Pork loin baked in chicken creme with bacon

This one is for Vladimir ;-)  The pork loin is an underestimated great piece from the pig. Most people, when they buy it in stores, will normally use it by cutting smaller beefs of it, marinate it in red wine and roast it in the oven, and then we have the ?other? recipes, like the ones I make. Servings: 10 2 pork loins 200 gr. of raw chicken filet or breast 3 eggs 3 dl. whipping cream Salt and pepper 2 garlic pieces Chieves (First of all, it´s important to notice that this recipe, will do a lot better if you leave the pork loins in white wine for a few days.) Take all the fat of the loins, and roast them lightly on a hot pan, making sure that the whole loin is roasted, otherwise the juice from the loin will go into the cream and spoil the structure. Take the chicken, and blend it well with with salt and pepper, garlic and chieves and add the eggs and blend it for 2 minuttes. Tuesday morning was my first day of work after I got back from holidays. I was ready to kick ass in the kitchen, bursting with new power, and new recipes to try out. Or so i thought. During the morning, our waiter called in: She was gonna be late (again, for the 6Th time), so I told her to be here a.s.a.p, or don’t show up anymore. She came 2 hours later After a small argument, I decided to give her a last chance, so we will have to see what happens on her next shift! On top of it all, all our expected groceries to be delivered, didn’t show up, so after calling around to a few places, I found out that nobody had ordered anything for the morning! Back in july, we had a few friends over to celebrate one of the girls birthday. 25 years and still going strong. The day was perfect. No rain, sun was shining from an almost cloudfree sky, and we got the chance to give the poor girl cinnamon - Lots of cinnamon. She actually got tired of waiting for the darn cinnamon, that she even poured some on herself ! I promised her once, that whenever she wanted, she could ask me for anything to eat, and I would cook it for her, and she thought that, this ocation would be great. The menu ended up in Tuna mousse, grilled deer filet and chocopie with vanilla ice and berrietrifli. The tuna mousse might be the easiest recipe in the world, nevertheless one has to be carefull, because to much creme fraiche will spoil the recipe and make it to fluid, and if you dont use enough, it will be dry. The war ends tomorrow. My kind is on the brink of extinction. The never-ending name-calling, the boo-ing, the typical -”Hey smart-ass, didn´t you see the NON SMOKING sign?”- All that should be part of the past tomorrow. I gotta be honest. I don´t mind non smokers, actually I think it´s great that they didn´t fall into the same trap I did, when I “joined” the smokers club, but i must also admit that this almost religious chase and nagging on smokers was beginning to be a royal pain in the butt! As I wrote in a prior post, I love fish. Ok…I can´t exactly say that I love the smell, but I love the variety, the endless cooking methods and spices you can mix with fish. We are trying out something new at home called “fishy friday”, because my girlfriend is not really into fish, but she would love to try and hopes that one day she will love it like I do. Salmon is something I normally would buy at the fish stand, we have every Thursday downtown center, because I know the fish is fresh and yes…the man is cheap aswell Smoked salmon is usually cheapest down at the supermarket, frozen down, bones out and sliced, or the homemade way, but at the moment I can´t find the time to do those small funny cooking things at home. So, summer is here, the flowers are blooming, the birds start singing before the devils wakes up, tomatoes are sweet, and we´re all looking forward for the holidays, beach-going and lot´s of bbq´ing. I love the summer time. I fancy walking around, barefooted in the garden grass, cooking in the free and watching the moon, slowly passing down at nighttime, showing those beautiful red, yellow and orange colours. Kids Chocolate cake

In the schools in Denmark, we have what we call “the hour of the class”, where there is no teaching, but maybe some singing, playing, watching a movie and eating something sweet like a cake, cookies or plain sweets. This chocolate cake is a sure winner, contains no nuts or things that kids normaly don´t wanna eat, and can easely be modified, so it could be used as an “adult” cake. Servings: 40-50 pieces 500 gr. butter 700 gr. sugar 8 eggs 1 kg. flour 8 teaspoons baking powder 6 teaspoons vanilla sugar 6 dl. milk 2 dl. cacao Mix the butter and sugar well, so it no longer contains the “granualted” consistens. Add the eggs 1 by 1, and mix well. Mix the flour, baking powder, vanilla sugar and cacao and add the mix and the milk, little by little. Turkey roll with serrano ham

Servings: 6 1 turkey breast aprox. 400-500 gr. 3 eggs ˝ l. whipping cream Salt and pepper 10 pcs. sundried tomatoes Pistacho kernels 10 pieces of serrano ham (well cured) This might be one of the easiest recipes to date for a great starter, and it has so many posibilities for use. Cut the turkeybreast into smaller pieces and blend it with salt and pepper, but remember that the serrano ham is quite salty, so don´t use to much salt in the mix. Add the sundried tomatos and pistachos. Add the eggs one by one, let it blend for a few minuttes, and finally add the whipping cream, blending it a minutte more or so, to get the adequate consistens. Place a large piece of food film on the table, place the serrano ham on it, and add the turkey cream nicely over the ham, and make a roll, tighting the roll firmly, so all eventually air blobs are gone. Wrap the roll in foil and bake the roll at 145 degrees for 35-45 minuttes. Serve the roll cold in slices of 1 cm. each, eventually as the pictures...

Don´t you just love fish? I don´t think there is a day passing by where I don´t think of fish. Recipes, the game of catching a fish, the fight and struggle when catching a salmon. These things makes the winter great here in scandinavia, and I dare to say, that we spend a lot of time in the sea during the autumn and winter, specially to catch the lovely flatfish or the cod. This recipe works great as a lunch snack or in greater amount on a buffet.   Servings: 4 4 spoons of breadcrumbs Oil / Butter Curry, sugar, salt and pepper Handfull of parsley 1,5 dl. tartar sauce 3 dl. creme fraiche 2 apples 4 cod fillets  4 spoons of flour  1 onion Cut the apples and the onion in fine brunoise and mix it with the tartar sauce and creme fraiche, and spice it up with the curry, sugar, salt and pepper, and add some of the parsley chopped nicely. As you may know, I´ve been working at a holiday center in northern denmark, now for almost a year, and changes are due to come, if we wish to keep on being the Nr. 1 resort, that people go to on vacations. On an averege day we have aprox. 1000 people staying ovenite, and only capacity to feed 200 at the time in our 2 restaurants there. 1 is the Salina restaurant, wich is a italian style with pizza, pizzabuffet, carvary Buffet on saturdays, and a special bath/buffet on sundays. The other restaurant is The Brasserie with modern style open kitchen, and a great variaty of starters, main dishes and thrilling desserts.  From the beginning of the new year, there will be some really big changes to the concept, starting from the new opening on the 14 of January. I grew up learning that you have to try everything at least once, and that there is no such thing as a “no thank you”, when it comes to food, you´ve never tasted before. Be a man. Taste it, and if you don´t like it, be honest and say it. My girlfriend is NO exception, and there a plenty of things that she doesn´t eat, but  she is at least mature enough to taste it, and in most cases she likes what I serve. Yesterday was one of my “let´s be romantic with dinner and movie nights”, you know, just to make up for some lost time and a way of saying that I´m sorry for being such a workaholic. My idea was to make wholegrilled plaice with buttersauce and boiled potatoes, but let´s be honest and realize that it´s very difficult to serve a whole fish to a non fish eater, and even worse when that person has to take out the bones herself , so i ended up by taken the fillets from the bones, and having 4 fillets pr. person. One of the things I always keep in my refrigirator is a pack of smoked norwegian salmon, either sliced or as a whole side, because it can be used for many different things, and here in Denmark we love the salmon, almost as much as the National football Team Normally we the danes, eat the salmon on a slice of white bread with shrimps or a cold sauce made of brown sugar, olive oil, dill and mustard. Another way is wrappiSang a slice of smoked salmon  into a fillet of cod and fry on the pan, or using it in bits in a fish terrine. My favourite is to take a few slices of salmon, and put some pesto over it, just enough to cover the slices gently. I love it. The taste when something new and created “out of the box” ends up with a delightfull result. I always have a few rules in my kitchen, and one of them is that I never make a starter to spicy, that could ruin the tongues taste nerves and eventually effect the taste of the main course, but as we all know, rules are meant to be broken This soup combines the thrilling taste of chili and the gracious sweet taste of the peach, and it doesn´t take a great cook to combine these to very different flavours, making sure that it ain´t to spicy ot to sweet. Elderberry flower juice, part 1.

This was actually one of the first post I ever wrote, after I started blogging, but as I wrote earlier, something went wrong for my host, and everything was lost, so I´m starting all over again. The elderberries are found in almost every corner of denmark, and especially where we are still able to keep our green areas, and thank god, we still hae a few left. When we took over our new house 2 years back, I noticed that one of the trees in the garden was as elderberry bush/tree. Both flowers and berries can be made into elderberry wine, and in Hungary an elderberry brandy is produced (requiring 50 kg of fruit to produce 1 litre of brandy). The alcoholic drink sambuca is made by infusing Elderberries and anise into alcohol. The berries are best not eaten raw as they are mildly poisonous, causing vomiting (particularly if eaten unripe).
