Lemon Pasta Alfredo with Prosciutto & Eschallots
2007-02-15 01:41:01 Jingilli Olive Oil - I adore it!I have never made this before. First time fluke.I wanted to do a fresh twist on an old classic.I think that I achieved it tonight.This was so easy and tasted gorgeous.The layers of flavour that came through my mouth as I devoured it. Just stunning. If I do say so myself. 500gms Orecchiette Past a 400mls of Thickened Cream1 cup of finely grated Grana Padano Cheese2 teaspoons of finely grated Lemon RindJuice of half a Lemon8 slices of Prosciutto cut into shreds1 cup of chopped EschallotsShaved Grana Padano & a good drizzle of best Olive Oil for presentationSalt & PepperBig pot of boiling salted water to start. Throw in your pasta to cook and give it a good stir. Cook until aldente. In a heavy based fry pan pour in the cream, add a good pinch of salt flakes and a good grind of black pepper. 2007-02-15 01:41:01 These photos were taken by Little Miss Moi. My new friend that is living in Kyiv, Ukraine. She has vision and spunk. Honestly her blog just totally makes me laugh. She is a fellow Brisvegas girl, missing home lots and lots. Little Miss Moi has made my Mars Bar Slice over there with one difference, Little Miss Moi has used chocolate condensed milk. Awesome. I have never heard of it and if anyone knows where I can get it in Australia, please let me know? Little Miss Moi just couldn't tell whether it was cooked or not, due to the fact that the chocolate condensed milk was already dark in colour and she had trouble telling whether it was gold and bubbly. I cannot remember what was in them, but I can tell you they were lethal. Just pure alcohol really. They were great :) Then we got down to the decision making. So much to choose from. They went with Spring Rolls, Chicken Satay with Peanut Sauce, Honey Chicken, Singapore Noodles and of course, Fried Rice. Mareea and I went with the Crispy Duck Breast in Plum sauce and shared what the girls had. Very simple so that those with midget tastes would enjoy themselves and not complain with, what is that?, I don't like this mum, does it have chilli in it?, oh that's hot, are you sure there is no chilli in it?, I am only going to eat noodles tonight ;) You see what I mean. Anal Eggs
2007-02-15 01:41:01 See now, who says you can't have brekky at dinner time. For some odd reason I have been craving eggs at dinner time. Why is that? Maybe I am lacking in some type of protein or something. I don't know. This gave me the fix I wanted, also used up some more food in the fridge before we leave for Townsville on Friday. Thick sour dough toast, fried mushies in garlic, par fried poached eggs, grilled crispy bacon and those gorgeous little pork sausages. What more could you want? The eggs were a new method I tried, that I saw on Melting Pot on Lifestyle Food. They were not as soft as I normally like them. So I think I will give it a miss next time. The method is to place oil in a hot fry pan and just add as many eggs as you require. You fry them for a minute, you add a tablespoon of water, pop a lid on the top and cook them for a couple of minutes, so the tops are poached. They come out like a dinner plate egg shaped feast. 2007-02-15 01:41:01 Potato SaladCrispy Noodle Salad There is just something about showing your children how to cook that makes you feel a sense of achievement. We don't live a rich life when it comes to money but we are rich when it comes to food. Sometimes I forget how enjoyable it is to teach them. I get so caught up being in control in the kitchen that I have been putting it off more and more lately. I have been a bit of a perfectionist really. I really think that I have lost sight since the BBQ challenge of what has been important to me. I took it all so personally and felt I had to start being more precise and critical of my meals. I hate the fact that a man I never met before (Ben O'Donoghue), that I cooked two very rushed meals for, insulted me. Cooking is about time, patience, love and ingredients. What are the warning signs things are getting past being just everyday stress?I try very hard to put it in it's place but sometimes, like today, it overwhelms me. My Doctor said to me once that I am so used to it because of a stressful and traumatic childhood, that basically I have trouble living without it. Strange kind of logic I think, but it makes some type of sense. Do I will it upon myself? I hope not. If you ask my friends and family they will tell you, the things that happen in my life are just strange. She must have the most confusing bizarre life on the planet. Townsville A New Beginning

I have always had the urge to move away from Brisbane, as I have lived here all my life and want to try on a new city in Australia. Just for a while though. But I never dreamed it would be far north QLD. I always thought I would end up in Melbourne. I absolutely love Melbourne. It's the atmosphere, it's the food and the cold air. Fantastic. But to no avail, Towns ville it is.We move in just 4 weeks. So I have digressed from cooking for the moment. The full on long slow cooking really. Starting to pack has been full on. I have lived in this gorgeous old house for 8 years and it will be sad to leave it behind. But Employment opportunity awaits and that is what will help our family. I can't get over how excited the kids are. They are not apprehensive at all. They can't wait. I thought they might be a bit funny about it. 2007-02-15 01:41:01 My Milk Bottles, Soft Drink Bottles & Baby Bottles I am really going to miss this house. It has the perfect shelf along the top of the walls in my dining room for my bottle collection. Yes I admit it, I love them. They are so old, so beautiful and nothing is made the same way now. Plastic bottles of milk just don't do it for me. There is something about the way the glass is so heavy and tangible. They are gorgeous. I pick them up at flea markets, op shops and of course eBay. I have quite a few now as you can see. I also love to get the 1/2 pint cream and milk bottles also. I have a few old soft drink bottles and some great old glass baby bottles. Allot of them have the names and location of which dairy's they came from. I have a Peters, Pauls, Dairy Farmers and allot of local small dairy's also. They make my home feel really kitchy. I own a part of history. We live in a time when everything is so replaceable. I love the simplicity and warmth that comes with how my Grandma live... Bread and Butter Pud - So Easy :)
2007-02-15 01:41:01 What better way to enjoy a Panettone, than to make a Bread and Butte r Pudding. This time of year is a great time to indulge when you are sad to see the Christmas Cheer and indulgence is over, yet again. This is the time of year I am on the look out. Now this is going to sound cheap and pathetic, but I love Panettone and the price is usually out of my budget for a dessert. To Clear or Reduced stands are my first stop. I bought this one for $5 at Bi Lo. I know pathetic. Panettone makes great Bread and Butter Pud, French Toast, Normal Toast, Soft with real butter, just yummy and it isn't heavy like a fruit cake is. It is so versatile. What I did last night :)
2007-02-15 01:41:01 Untitled - Pastel Drawing by Amelita I often feel inspired to draw but never seem to get around to it until everyone buggers off and goes to bed. Last night I thought stuff it. Dinner is done, washing done, bedroom clean, baby in bed, so, why not. This is the result of my motivation. I started it at about, hmmmmmm 8.30pm. I have just finished it now. The kids have been wondering around aimlessly trying very hard to interrupt me. Kids just have a radar or something, on the phone, in the toilet, in the shower, on the computer, anytime I am busy or doing something for myself, they know. Why is that? But regardless I managed to pull this little beauty out in one night. I am quite proud of myself. I love it. It's allot softer in feel than I normally do. I decided no black outlines Amelita. Dinner Last Night :) So Easy
2007-02-15 01:41:01 I was wandering around the house yesterday thinking, what am I going to make for dinner? We had some nice T-Bone steaks in the freezer so why not steak and veg. I thought to myself potatoes, what to do with them instead of the norm. So sesame garlic potatoes was what I came up with. I was a bit unsure, but had already mentioned it out loud so I thought okay I am going to follow through. Turns out they were fantastic. I was quite chuffed with myself. So here's how I did it. Steak & Mushroom SaucewithGarlic Sesame Potatoes Basically I just cut about 6 medium sized washed potatoes into pieces as for a roast. I then steamed them until tender. I chopped up four large cloves of garlic and then melted a good amount of butter with the chopped garlic in a bowl in the microwave. I put the potatoes into a bowl and added the melted butter and garlic, a good sprinkling of salt flakes, a splash of sesame oil and of course sesame seeds, about 3 tablespoons. I must here the word MUM realistically, 50- 100 times a day. It's like I am the consultant on every project even down to, Mum who's in the toilet? I adore my family, but I feel like I never seem to get my brain to myself. Still though I missed it. Sucker for punishment maybe. David and I went to Town sville today and oh my goodness what a hoo ha time we had. We started at 5.00am this morning and have finished back in Brisvegas, filling out forms for removalists at 11.30pm the same day. I am stuffed, but the insomnia just always seems to keep me awake, even if I am stuffed. I never thought it would be so difficult to rent a house in all my life. We must have visited 20 different agents and nothing, nothing and more nothing. 2007-02-15 01:41:01 Gosh I am going to miss my old dumpy kitchen. I have been cooking in in for the last 8 years. Do you like my old ladder that I put up, to hang my pots and pans on? I love these old canisters they are 1920's I think. My friend Kym gave them to me for my birthday a couple of years ago. We both love old stuff. You should see her kitchen. It is gorgeous. Lime green, but gorgeous. I wonder if she would let me take some photos so I can show you all. She has two ovens. Oh my gosh fabulous, I tell you. No Lifestyle food in hers though, bit of a bummer. You get so used to where everything is. How am I going to cope. The new house has a Electric hot plate ahhhhhhhhhhhhh. See the things I sacrifice for my children. But Dave has promised me one of those fancy smancy fabulous BBQ's. So I think I will be spending more time on the deck, which happens to be right outside my new kitchen. So all is good. I cannot believe I finally got up the nerve to get a TATTOO
2007-02-15 01:41:01 Yes it's real and yes it hurt, not overly. And yes I am sure that it will raise a few eyebrows as it has in the last week or so. David got one as well on his shoulder, but in black. I designed them myself. We love them. We still cannot believe we did it. My children think they are totally cool. So now I am a cool 5ft tall chubby Hispanic mum. It was our ceremony of a commitment to a long life together. We have both been married before and we have had to put off our nuptials, due to moving earlier than expected. There is no divorcing a tattoo.We had been talking about doing it for ages. So I booked it and we did it. The pain, for all of you who don't know what it feels like, is like someone dragging a razor blade down your skin, slowly and deeply. It is bearable. After the initial couple of minutes your OK. I think I just worked myself up into a lather for nothing. French Toast with Sliced Banana & Butter Lemon Caramel Sauce

We are going to have these tomorrow morning sliced on top of french toast made with sour dough bread and a home made butter, lemon and caramel sauce. Yummo! French toast is so easy. Just whisk a 6 eggs in a bowl with a splash of cream, then dunk the thick slices of sour dough in the mixture. Fry in a fry pan that has a little butter on a medium heat until golden on each side. Place all your french toast onto a baking tray and put in a very low oven to keep warm. To make your sauce is easy. Stick two big tablespoons of butter into a saucepan and allow to melt. Then add two generous tablespoons of brown sugar and simmer lightly until the sugar has dissolved. Throw in a half a teaspoon of ground cinnamon and the juice of half a lemon. Allow to simmer for a minute or so. Then take the saucepan off the heat. Place two pieces of the french toast on a plate and then top with s...
