Sometime ago I watched a really well presented documentary which highlighted the issue of child obesity in UK. Although I am very much aware of the growing issue about obesity all around the world, this documentary made me realise how obesity has become more like a social plague. We are talking about one of the biggest growing problem here. Although some people seemed to suggest the main cause for obesity is genetic, research shows that the main cause has got to do with diet and eating habit within the family rather than genetic.We have become a fast food generation country with fast food restaurants springing up everywhere like wild mushrooms and junk food readily available. Weird, quirky, out of the world, unusual name hah? I don?t blame you? The name Bhindi Fry in Yogurt is the name we kept for our Accidental Diva. After working my ass off in office trying to figure out where I went wrong with some thousand lines code, no wonder my brain was on curfew. There was a bag of lovely tender okra which was sitting in one corner of refrigerator for more than a week and before it starts rotting I wanted to cook something out of it. I hate to waste things especially food. All I could think of cooking was simple Stuffed Bhindi. Jackfruit? There is something about jackfruit which fascinates me all the time. The huge spiky hard exterior which contains sweet golden yellow sheaths has always been one of my favorite fruits. I remember the days when my sister, brother and myself would always find some reason to stay away from volunteering to pare and seed the jackfruit. Once the sticky glue was removed and the golden flesh is separated, we kids would happily go and sit cross legged on the floor next to the big cane basket which would be filled with sweet jackfruits and happily eat one after the other. I remember the days when Amma used to cook elaborate breakfasts. For her it was/is everyday task of making different dosas, idlis or rotties. There were days when I used to just walked away from kitchen blaming she has not made my favourite breakfast and she would make something in a jiffy to meet my demands. There are sometimes or should I say many times, when both feel very lazy to cook. We crave for home made food and yet too lazy to budge from a couch. I come from a coastal town which is abundant with coconut palms swinging to the cool breeze from Arabian Sea. I have grown eating almost everything cooked using coconut in its different forms like coconut milk, ground coconut, grated or desiccated, dry coconut, coconut milk, tender coconut, coconut malai, coconut water and ultimately cooked in coconut oil. Yes?I did it. At last, I managed to overcome my phobia of baking(Is there a thing called Bake-phobia?;). Some what, I have always stayed away from baking cakes or cookies. I have discovered that when things don?t work out the way I want, they really get to me. My first attempt of baking goes back to my teenage year which was a complete disaster, where I ended up almost setting the house on fire. Since then I have kept myself away from oven until now. Eggless Rich Scones Few days back I watched cookery show where queen of baking Lesley Waters made these rustic looking scones. It looked quite simple and easy to make them and I had all the ingredients except eggs in my pantry which didn?t hinder my enthusiasm. As today is Vijaya Dashami I felt like cooking some authentic Indian sweet. What else can be better than Carr ot Halwa which hardly takes anytime... My mom is a expert when it comes to Gajar ka Halwa... there are different ways of making it...Here is my mom's recipe...Gajar(Carro t ) ka HalwaIngredients:3 Cups of grated carrots1/2 cup of milk1/2 cup of sugar1-2 tblsp of GheeFew strings of SaffronFew Cashwes and Raisins4-5 Cardamom Ingredients Method:Take grated carrots and milk in a pan and cook.When the carrot is almost cooked add sugar and cook for few more minutes.When the sugar is melted add a spoon or two of Ghee.Fry cashews and raisins in ghee and add them to the halwa mixture.Atlast add cardamom powder and mix them well.Transfer the halwa into a serving dish and garnish them with cashwes and raisins. Breadfruit one of the common vegetable found in every household. When it comes to Mangalore cuisine, Breadfruit is the best substitute for Potatoes. It has got gummy, rubbery finish when raw and has got this melt in mouth texture when cooked. I remember the days when I and my sister used to climb this huge breadfruit tree in the backyard and spend most of our time swinging from its branch. Oh!!! We were naughty monkeys ;) For me, Breadfruit tree is one of the handsome trees, with its branches spread out evenly with gorgeous green foliage.
