Chunky Applesauce
2008-02-22 18:48:00
salsa di mele/applesauceI fell in love with applesauce when my mom used to make some from scratch. Sure, we had our share of Motts®, but at least once a winter, mom sliced, diced, and cooked a tasty batch to go with our pork chops. (And I always wished Peter Brady would stop by for dinner!)Although I did a crappy job on my funky looking pork chop, the idea was to serve it on top of the Chunky Applesauce. I ended up avoiding the chop and just eating the sauce....which was fine by me!Chunky Applesauce4 large Granny Smith apples, peeled, cored and diced to bite size1/3 cup sugar4 Tbsp. lemon juice¼ cup water1 tsp. ground cinnamon½ tsp. ground nutmeg1 (scant) tsp. vanilla extractCombine sugar, lemon juice and water, then toss with apples. Place in a medium to large pot, bring to a boil, cover and cook for about 10 minutes on low heat. After 10 minutes or when the apples are soft (but not squishy).Take a little less than ½ of the cooked mixture and puree in a blender (or food processor) ...
Applesauce-Chocolate Chip Bundt Cake
2007-11-29 22:26:00
Awhile back, okay weeks, I bought a jar of applesauce. I was intent on making apple cupcakes, I think. I was always too busy or not in the mood for cupcakes. (On a side note: I know I have not baked cupcakes for awhile. The reason is, I know longer have co-workers. No, do not worry. I have decided to take a sabbatical before I pursue a job that actually relates to what I am currently going to school for.) However, I digress. The jar of applesauce has been staring at me for weeks. Every single time I went into my baking pantry I could feel it looking at me. I could feel its need to be baked into something glorious. Well, I hope I have appeased my apple friend.I was drawn to this recipe because it called for black pepper. Yep, black pepper in cake. Some how the black pepper gives the cake a certain spicy kick. It seems to ?wake up? the apples. It is a really good holiday cake. I can picture it now ?eggnog, hot toddies, champagne, Christmas music, and my family enjoying this wonderful ...
Weight Watchers Cranberry Applesauce recipe - 1 point
2007-11-08 09:40:00
If you love cranberries, you must try this vividly pink, wonderfully tart cranberry applesauce. It makes a great condiment for savory foods (such as pork or fish dishes), but it can also be eaten alone.Keep in mind that this will turn out very tart. If you don't like the tartness, you can add some Splenda or sugar on it while it's cooking.Weight Watchers Cranberry Applesauce recipeMakes 8 servingsIngredients3 lbs apples, peeled and cored1/2 teaspoon ground cinnamon1 cup fresh cranberries1 1/2 cups water2 thin lemon slices1/2 orange, juice of1/4 teaspoon saltPreparation1. Cut apples into approximately 1 inch cubes.2. Add all ingredients to pot, and turn heat on high. Bring to a boil, then cover and reduce heat to low. Simmer for 20 minutes or until the apples have softened significantly. Half way through simmering, you may add sugar or other sweetener if you desire.3. Stir frequently, making sure that the apples are not sticking to the bottom of the pot. Add more liquid if necessar...
About That Applesauce
2007-10-28 18:13:00
I strongly urge all applesauce lovers to try Ina's Homemade Applesauce. Actually try the version that I made. I'm calling it Baked Applesauce, which is a better description of what it is and it is superb. It has everything a good applesauce should have - sweetness, bit of tang, and imperceptible citrus note from the orange juice and rind (that Ina is a genius). The orange juice adds some zing, the lemon some zest. Plus cooking it in the oven does save many moments of stirring and looking and worrying - definitely not Ina's style and I could save a few worry lines myself.I did change a few things: I couldn't bring myself to add the butter Ina called for and I thought the allspice was unnecessary, and I added only a 1/4 cup sugar, which is 1/4 cup more than I usually add. I WAS nervous about leaving the apples in such big pieces, but I was glad I did. The whole thing cooked down so completely that I probably could have left the apples whole. In that heavy pot, in that hot oven and...

2007-10-13 20:54:00
After a September and early October of 87º heat and sticky humid weather, yesterday was the first real day of Fall. Leaves have been on the ground, mind you, for about two weeks, and the last day of Summer’s well past, but it wasn’t Fall. New Jersey (and the rest of the country ...

Homemade applesauce brings back memories of Massachussetts for me.  My uncle Andre had a farm we used to visit during apple harvesting time.  After bringing home a bushel of apples, Gran'ma would make some apple pie, apple butter and one of my favorites, applesauce!  Here's how you can make a batch of your own applesauce:READ MORE...

This marks the fifth consecutive week in which YouTube has remained in the Top 10, steadily building into what looks to be a streak of DiMaggian proportions. Karina's Latkes and Applesauce
2007-01-23 23:18:01
a stack of karina's potato latkesKarina's Potato Latkes"Put on your yamaka, it's time for Hanukkah!" [Adam Sandler]Yup, Babycakes, 'tis the season for latkes. I just adore them. And they're easy to make gluten-free. Although latkes come in all shapes and sizes, according to personal preference, I make mine thin and lacy, fried to a crispy golden brown. Oy, these are good! Maybe Mel Gibson wouldn't be such a nudnik, if he tasted these.Serve them with homemade applesauce [recipe below].3 large starchy potatoes (Idaho work well), peeled 1/2 small to medium onion, minced 1/2 to 2/3 cup superfine brown rice flour, or all-purpose GF flour mix 2 to 3 organic free-range eggs, beaten 1/4 tsp sea salt, to taste fresh grated pepper, to taste organic canola oil or high heat safflower oil, for frying Grate the potatoes by hand or in a food processor (follow manufacturer's instructions for grating). Press the grated potatoes between clean paper towels, or tea towels, to extract moisture. I...

Applesauce! Let me tell you something, brother. ...
2006-12-02 16:07:04
Applesauce!Let me tell you something, brother. Applesauce is great! In fact, applesauce is one of the few mushy foods I enjoy to eat. Most mushy foods such as oatmeal set me off. I don't like them. I don't like mushy apples or bananas either. But applesauce, even with a mushy texture, is a joy to consume. Now they have all sorts of flavored applesauce for me to enjoy. In fact, I just had my breakfast with some Cookie Monster GRAPE applesauce. It was a taste explosion! On a related note, today is election day. Those of you who did not participate in early voting (if your state offers it) need to get out today and vote. And let me tell you something else. Do not vote for a pro-abortion candidate. I don't care what party they belong to. Do not put people in office who have a record of voting for the slaughter of unborn babies. Listen, regardless of who gets in office, we can work with legislators on economic issues and even foreign policy. Don't think that voting a p...

A Lie, Served with Applesauce
2006-06-28 22:40:00
I've never heard of Anne Lamott (apparently because I don't frequent Christian bookstores). I heard about her by surfing around the LA Times, while looking for information about something else. Internet research indicates she's a writer of some sort. Her story certainly was poignant and sad. She also says she's a Christian. She chose to begin her essay in a shocking manner. "The man I killed did not want to die, but he no longer felt he had much of a choice." In her June 25 essay entitled "At Death's Window" she describes her relationship with a close friend suffering under a tragically terminal illness. She called him "Mel" to avoid using his real name. Mel had cancer and chose to refuse the chemotherapy which may have added some time to his days. He apparently just wanted to enjoy the final days of his life quietly with his family and friends. In the end, when he was riddled with pain and wasting away as many cancer victims do, she - at the request of Mel and his wife ...
