizza: is it Sally's or Pepe's? Then there are those who favor Modern Apizza. New Haven fans are fanatics.Woven across the U.S. are small pockets of regional favorites. For example, on Long Island, New York, it's a type called Grandmother's. If you are from a certain area in Pennsylvania, you favor Old Forge. There are types of pizza for every different taste: there is thin crust Neapolitan, and there is thick crust Scilian. Chicago deep dish, is a unlike an other. California pizza can be thin with unusual ingredients for unique tastes.People don't argue about steakhouses or hamburgers or Chinese food, but this food hits ...

7 Easy Breakfast Recipes - Healthy Breakfast in Less Than 5 Minutes
2007-10-30 16:49:00
A healthy breakfast is the most important meal of the day, but many of us skip it because of time constraints. Well, now there's no more excuses! There are several easy breakfast recipes that you can throw together in less time than it takes you to find your keys.Did you know that numerous studies have found that people who eat breakfast are often slimmer than those who don't? One of the main reasons is this: When you sleep, you're obviously not eating for about 8 hours (unless you have some serious sleepwalking cravings). Your body is in a fasted state, so everything slows down. But, the sooner you eat upon waking, the sooner your metabolism is kicked back into gear for the day. However, if you skip breakfast, then your metabolism is at a near standstill for all the hours you were asleep, plus the additional hours before your first meal. This is exactly the time when fat settles in and unpacks its bags (and rolls). And to those who already eat breakfast everyday and are patting the...

Three Great Halloween Cake Ideas
2007-10-28 17:30:00
If you’re celebrating Halloween with a party this year, chances are that you’ll want to have a stunning cake to wow your guests. Here are three Halloween cake ideas to get your creative juices flowing.Haunted House:For those who are ambitious in the kitchen, a haunted house makes a perfect Halloween cake. Take one sheet cake and frost with black or brown frosting for the base of the cake. Then, with a second sheet cake, cut up pieces of cake to construct a “house” which is held together on top of the base with frosting (and wooden skewers, if necessary). Then frost the house and add windows, doors, scary pumpkins, and spooky bats. A graveyard beside the house with creepy ghosts and spindly trees is an added bonus.Kid-Friendly:For kid-friendly fare, a spider web Halloween cake is great. Cover a plain round two-layer cake in black frosting. Then, pipe on white frosting in the shape of a spider web. In the center of the web, create a large spider, either with frosting or with n...

The Difference Between Herbs and Spices
2007-10-26 17:39:00
The difference between herbs and spices is rather subtle. But the main difference is in knowing where the plant species originates from and what part of the plant is used. Spices tend to come from plants grown in tropical climates where as herbal plants can be grown in many climates. Most herbs come from the green parts of a plant such as the stem and leaves while most spices come from the root, seeds, bark or flowers of a plant. Cinnamon is a spice made from the bark of the cinnamon tree. Ginger is made from roots while cumin and nutmeg are made from seeds.Over the passage of time the meaning and definition of herbs and spices have changed and today the words are used interchangeably. One of the important differences between herbs and spices is in how to use them when cooking. For example, herbs are used in larger portions than spices for flavoring foods. Spices are generally stronger tasting and are used in much smaller amounts. Some favorite herbs are: Thyme, Basil, Parsley, Chive...

Before Starbucks, People Just Drank Coffee
2007-10-24 18:16:00
Coffee has been a popular drink for centuries, but in recent years its popularity has skyrocketed. Approximately 52% of all Americans over the age of 18 drink at least one cup of coffee every day. That means around 107 million people are drinking coffee and most of them drink about three and a half cups a day.And they aren't drinking it like their parents did-scooped from a vacuum-sealed can and poured straight from a pot on the stove or percolator. Now they're buying specialty and gourmet coffee and often brewing them in expensive coffee makers. They buy green coffee beans and roast them to their particular taste in coffee bean roasters bought especially for coffee roasting.Even more likely, though, they're stopping by their local Starbucks and purchasing a latte or espresso or any number of other special coffees the coffee giant offers. Starbucks has to be the biggest thing to happen to coffee since people began drinking it. This is certainly true in the United States, at any r...

What to Serve With Lobster
2007-10-23 16:51:00
Lobsters have shiny, greenish-black shells with orange trim. On the front of their heads, they have a pair of antennae and two eyes on the ends of stalks. They have 5 pair of legs, the front two often have big claws. Now that you have had the anatomy lesson, here is the good stuff! Before it is cooked, a lobster shell has a very dark color, it gets its deep red brick color only when it's cooked. They are available all year round.. so make sure yours is a good color when buying. To save time you can purchase a halved, freshly cooked lobster that is ready to eat - the only thing you might need to do is to crack open the claws (if they haven't been cracked already) using a hammer or a pair of lobster crackers, in order to access the claw meat. Or you can cook your own fresh. No matter which way you cook your lobster, it is the main event on your plate, therefore your side dishes should be simple not complicated.Consider boiling new potatoes and basting them with some melted butter and se...

It's The Seasoning That Counts
2007-10-22 16:13:00
It is strange to think it now, but cooks have not always been able to enjoy the benefits of no-stick cookware. And, even these days, there are some people who just prefer not to use non-stick and decide to stick with more traditional items. In fact, in my experience, you are unlikely to find any non-stick pans or trays within the confines of a commercial kitchen. Many professional chefs too, it would seem, prefer to stick (or should that be not stick) with cast iron pots and pans.Of course, cast iron cookware is much stronger and more durable than its modern non-stick counterparts. And many cooks will swear to you that cast iron has the benefit of retaining the food's flavour in a way that non-stick does not. That's great, but the food can stick to cast iron cookware can't it, and it is no fun at all to spend an entire afternoon working with a scraper or wire brush on a burnt pan while using your free hand to mop all of the sweat from your brow.Fortunately, with the correct seaso...

The Wine Regions of Italy
2007-10-21 15:49:00
It certainly is no big secret that more wine is produced in Italy than any other country in the world. Truth is in Italy's wine regions it's making has been raised to the level of an art form. An art that has been passed down from generation to generation and throughout many decades. Wine making thrives in Italy because it's climate allows for the growing of a large variety of grapes. More so than any other region in the world. The majority of this production is done in the world famous region of Tuscany. Tuscany can be found right in the center of Italy. The famous fashion capital Milan is far to the north, near the borders of France and Switzerland, while Rome is a little to the south. Tuscany is a jewel set between the Tyrrhenian Sea on the west and the Apennines mountain range on the east. It consists of ten provinces, one of which is Pisa. A city famous for it's Leaning Tower. The capital city is Florence. The wine history in Tuscany is just as historic as Italy's architectu...

The Pressure Of A Pressure Cooker
2007-10-20 19:41:00
Have you ever used a pressure cooker? They can be the scariest pots on the planet. I should know, I have succeeded in blowing the lid off or more that one. Some folks should just stay away from pressure. For me the world famous "pressure cooker" is by far the most frustrating pot I have ever used. Not that I never get it right, because I have been known to, but not often. As a matter of fact there are a lot of pressures I don't do will with. But the pressure in a cooker isn't one of them. When I was a little girl I remember my Gramma, Aunts and my Mama using a pressure cooker. Oh, they made the most wonderful foods in them. I can still taste the crispy fried chicken my Gramma made., and the beef stew, ham and beans and soups. Then there was always my favorites like rice pudding, bread pudding and fruit cakes. I always knew when I came home from school and there was a pressure cooker on the stove hissing away, that dinner was going to be fantastic. Lots of our meals were cooked in a ...

2007-10-19 17:52:00
When you’ve had a long day or are fighting a nasty cold, there just isn’t anything better than a good cup of soup. Let’s take a look at what makes soup the perfect comfort food, and of course share a recipe for the soup of all soups. You’ll have to keep reading to find out what it is.But first, what makes soup the perfect comfort food? A big part of it is the fact that mom made a good cup of soup for us whenever we were sick, not feeling well, or came in from a long day of playing in the cold. There just wasn’t anything better than a cup of homemade soup – made with love by mom – to make us feel better. Add to that the fact that the hot liquid and the steam that comes up from the bowl of soup help with any cold, and it’s no wonder we associate soup with something that makes us feel warm and comfortable. Now that you know why soup makes you feel so good, why no...

How to Make Your Own Cider
2007-10-18 16:36:00
People here in Chicago stepped outside this week to falling leaves, (rapidly) cooling temperatures, and that crisp scent in the air that could only mean one thing: Fall is really here. And with the brisk weather, falling leaves, and Halloween decorations comes another fall staple: apple cider.Yes, cider! That sometimes clear, sometimes murky, dry-or-sweet-or tart libation that Americans drank by the gallon before beer came along and screwed everything up. Yet despite its seasonal charm, and despite a recent surge in popularity (no doubt thanks to my tireless efforts), for some people this drink is still hard to find. That's why I've put together this helpful guide. Whether you're like me and lament the downfall of hard cider as America's beverage of choice or you're thirsty for something different and our Beverages section holds no temptation, you'll find the information you need in here.At its core (no pun intended), cider-making is all about patience. Health Benefits of Champagne
2007-07-31 19:17:00
Champagne a festive wine was actually the first wine which was made 2,000 years ago, was named after a small town in France. Wines from the champagne region were known from the middle-ages. During those periods wines were either red or white. The first commercial sparkling wine was produced in the Limoux area of Languedoc in the year 1535. Sparkling wines usually come from areas where grapes don't have enough sun to ripe according to other wine standards. We have all heard about the medical benefits of red and white wine. But recent findings have revealed that champagne has got medical benefits too. When raising a glass of Champagne and toasting ‘Cheers’, the attitude is generally a way of praising one’s health and well being in a figurative way.According to the JOURNAL OF AGRICULTURAL AND FOOD CHEMISTRY published in April 2007 revealed that moderate consumption of Champagne as a source behind brain protection. Cooking Tasty BBQ Food for Vegetarians
2007-07-30 20:08:00
Yes, it's true, vegetarians can enjoy barbecues too! If you are a meat-eater with some vegetarian guests coming round for a barbecue, it is very easy to rustle up some tasty vegetarian food. There are also some more challenging options for the vegetarian host or the brave carnivore!Option number one for vegetarians is to cook some shop-bought veggie burgers or sausages. If it's a ‘bring your own meat' barbecue this is probably what vegetarians will bring. Now, some people hate meat substitutes, but most vegetarians quite like them, and will be quite happy with a veggie sausage, particularly with some good relish and salad in a bun. However, there are lots of other things you can cook for vegetarians which will be a little more impressive - and more than likely the meat-eaters will like them too. Halloumi cheese is always popular, and very easy to cook. This is a firm cheese that doesn't melt when cooked, so you can slice it, or cube it and stick it on skewers, and cook over the...

Safety Tips for Grilling
2007-07-27 15:23:00
BBQing as it is commonly known or grilling is one of America's favorite summer past times. Why grill? Grill ing provides an opportunity to entertain family and friends. It is a stress-free and relaxing way to prepare delicious nutritious meals on weekdays or weekends. Preparing meals during the summer months on the stove or in the oven increase the heat in our home causing our cooling bill to increase. To save energy and money why not "fire up the grill."According to the National Fire Protection Agency approximately 1,000 structure fires and 3,400 outdoor fires are caused by barbecue grills annually. Safe grilling begins before the cooking starts.Check the connection between the propane tank and the fuel line on gas grills, to be sure there are no leaks and that it is working properly.Never use a match to check for a gas leak. If you suspect a leak, put soapy water on the area and watch for bubbles to form. This will identify the area of the leakage. Never light a grill that has a l...

How to Make the Perfect Long Island Iced Tea
2007-07-26 17:32:00
While it is one of the most commonly requested drink recipes, the ingredients of the Long Island Iced Tea cause it to remain one of the more difficult beverages to accurately prepare. The high liquor-to-mixer ratio of this drink along with its dense sugar concentration makes its required balance quite delicate. If the mixologist uses too heavy of a hand when it comes to the liquor pouring, the drink can hold an extraordinary level of intoxication potential which still manages to be masked by all of the sugar in the non-alcoholic ingredients. Contrarily, not enough liquor can leave the consumer with an overly sweet drink that tastes nothing like the Iced Tea it is meant (yes, this drink made in the proper proportions actually does appear as well as taste similar to a regular non-alcoholic Iced Tea!)Prior to preparing this drink recipe, the following barware should be on hand: Either a glass/steel Boston style cocktail shaker with strainer (recommended) or a 3-piece stainless steel co...
