Peppermint Mocha Cupcakes
2007-12-20 09:00:00 I have been wanting to enter a cupcake in Cupcake Hero for the longest time. So, here it is, my first entry for Cupcake Hero #4: Peppermint Mocha Cupcakes. Laurie of Quirky Cupcake has declared mint the official ingredient for Cupcake Hero. Ah, mint, it goes so well with a lot of things. I got the idea for the cupcake from my friend Katie. A couple of weeks ago she sent me a sampler of hot chocolate mixes. In the note she mentioned that sometimes she adds a packet of the cocoa mix to cake batter. For the cupcakes I used the Belgium Chocolate flavor.Here's how I did it. The recipe I used called for hot water. I just added the cocoa to the hot water and whisked the mixture well. Then I just added the hot cocoa to the recipe when it called for water. I did decrease the sugar amount by a 1/4 cup. Since the cocoa contains sugar already. Ginger-Spice Cupcakes
2007-12-19 18:00:00 This is what happens when you bake while listening to the nutcracker. You get gingerbread men dancing on top of cupcakes. I've had this tiny gingerbread cookie cutter for awhile now and I've been wanting to do something special with it. Last week Tara of "When Tara Met Blog" threw a Christmas cupcake exchange party. It works just like a cookie exchange party, but instead of cookies we exchanged cupcakes!Oh, the cupcakes! So many different flavors. There was a horachata cupcake, red velvet, devil's food with royal icing, lemon coconut, chocolate with a ganache center, minty oreo cupcake, and coffee cake cupcakes just to name a few. We then cut up samples of the cupcakes, tasted them and then we voted. There were three categories and I tied in the "Best Decorated". I received a lovely gift tote which contained a holiday movie, cookie cookbook and decorating supplies. Thanks Tara! Christmas Cookies
2007-12-19 06:14:00 Every year I give out a "cookie box"that contains an assortment of sweets. Earlier this week all the cookies were baked, boxed, and sent via fed ex to friends across the country. The cookies will be heading out to Texas, Florida, Ohio, Illinois, and New York just to name few of the states. Hopefully they will arrive in one piece and not melted.All the cookie recipes will be listed down below by name in no particular order. Just click on the name and grab the recipe.Also, I would like to thank Mr. Daniel DeMoss for all the lovely Reynold's Parchment Paper samples and recipes he sent me. The parchment paper came in super handy for storing dough that was resting, rolling out my cut-out cookies, and changing out the cookie sheets. Raisin Bread Pudding-SHF #38
2007-12-17 05:28:00 I know it?s Sunday. I just ran out of time on Friday to post it, but it?s by no means late. Zorra of 1x umrühren bitte is hosting this months Sugar High Friday and she has declared it ?pudding Friday?. That?s right, pudding, in any form.At first, I thought ?great! Then reality set in. There are sooo many variations of pudding. I just couldn?t decide. Did I want something chocolate-y? Mousse? Steamed? Decisions, decisions. I procrastinated so long that the choice was made for me. Earlier in the week, I had made ?raisin bread? and it had gotten stale. Instead of throwing it out, I rejuvenated it by turning it into delicious raisin bread pudding. Cinnamon Rice Pudding
2007-12-09 06:50:00 When I was little, I knew Christmas was near when my mom?s rice pudding made an appearance. It would first appear at Thanksgiving and continue until New Years Day. My mom would give me a cup of hot pudding, yes ?hot, because I couldn?t wait for it to cool down. It was the perfect combination of cream and cinnamon. For the grown ups, she would soak the raisins in hot water and dark Meyer?s Rum. Either way it was a real Christmas treat. Getting the recipe was not a treat.When I asked for the recipe, she gladly sent it. Arborio rice, cinnamon stick, cinnamon, vanilla bean, skim milk, heavy cream, sugar. Nevertheless, I was too late to start one of my own. Then while browsing my favorite blogs, I noticed people making butter rum cakes. “Ooooh” …Butter Rum Pound Cake. I checked to see if I had all the ingredients, butter …check, rum …check, eggs …check, cake mix from a box …check, wait ...what? Cake from a box? Oh, no. I can’t. Applesauce-Chocolate Chip Bundt Cake

Daring Bakers October Challenge: Bostini Cream Pie
2007-10-29 22:49:00 Whew! What a dare! That?s right this month marks my first entry as a Daring Baker . Mary of Alpineberry was our lovely host this month. She chose Bostini Cream Pie for our monthly dare. Yum! Then fear and anxiety set in. First, I have never made a successful chiffon cake (until now). Oh, I had my worries and doubts. I was so sure it was not going to work out for me; that I bought 5 dozen eggs and a half gallon of heavy cream. Everything worked out in the first run through so, if you need to borrow a pint of cream or a dozen eggs stop on by.The chiffon cake is unbelievable; it?s like rich angel food cake with a hint of orange. I love making cakes, but here at casa de Gigi Cakes it?s just not practical. You see it just Mr. Gigi Cakes and me; no kids or pets. No one to feed leftovers to. Then on Tuesday, my King Arthur Bakers Companion arrived. Well, I stepped into my way, way, way back machine and found this recipe from 1925. According to Food Reference Website it?s the 1925 winner of the Hawaiian Pineapple Company Recipe Contest, which is now known as, Dole. The website provides a nice history about how the contest was held, who judged, and the winning recipe. A nice piece of Americana. Pineapple Coconut Cupcakes
2007-10-16 22:41:00 One of things that I really enjoy is baking birthday cakes for my friends. Except, when it is 100*degrees outside. This unfortunately, happened a lot this summer. It was so hot this summer that I gave out ?I owe you one birthday cake, and in tiny print: redeemable only in fall* and by fall I mean October? birthday cards. This week one of the birthday ?cards? was redeemed. The birthday girl requested coconut cake (cupcakes) with pineapple coconut icing.The cake was delicate and coconut scented. The icing was light and not overly sweet, even with all the coconut. In addition, the icing is fat-free if you omit the coconut. I packed the cupcakes in a clear cupcake box (disposable) with a big yellow ribbon and small birthday note. The birthday girl was very happy and pleased to receive her much belated birthday cupcakes. Cranberry Scones
2007-10-12 20:17:00 Hmm. It is hard to admit failure when you are so close to victory. This morning I got up a 4 am because I wanted to have a fresh scone with my morning coffee. The recipe sounded great, I even had all the ingredients on hand. (Yes!) Hmm, two hour chill time? No problem. So, there I am at 4:00 in the morning making scones. It?s still dark outside, the temperature is around 55*degrees. Great scone weather. At 4:30 am, the scones go into the freezer for their 2 two hour chill time. Cool. This gives me enough time to drive over to the Rose Bowl for a quick three-mile run/walk. When I get back, I hop in the shower, get dressed, preheat the oven and wait for ?scone time?. Finally the moment I?ve been waiting for 6:30 am. Yes! The scones go into oven; I set the timer, and wait. At the 5-minute mark, I start the coffee.Ding! It?s time! 2007-10-05 20:24:00 As I?ve mentioned before, I love to give out cookies for the holidays. Don?t laugh, I refer to them as the ?twelve days of cookies?. For weeks I bake cookie recipes that have caught my eye, or that just seemed to scream ?I?m delicious!? The cookies that I love go into a ?Yes!? pile. The ?yes? pile has to meet certain criteria besides being yummy. One of the big deal breakers is when a cookie is not shippable. You see, most of the cookies are shipped across the country. So they must arrive intact, no crumbs allowed. Which brings me to this lovely cookie.This cookie is the result of a sugar cookie and a brownie merging together to create a new dessert life form. The cookie is soft and buttery, like a sugar cookie, but the center is chocolate-y and fudgy like a brownie. It?s like two desserts rolled into one! Chocolate Chip Mint
2007-09-18 20:39:00 It's been a long time time since I posted a cupcake. The last couple of weeks have been very busy. School started and I have tons of reading to do. Which is hard when your textbooks are trapped in a warehouse somewhere in Vermont. Hopefully, they'll be shipped soon.Then I became obsessed with blueberry muffins! I had wanted to share the muffins with my fellow classmates. You see, we arrive at school an hour or so before class. No, we're not that nerdy. The parking at school is a nightmare. If you don't get there at the crack of dawn, you'll never find a spot. We usually grab a table in the cafeteria and drink our weight in coffee. I thought a muffin would be a nice addition to our routine. But it took a couple of tries before I was successful with the muffins.Now that the stress of the muffin failure is over, I can concentrate on cupcakes! Chocolate Chip Mint
2007-09-18 20:39:00 It's been a long time time since I posted a cupcake. The last couple of weeks have been very busy. School started and I have tons of reading to do. Which is hard when your textbooks are trapped in a warehouse somewhere in Vermont. Hopefully, they'll be shipped soon.Then I became obsessed with blueberry muffins! I had wanted to share the muffins with my fellow classmates. You see, we arrive at school an hour or so before class. No, we're not that nerdy. The parking at school is a nightmare. If you don't get there at the crack of dawn, you'll never find a spot. We usually grab a table in the cafeteria and drink our weight in coffee. I thought a muffin would be a nice addition to our routine. But it took a couple of tries before I was successful with the muffins.Now that the stress of the muffin failure is over, I can concentrate on cupcakes! 2007-09-12 19:41:00 A short time ago, I posted blueberry muffins with no "tops". Even though the muffins were quite tasty, I know a good percentage of muffin appeal is the "tops". Thank god I am surrounded by great bloggers who are willing to share their knowledge and experience. This muffin victory could not of been possible without The Happy Home Baker, who left wonderful tips and links. To the Happy Homebaker, I dedicate this muffin and coffee.Orange Berry Muffinsadapted from Dorrie Greenspan's "...Baking"1/2 cup buttermilk2 large eggs3 tablespoon honey1 stick butter melted and cooled1/3 cup sugar2 cups flour2 & 1/2 tsp. baking powder1/4 tsp. baking soda1/4 tsp. salt1 cup fresh blueberrieszest of 1 orangePreheat the oven to 400F degrees. Butter a regular 12 cup muffin pan and place the pan on a cookie sheet, set aside.Whisk together the buttermilk, eggs, honey, and butter.
