It's been almost a week since I came back from Hawaii, and I finally got back into the routine. It was nice to have a 3-day weekend to catch up with things at work and home!I will visit Texas next weekend for a wedding, and I'm getting excited! I haven't decided which dress to wear: a black pleated chiffon dress, or a green spaghetti strap dress. The wedding party seems rather proper, but it's an outdoor wedding... Maybe I will take both with me... Our colleague wanted to share a beautiful bottle of  shaouiu (Chinese whisky), so mi marido and I hosted a small dinner party. Because the centerpiece was the shaouju, I made several of typical Japanese bar food like rice balls, pickled veggies, cucumber sticks with spicy miso dip, savory pancakes, and edamame salad (which was the best I can do to pair with this particular drink I hadn't had).I wanted to make something with a package of the high protein organic tofu from Trader Joe's, so here it is. I will definitely make these again :) Oh and I made some tofu salad to stuff pita pockets with tofu that I scooped out, which I thought was brilliant. On a different note, a kind acquaintance of mi marido's gave us an indoor composter this morning, and I am excited about wasting less resources :) It's a small change, but it's a step forward right? Hi! I'm back (again)! It's been a few weeks, and I have a couple of awesome stories to share.1) My very close friend from high school is visiting me in 2 weeks, so I'm excited! My streak for cupcake making continues. I find it fun to develop my own recipes rather than following someone's. I also like the fact that mines are low in sugar and fat. I still haven't found a way to lighten up the frosting, though...In the Japanese sweets world, Matcha is almost always companied by adzuki. (This combination is called Uji-Kintoki in Japanese.) When I saw some matcha cupcakes on Flickr, I got inspired to make this one. I initially thought about using melon extract, but I decided to use almond extract instead. Starbucks uses melon syrup for its green tea latte, so I think that would also work. I'm sure vanilla extract would work fine, but I think almond extract accentuated the matcha flavor. If you are like me and enjoy sugar-free deserts, I think the adzuki filling is sweet enough to enjoy this cupcake. Our friend's friend is very interested in opening a microbrewery, so they visited us to see how beer is made. Mi mario's latest brew XXX Stout was on tap, so I made a batch of chocolate stout cupcakes. My recipe doesn't have any sugar, but unless you love the bitterness of stout and of unsweetend cocoa, you might want to consider adding 1/2 ~ 1 cup of sugar. I find the frosting sweet enough to offset the bitterness, but I'm not a sweets lover. Also, I realized that the soy milk and the soy yogurt I used for carrot cupcakes contained fat. I'm sorry to mislabeled them as non-fat :(We brewed a batch of Belgian Triple, which is my favorite. Mi marido's brews rock, and it's always vegan friendly. So detoxing time has come again. When I go on a detoxing diet, I follow Ann Louise Gittleman's. I think mi marido saw her article in Men's Magazine years back, so we tried. Now it's my routine to go on this diet once a year. Mi marido finds it challenging to follow because a) it lasts for 11 days and b) it excludes caffein and alcohol. For me, the more challenging part is to make sure I have enough "detoxing agents" every day. I haven't kept any of my past detoxing recipes, so I've decided to post them this time. Basically, this is a very selfish post for me to remember what I made. Although, both dishes were very easy and satisfying. This was technically my first time to make cupcakes. Mi marido fancied some carrot cakes before he left for a business trip, so here they were. I usually use ramekins for muffins, but I used silicon cups this time. They worked wonderfully :) It's a nice way to reduce waste, one cupcake at a time. I love eggplants. Most of stuffed eggplants use halved eggplants as shells, but I like them this way. I added lentils this time, but you can leave them out for a lighter dish. Yes - spring has come to Vegas, which means it's about 70F during the day and is pretty windy in the mornings and in the evenings (you can find a photo of my new cherry tree here). I resumed running over the weekend and quickly realized that my indoor exercises (i.e. jump rope, biking, and weight lifting) has nothing to do with my ability to run. I was advised against running from numerous sources due to my bad back, so I am seriously considering switching to biking outside. I will start looking for a bike this weekend.Other than that, not much really is new. Does it look familiar? This time, I made a savory version. The winter has come to Vegas. I got this nice iron cast pot from my sister-in-law, so I decided to make a traditional Japanese hot pot. There isn't much of a recipe for this, really. Mi marido and I spent several days in Flagstaff, AZ. I had my camera with me, but I completely failed to take photos of delicious vegan delights in restaurants :( I can tell you that there were a number of places that I can just go and get meals or pastries with my non-veggie friends without any hustles. There are 3 breweries I like, and one even makes prickly pear vodka.We went snow shoeing one afternoon, and we had an absolutely wonderful time. Our friends Mr.pants and Shelio made us a beautiful and delicious Christmas dinner: twice baked potatoes and stuffed eggplants. My plate was empty long before I remembered to take photos... It was so very sweet of them to make make my portion separate and vegan.The photo above is of a Spanish night's dinner a while ago: empanadillas with spinach and pinenuts, peppers stuffed with veggies and rice, and paella cakes with salsa. I hope you all had a nice holiday weekend! Both mi marido and I have been traveling more for work lately, so it was very nice to have a few days off to enjoy each other's company. I love pasta in general, but I love pasta alla puttanesca the best. This dish is so easy that I have all the ingredients in my pantry at all time. It barely takes 10 minutes, so it's perfect for dinner on days I get home late. Of course, it is more enjoyable with a glass of wheat beer, golden ale, and/or blond ale. My colleague told me his favorite Japanese market in town, so I decided to check it out. I don't frequent speciality grocery stores because I tend to spend more than I intend. I picked up a package of dried hijiki, sun dries sweet potatoes (a regional goody of my home town), fried tofu pouches, Japanese basil, frozen and sliced lotus roots, soba, and somen. I think I did good.With some of goodies I got, I made some traditional Japanese food. One thing about traditional Japanese food is that it takes time to make them even when ingredients and steps are very simple. There's something very meditating about making Japanese food. I wonder if it's because I'm Japanese or because I enjoy my time with food I'm about to receive in the kitchen. It's always nice to have some side dishes to make simple meals feasts. This is a nice side dish to a Mexican delight. I usually have some refried beans, too. My favorite is enchiladas, but to be honest with some avocados and corn tortillas I'm pretty happy... I'm not a big fan of peanut butter. When I was little, peanut cream (a similar idea to nutella) was a staple at home, and I thought peanut butter was something like it. Once I found out that peanut butter was nothing like peanut cream by accident, it took until last summer for me to warm up to it (have you ever experienced that discomfort of tasting something you didn't expect? Based on the recipe Courtney shared with me, I made seitan again and tried them in three ways. I didn't grow up with BBQ sauce, so I wasn't particularly impressed with seitan ribs. Wasabi teriyaki seitan and tatsuta fries reminded me of my mom's home cooking, so that was both very nice and Japanese. Between grilled and simmered seitan, I liked a simmered variation better. Here's the promised dessert sushi! It's inspired by mi querido mr.pants' dessert nigiri sushi with chopped kiwi fruits as "wasabi" and brown sugar syrup as "soy sauce". They might look tiny and light, but I must warn you how filling they are... Next time around, I will use grated coconuts instead to make them look more like inside out rolls :)*Dessert Sushi * serves 4[ingredients]- 1 cup glutinous rice- 2 cups coconut milk (1 can)- 1 tbs maple syrup- 1 mango, julianed- 1/2 cup strawberries, chopped- 1.4 cup shredded coconuts, toasted[directions]- simmer rice with coconut milk and maple syrup for 25 minutes- steam rice for 25 minutes and set aside to cool- roll sushi, coat with toasted coconuts, and cut*Dessert Sushi Tempura* makes 2 dozens[ingredients]- 1 batch of dessert sushi- 1 cup your favorite pancake batter- oil for deep frying[directions]- coat dessert sushi with pancake batter- deep fry them

I didn't want to waste my bier bread, so I made some french toast one morning. I'm not a big fan of sweet breakfast, but the bitter-sweet bier bread made it perfect in my opinion. It was in the bread, so it's not considered as bier consumption before noon - or is it? By the way, I got to attend a special screening of "The 11th Hour" - have you seen it?*French Toasted Bier Bread * serves 4[ingredients]- 1 loaf of bier bread- 1 cup soy milk- 1 tbs soy flour- 1 tbs soy margarine[directions]- preheat a griddle with medium heat- slice bier bread- mix soy milk and soy flour- lightly dip sliced bier bread- coat the griddle with soy margarine- toast each side of the bread for a few minutes- enjoy with some maple syrup

First of all, thank you so much for your seitan ideas. I shared some with my veggie friend at work, and used the rest in tofu scramble, enchilada, pasta sauce, and sandwich. I even made some sushi with it, too! Oh, how I love sushi! I should make some dessert sushi (coconut rice with fruits like mangos and strawberries) soon!*Hawaiian Sushi * serves 2[ingredients]- sushi rice..... 1/2 cup sushi rice..... 3/4 cup water..... 1 tbs sushi rice vinegar..... 1/2 tsp sugar- 1 avocado, sliced- 1/2 cup seitan, julianed- 1/2 cup broccoli sprouts- 2 nori sheets- teriyaki sauce for dipping[directions]- make sushi rice..... cook rice (medium heat for 15 minutes)..... make vinegar mix by combining sugar and rice vinegar..... pour vinegar mix on rice and mix well..... set aside to cool (DO NOT REFRIGERATE!)- spread the cooled rice on the nori- place seitan, avocado, and sprouts and roll- cut the roll into bite size and enjoy with teriyaki sauce

Our latest brew ISquarePA (India Imperial Pale Ale - Rogue Brew inspired) is ready, so I decided to make a bread for a pre open tap party. This one with our home brew turned out awesome! I would say that darker ales like stout and porter are also great for the recipe, but hoppie beers like IPA definitely gives a kick to it. Whatever you choose, I just hope you go for a bottle of beer not a can.*Bier Bread * makes 1 loaf[ingredients]- 2 cups wheat flour- 1 cup flour- 1 1/2 cup beer (12 oz)-1/4 cup sugar- 3 tsp baking powder- 1 tsp salt[directions]- preheat oven to 375F- mix the ingredients well- pour it into a greased loaf pan- bake for 55 minutes
