Bell Fruit, Wax Apple, Jambu, ??????
2008-02-05 23:49:00 I have heard stories from a number of usually reliable sources about how some folks go mad for syzygium samarangense, also called wax apple, bellfruit, and jambu in English, ??????? (yambus) in Yiddish, and ?? (lián wù) in Mandarin, so I was of course very excited to find some. They are pleasant enough, very crisp, juicy, and mildly sweet with just a little waft of rosewater, but I don?t entirely see what all the fuss is about. I was much more carried away by mangosteens, yellow dragon fruit, and white pomegranates, to name a few of the stupendous and wonderful plants I have been fortunate enough to enjoy of late. 2008-01-31 05:20:00 Just about a year ago I had a cup of coffee at the counter in a candy and newspaper store under the D-train tracks on New Utrecht Avenue. I just love that there are still some candy store lunch counters in Brooklyn, and I love yet more what happened, even if I did not especially like the coffee. Here?s how it went. I sat down and asked for coffee, and the fella there said ?regular?? and I said yes, thinking regular meant not decaffeinated. So then he brings me a cup of coffee with milk and sugar in. I had forgotten that in Brooklyn, and as far as I know, nowhere else, ?regular? means coffee with milk and sugar in. I was so delighted to be experiencing this miraculous bit of New York dialect in real life that I did not even really mind drinking coffee with sugar, something I normally cannot endure. Kaffir Limes and Limequats (Alternate Lime Meringue Pie)
2008-01-29 23:09:00 That in not a lime that I left out in the rain overnight. It is a kaffir lime, a delicate and fragrant variety of citrus sometimes available at my neighborhood grocer. K-limes are prized mostly for their flavorful leaves, but the fruit is lovely. The zest is very strong, so use just a bit in combination with other citrus zests, and the juice is pleasantly tart and floral, but scant, so you may want to stretch it with some lemon juice as well. These are limequats, a kumquat-lime hybrid. Are they not very cute? They are way too sour to eat out of hand (I can see Krakow and Lemberg) but the zest is really something special, and the tart juice combines beautifully with lemon for an lemon and alternate lime pie, a dressing, or to squeeze into tea. Lemon Meringue Pie for the Daring Bakers
2008-01-28 21:17:00 We never made lemon meringue pie when I was in alimentary school. We made tarts with puckery sour lemon curd, and they were swell, but the whole Serious French Pastry Establishment really has very little kind to say about puddings and fillings made with cornstarch and water. How wrong they are. These sweet little pies are adorable, and great fun to make. I am so grateful to the Daring Bakers for challenging me once again to try something I have never done before. This week was also the first time I ever went ice skating or Norwegian folk dancing. All three of these new activities involve twirling exhilarating weightlessness?Just look at those swirly little peaks. This is a recipe that benefits especially from being made in the smallest pans for which you have the patience. Chocolate Agave Glaze
2008-01-25 21:57:00 I have only just started trying to make sweets with agave, a cactus-derived nectar which, according to folks who sell it at least, is a miraculous syrup safe for anyone on sugar-free diets in spite of its natural sugars. So far, this recipe is the first I?ve made that is actually better in the agave version than with any more familiar sweetener. It is by no means a low-glycemic recipe with all that chocolate, but well worth trying, and very good to have on hand. Unglazed chocolate cakes seem to be turning up around here all the time. Chocolate Agave Glaze ½ pound chocolate 4 ounces (1 stick) unsalted butter ½ cup hot water ¼ cup agave nectar 1 teaspoon bourbon in which you have infused vanilla pods, or plain bourbon, or vanilla, or both (optional) Melt the chocolate and butter together. Stir in the water, agave, and whiskey, if you are using it.
Yellow Dragon Fruit
2008-01-22 23:01:00 This might just be the most perfectly engineered fruit I have had the pleasure to meet. While it does not share the snazzy flashiness of the pink dragon fruit, the pulp is much sweeter and juicier, and those perfect little black seeds have exactly the most pleasing level of crunchiness. I have just the barest memory of tasting something like this in a candy bar once when I was very little. I do hope I will be able to find these again. White pomegranate ?????? ???????
2008-01-15 23:42:00 I was never all that amused by the milder, sweeter varieties of watermelon or cherries in their white or pale yellow finery. The redder the better, I usually say, but these Spanish white pomegranates were a revelation. They are almost as deep red inside as common pomegranates, and much more sweet and flowery. The real miracle is the juiciness of the seeds. They are about twice as large as common pomegranate seeds, but the inner fibrous kernel is much smaller, so they are almost all pulp. Braised Ginkgo Nuts with Purple Brussels Sprouts
2007-12-27 06:13:00 These sprouts are made with ginkgo nuts I harvested from the sidewalk in front of my building. I just cannot begin to tell you how long I have wanted to do this. Every year in late November, the ginkgo trees on my block shed pounds and pounds of edible and healthful nuts. The ginkgo nuts lie trodden underfoot because nobody knows what to do with them. The pulp of the outer hulls becomes very pungent as the nuts ripen and some folks just don?t care for that at all, but the nuts themselves do not have any unpleasant odor. For years now I have promised myself that I would one day prepare some home-gathered ginkgo nuts, but I had always let the season go by because I had no idea what to do with them, and I didn?t really feel like picking them up. Mangosteens in the Snow
2007-12-19 02:45:00 I seem to be in Canada, or somewhere of that sort, so I will have to promise to add photos as soon as I can (ETA: here they are!), but I just cannot wait to tell you about the mangosteens I have been eating every day since I found them. These exquisitely juicy little segmented globes are no relation to the mango, or to anything else I've ever seen. They look at first very like globe eggplants. The woody outer shell is about half an inch thick. Inside are about ten succulent segments of fruit. They look a bit like lychee, white and translucent, but the flavor is like lime with a little banana and a little floral. Getting them open is the tricky part, because it takes great force to cut through the shell, but ideally, you don't want to scratch or crush the lush little sections inside. These pretty little rolls are made form the recipe for Tender Potato Bread , this month?s challenge from the Daring Bakers, hosted by Tanna at My Kitchen in Half Cups. This is the first bread I have kneaded by hand in a while. I will just remark that I have not been making no-knead bread for months now. I think I just like kneaded bread better. Herbed Chestnut Dressing or Stuffing

This is also, no lie, the first time I have ever cooked with any kind of chestnuts at all, so I have never yet done the whole chestnut-peeling operation, a trial I imagine I will have to face sooner or later. I first learned about dried chestnuts from Clotilde at Chocolate and Zucchini. She used them to make this carrot soup and these interesting little galettes. Chestnut s have been on my to try list for a while, and the dried version seemed like the easiest kind to use, so I was especially glad to find organic dried chestnuts at my local grocer last week. Even right out of the bag these guys have a deep woody, nutty aroma, which becomes mellower and even more wonderful once they are cooked.Yippee! That would have been very appropriate for this gorgeous bunch, which is equal in circumference to my bicycle wheel, but it turns out that in fact the Chinese name for this vegetable is ?? Bamboo Honey Pecan Pie
2007-11-14 03:36:00 When I made pecan pie for Thanksgiving last year, I had filling leftover to make nine little tartlets (three of which are mysteriously absent from the group photo). You just can?t guess how crazy people go over little pies. Folks like pie plenty to begin with, but there is something about those cute little tartlets. I mean people just fall onto them, levitate out of their seats and float across the room to grab them. Tiny little pies could take over the world. Now there?s a book out that would suggest that the reason for this is that when we eat little things, we can delude ourselves that we are eating less, and that individual tarts leave no telltale evidence, like the space left by a missing wedge, to rebuke us. This might be partly true, but I think we eat little pies because we just really like little pies. Toasted Squash or Pumpkin Seeds
2007-11-13 20:55:00 Delicata squash have such thin tender shells, that when you roast them they become frangible as parchment, and you can easily eat them whole. Other squashes have tougher hulls, and might require a two-part shell-and-eat procedure. All squash seeds are good enough to be worth keeping and roasting, and some are outstanding. The musquee de Provence pumpkin I cooked yesterday is an unusually vividly flavored pumpkin with some unusually vividly flavored seeds. I have been nibbling at them all day. Here?s where a lot of folks go wrong in toasting pumpkins. You have to cook them first. This salts them and softens them up, and you get some wonderful pumpkin seed broth to add to your current soup. Toasted Squash or Pumpkin Seeds Remove seeds from the seed cavity and try to pull off some of the fibers clinging to them. You will not be able to get them all, but that is fine. Boil the seeds in a sauce pan in heavily salted water for twenty minutes for smallish seeds, or about 30-40 ... The musquee de Prove nce is a very pretty pumpkin on the outside but nothing prepared me for this: Wow, I don?t think I have ever seen this color on anything before. The cooked flesh separates into strands like spaghetti squash and is richly flavored with hints of tangerine and pistachio. The texture and juiciness make this an ideal pumpkin for stuffing. And so easy on the eyes. This just might be the Julia Roberts of Squash. Musquee de Proven ce Pumpkin for Stuffing Scrub your pumpkin all over and put it into an appropriately-sized ovenproof dish. Place the dish on a sheet pan in case of any irrational exuberance, and put the pumpkin in the oven. Bake at 375 for about an hour and a half, depending on the size of your pumpkin (this one was 14 pounds). Remove the pumpkin from the oven, and when it is cool enough to handle, cut out a lid.
