December Cooking Challenge: Catching Up
2007-12-15 20:30:00 I've been cooking, I just haven't been posting. I think I need an additional 3 or 4 hours a day. *sigh*Kay-baby, I'm alive and well...and waiting for an update from you. You ok? Shoot me an email, will you?Anyway, below is a list of recipes I've made recently. I'll add a note about how well they went over underneath. Stuffed Green PeppersI have my own recipe for this, but the one I linked is pretty close. However, instead of using tomato soup and whole tomatoes, I use a jar of spaghetti sauce. I also use minute rice (the Boil-In-A-Bag kind). I cook the rice while browning the ground beef with onion and spices. Then add the rice to the ground beef mixture and stir the spaghetti sauce into it. I then scoop the mixture into the pre-cooked green peppers (boil on the stove for approx 10 mins) and bake as directed. It's very filling and tastes great. The flavor was good and it was really tender, though. Savory Pot Roast & Harvest VegetablesIngredients:2 tbsp. vegetable oil3 lb. boneless beef bottom round roasts OR boneless beef rump roast1 can (14 oz.) Swanson® Seasoned Beef Broth with Onion3/4 cup V8® 100% Vegetable Juice *2 cups fresh OR frozen whole baby carrots3 medium potatoes, quartered3 stalks celery, cut into 1" pieces2 tbsp. all-purpose flour1/4 cup waterDirections:HEAT oil in saucepot. He chose the one he thought would be the easiest to remember and called it a day. What he didn't realize until well after the fact was...his new number was formerly the number of a doctor's office. As a result he received sometimes upwards of 20 calls a day for the doctors office. This was especially frustrating for him when he was working nights because he needed to sleep and the phone kept waking him up. I'm still doing fruit and yogurt for lunch, and snacking on raw veggies through-out the day. But today...I completely blew my diet.I had yogurt for lunch, later. 2007-10-08 20:45:00 Last night MM and I went to Cheesecake Factory for dinner. We had a fabulous time, talking about nothing and relaxing. Our lively dinner conversation including fascinating subject matter such as: If offered $1 million, would MM take it and allow me to spend the night with some other man? His answer? Hell no. If it were a woman, however, that would be a different story. He said it would be ok if I wanted to spend a night with a woman - for a million of course - but he'd need video of the encounter. From there we decided if I then decided to run away with said woman (we chose Angelina Jolie, because well..she's Angelina Jolie) that would be fine with him. He's just call Daphne to console him. Then we ad libbed conversations we might have in the interim. It was..interesting. The most interesting thing about it? We were there to celebrate our 2 year anniversary. No Need To Diet, Just Get Sick

Sure, a little faint and slightly nauseous, but otherwise just grand. First, I want to say, this is Rowena's fault. She was ill this weekend while at my house, and I think she passed her bug onto me. Second, I think maybe God is punishing me for complaining so much that my wedding dress didn't fit. What better way to lose weight than get the stomach flu, right? It was fabulous to finally meet some of the wonderful women I've come to know from blogging. It's funny, but you'd think it would be awkward meeting someone for the first time, even though you've had conversations with them online. But it wasn't. Not at all. I was running extremely late, so I missed the trip to the bookstore. But Ween was an absolute peach and bought Mine Til Midnight for me. Isn't she awesome? I haven't started it yet, but hopefully soon. I did make it to the Cheesecake Factory in time for lunch, though. Everyone was pretty much exactly what I expected. Although, I have to tell you, for some reason I thought Wendy was a brunette and Lori would have shorter hair. I don't know why, but I guess I just had a picture in my head. 2007-09-28 23:00:00 I bought a car. Well, I should say "we" bought a car. We ended up getting the 4Runner we test drove the first time we went to the dealer. Apparently there are only 2 4Runner's in the country right now with a 3rd row seat, and they're both in Utah. Or that's what the dealer said. I'm not sure if he was telling the truth or not, because by the time he called me back to tell me the news, I'd done more research and decided I didn't want the 3rd row afterall. Fickle females!The thing is, I didn't realize how much space the 3rd row took up. There was NO cargo space when the seat was in place, and it wasn't removable like I originally thought. It's just a flip up seat (meaning the bottom of the seat flips up and the back of the seat folds down), so even with the seat down you don't get much cargo space. I love the look of it, it's big enough for our entire family (plus dogs) and the safety ratings are great. Plus, it was just named as one of the Top 10 cars that will drive over 200,000 miles with proper maintenance. All very cool, no? Not only that, but they recently added an optional third row seat, which would be great for when we travel places and have additional guests with us. We want the SR5 4x4 V-8. Saturday MM and I hit the local dealership to check them out. They had 6 on the lot, all in white, and none with a third row seat or in dash navigation. WTF? How can a dealership not have even ONE car with at least a third row seat? We decided to test drive one without, just to check it out, and we were very pleased.
