There may be better blogs with prettier pictures, but who else is going to help you prepare your fumitory water? Fumitory water is an herb-scented water analogous to rose water and orange flower water made from fumitory (it is a noun), the common name for fumaria officinalis, or ???????? (feldroykh, or ?field-smoke?) in Yiddish. I found my fumitory water at the Sunflower Market in Queens, and by now you know I just wasn't about to leave without it. Mr. Mizrahi suggested making a refreshing summer drink by mixing the fumitory water with honey, water, and ice, adding that this potation is ?very good for the heart, blood, cholesterol, everything.? I have no doubt that it is.The flavor is a tiny bit smoky, with notes of dates, figs, and prune, and something like gum Arabic or gum mastic. It is very different from anything I have tasted before. These sweet, juicy, and very crisp cucumbers from Yuno's Farm are in the market this week. You can put them in this salad, or make cucumber sandwiches (ideally with salt-rising bread). When I have extra cilantro around, I make this alternate salad.Cucumber Salad with Cilantro 4 large cucumbers, or six or seven kirbiesolive oilapple cider vinegarkosher saltcilantro, minced (about 12 sprigs, or whatever you need to use up)Peel the cucumbers, or don't. Slice them into quarters longitudinally, and slice the quarters into chunks about 1/3 of an inch thick. This recipe is not substitute for khumes (hummus); it is its own little thing?a gesture toward hummus. Hemp Seed and Tahini Salad (Hemp Seed Hummus) 1 ½ cups hulled hemp seeds salt, about two teaspoons 3 cloves garlic (more or less) ½ - ¾ cup tahini (I used roasted tahini this time) ½ cup lemon juice (it is also nice to substitute brine from pickled hot peppers, if you happen to have some) several sprigs cilantro (about ¼ cup minced) optional 1 dried chicostle chile or other medium dried red chileSeveral tablespoons of your loveliest olive oilA dusting of sumac, and a dusting of paprika or Middle Eastern red pepper Put the hemp seeds and salt in a saucepan with 2 cups of water. On my way up the West Side, I saw this bendy building, lilacs,the main plant of H&H bagels,and many gorgeous ruined piers and pile fields.The bicycle path is interrupted at 125th street, where you can see some very rare remaining trolley tracks. Look at fascinating historic subway photos here, including this postcard of this very spot.The greenway seems to come to a dead end here somewhere in the 160's, but if you go all the way over to the right, you can find the place to continue.Along the way I saw folks strolling, reading,eating, practicing music (with saxophonists in the majority for some reason), doing construction work,baton twirling,fishing, and just walking or riding.Just south of the George Washington Bridge there is this sweet little curve where you have water on three sides. From left to right: garden sage, purple sage, golden sage and pineapple sage Pineapple sage (salvia elegans) is a revelation. The leaves have the unmistakably vivid and heady aroma of pineapple. How do they do that? The flavor is very like that of garden sage, with just the tiniest bit of the fruitiness promised by the scent. I can think of a few things I would like to try with this new (to me) herb, and I am starting out with strawberries because they, like this sage, belong at once to so many anomalous categories. Sagacious Strawberries Strawberries Fresh pineapple sage leaves (or other sage) Sugar Balsamic vinegar Wash and hull the strawberries. You may slice them, halve them, or leave them whole. Sprinkle the berries lightly with sugar (or leave the sugar out, if you wish), and add a drop or two of vinegar. Wash a few sage leaves and cut them into a chiffonade. Get a load of these gnarly tubers. Gastropunk calls them ?the most anarchic of vegetables.? Jerusalem artichokes, also called sunchokes or topinambours, are in season just now. I hadn?t cooked any of these for about twenty years, when they had a brief burst of trendiness. I didn?t see what the big deal was at back then, no more could I discern any resemblance whatsoever to artichokes, but this time, I think I get it. I prepared them as I would artichokes?steamed with vinaigrette?and they had some real artichoky verve. Jerusalem artichokes vinaigrette 2 pounds Jerusalem artichokes (or as many as you have) ½ cup balsamic vinegar 1 ½ cups olive oil ½ bunch dill 2 or 3 cloves garlic salt Peel the Jerusalem artichokes. I just heard this show on the radio about the secret culinary lives of rock stars. I have not yet seen the book, but it sounds like it may be more interesting than your typical celebrity-compilation cookbook (and even the most wretched of these have amazing gems--that might be something to examine some day). Here it is! I came dangerously close to not cooking my headily fragrant Seville orange. I had never made marmalade or any kind of preserves, and I wasn?t ready to bite into a whole new area of cookery, especially not one that involved straining anything through muslin, but then I read this comment from Lindy: We never see Seville oranges in Pittsburgh. This happens every time you go to Queen s. Someone will just walk up and hand you a rare and exquisite fruit you have been trying to find for years. Maybe we call this place Queens because it is where all the most deeply-felt wishes of our inner princesses are answered. The biggest difference in preparation between these guys and regular matzo balls is that you will make the batter just a tiny bit stiffer?matzo will continue to absorb moisture as the batter sits, but nuts do not. You could probably make this with all walnuts or all hemp seeds. I will be trying some other nut-combinations once the holiday begins. These kneydlekh are different from matzo balls, but they are satisfyingly toothy nonetheless. I will certainly be making them again, and I eat wheat all the time. Wednesday I went to the Holon supermarket on King?s Highway in Brooklyn, where I found some teeny-tiny little ½-ounce jars of kosher-for-Passover rose water extract and orange flower water extract. The grocer explained that I should use just a drop of extract in a recipe that would call for a tablespoon of rose water. I have been hoping to find something like this for years. If I were to assess the effectiveness of my shopping trips on an ounce-per-mile basis, then today?s trip would be a very inefficient trip indeed. On a coolness-per-mile basis, however, I think I did pretty well. I first learned about Holon and the other grocery stores on King?s Highway from Ilana Goldberg?s amazing and very funny short movie Makolet. If your library has a copy and you have twenty-four minutes, you don?t want to miss what may be my very favorite food movie in the world.I am planning to use orange flower water extract in an orange almond cake, and the rose in a carrot and pistachio halva.

Every year at about this time I try to use up my last bits of flour and other ingredients in an improvised bread or pastry. It?s sometimes hard to sense the perfect moment to empty the bags?if you act too soon you can be caught without a tablespoon of flour for your roux; if you wait too long, well, you really don?t want to wait too long. Since I had already cooked all my macaroni this year, I didn?t anticipate needing any roux in the next two weeks. Ingredients needing to move were: thirteen ounces of all-purpose flour, six ounces of egg whites, and about two cups each dark chocolate and orange buttercream. Last week The Girl of the Limberlost and I enjoyed some wonderfully puckery, tamarind-infused hot and sour soup at the Lan Café on east 6th Street. I am very excited about this soup, and normally I would be carrying on about the okra (soup with okra! Hot diggity!), but another vegetable neither one of us had ever seen before stole the show. The crescent-shaped slices had a crisp-tender, webby, honeycomb-like texture, and pale green skin. TGOTL thought it might be a variety of eggplant, and I was imagining it might be in the gourd family. Our waiter told us the vegetable is called ?Môm? (sounds like ?mome,? as in ?mome raths?), and he very kindly agreed to bring one out from the kitchen, after much urgent beseeching on my part (you see, I do this all for you, my heart?s cherished readers).
