I simply can't get enough of blueberries. I love them. We use to eat blueberries with milk, have them on the porridge, in the muesli, in a fruit salad, to pancakes, or make bluberry jam. You can do lots of delicious things with blueberries and the best thing is that you can eat them all year round.

I could probably live on smoothies. I love them! This one was made of soya milk and strawberries. Strawberry /raspberry/soya milk is another great combination. Or blueberry/yoghurt. A place that definitely knows how to make delicious smoothies is Jamba Juice.

Pasta and Chickpeas Sauce

This meal with chickpeas and pasta was really tasty. I mashed chickpeas with a fork (you can also use a food processor) and put them in a pot together with some olive oil, crushed tomatoes, herb salt and oregano. While the sauce was boiling (about 10 minutes) I prepared the pasta.Then I put the hot sauce on the finished pasta and sprinkled some oregano on top. Highly recommended!

Tomatoes and Squash Dish

A few days ago we made this dish of squash and tomatoes. First we poured some olive oil into an oven proof dish, then placed the sliced tomatoes and squash on the dish. Before putting it in the oven we added a bit of herb salt and fresh basil and oregano plus some more olive oil.20 minutes in 200 degrees Celcius was just right. It's also tasty to add Feta cheese on top, but then you'll need to raise the temperature to 225 degrees Celcious to allow the cheese to melt perfectly.Serve with rice, couscous, quinoa, a green salad or place it on a slize of wholewheat bread. That was actually really tasty.

Austrian Food in Dienten

I think everyone has at least one food memory they will always remember. Mine is from our trip to Dienten am Hochkönig in Austria when I was 10-years-old. I can still remember the taste of the brötchen we bought for breakfast, the salt nudelsoppe (minestrone soup) we ate for lunch at a restaurant near the ski station, the hot chocolate with whipped cream and the delicious Kaisersmarren we had for dinner. What's your best food memory?

This might not look so good on the photo, but it was actually really tasty. Mixing the cinnamon with cardamom was also a great combination. Instead of cashew nuts on the oatmeal you can also try other nuts, with or without cinnamon.

I absolutely love oatmeal with nuts, linseeds and pumpkin seeds and eat if for breakfast almost every day. A handful of blueberries over the porridge is a great combination. Serve it with soya milk.

Fresh Strawberries

Newly picked fresh strawberries. Is there anything better you can eat in the summer? I doubt it. In Sweden, it's usually not far to the countryside and big strawberry beds where you can pick your own strawberries. The ones on the picture above were really sweet and delicious to milk and cream.

This wok was very tasty and easy to make. I fried chopped tofu in olive oil and added chopped tomatoes, fresh arugula, bean sprouts, herb salt, oregano and thyme. Serve the wok with jasmine rice.

Not the best picture, but the food was actually really good. I fried tofu in some olive oil, added chopped pieces of one mango, a bit of salt, coconut milk and lots of curry. Jasmine rice and tofu and mango sauce is a great combination.

Takenaka Sushi Bar

A couple of days ago I found another great sushi restaurant in Halmstad, Takenaka Sushi Bar on Brogatan 26. Brogatan is a central shopping street that passes by the main square so it's very easy to find Takenaka. I can really recommend their vegetarian sushi with egg, salad, cucumber and avocado, and the miso soup wasn't bad either. It's quite a small place, but very trendy with a relaxed atmosphere. They also have a cozy patio where you can lunch if it's too crowded inside. Takenaka Sushi Bar is open Tuesday- Friday 11.30am - 8pm, Saturdays 1pm - 8pm and Sundays 5pm - 8 pm. The last two weeks I've been visiting my cousins and my grandmother in Halmstad on the Swedish westcoast. I spent the first four years of my life in Halmstad and my parents own a small summer cottage near the sea, so I was here a lot when I was younger. But just until recently I hadn't met my cousins or my grandmother for almost two years, so it felt good to see them again.A couple of days ago my grandmother and I went to this great sushi bar in Halmstad. I love sushi and I thought she wanted to try something new. During the days I stayed at her house she ate potatoes pretty much every day. When she saw the sushi she asked what it was, I explained and she shook her head and said I could buy take-away so she could eat potatoes and meat at home instead. At least I tried. I guess it can be difficult to get elderly people to try new food. At least my grandmother. She actually did try one tiny piece of rice and seaweed, but she said it was rather tasteless.However, I thought it was one...

Sometimes I improvise while cooking. First I planned doing a wok with borlotti beans, vegetables and coconut milk and serve it with quinoa , but I ended up doing this soup with borlotti beans, low-fat coconut milk, thyme, sea salt and quinoa. Very simple and tasty!

We didn't have any oats left today, so I couldn't make oat meal for breakfast as usual. Instead I improvised a salad with cannelini beans, iceberg lettuce, cucumber, carrots, green pepper, raisins, pumpkin seeds, sunflower seeds, olive oil, basil and herbsalt. Fresh and crispy!

I love eating lettuce, especially during the summer. Here are my favorite 10 lettuce types:Mache lettuce – Rich in vitamins and minerals. Nutty taste. Often called winter salad.Head red-leef lettuce – Combine with garlic and balsam vinegar.Mangold – Available in many colors and sizes. Good with beans.Baby spinach – Good to mix in a salad.Head lettuce – The soft leaves easily turn brown. Good in most salad combinations.Crisp lettuce – A lettuce more rich in flavor than iceberg lettuce. Tasty to apple, cheese and nuts.Rucola – Best to Italian food and combined with tomatoes. Hummus Recipe

You can make hummus in several international variations. Here is one of my favorite hummus recipes:Ingredients 4-6 portions 4 cups boiled chickpeas juice from 5 lemons 1 garlic, peeled and chopped15 oz tahini (sesame paste)1 tsp salt0.5 - 1 cup water1/2 tsp paprikaMash the chickpeas in a food processor or with a fork in a bowl. Add lemon juice, garlic and tahini. Stir a few minutes. Add salt, water, and paprika.Serve with hot pita bread, falafel and salad.

Aside from vitamin C, oranges contain folate (folic acid), thiamin, potassium and some calcium and magnesium. I use to eat one orange with my breakfast every morning, it's a great start on the day.
