Onion Potatoes
2007-07-03 17:05:00 How easy can this get? Last weekend we went to an estate sale and I bought a huge box of old recipes .JACKPOT! I have hand written recipes that are so old you can barely make out the handwriting! Pierogies,haluski and all sorts of variants of goulash! Can't wait until the cooler weather so I can make them! I also found a clipping for Lipton onion potatoes.And I made them for a potluck last weekend.Super easy and the kids like them.I will be making these again!Onion Potatoes 2 lbs potatoes,cut into bitesize pieces1 envelope Onion soup mix4 T olive oilPreheat oven to 450 degreesIn a largeb bowl mix the potatoes, soup mix and oil until evenly coated.Transfer to a foil lined cookie sheet.Roast in the oven 35-40 min or until potatoes are doneSeason with salt and pepper to taste.See,how easy is that?

2007-06-29 17:55:00 I made tuna burgers last night for dinner.Not bad.For tuna. I toasted sourdough English muffins and served with lettuce and old bay mayonnaise.I just added a few tsp of Old Bay to some mayo until it tasted right.The kids ,ALL of t hem,I might add,ate them up.Served with baked cajun fries and a salad.Good weeknight meal.And I like that the carrots are in there.I used fresh parsley from the garden and added a slice of American cheese to the boys burgers.I will make them again.Tuna Burgers 4 cans tuna,in water (drained well)2 eggs, beaten1 large carrot,finely grated1/2 cup breadcrumbs3-4 T chopped fresh parsley (or other herbs)1 tsp Old Bay Seasoning4-5 T extra virgin Olive Oilhamburger buns (I used english muffins)Mix all ingredients except olive oil and hamburger buns in a large bowl.Shape into 8 patties.In a skillet over medium heat,add olive oil .Place burgers in skillet and cook until browned well on both sides.Serve on buns with cheese.lettuce and mayonnaise. I cooked the pork in the crockpot because we were out all day and I shredded it and slopped it onto tortillas with cheese,onions,salsa,guacamole and sour cream.Served this with spanish rice and cumin black beans.It was sooooo good! The boys ate two burritos each and my oldest ate a plate full of meat after those! Quick,easy meal!Carnitas3 lb pork roast1 can mild salsa1/4 cup jalepeno green salsa1 bunch chopped cilantroPut all ingredients except the cilantro into a crockpot and cook on low 5-6 hours or high 3-4.Remove roast and shred meat with two forks.Replace shredded pork into the crockpot, stir in chopped cilantro and simmer for about 10 minutes. Use as a filling for burritos,taquitos,tacos,taco salad etc.

Yes, 6! I have gone through them all and dog-eared so many pages I could make a new recipe every single day and never run out! But Coconut chicken tenders really peaked my interest because I knew from reading the ingredients that all of the boys and my husband would enjoy them.The end result was wonderful! I made a sweet and sour sauce to accompany it and they were scarfed down.The only thing I changed was I baked them in the oven instead of frying them.Super weeknight meal! 2007-06-05 18:28:00 My girlfriend made this a few weeks ago for dinner and I Loved It! So I decided to try it with the family-and they loved it too! What's not to like? Cream ,butter,garlic? I served it with a small green salad and crusty bread.Chicken Cream Pasta 8 ounces rotini, cooked and drained1/4 cup butter3-4 chicken breasts,cut into bite sized pieces1 tablespoon minced garlic2 cups half-and-half1/4 cup fresh basil ,minced1/4 cup parmesan cheese1/4 teaspoon black pepper1/8 teaspoon cajun seasoning1 medium tomato,seeded and dicedIn lg skillet, heat butter; add chicken and garlic.Saute until the chicken pieces are no longer pink.Add half and half.Bring to a boil; reduce heat and simmer for 15 minutes, stirring frequently.Add basil, cheese, pepper, and cajun seasoning.In a serving bowl,add pasta and seeded tomato to the sauce and toss well.

Tonight I made a chicken stir fry in a large skillet.And made lots of rice and extra sauce.The sauce is so good over the rice! The kitchen smells so good when this is cooking!Japanese Chicken 1 1/2 ibs chicken tenderloins,cut into bite size pieces1 large white onion, sliced1 large cucumber, seeded and cut into strips1/4 cup sesame oil1/3 cup shoyu1/4 cup rice vinegar2 tablespoons mirin1 tablespoon sugar2 teaspoons ginger3 garlic cloves, mincedUsing a wok or large frying pan, heat sesame oil over medium-high. Add in the garlic.When the oil is hot, add in the shoyu, rice vinegar, mirin, sugar, and ginger. Mix well.Add chicken. Cook until there is no pink at all.Add in the veggies and cook until onions and cucumber are cooked.Serve over rice.

2007-06-04 03:37:00 These are hands down the best cupcakes I have ever made.The icing recipe is so good.Not too overly sweet and the chocholate shavings made the whole recipe.I used Hershey milk chocolate bars because I made them for the kids,but a good dark chocolate would be the best.My grandmother makes this icing for her swiss chocolate cake and it is one of her most requested recipes! I made vanilla cupcakes and frosted them with a fresh raspberry on top.This is a tasty summer treat! I added the pecans at the last minute before putting the pineapple sauce over the chicken and I am glad I did.The pecans gave it crunchiness and they carmelized in the sauce.I served the chicken with white rice and garlic steamed green beans.This will go into my make again file! 2007-05-28 17:36:00 I am a southern girl.My husband is from Pittsburgh.He has asked me for years to make him pierogies.I have tried.And failed.I had never had a pierogie,so I had no idea what one was supposed to taste like.Until a few ladies from Church made a batch.I am in heaven.Pier ogies are my new favorite meal.The dough,potatoes and onion.Oh.My.Goodness. 2007-05-28 17:32:00 It is finally the time of year when I can make banana pudding! This is a family recipe( from my aunt) that is at every summer gathering I have-never any leftovers! Super rich,super banana flavor.I like using the instant pudding because I don't have to heat up the kitchen to make the custard.BANANA PUDDING4 cups cold milk2 (3 1/2 ounce) packages instant banana pudding mix (you can use vanilla, too)1 (8 ounce) package cream cheese, softened1/3 cup sugar1 1/2 cups thawed Cool Whip (4 oz)1 (12 ounce) box vanilla wafers4 bananas, slicedIn a large bowl combine milk and pudding mix according to package directions.In a small bowl stir together cream cheese and sugar until smooth.Stir into pudding mixture (I use the mixer).Fold in cool whip (I just stir it good).In a 13x9x2 inch baking dish layer half the cookies,half the bananas and half the pudding mixture.Repeat layers.Cover and refrigerate 2 hours. 2007-05-28 17:27:00 Chocolate waffles.My kids love them.With raspberry syrup and bananas.And whipped cream.A treat for Memorial Day.It is a Bisquick recipe,so it is very easy .I make these every few months or so.And I make a double batch to have some to freeze for weekday breakfasts.CHOCOLATE WAFFLES1 1/2 c. Bisquick baking mix1 c. sugar1/3 c. cocoa3/4 c. water2 tbsp. vegetable oil2 eggsBeat all ingredients with wire whisk or hand beater until almost smooth. Pour batter from cup or pitcher onto center of hot waffle iron. Bake until steaming stops. Mornings are so chaotic around here.I have one in middle school,one in elementary,one in preschool and the baby home with me! And everyone wants something different in the mornings! I try to only have raisin bran and grape nuts here for cereal, and usually make muffins,frittatas or monkey bread for them in the am.But some mornings I just.can't.get.moving! On those mornings the older ones are on their own.And they make eggs in a cup.They love making it and I don't have to worry about them burning the house down while using the stove! It takes 3 minutes tops to prepare AND cook,so that is an added bonus for my kids,who have the absolute shortest attention span on the planet! You can add chopped cooked bacon,cooked sausage,any type of cheese and spices.The possibilities are endless.And cleanup is a mug in the dishwasher! YES! 2007-05-17 16:10:00 What can I say about Bisquick?I am by no means a baker and Bisquick has been my lifesaver over the years.My husband and boys love desserts and so many nights they eat icecream because I just don't care to bake.But I do have a few Bisquick recipes that I use that keep them happy.This is one of their faves. Extremely easy.I always have a huge box in the house and it saves me lots of time.I have other recipes from their boxes and website that I will definitely share with you in the future.I have only used cherry pie filling and blueberry pie filling in this particular recipe,but I am sure you could use any pie filling you choose.And in my house it is easy cleanup because there is never any left over.The picture I took is of the not quite finished product.It still needed about 10 more minutes to bake,but I snapped a pic anyway because I was headed out the door and knew that when I got back it would be gone! Thai inspired crockpot chicken
2007-05-10 17:53:00 This is a very easy,very economical meal.I stock up on chicken thighs and drumsticks when they are on sale.And I actually always have these ingredients on hand.I say thai inspired because it is in no way authentic,but the taste is reminiscent of thai.After all,I have 4 boys,I can't be too exotic.LOL! 2007-05-10 17:44:00 I admit I struggle with side dishes.I grew up in the south,where there were quite a few sides with every meal.Laden with cream,butter,fat....you name it.And I very rarely use fatback in my cooking . So usually I stick with brown and wild rice, potatoes or fresh steamed veggies.My boys will inhale raw baby carrots as an after school snack.In fact, between the 3 of them ()Ib still won't feed them to my 19 month old unless they are soft) they have eaten 2 two pound bags this week. 2007-05-08 02:42:00 I was sifting through my recipe files and found this recipe from real simple. I had all the ingredients on hand so I decided to give it a try.It was so easy and fast. I used small frozen ravioli, my homemade canned marinara sauce and parmesan, mozzarella and fontina cheese.It was excellent.And the boys inhaled it.Super kid friendly,even with the spinach.Although Boy#2 picked out some of his spinach.But Boys #1,3 and 4 gobbled up all of it, spinach included. But I always go back to this one.From my great aunt.Very simple and great flavor.I make it the night before and refrigerate it to let the flavors develop.And until last year when we moved from North Carolina toPennsylvania I ALWAYS used Duke's mayonnaise.But I can't find it here (It's a southern thing) so I use Hellman's, which throws the flavor off a bit for me,but I am a creature of habit, even when it comes to mayo!
