I finally made a log of seitan o'greatness, so I crossed one off from my 30 before 30 list. As usual, I didn't really read the entire recipe first, so I used ketchup instead of tomato paste and soy sauce instead of tamari because I didn't have either. It worked out just fine. I was pretty bummed when I found out that I have to bake it for 90 minutes, though. It's like that no-knead bread - it's good, but it made me feel guilty.Mi marido and his parents seemed to enjoy it as well on a pizza I baked. Now, what I don't know is what to do with the rest of seitan o'greatness... Mi marido's parents are visiting, so I wanted to make something familiar to them. I've made a batch of lasagna, a pizza, burritos, and pasta puttanesca salad so far. Based on a recipe from Fatfree Vegan Kitchen, I made some veggie quiche. This was my first time to make a vegan quiche, and it was fabulous! Oh, and I enjoyed a slice with some tomato sauce and a glass of pale ale :)*Veggie Quiche* makes 1 pie[ingredients]- veggies..... 1 tbs olive oil..... 1 clove garlic, minced..... 1/2 red onion, minced..... 1 cup mushroom, sliced..... 1 cup baby spinach..... 1 crown broccoli, chopped- quiche mix..... 1 package silken tofu, drained..... 1/4 cup soy milk..... 2 tbs nutritional yeast..... 1 tbs arrowroot starch..... 1 tbs tahini..... 1/4 tsp onion powder..... 1/4 tsp turmeric..... 1/4 tsp salt- 1 pie shell[directions]- preheat oven to 350F- saute the veggie- put the quiche mix through a food processor- combine veggie and quiche mix well- pour it into a pie shell- bake for 25 minutes

I really didn't have much in the fridge, and this is what I came up with. It turned out to be a huge hit! I will definitely try this again with other veggies, but some red onions, red cabbages and carrots were all I had that time. I got some black rice the last time around, so I played with it a little. I forgot to pay attention to the stir fry sauce for this dish, so I might be a bit off with the measurements. Oh, and I love tempeh especially when I lightly fry them. Bread baking is my newfound love in the kitchen. Since I became comfortable with yeast, I began to think that baking bread is easy. This one turned out way better than I anticipated, which made me want to make more bread :)*Focaccia con le Olive * makes 1 focaccia[ingredients]- 3 cups flour- 1 cup water- 1 tsp sugar- 1 tsp salt- 1 tsp yeast, activated- toppings..... 10 olives, sliced..... 2 tsp rosemary..... 1 tbs olive oil to coat..... salt to taste[ingredients]- mix the ingredients well- knead the dough for 5 minutes or until it becomes elastic- rest the dough for 1 hour or until doubled- flatten the dough into a disk and place it in a pizza pan- coat with olive oil and rest the dough for 30 minutes or until doubled- make indentations with a finger tips- top the dough with place some olives and rosemary- rest the dough for 30 minutes or until doubled- preheat oven to 450F- sprinkle salt and bake it for 15 minutes or until golden- serve warm

I finally got around to updating this tamale recipe from my first tamalada on N.Y.E.! I had so much fun with my ladies, and these were very tasty :) Mi querido K taught me how to make these, and I though it was interesting that she mixed beans with the dough instead of folding them in. Next time I will try grilled peppers with red chili sauce... Corns with green chili sauce sounds good, too!*Black Bean Tamale s* makes 1 dozen[ingredients]- 2 cups masa harina- 2 cups cooked black beans..... simmered in 1 cup green chili sauce- 1 cup vegetable stock- 1/2 cup soy margarine- 1 tsp baking powder- 1 tsp salt- 1 tsp cumin- 12 fresh corn husks[directions]- make masa by mixing dry ingredients and vegetable stock- whisk soy margarine until very soft- slowly incorporate masa into margarine (1 golf ball size dough at a time)- add in black beans and divide dough into 12- wrap dough in corn husks- steam them for 30 minutes- enjoy with chili sauce :)

I've never had a shepard's pie, so I thought I make a vegan version of it. Mi querido "muffin" named the dish "a gardener's pie" when I brought it to lunch the other day. He's born in the UK, and I really enjoy it when he talks about anything British. He told me that shepard's pie is also known as a poor man's pie, and mine looked like I was a gardener than a poor farmer. No-Knead Bread

One of my 30 before 30 includes my plan to become a better baker and (hopefully) stop buying bread. After Celine posted her whole wheat no-knead bread, I decided to give no-knead bread a try. Based on this recipe (I recall thinking, "it's nice that I don't have to knead the dough, but I'm not sure about the whole resting time and baking bits"), I made my first no-knead bread.I like my recipe quick, easy, & simple (not to mention healthy), so I modified the recipe and cut corners. By the time the dough was in the pot, I was pretty sure I won't make this again. I thought using the oven for 80 minutes just to bake a single bread was too much. The bread justified it, though (at least this time around). I will try other bread recipes to find ones I like, but I could see myself coming back to this one. After all, it was crunch on the outside and soft, moist, and a bit chewy on the inside - just the way I like my bread. If there is next time, I will make with 100% whole wheat.*No-Knead...

I've been increasingly busier at work, so I started making a few dishes for lunch on the weekends. This one is perfect because it keeps and freezes well. I froze a block of tofu and thawed for a firmer texture, but drained firm tofu will work, too. I'm really picky about cookies. Russian tea cakes are my favorite, and they certainly make me watch how many I eat (they are really rich). My version is somewhere between Mexican wedding cookies and Russian tea cakes. I can certainly omit the powder sugar, but they look pretty for a special occasion. They go well with a shot of espresso.*Russian Tea Cakes * makes 2 dosens[ingredients]- 2 cups flour- 1 cup soy margarine- 1 cup walnuts, chopped- 1/4 cup powdered sugar- 1 tsp vanilla extract- 1/4 tsp salt- 1/4 cup powdered sugar for coating[Directions]- preheat the oven @ 350F- mix all the ingredients and shape the dough- bake for 10 minutes- coat the cookies with powdered sugar (or dust some)

Since I heard that my grandmother-in-law mixes lemon juice and milk to substitute butter milk, I started adding apple cider vinegar to soy milk for pancakes. I am definitely more of a scone person, but these pancakes are moist, fluffy, and slightly sweet from riped bananas and the maple extract. I also use this basic recipe to make blueberry pancakes (with vanilla extract instead of maple extract), and I enjoy them, too. I like banana pancakes because mi marido sings that Jack Johnson song whenever I do. Salad is always a good choice. I like pasta salad, especially with pesto. I like making rice salad with a similar recipe, too! (I usually add sliced green onions when I do.) I've never seen whole grain orzo, by the way. I just learn that my friend avoids non-whole-grain pasta (probably not a bad idea), so I am thinking about what to make for a "Italian dinner and funny movies" night. Zucchini Cake

This is the fourth recipe using zucchinis in baking since the beginning of this blog (the first was muffins, the second was bread, and the third was bread pudding). I baked it in a 9x13 pan this time, and it worked better than ever. I thought about frosting like carrot cakes, but it's sweet and moist enough without it. I think I'm done adjusting the recipe, and I will use a 9x13 pan instead of 2 bread pans from now on. Bite size cakes are more portable than slices of bread and easier to share with others at coffee breaks :) I might still try using silken tofu, but I liked how soy yogurt moistened the cake. Oh, and I might replace 1/2 tsp cinnamon with nutmeg next time.
