Braseola with baked pesto tomatoes and ricotta
2006-12-02 16:11:06 My girlfriend is the webresponsible for The Danish Association of Chinchilla breeders and some of them are meeting at our home later today. For this I was asked to make a small menu, nothing fancy, but just something small and yet nice. I got some green tomatoes from the market the other day, and have left them outside for the last couple of days to mature them. The idea is to cut of the top, add some pesto, sugar and salt on top and bake them for 12 hours at 73 degrees or even better 24 hours at 45 degrees. Salmon carpaccio with herbs and pesto
2006-09-04 05:21:01 This is one of my favourites beacause not only is it easy to prepare, but is also tastes great and it´s a nice small starter, that won´t make your stomach to full before the main course. At home we also eat it frequently at nighttime, when watching tv and wanting a snack. Servings: 2 6 slices og norwegian or canadian salmon Green basil pesto Red sundried tomato pesto Herb s of your taste (I use parsly, thyme, chives and lemongrass) Some kind of bread Diced red onions On a dish, put the slices of salmon nicely overlaying eachother and cover slightly with the green pesto. Put a little amount of diced onions on top of the salmon, and a nice handfull of the mixed herbs. Surround the salmon with the sundried tomato pesto and serve it with warm bread. 2006-09-04 05:21:01 Melissa of Traveler?s Lunchbox has started a project or meme of sorts asking food bloggers to recommend “things you’ve eaten and think that everyone should eat at least once before they die.” I came across this project when reading The cooking adventures of Chef Paz and normally I´m not a man that fancies these kind of list´s and projects, but for once this is a great and funny way to get inspiration and to see whats on peoples cooking mind. There are some great list´s out there, and I encourage you to visit them all. Here is my small contribution to the project: Fried icecream from Labuan (far east). (I had this icecream everyday for 9 days, while I was a chef for Maersk and got stock in a hotel in Labuan). It´s basicly 3 kinds of icecream, wrapped in breadcrumbs, frozen down, and fried in a deep pan fryer. Gotta go there again on holiday before i die. One method is surfing the net everyday looking up keywords, such as food, recipes, meat, cooking, kitchen and so on. Another way is mailing lists. This great tool, invented almost at the same time as the internet can really help you keeping track of new recipes, and not only from fellow chefs, but also from suppliers, chandlers and crocery stores. I came across this dish from a danish fish supplier earlier ths week, and I just felt like sharing it with you guys anf girls. Servings: 4 4 spoons of breadcrumbs Oil and butter 1 bundle of parsley 1.5 dl. tartar sauce Curry, sugar, salt, pepper 3 dl. non flavoured youghurt 2 apples 4 spoons of flour 4 cod fillets 1 onion Chop the apples and the onions into smaller pieces. The mess, the fun and the run
2006-09-03 05:18:02 Have you ever got up in the morning, telling yourself that you probably should call in sick, because you can feel the day is gonna be shitty? Yeah, i thought so. I had that day just today, and i even had the warning coming yesterday at work, so I shouldn´t really be complaining, but I guess I´m looking for someone to feel for me and give me the high 5, the cyber way. Anyway, I got to work this morning knowing the following: We are 2 man short at the moment, due to sickness. 4 reservations made for the total of 450 people having 4 different buffets. 31 having a 3 plated menu. (wedding anniversary) I wasn´t sure that my orders to the grenary would go through, because they waren´t sure that they had all I ordered. So far so good (more or less) Now, this was a 8 o´clock this morning, and around 1400 hours, the bad news started to come: Suddently the reception called in 2 other buffets, that they forgot to book in hour system 2 reserved orders, both 20 each, came asking for their seat... The beetroot part 2.
2006-08-28 05:09:02 I recieved an email today regarding a recipe on beetroot terrine from Michelle. Hello, whilst on a recent trip to Helsinki, I had what was described as a beetroot terrine. It was a compostion of chunky pieces of beetroot and potato but I could not work out th e other ingredients. I have done a search for this recipe but every recipe I find has a meat base. Perhaps you may know other names for this dish? Or maybe you can suggest a recipe. It was served with wild salmon. As I wrote Michelle, my best guess is that it´s a basic terrine recipe, consisting of eggs and cream, whipped together and spiced with salt and pepper and eventually some thyme, basil or oregano. The potatoes and beetroot have probably been cooked first and the cut to chuncks, and mixed with the eggcream. Put the mix in a greased alufoil form or terrine form, but never fill it up completely, because when baking the terrine, the eggs will make it rise and fill the form. 2006-08-26 05:06:01 So, this small site is about to celebrate it´s 3 months birthday, and I believe that calls for a celebration. I´ve been searching the net for sites containing recipes, nutricion tips and other food related tips, tricks or forums, and I haven´t found a decent one yet. If I´m mistaken or you know or have that site please let me know. Now, back to the headline. The beetroot

The beetroot can be used in many variations such as the famous Bortsh (russian beetroot soup), the danish pickeled beetroot and in all kind of variations you might want to make, like using it for salad, as a garnish for meat and poultry. From where I´m sitting, the most commonly used recipe for beetroot is the pickeled beetroot, and is mainly used as a topping on the danish “Smørrebrød” or the open sandwiches we make on dark rye bread. The beetroot should be washed and the top and bottom cut away, and then the beetroot has to cook for around an hour. After cooking, put them in cold water, and the skin is very easy to take of. Unlike kidneys which require salting and soaking, sweetbread is simply seasoned and fried, with a knob of butter to finish. Often sweetbreads are crumbed, deep fried, and served with a slice of lemon. A popular French recipe (ris de veau frites) involves calf’s sweetbreads, which are first boiled with carrots, celery stalks, shallots, garlic, and aromatic herbs, then taken out and dried before being dipped into wheat flour and fried in a pan with butter. Pork loin baked in chicken creme with bacon

Most people, when they buy it in stores, will normally use it by cutting smaller beefs of it, marinate it in red wine and roast it in the oven, and then we have the “other” recipes, like the ones I make. Servings: 10 2 pork loins 200 gr. of raw chicken filet or breast 3 eggs 3 dl. whipping cream Salt and pepper 2 garlic pieces Chieves (First of all, it´s important to notice that this recipe, will do a lot better if you leave the pork loins in white wine for a few days.) Take all the fat of the loins, and roast them lightly on a hot pan, making sure that the whole loin is roasted, otherwise the juice from the loin will go into the cream and spoil the structure. The kids were playing in the garden, and we set up a small hose, so the kids and the dog could have some fun running under the water, now that we don´t have a pool yet. Todays BBQ was a traditional one, with sausages, filet mignon, corn, salad, Tzatziki, bread and garlic butter. Handball team part 2.

It was the last day the girls were staying at my work, and tomorrow they are leaving for Norway to compete in the North championships. It has been fun serving them and having the opportunity to make some other kind of food, then the traditional. It´s been a hard week, with lots of challenges, fun and new tastings. As i wrote in a prior post, I lented them a jacket, and told them, that it was ok if they signed it for me, and that i wouldn´t be angry about it. Today, the girls came down to the kitchen and said: We are deeply sorry, but somebody suddently grapped a pen and started to sign the jacket, so we all did what she did, and we hope that you won´t get mad about, and they started laughing. How can I be mad? I asked for it, and they delievered. With this I mean that, a starter means just what it says. A STARTER! It´s essensial for a starter to have a great, not to spicy taste, to be light, and be able to make the tongue´s tastesystem ready for something with more taste, flavour and with more density. The special thing about this soup is that you wil have the sweetness from the peaches, the spicy from the chili, and the tense garlic taste from the garlic (of course). In the last 15 years there have been a smaller revolution in these kind of desserts, not to mention the revolution in cakes and pastry and their acompagnonships. As a kid I remember that I always got the biggest ice cream with whipped cream and some kind of sauce. Now a days it´s normal to get some kind of berry compot with the ice cream or cake and it´s usually made of strawberry or blueberrys. Pet food, contains less fat, salt and sugar than fastfood does, according to a test made by the Global Food Testing Laboratory, that has tested 30 kinds of fastfood and 15 kinds of pet food. 100 gr. of cat food, contains only 1/8 of the fat, that can be found in 100 gr. of chicken from Kentucky fried chicken, and 1/3 of the fat from a Big Mac burger, or 100 gr. pizza from Pizza Hut. John Serrle, who did the food test for the laboratory says to Sunday Times, that the analized food, can be catagorized as healthy or semi-healthy, while some of the fastfood tested was directly unhealthy. Shellfish symphony

I used to join my dad when i was a kid on sundays to the harbour or river to do some fishing, while we would have man to man talk about life, girls and specially about fishing. This recipe is a lovely, fresh and light symphony of shellfish, that comes as a great starter not only on big celebrations, but also on romantic night with the loveones. They will be staying for the entire week, training and getting their physics built up again, using the nearby handball training ground and using our wellness section. The girls and trainers will be eating lunch there everyday and on friday the 28 they will be signing autographs for the guests residing in the resort at a special gesture.
