Betty Crocker's CookbookEverything you need to know to cook today.I bought it in the United States about 6 or so years ago. It's a beauty, for all of you who wonder what's what in the USA food culture. I make Sloppy Joe's, Smokey BBQ Sauce, Cornbread, Southern Fried Chicken, of course Brown ies and lots, lots more. This has to be the best Brownie recipe I have ever used. It simply beats the rest and anyone can do it. They are so delicious, so rich and so much chocolate. I made these with the girls today. I know they're good Brownies , when the kids are just hanging to lick the bowl. The taste explosion begins even before they are baked. Betty Crocker's recipe is a brilliant one and you should try it at home. This is a double batch recipe. So if you only want to make a half batch, just halve the ingredients. 2007-03-04 07:58:01 So one of the simply amazing things about living in the tropics is how fresh and stunning the seafood is. I am telling you it is fantastic. I am talking so fresh. Smells like the sea, tastes like the sea and just mouth watering. Photos cannot do this amazing seafood the justice it deserves.But I tried. I wanted to do something special and something just decadent with it. This is what I came up with and wow, it is so good. David my personal barman whipped up this lovely drink for me while I was cooking. Melon Schnapps with Lemonade and a piece of a Tahitian lime. So refreshing. Look at how lovely these bugs are. So sweet and juicy. Sausages, Brown Onion Gravy & Mash
2007-03-01 07:56:02 Are these not gorgeous looking sausages? Chunky Lamb and Hand Cut Italian. I got them at a butcher in Belgian Gardens, Townsville. This is the best butcher I have ever seen. They have so much quality meat and gorgeous ideas. I will be doing a post on them soon for you.This is an old favourite with my own personal touch. My family just loves it and it is real home comfort food. It is very easy and a sure fire winner. All you have to do is make mash potatoes the way you like them. I like them with a good knob of butter, a good splash of cream, salt and pepper. Start your sausages off in a fry pan that has not been preheated with a splash of olive oil. Bring them up to heat slowly, fry them until they are cooked all the way through. Turn up the heat and let them brown. Remove from pan and keep warm, or zap them in the microwave for 30 secs before plating up. Now for the gravy. 2007-02-25 19:53:01 I love Beef Wellington . There is something just a bit special and sophisticated about eating a Beef Wellington. I have always felt a bit intimidated by the thought of actually making them. They seem so delicate, so classy and scary to make for the average cook. Silly Hey? But that's how I felt about it. Some things, stupid recipes I have issues with trying. There is no reason for it, just the fear of failure may happen upon me. I don't like to cook bad food or make mistakes in the kitchen. I am a perfectionist. It is the same with Chocolate Mousse. I don't know why, can't do it and wont go there, just yet. I remind myself that I don't want to end up like one of those people on that TV show Maury Povich. Afraid of alfoil and kittens or even stupider things like, butterflies and sunflowers. 2007-02-24 07:51:03 Croc closes Strand again Mango TreesRoad trips are an excellent time to be able to just talk to your family, with no interruptions. We had a really great time on our trip to our new home. I have never driven from Brisbane to Townsville. I have travelled by train before to Cairns, but I must say that driving is just wonderful. Sure we got on each others nerves, but hey that's the way it is with all those people in one car and a 1 year old baby. Who threw up, in the middle of nowhere, I might add. Lovely, just lovely. We saw some strange things, met some eccentric people and laughed alot. We had an absolutely terrible breakfast in Bundaberg. I am also ashamed to say that I ate some of those riblet things from a hot box in a servo, mind you they are just sinful. We ate KFC at Rockhampton. MacDonald's in Townsville on the last leg. 2007-02-15 13:42:04 This has to be my all time favourite sauce. It is so simple and can be used so many different ways. Eggs Benedict, as a sandwich spread or just use your imagination. Like in my signature dish. It stores really well in a sterilized jar in the fridge for at least a week. Great to keep on hand if you are trying to nudge a loved one into making brekky in bed ;)Ingredients3 tbsp White VinegarGround Course Black Pepper125 grams Melted Butter6 Large Egg YolksGood Pinch Salt Flakes1/2 Lemon JuicedLoveReduce vinegar with black pepper in a small saucepan until about 1 tablespoon is left. Melt butter and allow to sit for a minute, so that it separates. Place the 6 egg yolks into a clean mixing bowl and whisk together with vinegar, until fluffy. Then pour the melted butter in a thin stream while you continue to keep whisking on high speed. Leave the remaining solids from the butter in the jug. 2007-02-15 13:42:04 My Foccacia - So easy :)As in my previous post on Bread Dough this is what happens when we go through a bread faze!They are marvolous. Bacon and Pineapple for the kids and Bacon, Pineapple, Kalamatta Olives and Garlic for the adults. Of course only Mozzarella and Good Olive Oil will do, plus a sprinkling of salt flakes. Made in a shallow baking tray. Bread Dough4 cups Bread Flour400 mls Water 2 tsp Dried YeastPassionPlace all ingreadiants in a good stand alone mixer, attach dough hook and mix for a good 4 - 5 mins on slow speed. Stop mixer and touch dough with finger tip. If it is sticky add a little more flour and mix until combined well. Keep testing as needed. When your finger comes away from the dough without it sticking you have finished. Pull from mixer and knead on a floured surface by hand for a couple of mins. 2007-02-15 13:42:04 This is great as a sandwich spread, pizza sauce, wonderful with cheese, a great all rounder.4 Large Brown Onion s - Sliced1 Big Knob of Real Butter of courseCouple of Good Splashes of Olive OilGood Pinch of Salt Flakes 3 Large Granny Smith Apples - Peeled Cored and Sliced4 Large Cloves of Garlic - ChoppedI Cup of WaterI Cup of Sugar4 Small Hot Red Chill i es - Chopped Finely including the seedsGood Pinch of Black Ground PepperJuice of Half a LemonFry onions in butter, oil and salt until browned and softened. Then add all remaining ingredients and simmer on medium heat for about 20 mins or until apples are very soft. Stirring occasionally. Allow to cool slightly and pulse in a blender, but not to much. You want it to have a little texture. Then put into sterilized jars to preserve. Every batch I make is different. So I came up with this little gem tonight. It was a huge success with our family and the kids didn't mind a bit of heat from the chilli. So now we have another family favourite. Cost effective as well. Makes a huge amount and Dave has leftovers for lunch. Pavlova So Easy :)
2007-02-15 01:41:01 OK now I have been trying for years and years to make the perfect Pavlova. It has been the one constant battle I have had. To make sure it has all that marshmallowy goodness inside and that lovely crisp meringue on the top. I have stuffed up so many Pavlovas, that it all seemed a lost cause. But then my friend Reno had been making meringues, with the leftovers he decided that he would make a Pavlova and there it was marshmallowy goodness but it didn't have the height I wanted, but still he had achieved it. So I came home and I nutted it out once and for all. What a triumph. All I did was add two extra egg whites and an extra half a cup of castor sugar and holy crap I had done it. Late night snacking!
2007-02-15 01:41:01 Okay so here I am, caught in the act of late night snacking. I love food. I love home made food. But I also love snack and junk food. Naughty aren't I? I love, love, just love, Big Macs, Cheetos, Snickers, just junk in general really. It is not food I have to make myself, it is not food that is good for me, it is just bad for me in general. With all that in mind, I still do it. When it comes to eating Cheetos, it is an art form. They are not meant to be eaten one by one. Where is the fun and satisfaction in that? They are meant for handfuls to be just shoved into your mouth and end up all over your face and fingers. Ahhhhh finger licking good. I can feel the MSG now, seeping through my veins. As for the fat content, who the hell cares. I have had three babies and the fat on my bum, tummy and arms, just ain't leavin without me. Burlingtons Asian Supermarket.
2007-02-15 01:41:01 OK so what do you think all this set me back? Your probably thinking I have spent a fortune. But all this only cost me $136 total. Including the Mortar & Pestle and that was only $52. Cool huh. I have been wanting one of those big heavy ones made of granite for ages. So now I have one. In those high class foodie stores this one would cost you about $120 but not at Burlington's Asia n Super market, The Valley, in Brisbane. David and I are stocking up for the move to Townsville and seeming we have not had the opportunity to figure out where the Asian grocers are there yet, I thought, I would stock up and stock up well. Most of these spices were between $2 and $4, they are big sizes also. The quality, as you can see, is excellent. Who wants little anemic bottles of spices that cost $4 to $5 a pop when you can get 200 to 500 grms for the same money. It totally amazes me at how cheap they sell them for. Mars Bar Slice - My Way
2007-02-15 01:41:01 I know I have been promising you this recipe for a while now. So here it is. It is fantastic. It is always gone before I know it and it is extremely fattening, which I love and goes great with a latte. I hope you enjoy as much as my friends and family do? So Easy :) 4 Mars Bars ( I like the king size because I am a chocoholic) sliced into pieces.1 Tin Condensed Milk1 Packet of Chocolate backed Scotch Fingers ( I use home brand, makes no difference)100 grams melted Butter300 grams melting Choc Buds ( dark for the adults)Preheat oven to 180 degrees Celsius. Crush biscuits and then add melted butter, press into a slice tin. Arrange Mars Bar pieces on top of biscuit base. Pour over evenly tin of condensed milk. Do not lick the lid OK. I know it is tempting but it is really dangerous for your tongue. Trust me, I know. Bake in the oven for 25 to 30 Min's, until golden and bubbly. Allow to cool and refrigerate. First time fluke.I wanted to do a fresh twist on an old classic.I think that I achieved it tonight.This was so easy and tasted gorgeous.The layers of flavour that came through my mouth as I devoured it. Just stunning. If I do say so myself. 500gms Orecchiette Past a 400mls of Thickened Cream1 cup of finely grated Grana Padano Cheese2 teaspoons of finely grated Lemon RindJuice of half a Lemon8 slices of Prosciutto cut into shreds1 cup of chopped EschallotsShaved Grana Padano & a good drizzle of best Olive Oil for presentationSalt & PepperBig pot of boiling salted water to start. Throw in your pasta to cook and give it a good stir. Cook until aldente. In a heavy based fry pan pour in the cream, add a good pinch of salt flakes and a good grind of black pepper. She is a fellow Brisvegas girl, missing home lots and lots. Little Miss Moi has made my Mars Bar Slice over there with one difference, Little Miss Moi has used chocolate condensed milk. Awesome. I have never heard of it and if anyone knows where I can get it in Australia, please let me know? Little Miss Moi just couldn't tell whether it was cooked or not, due to the fact that the chocolate condensed milk was already dark in colour and she had trouble telling whether it was gold and bubbly. I cannot remember what was in them, but I can tell you they were lethal. Just pure alcohol really. They were great :) Then we got down to the decision making. So much to choose from. Anal Eggs
2007-02-15 01:41:01 See now, who says you can't have brekky at dinner time. For some odd reason I have been craving eggs at dinner time. Why is that? Maybe I am lacking in some type of protein or something. I don't know. This gave me the fix I wanted, also used up some more food in the fridge before we leave for Townsville on Friday. Thick sour dough toast, fried mushies in garlic, par fried poached eggs, grilled crispy bacon and those gorgeous little pork sausages. What more could you want? The eggs were a new method I tried, that I saw on Melting Pot on Lifestyle Food. They were not as soft as I normally like them. So I think I will give it a miss next time. The method is to place oil in a hot fry pan and just add as many eggs as you require. You fry them for a minute, you add a tablespoon of water, pop a lid on the top and cook them for a couple of minutes, so the tops are poached. They come out like a dinner plate egg shaped feast. Usually when I am just cooking for Dave and we are on our own. Which seems to happen less and less lately, maybe because we have a 12 month old ;) Food is such a sensual experience. It is the most amazing way of using all your senses to experience real pleasure. It starts with the look of the ingredient, when you think of sexy food most people I think, think of strawberries & cream, chocolate & champagne, oysters & a crownie, or caviar & cocktails. We don't live a rich life when it comes to money but we are rich when it comes to food. Sometimes I forget how enjoyable it is to teach them. I get so caught up being in control in the kitchen that I have been putting it off more and more lately. I have been a bit of a perfectionist really. I really think that I have lost sight since the BBQ challenge of what has been important to me. I took it all so personally and felt I had to start being more precise and critical of my meals. I hate the fact that a man I never met before (Ben O'Donoghue), that I cooked two very rushed meals for, insulted me. Cooking is about time, patience, love and ingredients. What are the warning signs things are getting past being just everyday stress?I try very hard to put it in it's place but sometimes, like today, it overwhelms me. My Doctor said to me once that I am so used to it because of a stressful and traumatic childhood, that basically I have trouble living without it. Strange kind of logic I think, but it makes some type of sense. Do I will it upon myself? I hope not. Townsville A New Beginning

I have always had the urge to move away from Brisbane, as I have lived here all my life and want to try on a new city in Australia. Just for a while though. But I never dreamed it would be far north QLD. I always thought I would end up in Melbourne. I absolutely love Melbourne. It's the atmosphere, it's the food and the cold air. Fantastic. But to no avail, Towns ville it is.We move in just 4 weeks. So I have digressed from cooking for the moment. The full on long slow cooking really. Starting to pack has been full on. I have lived in this gorgeous old house for 8 years and it will be sad to leave it behind. But Employment opportunity awaits and that is what will help our family. 2007-02-15 01:41:01 My Milk Bottles, Soft Drink Bottles & Baby Bottles I am really going to miss this house. It has the perfect shelf along the top of the walls in my dining room for my bottle collection. Yes I admit it, I love them. They are so old, so beautiful and nothing is made the same way now. Plastic bottles of milk just don't do it for me. There is something about the way the glass is so heavy and tangible. They are gorgeous. I pick them up at flea markets, op shops and of course eBay. I have quite a few now as you can see. I also love to get the 1/2 pint cream and milk bottles also. I have a few old soft drink bottles and some great old glass baby bottles. Allot of them have the names and location of which dairy's they came from. I have a Peters, Pauls, Dairy Farmers and allot of local small dairy's also. They make my home feel really kitchy. I own a part of history. We live in a time when everything is so replaceable. I love the simplicity and warmth that comes with how my Grandma live... This time of year is a great time to indulge when you are sad to see the Christmas Cheer and indulgence is over, yet again. This is the time of year I am on the look out. Now this is going to sound cheap and pathetic, but I love Panettone and the price is usually out of my budget for a dessert. To Clear or Reduced stands are my first stop.
