Salam Salami
2007-03-09 22:45:00
In this performance, a young man sings about how he is repeatedly frustrated in his attempts to enjoy a sandwich in peace. The components of the sandwich in question are hummus and salami. That sounded dreadful to me, and I thought the ingredients may have been chosen for the sake of the assonance, but I am told this combination is fairly popular in Israel. These unexpected hybrids are likely to emerge at culinary crossroads; sometimes they are better than anything from either of the ?parent? cuisines.I notice the Hebrew word for sandwich turns out to be "sandwich."

White Poppy Seed Filling for Homentashn
2007-03-07 05:08:00
Well, you are probably not planning to make homentashn in the immediate future, but you can keep this filling in mind for next year, or you can use it to fill something like a poppy seed strudl, or you could mix it into some muffin batter. I admit I made white poppy seed filling the first time only because I thought it would be so cool that no one else made them, or could guess what they are, but I have become very fond of the particular mildly bitter flavor of white poppy seeds, and I just can?t keep them to myself. White poppy seeds are a bit smaller and softer than the blue-black variety, so you can feel free to use them without grinding them first. I first came across white poppy seeds in Indian cookery. You can use them in sweets like this White poppy seed halwa or mysore gasagase payasa (Pop py seed porridge), or combine them with spiced potatoes for this breathtaking aloo posto. White Poppy Seed Fill ing for Home ntashn7 ounces (200 g, about 1 ½ cups) white poppy seeds...

I?ve Got a Loverly Coconut
2007-02-21 04:19:00
I usually make lots of coco-centric things for Peysekh, and after last year I resolved I would never again buy another package of conventionally-grown, sulfite-drenched coconut that had probably been shredded during the reign of the Empress Maria Theresa. That was about fifteen minutes ago, or so it seems, and Peysekh is already roaring towards us like an elephant on roller skates coming down that hill in San Francisco, you know, the one where they film the chase scenes in all the movies. It seemed like a good idea to crack open a practice-coconut so I wouldn?t find myself five minutes before the seder desperately banging my skull against an impervious coconut shell. It turns out that coconut smashing is not as nearly as difficult as I feared, and fresh coconut is as much better than the other kind as every reliable source has told you already. How to Crack a Coco nut I pierced the three eyes on the round end of the nut by hammering screws into them, and then unscrewing the...

Welcome Weekend Herb Blogging
2007-02-19 05:32:00
I am honored to begin the week of shabes trume, month of Oder (Adar) and the Chinese Lunar New Year by hosting Week end Herb Blog ging , an event created by Kalyn to explore and rejoice in the many leafy layers of the plant world. I hope that some of the herbal offerings herein will provide the needed oomph to start this very important week, month, and year. Isaiah at Gluten-Free By the Bay grows her own rosemary and adapted a recipe for rosemary polenta triangles to make it vegetarian, kosher, and wheat-free. They also look irresistible. Helene, from Neues aus der Küche, in Landau, Germany, made a dip with two of my favorite ingredients: parsnip and parsley. She provides as well a useful bilingual overview of parsnipology. Katerina, at Daily Unadventures in Cooking was hugely successful with this rich and salty rosemary feta spread.Ruth from Once Upon a Feast, in Toronto, Canada, starts us off with an herb-infused menu designed for dieters, but appealing to anyone with it...

Longevity Radishes
2007-02-04 06:24:00
We don?t have too many choices at the farmers? market these days, but we still have some of these gorgeous pink inside-out radishes (also known as bleeding-heart radishes and watermelon radishes). I couldn?t wait to shred one up with endlessly entrancing Cook-Help (joyful beautiful sharp-edged!). Are these the living end? So, I put some in a salad, of course, but these guys were just demanding a recipe of their very own. I thought if I could cook them just a tiny bit, and matched them up with a sauce, they could be delicious and amusing. Not a substitute for pasta, you understand, but something that is somehow about pasta. Sesame sauce is my first try for these. I happened to have some ground cashews with roasted hemp seeds on hand, and all the elements of this dish were very happy together, but it should be just fine with only sesame. Radish Linguine with Spicy Sesame Sauce 1 pound of radishes, shredded (I used bleeding-hearts, but daikon should be wonderful) 3 cloves g...

Every Single Thing I Ate This Week (Part I)
2006-11-28 03:27:00
Actually, this photo-mosaic shows every single thing I ate halfway through last Wednesday. I couldn't get everything into the picture because of insufficient geekiness on my part. If all goes well, I hope to post the complete photographic record shortly. This has been an enormously instructive exercise, and I am grateful to Sam for getting me started. I learned a great deal this week, including the extent to which what I eat differs from the ideal I imagine. The most striking example of this is the soy shake with which I began almost every day. My official position is that one should eat real food that looks like what it really is. My most cherished cookbook is The Unplugged Kitchen by Viana La Place, which advocates a culinary repertoire prepared entirely by hand. Nevertheless, I find it very difficult to face the great bounding, prancing, snorting bull that is the morning without turning on the blender to grind up my hemp seed and soy milk drink. I'm also a little embar...

The First Thing I Ate This Week
2006-11-21 03:36:00
This week I will be joining the remarkable Sam of Becks&Posh and an international cohort in a project that combines blogging and conceptual art. I will undertake to photograph everything I eat from now until Sunday night. After only one day I am already a little puzzled at the extent to which my blog diverges from what I really eat. You would have thought I already knew what I really eat, wouldn't you? I am beginning to believe that if you eat something and then don't blog about it, there is a sense in which you haven't really eaten it. Today the first thing I ate was a shake made with soymilk and hempseeds. Yes, I know; I'm a nut. Tune in Monday and see the whole awful truth. Soy Shake 2 cups soymilk (I use Westsoy unsweetened soymilk) 2 tablespoons toasted hulled hempseeds pinch salt Combine the soymilk, seeds, and salt in a blender and blend at high speed for a few minutes, or grind the seeds in a mill or processor, add them to the soymilk along with the salt a...

Napa Cabbage and Hempseed Kofta
2006-08-14 19:10:00
Need some hemp recipes? I?ll make some hemp recipes. Hemp seeds turn up in traditional Lithuanian cooking, and in some older documents from Poland. They seem most likely to have been used during lent and times of scarcity. I tried this hemp milk recipe, which makes a nice enough milk, and I probably won?t be able to resist the carrot coffee on the same page. I just love this sentence: ?Store dried carrots in a tightly covered container, so that they are always at hand when desire for carrot coffee arises.? I was tempted just now to write something skeptical about the likelihood of a desire for carrot coffee arising, but I know as soon as I did that I would be haunted by a desire for carrot coffee day and night. You know how that always happens. Most of the hemp seed recipes I was able to find on the web are connected with hemp advocacy sites and really, the less said about all that the better. As Kenny Shopsin says in a recent documentary about his restaurant, ?I?m not saying I...
