1 sheet phyllo pastry * 2 cups rice * 2 medium sized onions * 25-30 g butter or 4-5 tbsp olive oil * 1 tbsp dried currants * 1/2 cup sultana raisins * 200 g chicken chest (boiled and cut in small pieces) * 2 tbsp pine-nuts * 1 tsp allspice * salt * 4 cups hot water * 2 tbsp olive oilPlace the rice in a bowl with hot water and salt for 50-60 minutes. Place the dried currants and the sultana raisins in hot water for 30 minutes. Mince the onion and sauté with the olive oil or butter for 3-4 minutes. Filter the rice, add it to the onion and fry for 5-6 minutes stirring with a wood spoon. Add the chicken, boiled and cut in pieces, the sultana raisins and the dried currants (after filtering the water), the pine-nuts, the allspice, the salt and four cups of hot water. 1 kg feta cheese * 2 cups water * 2 coffee cups corn starch * 2 cups sugar * 1 cup crumbled pistachiosPut the feta cheese in cold water to get soft. Then, filter very well and crumble with a fork. Dissolve the corn starch in a cup of water. Bring to boil the remaining water and the sugar. Add the corn starch with the water and let it cook over low fire for 10 minutes. After that time, add the cheese and go on coking for 15 minutes more. While the halva is still warm, take small portions in the amount of a walnut and make balls with your hands. Sprinkle the halva balls with crumbled pistachios. Serve warm or cold.

Makes 4 servings500 g ground meat * 1 onion * 1 egg * 100 g old bread * 2 potatoes * 3 tomatoes * 4-5 green chili peppers * salt * black pepperMix well the minced onion with the ground meat, the crumbled bread, the egg, the salt and the black pepper. Take small amounts of the mixture and give them a cylindrical shape with your hands.Take the shell to the potatoes and cut them into slices, in the style of apple slices. Absorb the water with a paper towel. Pour some oil in a frying pan and fry the potatoes. Also fry the köfte in some olive oil. Place the potatoes in an oven tray. Cut the chili peppers in 2-3 slices and put them also in the tray. Place the köfte on the potatoes. Make tomato pure and add to it 1-2 tbsp of water. Separate portions on the amount of a walnut and give an oval shape to each one. Bring to boil water with salt. Put the croquettes in the boiling water for 1-2 minutes. Place the croquettes in a serving plate.Prepare the sauce. Mix the yogurt with the minced garlic. Bring to low heat the margarine with the chili pepper flakes. Add the flour slowly and knead well. Separate the dough in four portions, cover with a cloth and let the dough rest for 20 minutes. Then open the dough, using a rolling pin, until you get the size of a normal meal plate. After opening, divide each portion into two. Open again each one but now divide each portion of dough in four. Roll each portion with your hands and connect the extremities giving the shape of rings. Brush each ring with egg whites and then sprinkle with sesame. Bake on a 175º preheated oven for 25-30 minutes, until they become light brown.

Calf Stew with Couscous (Kuskuslu Sebzeli Et Yahnisi)

For 1 serving2 tbsp olive oil * 150 g calf meat * 1 carrot * 1/2 onion * 1 tsp chili flakes * 1 garlic clove * 1 tsp cumin * 1 tsp cinnamon * 1 tsp powder saffron * 50 g boiled chickpeas * salt * black pepperFor the sauce:50 ml olive oil * 1 garlic clove * 3 red chili peppers * 50 g nutsFor the couscous:1 cup couscous * 2 cups water * saltPour the olive oil on a pan. Add the chopped onion, the minced garlic and the meat cut into small cubes. Sauté for some minutes on low heat. Add the carrot cut into small cubes, the salt and all the spices. Continue sautéing for 2 minutes more. Then, add 2 cups of water and cook on low fire until the meat is soft. Add the boiled chickpeas, mix well and turn the fire off. Prepare the sauce. Place all the ingredients in the mixer. Boil the couscous and then sauté a little on low heat. Serve the couscous covered with the meat and the sauce.

250 g butter * 2 cups flour * 1 cup milk * 2 cups sugar * 1 cup water * 1 cup crumbled nuts * 4-5 nuts to garnishMelt the butter. Add the flour and cook on medium heat stirring continuously with a wood spoon. Add the crumbled nuts and go on stirring continuously. Add the sugar and the milk. Stir continuously for more 5 minutes and turn the heat off. Place the helva on a serving plate and let it cool down. When it is cold cut into squares and decorate each square with a nut.

Ricotta Pudding (Ho?merim)

1 l milk * 1 1/2 tbsp flour * 1 egg * 4 cups sugar * 250 g wheat semolina * 1/2 kg ricotta cheese without salt * 150 g almonds * 1 tbsp oilPut the milk on fire and add the flour, the beaten egg, the sugar, the semolina and the crumbled cheese and stir continuously with a wood spoon until the mixture gets thick. Let it boil for 1-2 minutes, take from the fire and place on a serving plate.Place the almonds in hot water for 30 minutes and peel them. Sauté the peeled almonds in the oil until they become brown. Place them on a paper towel to loose the excess of oil. Garnish thesweet with the almonds and put in the fridge for 1 hour. Serve cold. In Turkey, this sweet is made with lor cheese which is very similar to ricotta.
