This is a breakfast dish in the southern part of India.Quantity and Ingredient1 Cup Cream of wheat1 Onion cut lengthwise1 Teaspoon Salt1/4 Teaspoon Mustard seeds1/8 Teaspoon Urad dal1 Cashew-nut1/4 Lemon1/2 Cup Peas1 clove Garlic1/10" piece Ginger1 Green chili cut into small pieces.MethodFry cream of wheat on a dry pan for 5 minutes and set aside.Put two tablespoons of oil in a pan and heat.Add mustard seeds, Urad dal, cashewnut, and garlic clove. Wait till mustard seeds stop splitting.Add the onion, chili, and ginger and fry till the onion turns brown.Add cream of wheat and fry for 3-5 minutes.Add salt and peas.Add two cups of boiling water and stir for 2 minutes. (Switch off the stove as soon as the water is poured.)Cover the vessel for 4 minutes. Add lime if needed.

Quantity and Ingredient1 Medium Onion2 Cups Potato buds1 And 1/2 cup Peas and carrots2 Big ones Green chilies1 Teaspoon Lemon juice1 Cup Gram flour1/2 Tea spoon Mustard seed pinch Turmeric1/2 Teaspoon Baking powder1/4" Piece Ginger1 Small bunch Coriander leaves2 Teaspoons SaltOil as per useFilling Method:Mix potato buds and 1/2 teaspoon of salt with 1 cup of hot water.Finely chop ginger, chilies, coriander leaves, and onion.Heat oil (about 5 Tbsp) and add mustard seeds.Add chopped ingredients and fry until onions are brown.Add carrots, peas, turmeric and 1 tsp of salt and cook on low heat for about 10 minutes.Add potato (now mashed) and fry for 5 minutes.Remove from heat, add lemon juice and let cool.Batter Method:Combine Gram flour, 3 Tbsp of oil, 3/4 cup water, 1/2 tsp salt, the baking powder and mix thoroughlyAfter the batter is prepared, make small balls out of the filling and roll them in the batter. Next fry it in hot oil. You will get about 20-30 small bondas.

Quantity and Ingredient1 c Urad or Mah dal1" piece Ginger12 Cloves GarlicWaterTo taste Salt2-3 Tablespoons Ghee (Can be replaced by butter)To taste Green chili (optional)To taste Garam MasalaFrac14 t TurmericMethodClean, wash and add the dal to boiling water.Add turmeric, salt, half of the finely chopped ginger, garlic and cook on medium heat for 2-3 hours or pressure cook at 15psi for 1/2 hour.Uncover, cook further in same pan on low heat for 1/2 hour, stir and mash every now and then until a creamy consistency is achieved.Heat the Ghee, add remaining ginger, stir, add sliced onions, chili, and fry until golden brown.Add cumin or coriander (optional). Pour over dal just before serving.

Quantity and Ingredient8 oz. Garbanzo beansTo taste Green chili (optional)12 cloves Garlic2" piece GingerTo taste Pepper1 large Cardamom6 Cloves1" Cinnamon stickTo taste SaltPaprika4 oz. OilMango powder3 OnionsDried pomegranate seeds4 TomatoesMethodClean, wash and soak the beans overnight.Boil them in the same water with salt, 1 small finely chopped onion, 4 cloves garlic, 4 large cardamom, a 1" piece of ginger and 6 cloves.Simmer in pan about an hour or until tender, or pressure cook for 7 minutes at 15 psi.Heat oil. Fry thinly sliced remaining onions and cloves of garlic. Cook until mixture browns and dries up. Add finely chopped tomatoes and cook 4-5 minutes more.Add the beans and cook for 10 minutes more. Add the mango powder and pomegranate seeds, grated ginger and simmer over low heat for 15-20 minutes.Before serving, pour 1 oz. (2 T) sizzling Ghee over the beans.

Whipped cream(Cool whip)1 can Mango pulp (Alphonso)It is confusing to describe quantities as one can. Well, let me describe the sizes. The Mango pulp can is about 6" high and 3" in diameter. The condensed milk can is about 3" high and about 2.5 " in diameter and should be available in your neighbourhood grocery store.MethodMix all of the pulp, condensed milk and whipped cream in a bowl.Put in the freezer for about 8 hours.

Quantity and Ingredient1 L Homogenized Milk2 tsp White Vinegar1.5 C Sugar3 C WaterMethodBring the milk to a boil and add vinegar to the boiling milk to separate the whey.Throw away the liquid part by sifting the stuff onto a muslin cloth.Pour some cold water over the curd to cool and wash it. Discard the water and hang the cloth for 15-20 minutes to let the excess water drip off.Put the curd in a food processor or blender and blend at high speed to get a smooth consistency. You may add just a little (1 tsp or so) water while blending, if the curd is too dry and will not blend. Carro t s1/2 gal Milk2 c Sugar2 c Carnation milk powder1 c OilNuts for TasteMethodClean and grate the carrots.Heat milk to boiling and add the carrots.Cook until liquid is almost gone, stirring to prevent sticking and burning for 3 to 4 hours.Add oil and cook more, stirring often, to roast the carrots well (about 1/2 hour).Add the powdered milk and sugar and cook until all the liquid is gone and the mass does not stick to the sides.Add the nuts and raisins and turn off the heat.Pour in a serving dish and serve warm or cold. This sours the milk.Strain through a muslin cloth or a double layer of cheese cloth and squeeze out the whey (liquid).Hang to drip dry for 2-3 hours or overnight. Then lie out the cheese in a rectangle in a tray and place a weight (more the better, but at least 10 lbs) on it for 3/4 hour.Cut it into whatever shape you like.
