December Cooking Challenge: Catching Up

I've been cooking, I just haven't been posting. I think I need an additional 3 or 4 hours a day. *sigh*Kay-baby, I'm alive and well...and waiting for an update from you. You ok? Shoot me an email, will you?Anyway, below is a list of recipes I've made recently. I'll add a note about how well they went over underneath. Stuffed Green PeppersI have my own recipe for this, but the one I linked is pretty close. However, instead of using tomato soup and whole tomatoes, I use a jar of spaghetti sauce. I also use minute rice (the Boil-In-A-Bag kind). I cook the rice while browning the ground beef with onion and spices. Then add the rice to the ground beef mixture and stir the spaghetti sauce into it. I then scoop the mixture into the pre-cooked green peppers (boil on the stove for approx 10 mins) and bake as directed. It's very filling and tastes great. You can also do this recipe in a slow cooker, which is nice for those of us who have to work, but either way it's pretty ...

11 years ago today, at 7:28 in the morning, after 12 grueling hours in labor, The Girl was born. Yes, today is The Girl's birthday. Today, she is officially a Pre-Teen.Kill me now!I'm so sad today. I want her to go back to being that adorable 2-year-old. Or the precocious 4-year-old. Anything but the chest developing, hormonal thing she is now.*Sigh*She got a filled donut for breakfast this morning and I'm making her Shrimp Primavera tonight, her special request. She's been wanting to learn to cook, so MM and I bought her some cookbooks. This weekend we're taking her to Knott's Berry Farm to celebrate her Birthday. She's really excited to go. Me? Ok, so cooking isn't my problem...posting what I'm cooking is. I'm trying, really!I made pot roast on Sunday. It was ok, but the roast I got was really fatty. The flavor was good and it was really tender, though. Savory Pot Roast & Harvest VegetablesIngredients:2 tbsp. vegetable oil3 lb. boneless beef bottom round roasts OR boneless beef rump roast1 can (14 oz.) Swanson® Seasoned Beef Broth with Onion3/4 cup V8® 100% Vegetable Juice *2 cups fresh OR frozen whole baby carrots3 medium potatoes, quartered3 stalks celery, cut into 1" pieces2 tbsp. all-purpose flour1/4 cup waterDirections:HEAT oil in saucepot. Add roast and cook until browned on all sides. Pour off fat.ADD broth and vegetable juice. Heat to a boil. Cover and cook over low heat 1 hr. 45 min.ADD vegetables. A little background:Last week MM had a crappy day at work (I think it was Tuesday) and decided he needed a "mental health day" to recoup. I didn't cook last night. I took The Girl out for a girls day to celebrate her Birthday (she's going to be 11 next week...can you believe that? Freaking 11 years old...I'm getting so old). We shopped for a bit then saw Enchanted, which was really cute. Not at all what I expected (in a good way). Anyway, by the time we got finished with that and I dropped her off at my mom's (she and Little Man spent the night there) it was late when I got home. Since I had an extra squash left over from the other day, I made the Butternut Squash Soup again for MM. I love to cook, but I've been kind of lazy about it lately. I used to try a new recipe at least once a week, much to the (sometimes) horror of my children. Lately, however, I've just been making the basics. Meat, bread, potato, veggie. And a lot of pasta.But during the holidays I was looking for some new side dishes to serve at Thanksgiving (Which went pretty well, btw) and came across some great recipes. One of them was a Butternut Squash Soup. Normally I wouldn't have tried it (I mean, come on, it sounds nasty..and doesn't look much better) but I tried it in a restaurant a few months ago and knew it was good. My darling friend Andrea called me two days ago. I hadn't talked to her in a few weeks and it was nice to hear her voice. The first thing she said to me? "Are you ok?" when I answered that yes, I was fine, her second question was, "Then why haven't you posted a new blog?" I'd like to say I have a good reason for not blogging, but the truth is..I don't. I have more time now. Business is slow and with DW back to work (and fully recovered) I have time on my hands. Well, more than I've had in recent months, anyway. I honestly think I've just gotten out of the habit of blogging. I have millions of drafts saved from the last few months when I - literally - had no extra time in front of my computer. The older ones are a few paragraphs I meant to add a last thought to before publishing. When MM bought this house and moved in, he called the phone company to switch his service and was offered a choice of 3 different numbers. He chose the one he thought would be the easiest to remember and called it a day. What he didn't realize until well after the fact was...his new number was formerly the number of a doctor's office. As a result he received sometimes upwards of 20 calls a day for the doctors office. This was especially frustrating for him when he was working nights because he needed to sleep and the phone kept waking him up. So when he set up his answering machine he put a little notice in there:Hi, this is MM. Leave a message after the beep. This weekend me, Daph, my sister and one of her friends went to Arizona to visit my Evil Cousin and attend her annual Halloween party. EC is legend in our family for her costume parties and I was really excited to go to this one.MM and I had originally planned to attend together, and we were going to be the SNL Spartan Cheerleaders. The death toll in the Southern California wildfire crisis has started to rise. Just this morning I read that two additional bodies had been found. Authorities are trying to identify them, but haven't been able to as of the last report I read.But prior to today, most reports I've read said, "Only One Dead ..". I'm sorry, but this really, really upsets me. ONLY? The loss of life, whether it be one or a million and one, is devastating. The area I live in is completely unaffected by the recent fire outbreaks here in Southern California. I've heard from Rosie, Lori, Wendy, Rowena and Daphne, and they're all fine as well, though Lori is a lot closer to the fire lines than the rest of us.Please send thoughts and prayers to all those who are in bad areas. MM and I have a strange relationship. Or at least it has recently come to my attention that our relationship seems strange to other people. We fight, we argue, we love each other, but the strange part is...we tell each other everything.Yes, I said everything. I've actually blogged about this before. Remember Sharing 101? I'm going to tell you about an argument MM and I had recently, but before I do, I must forewarn you, this might be a little long winded....This is something that started out small, but that I won in the end. I like winning, don't you? Even more than just winning, though, I love beating MM. He's so competitive, he even plays "I win" with the dogs. 'Tis almost sad, no?It all started with silverware. You know, like eating utensils. You see, when I load the dishwasher, I always put the silverware in standing up. Well, except for the knives, those I put facing down. But anyway, this drives MM insane. He says he constantly cuts himself - although I don't really see how, since the knives are all facing down - and he hates it. I've been doing really well with my diet, all things considered. I haven't been eating out at all and I've been careful with what I eat for dinner. I'm still doing fruit and yogurt for lunch, and snacking on raw veggies through-out the day. But today...I completely blew my diet.I had yogurt for lunch, later. I think I finally ate for the first time around 2:30. Since I only had the cup of yogurt, I was pretty hungry by the time dinner rolled around. Two for Two

Last night MM and I went to Cheesecake Factory for dinner. We had a fabulous time, talking about nothing and relaxing. Our lively dinner conversation including fascinating subject matter such as: If offered $1 million, would MM take it and allow me to spend the night with some other man? His answer? Hell no. If it were a woman, however, that would be a different story. He said it would be ok if I wanted to spend a night with a woman - for a million of course - but he'd need video of the encounter. From there we decided if I then decided to run away with said woman (we chose Angelina Jolie, because well..she's Angelina Jolie) that would be fine with him. He's just call Daphne to console him. Then we ad libbed conversations we might have in the interim. It was..interesting. The most interesting thing about it? We were there to celebrate our 2 year anniversary. No Need To Diet, Just Get Sick

I have the flu. The Stomach flu. I woke up yesterday with it and it's still going strong today. As long as I don't eat or drink anything, I'm basically fine. Sure, a little faint and slightly nauseous, but otherwise just grand. First, I want to say, this is Rowena's fault. She was ill this weekend while at my house, and I think she passed her bug onto me. Second, I think maybe God is punishing me for complaining so much that my wedding dress didn't fit. What better way to lose weight than get the stomach flu, right? I don't have to worry about my diet, because the thought of food anywhere near me makes me ill. Weight issue solved!All joking aside, I really hate being sick. Good Conversation, Good Food and Great Books

Makes for a wonderful blogger meet up with fabulous women.We had our So. Cal Blogger Meet Up Saturday. It was fabulous to finally meet some of the wonderful women I've come to know from blogging. It's funny, but you'd think it would be awkward meeting someone for the first time, even though you've had conversations with them online. But it wasn't. Not at all. I was running extremely late, so I missed the trip to the bookstore. But Ween was an absolute peach and bought Mine Til Midnight for me. Isn't she awesome? I haven't started it yet, but hopefully soon. I did make it to the Cheesecake Factory in time for lunch, though. Everyone was pretty much exactly what I expected. Although, I have to tell you, for some reason I thought Wendy was a brunette and Lori would have shorter hair. I don't know why, but I guess I just had a picture in my head. I bought a car. Well, I should say "we" bought a car. We ended up getting the 4Runner we test drove the first time we went to the dealer. Apparently there are only 2 4Runner's in the country right now with a 3rd row seat, and they're both in Utah. Or that's what the dealer said. I'm not sure if he was telling the truth or not, because by the time he called me back to tell me the news, I'd done more research and decided I didn't want the 3rd row afterall. Fickle females!The thing is, I didn't realize how much space the 3rd row took up. There was NO cargo space when the seat was in place, and it wasn't removable like I originally thought. It's just a flip up seat (meaning the bottom of the seat flips up and the back of the seat folds down), so even with the seat down you don't get much cargo space. Car Shopping, Isabel Sucks and A Slumber Party

MM and I went shopping for a new car this weekend. We've decided on a Toyota 4Runner. I love the look of it, it's big enough for our entire family (plus dogs) and the safety ratings are great. Plus, it was just named as one of the Top 10 cars that will drive over 200,000 miles with proper maintenance. All very cool, no? Not only that, but they recently added an optional third row seat, which would be great for when we travel places and have additional guests with us. We want the SR5 4x4 V-8. Saturday MM and I hit the local dealership to check them out. They had 6 on the lot, all in white, and none with a third row seat or in dash navigation. WTF? How can a dealership not have even ONE car with at least a third row seat? We decided to test drive one without, just to check it out, and we were very pleased.
