Sesame Ginger Glazed Chicken Legs

These baked chicken drumettes are very tasty.My boys like the sweetness from the honey.And I like that it dresses up drab old chicken legs. You can certainly use chicken thighs,breasts,tenderloins or pork chops.The sauce will go great with any of the above. I served this with steamed broccoli and wild rice. If you are using ground ginger instead of fresh,use 2 teaspoons ground ginger . SESAME GINGER GLAZED CHICKEN LEGS1/2 cup soy sauce1/2 cup honey1 tablespoon roasted sesame seeds3 teaspoons fresh ginger, minced 2 lbs chicken legs (I use skin on)Blend the soy sauce, honey, sesame seeds, and ginger well.Place the legs in a glass baking dish and baste with the sauceBake in a 400 degree oven for 50-55 minutes,or until the chicken is done,basting every 15 minutes or so with the sauce.

Macaroni and Cheese Soup

I know you are thinking that macaroni and cheese soup sounds gross.I thought so too.But I thought it would get the kids to eat a lunch with no complaints, so I made a batch of this soup.I bought (on impulse,no doubt) one of those huge boxes of macaroni and cheese dinners that contained 12 boxes of the stuff.Don't ask me why.I rarely have that processed stuff here,but I guess I thought it would be a quick fix lunch for the boys. And,I forgot about it.I put it in the basement with a gazillion other things and came across it yesterday . Knowing I wouldn't eat the stuff the regular way (it is cement like in consistency...yuck) I thought I would try the soup.I had the recipe bookmarked from Mr.Food for a few months now so I went for it.And let me say that there is none left.It was so good.I loved it and so did the boys.Very cheesy .The recipe called for peas and carrots and I had neither so I left them out.But next time I am going to add broccoli and ham.And I am actually looking forwa...

Cranberry Balsamic Pork Tenderloin

This pork tenderloin recipe is so easy,uses very few ingredients and is so good it can be served to company with many oohs and ahhs.I first made this dish for my husband for Valentine's day way back when we were dating.He loved it.And I make it every so often when I want something restaurant quality for dinner.I strayed from my menu tonight because I had it in my head since this morning that I wanted this .You can use the cranberry sauce with the whole berries but I prefer the jellied cranberry sauce.And the crushed rosemary I use because I hate biting into those long pieces of rosemary.They get stuck in my teeth! This is a crock pot recipe that is packed full of flavor.I used 3 large chicken breasts and there was more than enough for all of us. And I didn't have any fresh mushrooms, so I used a small 4oz can (drained) instead. I cooked it for 4 1/2 hours and it was perfect.Ingredients:2 medium onions, thinly sliced3-4 chicken breasts,sliced3 garlic cloves, minced1 1/2 teaspoons dried oregano1 teaspoon salt1/2 teaspoon dried basil1/4 teaspoon black pepper1 bay leaf1 can (14-1/2 ounces) diced tomatoes, undrained1 can (8 ounces) tomato sauce1 cup sliced fresh mushrooms1/4 cup white wineHot cooked spaghettiPlace sliced onions in a 5-qt. slow cooker. Add the chicken, seasonings, tomatoes, tomato sauce, mushrooms and wine or water. Cover and cook on low for 6-8 hours or until chicken juices run clear.Discard bay leaf.Serve chicken with sauce over pasta.

These fajitas were finally made tonight.These fajitas are so good. This is a quick bread recipe that is one of the most requested desserts I make. My grandmother has been making this for most of my life .I don't know where she got it from,but there are many variations of it on the internet. This is a great recipe that I know my kids will eat with no complaints. I like this recipe because you can add any ingredients that you like.Sausage,onioins,peppers etc . I try to keep it simple.Just pepperoni for this one.And I used cheddar cheese because my kids prefer it to mozzarella.But you can use any cheese as well.Pepperoni Pizza Pasta 1 large onion, chopped1 clove garlic, minced1 teaspoon italian seasoning2 (26 ounce) jars spaghetti sauce16 ounces rotini pasta, cooked and drained3 cups shredded mozzarella cheese8 ounces sliced pepperoniStir together pasta, spaghetti sauce ,onions,garlic and italian seasoning and pepperoni.Place mixture in greased 9x13x2 inch baking panSprinkle with mozzarella cheese.Bake uncovered at 350 degrees for 25-30 minutes, until heated through.

I love chicken cordon bleu.This is a great version that me and my family love,It is very easy to put together (only 5 ingredients) and the taste is awesome.This easily doubles for guests .I used 3 large chicken breasts that I pounded to about an inch thickness.Perfection!Baked Chicken Cord on Bleu 4 boneless,skinless chicken breast1/4 c butter,melted4 thin slices deli ham4T honey mustard4 thin slices swiss cheesePreheat oven to 350 degrees.Pound chicken to equal thickness and place into a casserole dishBrush the chicken equally with the melted butterPlace ham slices on each breast and top each with 1 T honey mustardTop each with cheese slicesBake covered 35-40 minutes,or until chicken is cooked through

I had 3 cans of baked beans that needed to be used,so I figured this recipe would be fine. It was fantastic! The pork was melt in your mouth tender and the combination of baked beans and onion was soooo good. Everyone in this house devours these cookies.Tonight,I made these and the first two dozen were eaten immediatley by my husband and three boys.They bake up nice and plump with a crispy outside and chewy perfection on the inside.And who doesn't like warm peanut butter cookies with a tall glass of ice cold milk?This recipe came from a family member who published it in her local Church cookbook back home in NC.OLD FASHIONED PEANUT BUTTER COOKIES1 cup firmly packed brown sugar1 cup white sugar1 cup Butter Flavor Crisco1 cup creamy peanut butter1/2 teaspoon salt2 large eggs1 teaspoon vanilla2 teaspoons baking soda2 cups flourCream together the sugars, Crisco and peanut butter.Add the eggs and vanilla and mix well.Sift the dry ingredients together in a medium sized bowl and add gradually until blended well.Roll into tablespoon size balls.Roll cookie dough balls into sugar.Place on cookie sheets- you do not have to flatten them,just leave them as ballsBake at 350° oven for 11-13 minutes. These chicken tenders are a kid friendly meal in this house.And for me,it is so easy.Three ingredients,marinating for an hour and cooking them in a skillet. I served these with steamed broccoli and a side of rice.A nice weeknight meal.And they would be great in a salad or wrap!CHICKEN TENDERS1 lb chicken tenders1/2 cup Italian dressing1 1/2 tsp fresh lime juice2 tsp honeyMix dressing,lime juice and honey in a medium bowl.Add the chicken tenders,making sure to coat all of the chicken with the marinade.Cover and refrigerate for an hour.Remove the chicken from the marinade.Discard marinade.Cook the tenders in a non stick pan until juices run clear.

I , as many of you, am always looking for ways to incorporate vegetables (especially green ones) into meals that the boys will eat. I know many of you have read and sucessfully tried Jessica Seinfeld's book Deceptively Delicious.I haven't gone that far......yet.I made this dish because it looked easy enough.And there was sausage ,tomato sauce and pasta in it,which is always a winner here.But,there was also spinach and green peppers,which all the boys looked at on their plate and decided they were not eating.And there was a moment there that I thought I was going to have to bring out the big guns.(you know what I am talking about: "if you don't eat your dinner,no Wii after school tomorrow! I hope that each and every one of my wonderful readers had a great Christmas. After a few weeks of vacation,I am back and ready for a new year of recipes .I will eventually morph my other blog into this one as well. And I have some great weekly events that I would like to host as well.Here are a few pictures of our Christmas decorations.The platter onthe mantle is called Tannenbaum by Peggy Karr.The pottery charger is a hand painted Nativity scene.My absolute favorite decoration.This year I kept it simple.Lots of milk glass and vintage ornaments.And the three wise men are hand carved beauties from Spain.Merry Christmas and Happy New Year everyone!

When we went home for Thanksgiving my aunt gave the boys Elf on the Shelf .Possibly the only Christmas book that we didn't have.And I LOVE IT! I reccommend this book to all of my readers with children.My aunt read the story to the boys in Raleigh and my 3 year old reminds me first thing every morning to find Frisbee,our elf.And it keeps me on my toes because I have to move him to different places every night.And you can even go on their website,register the elf's name and get a letter from Santa Clause,as well as print adoption papers signed by Mrs.Claus.The story tells how Santa assigns an elf to a family to report back to him each night about who's been naughty and who's been nice. Each morning, he has "magically" moved to another spot in the house to spy on the children. Kids will love to wake up and find the elf - it's best to place him in a spot that's out of reach, since children are not allow to touch him (which would cause him to lose his magic)- but the are allowed to ...

If you have been reading my recent posts you know that I had lots of Halloween candy.Well the boys had lots of potato chips in their trick or treat bags this year as well.So to use up some of our potato chip surplus I made potato chip chicken nuggets.I used sour cream and onion chips and the kids ate every single chicken bite I made.I have to admit that they are really addicting.You can use any flavor potato chip.Even Fritos or Doritoes will work.Potato Chip Chicken Nuggets1 lb chicken tenderloins,cut into bite size pieces1 egg2T milk2 cups crushed potato chipsPreheat oven to 375 degrees.In a medium bowl,whisk the egg and milkDip the chicken,one at a time,into the egg and dresge in the potato chipsPlace chicken on a baking sheet*at this stage you can drizzle the chicken with melted butter,but I never do, in my opinion it doesn't need itBake for 12-14 minutes or until the chicken is cooked through

I know that you guys are in the same boat.TOO MUCH HALLOWEEN CANDY!!!! I want to throw it all away,but can't bring myself to do it.I have so many mini candy bars,toostsie rolls ,you name it.So I am posting a few recipes that will help you get rid of that surplus candy.Chocolate Brownies4 eggs, slightly beaten2 cups sugar3/4 cup butter, melted2 teaspoons vanilla1 1/2 cups flour1/4-1/2 teaspoon salt1/2 teaspoon baking powder1/3 cup cocoa4 (2 1/8 ounce) Milky Way candy bars, coarsley chopped3 (1 5/8 ounce) Hershey Bars, finely chopped Combine first 4 ingredients in a mixing bowl.Mix wellCombine flour and next 3 ingredients in another bowl.Stir into sugar mixture.Fold in milky way pieces Spoon into greased and floured 9x13 pan.Sprinkle HERSHEY BAR on top.BAKE at 350 30-35 MINUTES. Today the kids are out of school in observance of Veteran's Day.We woke up this morning and my 3 yr old wanted to play with Play Doh.But it was dried up.So we made a few batches with KoolAid.The kids love making their own playdoh and it really is easy.So I am listing a few homemade recipes that you can make with the kids that I have used many times and all are wonderful.I have picked them up throughout the years from magazines and some of the kids' teachers.Paper Mache1/2 cup flour2 cups cold water2 cups boiling water3 tablespoons sugarnewspaper, cut strips Combine flour and cold water in bowl.Add this mixture to 2 cups boiling water in saucepan.Bring to a boil again.Remove from heat and stir in sugar.Let cool. (Will thicken as it cools)Once it thickens and cools it is ready to use.Dip newspaper strips in papier mache and take off excess.Allow to dry several hours, till stiff.
