Chicken Black Bean Salsa Spaghetti

This is a very tasty pasta dish,but I warn you it is very filling.The cream cheese and salsa blend very well together.This recipe can be versatile as well.You could add corn as well as the black beans.Any pasta could be substituted.I think rotini would be wonderful.Chicken Black Bean Salsa Spaghetti 1 box spaghetti noodles,cooked2 cups chicken,diced 1 8oz package cream cheese1 can black beans (14.5 oz),washed and drained1 jar salsaCook pasta al dente and set aside.In a large skillet over medium heat,add the diced chicken.Cook the chicken until juices run clear(about4 monutes).Add the black beans and salsa.Mix well.Add the cream cheese and stir into the salsa mixture until melted.Simmer on low about 7-10 minutes.Serve over pasta.

Comfort food.I love this meal. And the kids love it as well.Sheperd's Pie1 lb extra lean ground beef 1 small onion, finely chopped2-3 garlic cloves,minced1/2 tsp dried oregano 1 (15 ounce) bag frozen peas and carrots 1 (10 1/2 ounce) can condensed tomato soup2-3 T A1 Steak Sauce 3-4 cups leftover mashed potatoes Brown beef,garlic and onion together in a large skillet, draining the fat. Add the vegetables,tomato soup,oregano and steak sauce to the beef mixture,mixing well. Spread the mashed potatoes over all, sealing edges. Bake, uncovered, in a preheated 350 F for about 20 minutes, or until bubbling.

Cantaloupe Cream Pops

My mother bought me these cute sailboat popsicle molds a few years ago.Never used them.Until this morning when I opened the refrigerator and was reminded that I had a huge bowl of cut up cantaloupe that had to be eaten today.So I decided to make cantaloupe cream pops.I have to say that these were wonderful.My oldest said they tasted like frozen yogurt.I am going to experiment with watermelon,blackberries,raspberries and strawberries!Cant aloupe Cream Pops1 3/4 cups diced cantaloupe1/2 cup milk ( I used soy)3-4 & sugar (or to taste,depending on the sweetness of the cantaloupe)In a blender,puree the cantaloupe until smoothIn a medium saucepan, gently heat the milk and sugar.Stir until the sugar is dissolved.Remove pan from heat and pour in the cantaloupe puree.Mix well.Pour into popscicle molds and freeze until firm.

These pulled pork sandwiches are so good.I make the pork in a crockpot and add the barbecue sauce after I shred it. I make coleslaw as well to go with it.And sweet tea, of course.Barbecue Sauce2 tablespoons Worcestershire sauce 1 tablespoon mustard 1 tablespoon sugar 1/3 cup Heinz 57 steak sauce 1/2 cup ketchup 3/4 cup white distilled vinegar 1 tablespoon hot sauce 1/2 cup butter Put all the ingredients into a medium saucepan on medium heat. Heat through, stirring occassionally. I have already strayed from my menu plan this week.My 14 year old was the last in the house to get sick,and he asked if I could make dorito chicken for dinner and I couldn't say no.It is very easy to make,but the rotel tomatoes tend to make it a very spicy dish,so I always cook and extra chicken breast and dice it plain, add cheddar cheese and serve it to the two younger ones.The doritoes actually get soggy (sounds gross,I know) and it makes a nice casserole.Dorito Chicken 2 (10 3/4 ounce) cans condensed cream of chicken soup 1 (10 3/4 ounce) can diced Rotel tomatoes 1 medium onion, chopped 6 chicken breasts, cooked and shredded 3 to 4 cups cheddar cheese, grated 1 (16 ounce) size bag nacho cheese flavor Doritos, crushed Preheat oven to 350 degrees F.Combine soups, Rotel and chopped onion in a bowl, stir well. Two of my boys woke up with sore throats this morning.After well over a week of feeling icky,I decided to make them a treat.This recipe is so quick and easy.And tastes very good.My friend Heidi had this fudge at a Christmas Cookie Exchange a few years ago and I got the recipe from her.Peanut Butt er Fudge1/2 cup butter 2 1/4 cups brown sugar 1/2 cup milk 3/4 cup peanut butter 1 teaspoon vanilla extract 3 1/2 cups confectioners' sugar Place butter into a medium saucepan and melt it over medium heat. Add brown sugar and milk, stirring. Boil for 2 minutes, stirring frequently. Remove from heat. Mix in peanut butter and vanilla. Place confectioners' sugar into a large mixing bowl. Pour hot peanut butter mixture over confectioners? sugar and beat until smooth. Pour fudge into an 8 by 8 inch pan. Chill until firm, about 1 hour. Cut into 1-inch squares.

Up until a few years ago I had never made lasagna.I would order it occasionally at restaurants and have it at dinner parties or what have you,but I had never attempted to make it from scratch.Then I had homemade lasagna at my friend Natalia's home and I was hooked.I got the recipe from her and the rest is history.My 14 year old loves it.He rarely requests food,but lasagna and dorito chicken casserole are the two that he repeatedly asks for.Leftover lasagna is soooo good.Anyway,this recipe calls for ricotta and cottage cheese.Love it.And as for the meat sauce,I leave that up to you.I can homemade marinara sauce, so that is what I use.I brown about 1 pound of ground beef (or turkey) and add one chopped onion and 3-4 cloves of minced garlic.I then use a can of marinara and add a few teaspoons of italian seasoning.You can use bottled sauce or make your own.this recipe isn't very time consuming as you might think.Comfort food at its best.Homemade Lasagna courtesy of Natalia Sciatti...

I know I am not sticking to my menu ,but this week has already been rough.Me,my hubby and the littlest one have been sick,so I have put cooking on the backburner.Anywho,I cooked up lime garlic chicken last night and it was yummy. This is super easy to prepare and is perfect for a weekend brunch.Not too sweet.Great with coffee.This kids love it with a dollop of whipped cream and chocolate milk.Cinnamon Pecan Coffee Cake Topping 3/4 cup pecans, chopped 1/2 cup brown sugar 1 1/2 teaspoons cinnamon Batter 1/4 cup butter 1 cup brown sugar 1 teaspoon vanilla 2 eggs 1 cup milk 1 1/2 cups flour 2 1/2 teaspoons baking powder 1/2 teaspoon salt Cream together sugar, vanilla and butter. Add eggs & milk, beat well. Mix flour, baking powder& salt. Slowly stir in the dry ingredients, just until moist. Grease a 9x9" pan and pour in half of the batter. Top with half of the nut mixture. Pour in remaing batter. Top with remaining nut mixture. Bake in 375 degrees for about 25 minutes or until a knife comes out clean when inserted in the middle. Cool for 10 minutes and then remove from pan and cool on a wire rack.

I love chicken teriyaki.I added sliced carrots and fresh garden zucchini and it was wonderful.The kids loved it as well and said that I could make it again.Chicken Teri yaki 1/2 cup chicken broth 4 tablespoons soy sauce 2 tablespoons sugar 2 tablespoons oil 2-3 tablespoons minced garlic 1/2 teaspoon ground ginger 4 boneless skinless chicken breast halves Mix all ingredients except the chicken in shallow dish. Place chicken in marinade and refrigerate for 1-1/2 hours. In a large skillet,brown the chicken in a bit of oil.When the chicken is almost cooked through add the carrots and zucchini.Stir until the vegetables soften.In a small skillet,boil the marinade and add to the skillet with the chicken.Simmer for about 10 minutes.Serve over rice.

I really liked this pasta.I omitted the mushrooms (thought I picked some up,but didn't!) and added about a cup and a half of leftover broccoli. PASTA SALAD1 box tri-colored pasta 2 cups chopped green peppers 2 cups quartered grape tomatoes2 cups diced carrots2 cups broccoli 1 cup sliced banana peppers DRESSING 3/4 cup extra virgin olive oil 3/4 cup red wine vinegar 1/4 cup sugar 1 tablespoon oregano 1 teaspoon salt 1/2 teaspoon pepper Mix together dressing first and set aside until sugar is dissolved completely. Last night I made these kabobs and they were wonderful.Prep was easy,just cutting up the kielbasa and veggies.And the glaze took no time. Last night we all went wild blackberry picking in our woods.Our backyard is loaded with these little gems.We picked about 3 pounds and I came home and washed them all up.I didn't want a crumble and knew that the kids were tired of those anyway so I went searching for a wild blackberry recipe on the internet.I found this awesome recipe for blackberry bars on about dot com.Perfect! This was a fast meal to put together and very tasty. Another summer staple here in this house.My oldest loves anything with vinegar,and he inhales this salad.I will add a few handfuls of feta cheese to mine (makes a great lunch!) but the boys and hubby eat it sans cheese.I pack this one regularly in our picnic basket.Cucumber Salad 2 large cucumbers,washed and sliced 1 medium red onion,sliced1 tsp garlic salt1/8 tsp black pepper1/4 cup red wine vinegar (or more to taste)Mix all ingredients together and refrigerate for about an hour to chill well
