Recipe (no recipe) of the Week

Easy Enchilladas: A bag of corn or flour tortillas 2 small cans of enchilladas sauce a bag of shredded cheese a bag of frozen chicken an onion, chilies, or whatever other flavors you like. Place some of the frozen chicken into a pot of boiling water.  Use one piece per family member or more depending on the size of your baking dish. I like to boil it because it keeps the chicken nice and tender. Once the chicken is cooked and cooled, cut it up into small pieces. Pour some of the enchillada sauce in the pan, throw a couple of tortillas over then start layering with your chicken, cheese, onion, sauce, and tortilla. There really is no science here. When you are done, I like to leave some cheese on top, place it into the oven to bake for about 30-40 minutes, again depending on the size. When it is done, let it cool a bit, cut it up and serve it with some sour cream and a dinner salad. A great super easy meal the whole family will like. If my husband is not watching sports he is sitting in his red BoomChair designed for gamers. This chair looks like a George Jetson aerodynamic rocker but is really very comfortable- too comfortable as I really would prefer something that was  uncomfortable under his tush so he would get off it every once in a while! You can also listen to your favorite songs, video games, or movies as it features a pair of 3″ two-way speakers. There are also 2 interactive vibration motors, a comfort padded mesh stripe, and fortunately it folds for convenient storage as it doesn’t quite go with the decor. I bought him this chair for his birthday and at times I regret it, but he works long hours and is attending school, so I figured everyone deserves a break! The neighborhood kids beg to come over and use it as well, I think half the time we have the communal house just because of that chair!

Go Chicago! I am not really a huge Football fan, more of a Basketball fan, but I do enjoy a good game and this weekend?s match between the Bears and Colts should prove to be very entertaining. I am planning on stocking up on New Castle beer and my all time standard, chips and salsa. The wife is making chili since it is supposed to be icy out this weekend and we will be enjoying a very relaxing weekend, so enjoy yours and remember if you bet the rent money and lose, plan on sleeping in the dog house? prepare ahead!

Thank you Cards for the Whole Family

Do you still need to send out thank you cards for Christmas or perhaps thank a neighbor or childs friend? Stationary that has been imprinted with the families last name can be used by everyone and will save you a ton in the long run. I love this monkey design by Checkerboard. The inside just has a simple Thank You and can be used for any occation that could offer a nice thank you. Another bonus of writing thank you cards is that it allows for appreciation of the item gifted and gratefulness (I know, sometimes it may seem as if your kiddos are anything but grateful, but good manners can come easier if you work as a team). Also, if you are really crafty you could make your own or even take a class at your local crafting store. Get the whole family involved when you purchase or make your own stationary, it will help them to remember when it comes time to sit down and write.
