Crunchy Gluten-Free "Bread" Crumbs

When I first went gluten-free, I missed the something extra that a buttered bread crumb topping adds to a home cooked recipe [especially comfort food]. In fact, one of my favorite simple suppers when I'm too tired to cook is spaghetti tossed in extra virgin olive oil, minced garlic, red pepper flakes and toasted bread crumbs.So, after I found a decent [even wonderful] gluten-free pasta [Tinkyada Pasta Joy] I tried making buttered herbed crumbs for this favorite dish. First I tried using failed gluten-free breads [you know, those sawdust textured doorstops that plunk out of the brand new replacement bread pan and land on the counter with a thud] but the crumbs were too either too gritty or too gummy. They had absolutely no character. Chili Lasagna This is a great make ahead recipe for holidays, picnics, pot lucks, or tailgating. Change up flavors with various beans instead of chili, and vary the veggies, or cheese, to taste. Roasted vegetables. They are a favorite staple at our house - and uber-easy. We make them at least twice a week. It has become a convivial ritual. My husband and I join forces in the kitchen and cut up heaps of vegetables, sipping wine and catching up on each other's day.
