Here is a dessert we can all eat.  Its low fat, and is appropriate for diabetics. Pump kin Parfait 1 cup canned or cooked pumpkin 1 pkg (4 serving size) sugar free vanilla pudding 1 cup skim milk 1 /2 teaspoon pumpkin pie spice 1 cup of commercial low fat whipped topping 1 cup fresh raspberries or any seasonal berry (if you use frozen berries, thaw partially and drain of excess liquid 1.  Put pumpkin, pudding, milk and spice into a medium bowl and mix briskly.  This can also be done in a blender. 2.  Spoon 2 Tbs. pumkin mix into each parfait glass, then 1 Tbs. of whipped topping and 1 layer of berries.  Repeat for 2 layers of each item in each of the four glasses. 3.  Garnish the top with cinnamon.  Chill for one hour and serve. For each serving, there is 88 calories and only 1 gram of fat.  If you wanted to boost the protein content, toss a scoop of protein powder (I would use vanilla) into the bowl or blender when mixing the pumpkin.  Enjoy!
