2009-12-02 18:18:00
Through December, I'll be posting a few recipes based around Christmas leftovers. Coming-up, there's a nice Turkey Filo Pie (a kind of pastilla), a Turkey and Ham Pie with a silky smooth veloute and a couple of soups.

Something to Grouse About
2009-10-20 09:29:00
When a very nice chap gives you a brace of grouse, it would be rude to say no, wouldn't it? On holiday with the grouse...
Farewell, Keith Floyd
2009-09-15 10:33:00
It is with a heavy heart - though little surprise - that I read of Keith Floyd's demise this morning.  Throughout the '80s and early '90s his TV cooking programmes redefined the format.  No longer tied to a studio kitchen, Floyd
Croquetas de jamon
2009-08-19 10:01:00
We're sitting outside a bar in Granada on a hot, sultry evening. There's a glass of chilled fino each and a small plate of croquetas de jamón on the table...
Strawberry Shortcake Tart
2009-08-14 09:08:00
This is quite simple but makes a relatively impressive-looking summer pud - a rich biscuit base (made here from a mix of digestives and shortbread), a creamy filling and all topped with fresh strawberries.

Grass-fed, properly matured, ready to roast... It must be Sunday Lunch...I've blogged elsewhere about roast beef and horseradish, but it is one of those meals that rightly comes round time and time again.

Shoulder of lamb with oregano and a minty green sauce
2009-05-22 14:07:00
Every Saturday, Maddie & I head off to the local shops.  Once shy when out in public, she now runs up to the fishmonger shouting "Ian, kippers please!".  She also chooses our Sunday roast every weekend.  Curiously fo

Letter from Green & Blacks Re Fairtrade
2009-05-18 18:10:00
I recently wrote to Green & Blacks regarding the lack of Fairtrade logos on much of their chocolate.  I may be wrong but I thought they used to display the logo on all of their chocolate.  Anyhoo - below is the text

Veg Box Update
2009-02-18 09:33:00
We're now two weeks into our veg box deliveries from Riverford and all is going well I'm thinking of writing a book called "1001 Things To Do With Root Vegetables" but that's the issue with trying to eat seasonal food

Another one bites the dust
2009-02-04 09:47:00
Last year, my local butcher closed his shop.  Fortunately, he's been followed in by a new one, so our supply of good quality local meat has continued.  Sadly, Angie, our local greengrocer has now closed down.
Pheasant with star anise
2009-01-08 20:02:00
To my mind, pheasant always goes well with a few gentle spices - here star anise is the big player with a few cloves and some coriander seed for good measure...

A New Year's Resolution...
2009-01-06 09:24:00
A very happy New Year to all the readers of this blog...2008 was not a productive year for me as a blogger - work got somewhat in the way (50 and 60 hours a week hasn't really been conducive to good blogging...)  My resolution for this year

Off to Portugal
2008-09-02 09:04:00
As I walked across London Bridge this morning in driving, horizontal rain more appropriate to a North Sea Fisherman than a City commuter, I realised my holiday can't come quickly enough. We're off tomorrow to Portugal for 10 days or so.
Trout and Prosciutto
2008-08-28 01:00:00
We're off to Portugal soon and I've been scouring Elisabeth Luard's excellent book for recipes that we should cook while we're out there One of them intrigued me - trout wrapped in local ham... here's a version.

The tomatoes are coming
2008-08-26 12:10:00
It's been a long wait, but the tomatoes are coming...I bought two plants early in the summer, but one vegetable bed is now full of plants - the tomato jungle - all self-seeded from the compost heap. Will we get enough sun to ripen them I wonder?

Haddock with Garbanzos
2008-08-06 14:55:00
A strange mix perhaps, but this made for a great Saturday evening dinner in front of the TV recently.  Big, fat pieces of haddock, grilled so ths skin was crisp and the white flakes of fish just cooked through, served on top of a gutsy dish of c
Normandy
2008-07-23 18:36:00
It's a mild evening.  A tabby cat silently rubs itself round my ankles before wandering off on guard duty elsewhere.  The only sound is of a Union Flag fluttering gently in the breeze and a few birds going about their business...

Turbot with basil, pine nuts and almonds
2008-06-10 09:48:00
Summer is here!  We'll see if we're still saying that in a few weeks, but for the time being, the sun is out and the evenings are getting warmer.  So time for some summer cooking.  This dish is perfect for a summer evening...

Sorry it's been so long
2008-05-23 17:50:00
The pressures of work are telling, I'm afraid.  I am trying my best to free-up more time for blogging (and cooking!) but it's hard!  Work hours are too long, weekends have been spent 'remodelling' (read digging-up) the garde

Sweetbreads for lunch?

Ratatouille, Ratatouille
2008-03-17 09:31:00
It's not often that I can say my cooking is influenced by a cartoon... but I finally got round to watching Pixar's Ratatouille recently and it inspired me to cook something completely out of season.  Sad really, but there we are.  R
Foie gras, Marsala shallots, frissé and hazelnut toast

Oxtail stew
2008-02-18 14:14:00
This really is the epitome of a winter dinner.  Coming back from a frosty tramp through the fields what could be better than the soft smell of a rich oxtail stew all ready for the table?
Valentine's Seduction (Part 3)
2008-02-13 09:05:00
Let's be honest, it's about chocolate.  What we need is something hot, fudgy, sweet, rich and - above all - chocolatey... A good chocolate pudding has a crisp, toothsome crust and a gooey, dreamy middle.
