This yummy recipe comes to us from the Fairthorne Cottage Bed and Breakfast in beautiful Cape May, New Jersey. Preheat the oven to 400 degrees. 1 1/2 cups all-purpose flour 1/2 cup whole wheat flour 1/2 cup cornmeal 1/2 cup sugar 2 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup buttermilk 1/2 cup orange juice 1/2 cup butter melted 1 egg beaten 1 Tablespoon grated orange zest 2 cups fresh blueberries (1 pint) Grease 12 muffin cups In a large bowl, combine the all-purpose flour, whole wheat flour, cornmeal, sugar, baking powder, baking soda, and salt. In a small bowl, combine the buttermilk, orange juice, butter, egg, and orange zest. Add to the flour mixture and mix just until the dry ingredients are moistened. Fold in the blueberries. Scoop the batter into the prepared muffin cups and bake 15-20 minutes or until a wooden toothpick inserted in the center comes out clean. Turn out on a wire rack to cool.

This recipe is submitted courtesy of the 1823 Historic Rose Hill Inn of Lexington, KY. Caramel Apple French Toast 1/2 cup butter 1 cup brown sugar 2 Tbsp water 2 sliced apples cranberries (optional but decorative) 1 loaf of dense bread 5 eggs 1 ½ cups milk 2 tsp vanilla In medium saucepan, combine butter, and brown sugar and heat over med-low heat until it bubbles. Add water and continue cooking until sauce becomes thick and foamy. Pour into baking dishes, sprayed with Pam. Cool. Place sliced apples over cooled caramel syrup in baking dish. Sprinkle cranberries between the slices. Cover the fruit with slices of bread. Do NOT use soft white bread!! In a blender combine the eggs, milk and vanilla and blend thoroughly. Pour the liquid mix over bread. Cover and refrigerate overnight. Bake in 350 degree oven 30 minutes. Cool about 5 minutes and then invert the mixture on warmed plate. Makes 6 servings

This recipe is brought to you by the Five Gables Inn - they are a waterfront bed and breakfast in Boothbay, Maine. Sicilian Omelette in Tomato Sauce Ingredients: 12 eggs beaten 1 1/2 c. Parmesan cheese 2 lbs tomatoes, diced in 1/2 inch cubes 2 garlic cloves, peeled and left whole 1/4 c. chopped, fresh, basil 1 tbl olive oil 1/4 c. chopped parsley Directions: Mix 2/3 of the cheese into the beaten eggs. Season with salt and pepper to taste. Heat a little oil in large omelette pan and pour in eggs. Make into an omelette. Remove from pan and cut into strips. Heat the olive oil in a skillet and sauté the whole garlic gloves. Remove the garlic when it has lightly browned. Add tomatoes and basil. Season to taste with salt and pepper. Cook for 8 minutes, stirring well. The sauce should be well reduced. Toss in the omelette strips and cook for another two minutes.
