Gemelli with Herbed Chicken, Roasted Red Peppers and Peas
2007-09-23 03:09:00 This was definitely a desperation meal.I forgot to take out a whole chicken to defrost and was stuck with nothing for dinner.And everyone was hungry.And I was tired.And didn't want to cook.So I put on a pot of gemelli pasta and chicken tenderloins (9 of them) in the oven and fished for ingredients.I had a jar of roasted red peppers and 3/4 cup of peas so I just put it all together.I added a bit of salt,pepper and garlic powder to taste. I brushed the chicken tenderloiins with butter and Mrs Dash herb seasoning and baked them .Tossed it all together and dinner was served.It wasn't too bad,actually.I will make it again,but maybe for lunch or a picnic out. Meatball Sandwiches
2007-09-16 23:26:00 I was talking to my friend Katrina this morning and she asked me what I was making for dinner.I told her I was just going to make meatball sandwiches and she raved about her meatball sandwiches.She gave me her recipe and I was sooooo hesitant because of the cream cheese and mayonnaise.But she promised that the spread made the sandwich so I tried it.OMG!!!!!!!!!!!!!!!! These sandwiches were AWESOME! The spread made them very rich tasting and very filling.In fact I have 4 left over and everyone is stuffed! Honey Roasted Pork Loin
2007-09-15 01:21:00 This pork loin is amazing.The flavor is so good.I doubled the sauce and served it with baked rice and garliclemon green beans.I make this meal about once every two or three months.I have added a few cloves of minced garlic as well and it works beautifully.Honey Roasted POrk Loin from Mt Newton Methodist Church Cookbook2 lbs boneless pork loin salt and pepper to taste 1/4 cup honey 2 tablespoons orange juice 2 tablespoons olive oil 1/2 teaspoon thyme 1/2 cup chicken broth Preheat the oven to 375. Season the pork and place in a roasting pan. In a separate bowl, mix together the honey, juice, oil and thyme. Pour over the pork. Add the broth to the pan. Bake until internal temperature reaches 150 (45-60 minutes). Baste frequently. Strain the pan juices into a saucepan. Reduce until slightly thickened. Serve over the sliced pork. More About: Pork

2007-08-29 18:00:00 I had tons of chicken left over from the weekend,so I decided to make a very quick,very tasty chicken pot pie.I usually make a homemade pie,but this one was very good in its own right,and I didn't have to spend hours in the kitchen.I used premade ,refrigerated pie crusts and I LOVE them.Now I am only making crusts from scratch for special occasions!Chicken Pot Pie4-5 cups shredded cooked chicken1 large bag frozen vegetables (I used peas,carrots and green beans)1 potato,peeled and cubed into 1/2" cubes1 large jar chicken gravy1 package refrigerated pie crustIn a large bowl, mix the chicken,vegetables,potato and gravy until the gravy is incorporated into all the chicken and veggies.Place one pie crust in a pie plate.add the chicken mixture.Cover the chicken mixture with the second pie ccrust.Pinch edges to seal.Add slits in the dough to ventBake in a 375 degree oven for 45 minutes,or until the pie is bubbly and hot.

Cajun Shrimp Alfredo
2007-08-25 18:31:00 Really quick meal.I use a canned sauce to save time.I use alfredo sauce and frozen ,thawed shrimp and I have it on the dinner table in no time.You can adjust the cajun seasoning to suite your taste.I ususally plate the kids first and add more cajun to mine. Serve with garlic bread and a salad and you have a great weeknight meal.Ingredients 1 jar 16 oz Alfred o Style Pasta sauce1 package 8 oz fettuccine pasta 1 pound shrimp, peeled and deveined 3 T cajun seasoning (I use Tony Cachere's) Directions In a saucepan over low temp heat the Alfredo sauce. Bring another large pot of lightly salted water to a boil. Add pasta and cook for 11 minutes; drain. Add the cajun seasoniong to the alfredo sauce and simmer on medium heat, stirring well. When sauce is hot,add the thawed shrimp and heat through in the sauce. In a large serving bowl.Add pasta and shrimp alfredo sauce.Mix well and serve.Garnish with cheese and parsley if desired. This one will definitely be made again.Ravi oli with Three Pepper Sauce from AllrecipesINGREDIENTS1 pound cheese ravioli 3 tablespoons olive oil 1 small onion, diced 1 green bell pepper, thinly sliced 1/2 red bell pepper, thinly sliced 1/2 yellow bell pepper, thinly sliced 2 cups chicken broth, divided 1/4 teaspoon crushed red pepper flakes DIRECTIONSBring a large pot of lightly salted water to a boil. Cook ravioli in boiling water for 8 to 10 minutes, or until done; drain. Heat olive oil in large skillet over medium heat. Saute onion and bell peppers until tender. While making food from scratch is important to me, there are some days that I just can't manage. So I have some stand by boxed meals that I use. There is a new product out in stores called Wanchai Ferry.Basically,the easiest Chinese food you can make. You cook the meat (not included),the rice and add the sauce and vegetables,simmer and you are done. I have tried the Spicy Garlic Chicken and the Sweet and Sour and they are both wonderful. One box feeds my family of 6, and I also make a vegetable, whether it be green beans or broccoli.These are fast to prepare,which makes it easy to get dinner on the table.The flavor is very good and tastes like Chinese take out to us. 2007-08-09 06:39:00 These scallops are very good,but very rich.Super weeknight meal with a salad and glass of wine.Baked Scallops2 lbs sea scallops salt and pepper to taste 1 teaspoon fresh thyme leaves, minced 1/2 cup buttermilk 1 cup sliced mushrooms1 small sliced sweet onion2 cups hand crushed Ritz crackers 1/2 cup butter, melted 1 small lemon, halved Preheat oven to 400°F. Place scallops in a bowl, season with salt and pepper, add thyme and buttermilk and toss to coat. Place scallops evenly in the bottom of an oven proof dish.Add the mushrooms and onions.
