Apples are the best fruits to use however peaches and bananas do work nicely as well! 1/3 cup butter or margarine 2 medium apples or 1/2 cup peaches or 1 thinly sliced banana 2 teaspoons cinnamon 3 Tablespoons sugar 4 eggs 1 cup milk 1 cup flour Preheat oven to 425°F. Put butter into a 3 to 4 quart frying pan and place in oven to melt. While butter is melting, prepare fruit, then cut them into thin slices. Remove the pan from the oven and add cinnamon and sugar to the melted butter. Stir in the sliced apples. Return pan to oven for about 3 minutes. Put the eggs and milk into a blender and whip at high speed for 1 minute. Set the blender to low speed and slowly add the flour until well blended. I need to lose those 5lbs I gained, get the hair done, send thank you letters, clean the house, etc. So this year I thought why not hire someone to help out and watch my son while I finish up everything! Brilliant. So I scour the neighborhood for babysitters, ask for reviews, meet with several people, and then decide on a very nice lady that lives down the street. I struggled for days making this decision and felt like she was the best person for the job of taking care of my nice sweet little boy. Well, she came and after just 20 minutes with my monster… he managed to stick a magnet inside her ear… YES inside, wipe poo all over her clean seven jeans, and hide from her causing her to scream and cry… and yes… this is when I was HOME!!! 2007-02-09 07:26:02 Easy Enchilladas: A bag of corn or flour tortillas 2 small cans of enchilladas sauce a bag of shredded cheese a bag of frozen chicken an onion, chilies, or whatever other flavors you like. Place some of the frozen chicken into a pot of boiling water. Use one piece per family member or more depending on the size of your baking dish. I like to boil it because it keeps the chicken nice and tender. Once the chicken is cooked and cooled, cut it up into small pieces. Pour some of the enchillada sauce in the pan, throw a couple of tortillas over then start layering with your chicken, cheese, onion, sauce, and tortilla. There really is no science here. When you are done, I like to leave some cheese on top, place it into the oven to bake for about 30-40 minutes, again depending on the size. When it is done, let it cool a bit, cut it up and serve it with some sour cream and a dinner salad. A great super easy meal the whole family will like.
